When “generals” speak, people lis- ten!! Their public statements can have serious consequences involv- ing respect for authority, which has all but disappeared in our country. (Public remarks by Gen- erals Mattis, Kelly,Allen, Dempsey, Powell and Milley can be googled, if you are so inclined.) In the military, respect for authority is mandated by a “chain of command”. Accomplished gen- erals know better than anyone else, whether they agree or disagree, like or dislike their boss—in this case the President— they do not shoot off their mouths in the public square. These so-called honorable men, ac- tive or retired, committed a lifetime to always exercise appropriate de- corum regarding their Commander- in-Chief. Anything less dishonors them and demeans the Office of President. Unfortunately, with America’s most highly visible Respect For Authority & Misguided Generals military leadership setting such a poor example for the country, it is no wonder respect for author- ity in our schools, on our streets and even in the home has pretty much disappeared. Many years ago, when I was a young artillery officer in Korea, I had a strong association with the Commanding General. In fact, be- fore he left Korea, he invited me to go with him to Fort Sill, Oklahoma as his aide-de-camp. It would have been an honor, but I respectfully declined. In spite of this close rela- tionship with a wonderful man, there was never any doubt who was in charge. Believe me, especially in life or death situations, you cannot af- ford to question authority. The life lesson I learned about respect for authority under his command has stayed with me my entire life. Back in civilian clothes, I re- alized the lesson learned in Korea was no different in the corporate world, a church organization, with a football team, or even in the family. For any organization to achieve success, someone must lead and someone must follow. Respect for authority is universal in nature and pertains to every walk of life. Without respect for authority there is chaos and eventually an- archy. It is exactly what our coun- try is experiencing right now. By publicly disrespecting the President of the United States, these high-profile misguided generals are contributing to the national crises. In fact, their example violates the very principle upon which their own suc- cessful careers were governed!! How sad.America is grateful for their extraordinary service; but there is no excuse for the destructive disservice in which they are now engaged. The question is, why??? I am reluctant to introduce politics, but unfortunately there is only one reason these once esteemed warriors would abandon their posts. They have taken off their uniforms to join the scum-covered media and the bottom-feeding creatures in the Washington swamp. The media and the swamp have no principles, no standards. There is no “honorable” decorum. There is no respect for authority. With a change in uniform, these generals have lowered them- selves. They are now leveraging their highly regarded reputations to ad- vance an incredibly specious, po- litical narrative. It is an effort to defeat the strongest pro-Ameri- can President since Ronald Reagan. Their ignorance, selfish interests, bloated egos and diminished character is contributing to a god- less, unprincipled movement intent on completely stripping America of her remaining freedom; a movement that already enslaves most of the world Socialism/Marxism. This is the very enemy these generals fought to defeat throughout their entire mili- tary careers!! Unbelievable!! If anyone doubts my thesis, please consider just a handful of questions about the land of the free; questions that are principle-driven and exactly the opposite of social- ism/Marxism. Do you believe freedom comes from God, not government? (y/n) Do you believe in religious free- dom? (y/n) Do you believe all hu- man life is sacred and all lives mat- ter? (y/n) Do you support the tradi- tional American family? (y/n) Do you believe in hard work and per- sonal opportunity, rather than gov- ernment handouts? (y/n) Regardless of President Trump’s personal shortcomings, America is blessed to have a red, white and blue, “five-star” Com- mander-in-Chief who answers “yes” to every single one of these questions. They are foundational to every political decision he has made. Why would anyone, in their right mind, bad mouth such a com- mitted, pro-American President??? If these generals with loose tongues, do not change their attitude and get out of the swamp, they are indeed part of the Socialist/Marxist move- ment to destroy theAmerica we love; or they have nothing left between their ears. In my previous letters, I apologized if I was unkind or wrong on any issue; but I am not going to apologize for this one. What I have written is the truth. And what our country desperately needs right now is more red, white and blue Ameri- cans like our President to publicly and passionately speak the truth. The July press release fromthe National Funeral Director’sAssociation (NFDA) providessome insight into the impactCOVID-19 has had on the fu-neral and cremation industry.Reportedly, more than half ofall funeral directors have expe-rienced increased cremationrates largely due to the pan-demic.

