Preparation time: 1 hr Add the melted butter to the crushed biscuits and blend well. Press the mixture into the base and part way up the sides of an 18cm loose-bottomed cake tin, then chill well. Make the filling: Melt the chocolate gently in the microwave then mix in the Carnation Caramel. Beat until smooth. Spread the filling over the biscuit base and chill for about 1 hour, until firm. To serve, slice the bananas, fold half of them into the whipped cream and spoon over the base. Decorate with the remaining bananas and dust liberally with cocoa powder.

For the base: 85g butter, melted 250g dark chocolate digestive biscuits, finely crushed

For the filling: 200g dark chocolate, melted 397g can Carnation Caramel

For the topping: 4 bananas 300ml double cream, lightly whipped Cocoa powder to dust

C ooking to impress can be a daunting experience, and with certain

celebrity chefs urging us to try all sorts of far-fetched and elaborate creations, it can seem downright hopeless.

This Morning's Phil Vickery explains why good food needn't be difficult to make, and how you can make puddings by using basic off-the-shelf products. The husband of TV presenter Fern Britton, Vickery is one of an elite circle of chefs to have bagged a Michelin star four years in a row, so it seemed only right to test his theory. These recipes might not be the

healthiest, but then they are desserts - and they're inexpensive to make. “As long as people are getting value for money, they're happy."

Here are some of Phil's recipes to try out:

Preparation time: 10 minutes Chilling time: Approx 1 hr

(Serves 4-6)

For the posset: 397g can Carnation Condensed Milk 150ml double cream Finely grated zest and juice of 4 large unwaxed lemons (about 150ml) For garnish: 1tbsp chopped mint leaves 1tsp granulated sugar Squeeze of lemon juice Whisk the condensed milk and cream together until thick and very light; 4 or 5 minutes. Add the lemon juice and zest and whip for a few seconds only as the mixture will thicken very

quickly. Spoon the lemon cream into ramekins, or a large trifle bowl and then chill for at least an hour, or overnight. To serve, muddle the mint leaves with the sugar and lemon juice and sprinkle a little onto the lemon cream. Most creamy mousses need some sort of setting agent, gelatine being the most popular. Here, the reaction between the acid from the fruit, the condensed milk and the cream, make a great setting combination.

Raspberry & white chocolate chunk cookies (Makes 20-30 cookies)

225g unsalted butter, softened 225g caster sugar 170g tube Carnation Condensed Milk 350g self-raising flour 150g white chocolate, chopped 175g punnet raspberries

Preheat the oven to 180 degree Celsius/Gas Mark 4. In a large bowl, cream the butter and sugar, until pale and then stir in the condensed milk. Sift in the flour and then work into a soft dough with your hands. Mix in the chocolate. Take a small handful of dough and flatten with your fingers. Place 2-3 raspberries into the centre of the cookie and fold over the sides of the dough to encase the raspberries. Repeat with the remaining dough.

Place onto parchment lined baking trays, spacing well apart and bake for about 15-18 minutes or until golden brown at the edges, but still a little soft. Leave to cool slightly and set before transferring to a cooling rack. The dough without the raspberries will keep in the fridge for 2-3 days or for about 1 month in the freezer - freeze in small slightly flattened chunks and bake as required.

Serving suggestion: try this with fresh raspberries and a crisp shortbread

What a Difference a Year Makes

So what is fair trade all about? “Fair trade is more than just tea and chocolate. Far too many products sold in some big name stores are produced in third world coun-tries by people working long hours in appalling condi-tions for less than subsistence wages. Slave labour and even human trafficking are not uncommon to feed this industry. By selling fair trade we are providing an outlet for products made by people who are treated with re-

spect, work and live in reasonable conditions, have access to medical care and education, and are paid a fair wage for their work - the basic things you and I take for granted.“

Dawn also saw the need for a Christian shop in the area. “There’s a large, thriving Christian community in the Wyre and Fylde” Dawn said “but they had to travel to Preston or Lancaster to find dedicated Christian shops. At Jireh we try to provide everything they may need to help them live a Christian life including Christian literature, greetings cards with religious themes, Chris-tian jewelry, gifts for Christenings, confirmations and weddings, and a range of music from church choirs to Christian rock!” Dawn makes much of the jewelry her-self and can make special items to your requirements.

After such a busy year what’s next for Jireh? “I’m busy expanding the website” said Kevin. “We aim to make all of our great range available from the internet and are adding items to our site every week.” They’re also de-veloping a range of church supplies such as communion wafers and non-alcoholic wine, candles, and certificates for Baptisms, Dedications, Confirmations and other occasions.

