RELATIONSHIPNow that Christmas season is definitely few days away from now, different traditional food are being sold and prepared around the streets and in our own home. Since Filipinos are known to be one of the few people to celebrate Christ-mas season the longest, different seasonal food stalls are being built as early as “ber” months start. But before all the cooking and preparations that people need to do to achieve the best Noche Buena this Cristmas Season, they need break a leg and do some computations, calculations, and even conversions. Basically, they need Math to ensure that the food that will be serve in their dining tables are worth the budget and at the same time delightful.

Math is the backbone of almost all fields of study such as cooking. From the measurements of the ingreadients down to every detail of the recipe needs to be exact and precised. The size, amount, and number of servings of the food that one wishes to serve must be proportional to the measurements of ingredients used. A decrease or increase in the amount of one ingredient is a decrease or increase of all other ingredients that will directly af-fect the size and amount of food to be served. Follow the indicat-ed measurement to achieve the best homemade desserts or dish this coming Noche Buena! These numbers and measurements indicated are necessary to achieve the desired finish product that one wants. It must not be ignored. Furthermore, following these will give a proportional and balanced taste of the flavors. Making a minimal error in the measurements, just as how one makes a minimal error in math solution, problem solving and equations, there will be an evident change and inconsistency to the result. Moreover, Math is also needed for recipes that uses oven, for there are instances that the units and measurement in home ov-ens differ from the units and measurements that are indicated in the instructions. For ovens with Degrees Celsius as temperature, conversion is needed. 1 Degree Celcius is to 33.8 Fahrenheit as to 1 Fahrenheit is to -17.2222 Degrees Celcius. Conversion can also be applied for measurements such as cups to grams, pounds to kilograms, ounce to liters, and such.

EASY STEPS!1. Get a mixing bowl and combine the 2 pounds sliced pork, ½ cup soy sauce, ½ cup banana ketchup, squeezed lemon juice, 3 tablespoons brown sugar, 1 teaspoon ground black pepper, 2 teaspoons salt and 8 cloves of chopped garlic.

Remember for every 5 kg of pork, 80 sticks can be made. So for a kilo of pork, 16 sticks can be made. To be able to know the exact measurement of spices to adjust to the quantity of pork, put the ingredients into ratio, e.g:

1 kg pork 0.5 cup soy sauce --------- = ------------------------- X kg pork x cup soy sauceAlso, you can estimate the number of sticks using the ratio, and with the given kg of pork available. 1 kg pork 16 sticks ------------ = ------------ x kg pork n sticks

Substitute for x the kilogram of pork available. It is like finding the un-known in linear equations. [Cross multiplication applies]

2. Using your 2 hands, mix all the ingredients together and make sure the pork get evenly mixed with all the ingredients for rich flavor.

3. Marinate the pork overnight so that the pork thoroughly absorbs the flavor.

4. After marinating the 2 pounds pork, skewer the sliced pork in the bam-boo sticks. (number of sliced pork in a bamboo stick depends on you; 4-5 preferably)

5. After skewering all the sliced pork, you can now begin grilling it.

6. Using the excess or extra marinade, apply it on the bbq while grilling each side of it for it to be tastier.

7. Once everything is cooked, get a big plate and you are now ready to serve it!

EASY STEPS!1. Clean the fish. Remove the meat and keep the skin of the fish.

2. Soak the skin in 3 teaspoons of calamansi juice, 2 tablespoons of pepper, and 1 tablespoon soy sauce. Put it aside.

3. Put into boil the meat with 1 tablespoon salt and 1/4 cup of water, until the color changes.

4. Drain it and set aside. Check for left over backbones and remove it.

5. On a pan with 2 tablespoons of cooking oil, sauté 2 cloves of crushed garlic, 1 diced onion, and 1/4 cup of tomatoes together with the meat for 5 minutes. Seasoned it with salt and pepper.

6. Add 1 tablespoon of butter, 1/3 cup of peas, 1/3 cup of raisins, 1/4 cup of diced carrots, and 1 beaten egg, then mix evenly.

