Layers of white sponge cake dabbed with kirsch syrup, filled with Bavarian cream and fresh cherries, topped with a thin layer of marzipan or white choco-late shavings.

Chocolate Mousse and pu-ree of raspberry between chocolate sponge cake dabbed with Grand Marnier liqueur, covered with dark chocolate ganache.

A very light, lemon-flavored sponge cake filled with a tangy lemon buttercream.

Non traditional eclair filled with chocolate mousse, va-nilla or coffee cream.