T he generation nearing retirement has struggled to put much aside in a savings pot - despite being financially one of the luckiest ever. It enjoyed house price booms from 1970, almost-free university education and

(for many) secure final salary pensions. Aviva's Real Retirement report claimed that one in five Britons aged over 55 expects to work until their 70th birthday – and some possibly even longer. Although the average home owned by people in this group is worth £236,600, the average home loan outstanding is £11,430. Nearly 20% of them still have a mortgage, and a quarter hold less than £2,000 in savings. Aviva says many over-55s will need an easier 'part-tirement' job to keep afloat financially through their 60s. More than half those it surveyed expect to retire eventually between 71 and 74.

Now the 'lucky' generation has another headache - the coalition Government is looking at proposals to more than double Capital Gains Tax (CGT) on sales of shares, buy-to-let property and other non-business assets - hitting savers more heavily than anyone else. A survey by 1st Exchange, a financial services technology specialist, says 60% of financial advisers (IFAs) are planning to move clients' money away from assets attracting CGT. But where to, exactly? If pensions, shares and cash in the bank are leaving the 50-plus generation hard up, what other assets can secure a comfortable old age?...

The obvious haven in stormy economic times is gold, where the spot price on London markets has soared in the past year from £593 per ounce to £828 - breaking all previous records. The German firm which opened a gold vending machine at Munich Airport last year added a second at the spectacular Emirates Palace Hotel in Abu Dhabi - providing bars of 24-carat gold in one, five and 10 grammes, sold with a money back guarantee. "An extra special gift idea", says the publicity blurb. But a sign too of growing unease about sovereign debts built up by so many countries around the world. Adrian Ash - head of research at BullionVault.com, an online service for gold bullion trading and ownership - says: "Gold owners have more than trebled their money in the last five years, and quadrupled it since spring 2000." Around half of Bullion Vault's client base is UK-based, holding an average 33 ounce of gold apiece - worth £23,000. Ash adds: "People buy gold when they don't trust the alternatives. Gold has risen by more than 15% versus the pound, and a coalition cabinet, near-zero rates of interest and fast-spreading fears of a genuine Government debt crisis all point to further gains ahead. Income is minimal too from BlackRock Gold and General, a celebrated £2.1billion fund which invests

in gold, mining and precious metal-related shares and has for some years been the most popular choice for small investors seeking exposure to precious metals in their portfolios. Mick Gilligan, at brokers Killik & Co, says: "The fund is up 37% over the past year, in line with a 36% appreciation in the spot gold price, with strong demand from central banks such as China and India supporting the high prices." He says investors could use their full £10,100 ISA allocation - £20,200 per couple - to have a tax-free exposure to gold markets through BlackRock Gold & General, if not to the metal itself. "It is prudent to have between 2.5% and 10% of an overall portfolio exposed to gold. A higher figure making sense the more negative you expect the effects of inflation may be", he adds. A racier play on current upheavals and the flight to gold as a safe haven is the £28 million Junior Mining fund. Around 70% of the fund is invested in small mining firms, with the top four holdings in Medusa (Southern Philippines); Centamin (Egypt), Norseman Gold (Australia) and Spanish Mountain Gold, based in Canada. Private investors are strongly advised to take advice from a financial advisor (IFA) before they invest.

But Junior Mining fund manager Angelos Damaskos says: "We see the macro-economic background as very favourable to us, with massive debt problems in Greece and elsewhere, including the UK and US. Historically, the chosen way governments escape this problem is to print money. "Although some strong currencies remain - notably the Canadian dollar, the Australian dollar, the Norwegian Kroner and the safe haven Swiss franc - investors are

seeking other stores of value, and gold is an obvious choice."

I f there is a German equivalent of the Plain English Campaign, it may well be jumping with Teutonic joy. The CLK experiment was a highly successful one for Mercedes, with the rebranded E-Class variants proving more popular than ever,

but as much of that was surely down to the quality of the vehicles as it was the allure of a more exotic moniker. The E-Class badge allows the uninitiated, or those simply daunted by a list of prefixes that would give a computer programmer nightmares, more of an insight into what's on offer in terms of size and the place in the range. Ironically, as identification has become simpler, the car itself has become more complicated. Always a leader in technology and innovations, Mercedes has not been resting on its laurels with the new E-Class Cabriolet. The big development comes in the shape of the new AirCap system. A simple idea neatly executed, the AirCap extents from the top of the window frame and acts as a frontal defector sending the airflow arcing over the top of the car and improving interior refinement with the roof down. It works well, although the effects are more noticeable

for rear seat passengers. There's a much reduced degree of buffeting at speed, extending the options for top-down driving as the reduced air movement within the cabin allows a steady temperature to be maintained using the climate control and, for front seat passengers, the neck warming AirScarf system. The trade off is a steady whoosh as air diverts around the device.