7. Stuff the bangus skin with the mixture.

8. Closed the fish by sewing its opening.

Reminder: In this sewing part, make sure that you know where to plot the points where you’ll pierce the needle through. Not near the opening where the skin will break off. Tip—you can always remember the transversal.

Imagine the two parallel lines being the skin of the fish, and with a hem-ming stitch, close the opening by piercing through the skin.

9. Dredge the fish with flour then fry.

EASY STEPS!1. In one pot, boil the 1 pack elbow macaroni until cooked and rinse under cold water for it to cool. Let it rest and set aside for a few minutes.

2. In a separate pot, boil the 1 pound boneless and skinless chicken after which rinse under cold water for it to cool and shred into small chunks afterwards.

3. Get a big bowl then mix the cooked elbow macaroni and chicken togeth-er.

4. After which, add the ½ cup diced carrots, ½ cup chopped celery, ½ cup chopped red onions in the bowl which will add crunch to the macaroni salad.

5. Add then the 1 canned pineapple which will add flavor to the dessert

MACARONI SALADThinking to give macaroni salads as gifts for you relatives and families? You will surely need more than 1 pound of chicken. If you have a whole frozen chicken stored in your freezer (approxi-mately 2.5 pounds in weight), how much time do you need to defrost the chicken and get the moist and juicy meat that you desire to have?

What we know:-The frozen chicken weighs 2.5 pounds-In order to perfectly defrost any meat such as turkey or chicken, for 5 pounds of meat, it needs to be taken out from the freezer at least 1 day or 24 hours. -Proportion is needed!

How to solve:Weight and Time is DIRECTLY proportion to each other, it means the heavier the meat is, the longer time to defrost therefore:

Cross multiply: 5 times x = 2.5 times 24

: 5x = 60

Divide both sides by x: x = 60/5

Time it takes to fully defrost the chicken: 12

It takes 12 hours to fully defrost a chicken in room temperature.

You can now prepare a delightful macaroni salad with fresh and juicy chicken meat!

INGREDIENTS:

If you’re looking for that easy to make dessert yet delicious dessert then this is the path that you should choose! Make this delectable dessert in the most fun yet delicious way! We are here to guide you in making this divine dessert!

Let us introduce to you our Strawberry Graham Cake before we start making it! First let me just say that anybody can do this and that you’ll have fun making it! Even our grandmothers make this in our Yamiroo Christmas parties and that’s why we chose this, because it is the easiest yet delicious dessert that anyone can do!

But just like the other recipes presented before you would need some mathematical skills in order to make the strawberry graham cake succesful and yummy!

So in order to understand this more let me tell you that cooking a main course meal and making a dessert is completely different! You have more freedom in tweek-ing some parts to please your preferences, but there should an equal distribution in some ingredients and that computing the number of graham crackers is im-portant in making this dessert! So first things first let’s look at the ingredients that we need for the dessert.

-2 lbs strawberries (fresh, washed and patted dry)-33/4 cups heavy cream (divided)-1/3 cup confectioners sugar-1 tsp vanilla-1/2 tsp rosewater (optional)-28 whole graham crackers (crackers)-2 ozs dark chocolate (finely chopped)

With a hand mixer or in the bowl of a stand mixer, whip 3 1/2 cups of cream until it just holds stiff peaks. Add the confectioners sugar, vanilla, and rosewater (if using) and whip to combine.

Spread a small spoonful of whipped cream on the bottom of a 9 x 13-inch baking pan, or a similarly-sized platter. Lay down six graham crackers. Lightly cover the top of the graham crackers with more whipped cream, and then a single layer of strawberries. Repeat three times, until you have four layers of graham crackers. Spread the last of the whipped cream over the top and swirl it lightly with a spoon. Add a few more strawberries.

To make the ganache, heat the remaining 1/4 cup cream until bubbles form around the edg-es, then pour over the chopped chocolate. Let it stand for a few minutes, then whisk until the mixture is thick and glossy. Drizzle this over the layered dessert with a spoon, or transfer to a squeeze bottle and use that to drizzle.

even in making a cake!

HOW WILL YOU KNOW the number of graham crackers needed for you graham float? Everything depends on the container that a person will use. Every cracker that one needs is directly proportion to how big the polygon container that he/she will use.