Cremation rates have beenon the rise and surpassed theburial rate for the first time inhistory in 2015. For 2020, theprojected burial rate is 37.5%and the projected cremation rateis 56.0%. Projections for theyear 2025 indicate that the cre-mation rate may climb as high

COVID-19: The Impact OnFunerals And Cremation

as 63.3%.The current pandemic has

greatly altered end-of-life ser-vices, beginning with the sheervolume of deaths. According tothe NFDA’s 2020 Cremationand Burial Report, “an additional200,000 U.S. deaths are esti-

mated this year because of thepandemic, eight out of ten ofwhich are adults 65 years andolder.” End-of-life services havealso been affected by social dis-tancing efforts. The 2020 re-port states that “50% of NFDA-member funeral homes reportfamilies postponing a lovedone’s service due to COVID-19,with plans to hold some type ofservice with a funeral director’sassistance in later months.”Here in St. George, most fami-lies choose not to postpone butto hold a smaller service andlive-stream to a larger audience. The families seem slightly dis-appointed at first but usually in-form me afterwards that hold-ing a smaller service was a posi-tive experience.

The NFDA also reportsthat “nearly 900 funeral profes-

sionals from across the country”traveled to volunteer in COVID-19 hotspots such as New Yorkand Michigan when they wereexperiencing extreme spikes intheir death rate. This type ofcomradery and service makesme proud of my fellow profes-

sionals and honored to countmyself among their ranks.

In the spirit of academic co-operation, Dixie State University andDixie Technical College signed anacademic articulation agreement thisweek to help Dixie Tech graduateseasily transfer to DSU.

The agreement outlines howDixie Tech students can transfer theirapplicable credits toward a DixieState degree. Transferring studentscan earn an Associate of AppliedScience degree in General Technol-ogy with emphases available in digi-tal design, business and informationtechnology as well as earn partialcredit in the pharmacy technicianprogram. Students can also worktoward a bachelor’s degree in theseareas and, upon completion, applycredits from their Dixie Techcoursework to the degree. In addi-tion, DSU will reserve twelve spots

each year for a seamless transitionfrom Dixie Tech’s LPN program toDSU’s Associate Degree in Nursingprogram. “We call it articulation, butyou can call it a win-win!” DixieTechnical College President KelleStephens said. “This agreement al-lows students to customize their col-lege education by stacking technicalskill development with traditionalacademics if they choose. I amthrilled for the opportunities this willopen to Dixie Tech graduates. Be-cause of this partnership, college stu-dents in the Dixie region can benefitfrom the best of both worlds.”

Signed by presidents Will-iams and Stephens, the agreementwas created to build an equitableand responsive student transfer

system between the two institu-tions. The resulting memorandumof understanding is the culmina-tion of months of working throughdetails to create a clear process.

“When Dillon Hurt, JordanRushton and I went into a fewDTC classrooms in the fall andasked who is interested in attend-ing DSU, many hands wereraised,” said Sarah Vandermark,DSU’s associate provost for aca-demic success. “I thought, let’s bemore intentional and create aware-ness about DSU’s degree optionsmoving forward. We want to makesure all students’ needs are metwhen transitioning so they don’trepeat content from Dixie Techat DSU. We also want to track

who is interested in transferring.”As part of their ongoing part-

nership, the institutions also haveplans in place to raise studentawareness about this opportunityand help make the transfer pro-cess seamless. “Building relation-ships and raising awareness is key, more than anything,” saidVandermark. “We want to have apresence on the DTC campus andbuild momentum to ensure stu-dents understand these programsare easily transferrable to the uni-versity.”

By Bev Rankin, aka, TheBread Lady

I have had several calls thelast few weeks about how to carefor sourdough starter. So, rather thananswer each individual question, Idecided to share my rules for sour-dough starter and how to care for it.

When your friend or neigh-bor gives you your starter these arethe steps you need to take to keepyour starter healthy and alive:

The container you keep yourstarter in should be made of eitherglass or stoneware. I use a potterycrock for my starter with a fitted lid.The starter makes gasses so it is nec-essary that the lid is secure, but notso tight the gasses can’t escape.Never use a metal lid. On the firstday you receive your starter, add ¾cup warm water and 1-cup flour tothe starter. Always use a rubberspatula or a plastic spoon to stir themixture. Never use metal or letmetal come in contact with the starteras this has an adverse affect on thestarter. You don’t have to get thelumps out of the mixture. The bac-teria will do this for you. If your tapwater is highly chlorinated, usebottled water as chlorine has an ad-verse effect on your starter. Put thestarter in the refrigerator and let itstart to grow and sour.

On the second day, removethe starter from the refrigerator andadd ¾ cup warm water and 1-cupflour. Stir the mixture again, sameas above. Return the mixture to therefrigerator. Leave the starter in therefrigerator for about a week unlessyou are anxious to use it sooner. Ifyou choose to use it sooner, removethe starter from the refrigerator and

place it on your cupboard overnightso that it can sour more quickly.Remove the amount of starter thatyou need for your desired recipe. Itis at this point that you need to feedyour starter again. If I use a cup ofstarter, I usually feed it with ½ cupwarm water and ½ cup flour. Stirthe starter until the flour is wet andthen return it to the refrigerator untilyou use it again.