Using the same two-door, four-seat layout as the E-Class Coupe, the new Cabriolet features a canvas roof. It's a very discreet piece of canvas however, with the vehicles rising belt line only requiring a small piece of fabric to cover the occupants. The Cabriolet manages to retain the same enormous glass house as the Coupe, an impressive feat that aids visibility and gives the cabin an airy feel.

Stowing in less than 20 seconds, the roof takes a chunk out of the reasonably accommodating boot space but leaves a delicious profile in its absence. On the way back up it pours into place in an eerily hushed manner, with the exception of a reassuring clunk as it hooks into the windscreen frame. Mercedes claims the canvas roof offers the same rollover resistance as the fixed-head coupe, an impressive feat. A range of three diesel and four petrol engines is available on the new model, all boasting the Blue Efficiency badge with the exception of the range topping E500 V8. The 3.5-litre 288bhp unit in the E350 CGI seems particularly well suited to the E-Class Cabriolet. Naturally more refined than the impressive diesel units, its performance doesn't fall far short of the range topping model, all be it without the distinctive V8 rumble. Mercedes' seven-speed automatic transmission is a key component in the model's driveability, too. It offers a range of ratio's that means the E350 CGI is never caught wanting. Slick changes come quickly when low speed cruising, upping the pace and selecting the sport option allows the gears to be held for longer, wringing out the power from the top of the rev range. It's reactive enough to negate the need to use the paddle shifters and the model's responsive chassis can be enjoyed using the fully auto setting. The light canvas roof and chunky, high-shouldered body means the E-Class Cabriolet feels solid roof up or down, with scuttle shake virtually eradicated and an ability to ride bumps that's within touching distance of the E-Class saloon. Reduced rates offered in Wyre as free swimming ends Don't give up on a great way to stay healthy when free swimming comes to an end. That's the message from Wyre Borough Council and the Fylde Coast YMCA who are determined to make Wyre's three public pools as affordable as possible. As part of nationwide cuts in public spending, the Government has decided that central funding for free swimming for children and older people will come to an end on 31 July, eight months earlier than the origi-nal March 2011 cut off. Wyre Borough Council is not in a financial position to continue the scheme alone, as Councillor Lynne Bowen, portfolio holder for Leisure and Culture, ex-plained: "No one is more frustrated than the council that the plug is being pulled on free swimming earlier than planned, especially as it proved particularly popular in Wyre. "Altogether more than 32,000 people took advantage of the free offer and with the financial pressures that all public sector organisations are now facing, we simply cannot afford to fund such a high number of free swims ourselves. "We will of course continue to offer subsidised rates where we can to the over 60s, juniors and others on low incomes. Hopefully this will encourage people to carry on the good work they've already done through regular swimming." People like Alias Gibson, aged 70 from Thornton, who got back into swimming at the Poulton YMCA through the free initiative. Mrs Gibson said: "I am upset the free swimming offer has come to an end, but as long as I can swim, I’m going to keep going. I feel fantastic. I swim four to five times a week now and as well as toning up, I’ve gone from a size 20 to a size 16. "I have to walk distances using a four wheel walker,

but in the water I don’t feel my aches and pains the same. I go at my own pace swimming anything from 10 to 30 lengths, but also some days I just relax in the water and do some gentle stretches. "Taking up swimming really has helped me and I’m not going to give up now." One alternative for Mrs Gibson and thousands like her is the free Wyre Access discount scheme avail-able all year round to the over 60s, students over 16, benefit recipients and people who have been referred via their GP. The card also extends to fitness and relaxation classes, gyms and sports courts.

Mike Vernon, Wyre Leisure Director for Fylde Coast YMCA, commented: "We are obviously disappointed with the Government’s decision as more people than ever have been using Wyre’s swimming pools since the start of the scheme in April 2009. "However we are already looking at ways to ensure that swimming is still an attractive and affordable activity option for all ages. In addition to the Access card, throughout August we shall be promoting a fantastic offer which keeps swimming at a low cost for parents and adults."