FOR GRAHAM CRACKERS like these, how will one know that number of square grahams to be used in a 12 by 8 inches container? (knowing that a square graham cracker measures 2 by 2 inches)

Here is an easy math technique for you to use!

12 inches by 8 inches is measurement of the container that will be used, since every square graham is 2 by 2 inches how many 2 by 2 inches square graham do you need to fill in the first layer of the container?

Simply divide 12 inches (height of the container) by 2 (measure of one side of the cracker) and also divide 8 inches (width of the container) by 2 (measure of one side of the cracker). You will get 6 and 4 respectively. This means that you will need 6 square crackers to fill the height and 4 graham crackers to fill the width.

THE NEXT QUESTION The next question is how will you know the number of grahams needed to fill the whole first layer?

Simply multiply 6 by 4 and you will get 24 square graham crackers!

24 SQUARE GRAHAM CRACKERSfor the first layer! Just do the same for the second and third layer. You can also multiply 24 by the number of layers you will need to get the total number of square grahams for the whole graham float!

People may say its hard to make a homemade bibingka for it needs a clay pot, charcoal and such old traditional materials for cooking but due to the upgrading technolo-gy that we inevitably adapt, baking bibingka can be made easier and conveniently at everyone’s home.

Make sure that every ingredient is exact and propor-tion to other ingredients. First one needs to prepare the following ingredients exactly and accordingly:

EASY STEPS!1. Preheat oven to 375 degrees Fahrenheit or 190.56 degrees Celsius.

2. Mix all together 1 cup rice flour, 2 ½ teaspoon baking powder, and 1/16 teaspoon salt then mix well. Set aside.

3. Melt 3 tablespoons of butter then gradually put-in 1 cup of sugar while whisking. Make sure to not directly put the sugar at the same time to pre-serve proportionality and texture of the mixture.

4. Add the eggs then whisk at a moderate speed until every ingredient is well incorporated and parallel.

5. Pour-in 1 cup of coconut milk and 1/4 cup of fresh milk then whisk some more for 2 minutes.

6. Arrange the pre-cut banana leaf on a round cake pan.

7. Pour the mixture on the pan and bake for 15 minutes.

8. Remove from the oven then top with quarterly sliced salted egg and ½ cup of grated cheese

9. Put back in the oven and bake for 15 minutes or until the color of the top turn medium brown.

10. Remove from the oven, let cool, and brush with butter and sprinkle some sugar and grated coconut on top SUDOKU ATTACK!!

EASY STEPS!

After preparing the ingredients needed, it’s now time to pre-pare the steamer that will be used for cooking the puto-bumbong. Since this is a home made puto bumbong, using bamboo tubes as molder won’t be necessary.

1. Mix well in a large bowl 115 grams of purple yam powder and 400 of grams rice flour until the color is even.

2. Add the 2 1/2 cups of water to the bowl until you create dough. Knead it smoothly.

3. Get about 2 tablespoons of dough. Roll it to make a ball/circle and roll it again to made a round, long, cylindrical shape about 5 inches long.

4. Spread the butter in a plate and layer the dough, steam it for 4 minutes.

5. Remove it from the steamer and put it on a banana leaf.

6. Apply butter on top then also put shredded coconut and muscovado sugar.

However, for those of you who have bamboo tubes at home, here are some re-minders. The diameter of the bamboo tubes are mostly an inch, so make sure that the thin flat stick to be used has a width of less than an inch, and a length of more than 7 inches to get the kakanin inside the bamboos.Also, to be able to know the allowance for the wrapper of the putobumbong, we must know the volume of the tubes to be able to to estimate the size of the whole putobumbong.With the formula:V=πr^2h Calculate for the volume:3.14 x 0.5 inches^2 x 7 inches = 5.5 in^3/strand of putobumbongMultiply it by 4, results to 22 in^3. This means that this is the total volume. Take note of this so that you can store your putobumbong exactly to the tupperwares (see the volume). Also, make sure that steaming time is exact to obtain the tex-ture of the yam properly –not too sticky nor hard.