Sourdough starter needs fedregularly! That means if you don’tuse the starter at least once everythree weeks or so, then you will needto discard 1 cup of starter and add½ cup of warm water and ½ cupflour, stir it, and return it to the re-frigerator. This process is calledfeeding your starter.

As your starter works and getsolder, it will grow stronger and startto have a really “San Francisco style”

sourdough smell. It should smelltangy and a bit like alcohol. Thegreen/gray/brown liquid on top ofthe sourdough starter is called“hooch” and is normal. This shouldsmell tangy, sour and a little bit likealcohol. If the starter smells “off”or “bad”, it has attracted the wrongkind of bacteria and should bethrown away. The “hooch” or darkliquid can be mixed right back intoyour starter simply by stirring it.

Sourdough starter can go badand there is no reviving it. If thestarter starts to turn a pink color, hasa bad small (not like the one de-scribed above), or gets black moldon it and on the sides of the con-tainer (crock), it has attracted thewrong type of bacteria and will needto be thrown out. Sourdough startercan also go bad if it gets too warmor hot. If it does get too hot, theyeast and bacteria that make it starterwork or grow will die. If this hap-pens, you will have to toss it out.

Sourdough starter is reallyvery easy to care for if you just re-member a few simple steps. Onceevery three months, I clean mycrock by pouring the starter into aclean plastic bowl. I then wash mycrock in hot, soapy water and rinseit thoroughly. I let it air dry and thenwhen it is dry, pour my starter backinto the crock and put it back intothe refrigerator. My start is extremelyold and has a terrific flavor. Who

knows when our sourdough starterwill be the only form of leaveningavailable to us? This is even morereason to keep it healthy and wellcared for. Remember, your starter

is a living sponge.Meet Bev at the Washington

County Fair in the CommercialBuilding where she will have giantcinnamon rolls to sample.

Eligio Cortes stood bythe side of his wagon with thetwo pistols stuck into hiswaistband, which he hadtaken from the two men whohad tr ied to rob him. Hejumped up on to the wagonseat, and his head disap-peared through the canvasopening for a few secondsbefore he jumped down toface the two men. He toldthe men that he had con-ferred with his brother, andhis brother had told him it iswrong to steal. Eligio lookedat the two men and said hewas sor ry tha t he hadthought of was stealing oneof their horses. The menmumbled something incoher-ent. Eligio continued, mybrother came up with a waythat this situation can besettled, and our consciencesbe free of guilt. He said thatbecause you were going torob us and perhaps leave mefor dead, I should use yourpistols to shoot your horses, and to take your boots, andwhen we have journeyed un-til we can no longer see you,we will leave your saddles, boots and guns by the sideof the road for you to re-trieve. Panic stricken criescame from the men, “we giveyou a horse” they sa id .Eligio responded “what aboutthe pistola’s?” One man said

“Senor, there are bad menout there, without guns weare unprotected. Eligio re-

plied, “then you give me onepistola,” “Si Si,” they re-sponded in unison. Leavingthe men behind with onebareback horse, the wagonjourneyed a good distance

before stopping to leave asaddle, and ammunition forthe two men left behind.Magdalene said “Papi, whereis your brother” Reta andEligio laughed out loud. Are

The dog days of summerare upon us. If current eventshave not got you down, nowyou can add the summer heatto the mix. But as our forefa-thers did, we shall perseveretoo. It is too hot to go outside, and nothing sucks the strengthout of you more than the heatdoes, so what are you to do tomake this rough patch moretolerable? Read! There are lotsof genealogy novels and how-to books to keep you occupiedand make the heat more bear-able.

Rett MacPherson has atleast a dozen genealogy cozymysteries. Her novels set in asleepy town of New Kassel,Missouri, that sits along thebanks of the Mississippi. Theyare not only full of intrigue butare also full of humor. FamilySkeletons is the first in the se-ries.

Steve Robinson has anexcellent seven book series setin England. There is lots ofmystery and intrigue in thesebooks, and the solutions are inthe hero Jefferson Tayte’s ge-nealogy and research skills. Not only are the books nail-biting, but you also learn lotsalong the way. This seriesstarts with the book, In theBlood.

Nathan Dylan Goodwinbooks featuring forensic gene-

alogist Morton Farrier. LikeSteve Robinson’s books, theseare set in England as well. Notonly do you need to solve themystery, but you also learn thehistory of events and placesalong the way.

There are many authorsin the Whodunit series. Alongwith the above mentioned,M.J. Lee, M.K. Jones, andStephen Molyneux also havegreat books to add to the read-ing list. Plenty of reading avail-able if you like mysteries.

Historical fiction, localhistories, biographies, andhow-to books are great addi-tions to your summer reading.A few of my favorites areFarm Girl by Karen JonesGowen, a biography of lifeduring the Dust Bowl. YouChoose: History series is agreat way to learn about his-torical events that occurredduring your ancestor’s lifetime. The Milkman’s Son by RandyLindsay is the author’s storyof finding his father after a veryrevealing DNA test.

There are so manybooks, and the list could go onand on. Reading is the answerin keeping your mind occupiedand your stress down duringdifficult times. These booksare available on Amazon, andyou can get them new, used,or for your Kindle.

Principles Of Freedom

By Lynn West

The organizers and supportersof the current unrest, destruction andconfrontations have as their goal thechanging or dismantling of the “Ameri-can Experiment”. They use as a pre-text the fact that there is prejudice andracism in our history and, to someextent, in our current society. Whatthey fail to either see or acknowledgeis that prejudice and racism are onlyincreased by focusing on them. Whip-ping up hatred between races by am-plifying the actions of a few while re-fusing to see the progress that has beenmade over the last 300 years and es-pecially in the last 60 is not only de-structive, it is dishonest. If we makeas much progress in eradicating rac-ism and hatred for those who are dif-ferent in the next 60 years, the goalsthey say they are seeking will havebeen met. If, however, we continueto focus on hating, dredging up oldsins and manufacturing false narra-tives to support the idea that “all peoplethat are not black enough are racist”,we will lose much of the progress wehave made. Those who support thatconflict are, in reality, seeking a revo-lution in the United States.

The big question is, what typeof revolution are they seeking and whatwould things look like if they succeed?Would it look like the American revo-lution or the French revolution? Domost people even know the differ-ence in those approaches and out-comes? Here is an over-simplifiedquick sketch of the two with my ob-servations for your consideration.

The French Revolution hasbeen praised as a tearing down of acorrupt aristocracy and lionized inbooks and plays such as “Les

Revolution – ToWhat End?

Miserables”. Indeed, there weremany young (and even some older)people among the French who gavemuch to what they saw as a causeof freedom. They were inspired tosome extent by the success of theAmerican revolution, but that ispretty much where the connectionbetween the two ends. In the begin-ning, the French tore down the aris-tocracy, jailed or killed those whothey felt had oppressed them, andcreated first, an anarchy, and then arepublic of sorts. However, it wasn’tenough to remove those they feltwere to blame for abuses, they feltthey must kill them. Then they feltthey must seek out and kill anyonewho had supported or even beenassociates of those in the aristocracy, including almost all who were partof the church leadership at the time. This consuming destruction even-tually spread to those who had startedthe revolution and those who imple-mented their reign of terror, includ-ing Robespierre – the man whomade the guillotine famous and cre-ated fear among almost everyone inFrance. In fairly short order, the new“republic” consumed itself in vio-lence and allowed a tyrant to be-come the leader of a new aristoc-racy and author of a war againstmultiple European and British coun-tries. This in turn caused the deathof 40,000 French during the revolu-tion and between 3.2 and 6.5 mil-lion deaths throughout Europe andinto Asia. That also does not includeover 300,000 French who werejailed by the revolutionaries duringand after the revolution.

Contrast that with the Ameri-can revolution. This war of indepen-dence was actually a declared waragainst a controlling nation (England)and did not include the murderingof civilians or even those loyal toBritain. While I am sure that there

were isolated instances of insupport-able deaths or damages, there wereonly an estimated 6800 Americandeaths from military action and an-other 8-12,000 resulting from dis-ease and mistreatment by the Brit-ish of prisoners of war. British deathswere almost all enlisted soldiers (notcivilians) and numbered near 25,000.At the end of the Revolutionary War,there was no “purge” of anyone whosupported England or even thosewho fought for them. The new na-tion immediately began a process ofcreating a government “of thepeople, by the people and for thepeople” that included justice for alland the rule of law. They set aboutto build and create; not to tear downand destroy. A study of the otherrevolutions that have occurred overthe last 200 years or so finds veryfew that follow the American model.India, however, is notable, as theypeacefully (but not without suffer-ing and sacrifice) convinced Britainto relinquish control. Every revolu-tion created by Marxist, Commu-nist or Socialist destruction of an ex-isting government created a worsesituation for their people than existedbefore the revolution. Just look atVenezuela, Russia, China, Cuba, etc.Fascism is also responsible for muchdestruction. Both extremes makepeople servants of the state.

Which type of revolution iswanted by those screaming for thedestruction of law enforcement, thedestruction of statues and othermonuments, and the establishmentof socialism (which is governmentcontrol of the individual, rather thancontrol of the government by thepeople)? As many have found out, those who use violence and destruc-tion usually get it in return.
