The stand alone structure allows you to exploit the version without a worktop, creating compositions with other ambient and refrigerated storage units. By placing the 5 pan Ice-Chill Blast chiller next to the table, you can optimise the cycle of blast chilling-storage.

The worktop is supplied with radiussed front edge as standard, and can be supplied with a service pan fi tted to the motor compartment.

GN counters are 70cm deep, with operating tem-peratures of -2°+8°C or -15°-20°C, and hot gas defrost (electrical in the remote and negative ver-sions). The single unit structure, with 60mm thick insulation, also includes the motor compartment to reduce noise to a minimum.

Fit out your table with various different drawer units that pull out fully, in order to best organise your work. Position the motor to the right or left, or alternatively choose the version set up ready for external motor connection. Absolute freedom of design!

The version prepared for connection to a remote unit takes up very little room, thanks to the compact size of the equipment compartment. The refrigera-ting circuit is equipped with a thermostatic valve and solenoid valve to connect up to a centralised unit. The valve unit can be removed from the front for maintenance.

The internal volume is used to guarantee the grea-test possible storage capacity, whislt the 1/3 drawers allow for the insertion of GN1/1 150mm deep containers. Doors and drawer units (GN only) are designed to be easily interchangeable even du-ring use, to adapt to any possible future require-ments.

All guides and supports can be removed for easy cleaning, with no need for tools, and the interior is fully radiussed.

The motor compartment is aired frontally in order to allow you to place your counter between other elements or built plinths. The refrigeration unit can be removed from the front for cleaning and main-tenance.

Store for longerThe bacteria normally present in a food product proliferate most easily in the temperature band of between +65°C and +10°C. This is precisely the si-tuation when a product that has just been cooked is allowed to cool at room temperature. Quick cold technology, instead, protects from bacte-rial attack, lengthening storage times and keeping the food’s appearance, quality, and organoleptic cha-racteristics unaltered.

PlanningIce Chill allows you to store foods for longer periods of time, so why repeat the same preparation day in day out? Make the most of the fact that you can now prepare greater quantities of product in advance, and serve it later, as required, knowing that you are continuing to provide a fresh, healthy, natural pro-duct. In positive (soft and hard) chill blasting, the temperature at the product core at the end of the cycle is +3°C

In negative chill blasting (freezing), the temperature value at the product core at the end of the cycle is -18°C

The soft, hard and freezing chill blasting cycles can be carried out in 2 different ways:

manually by setting a user-defi ned fi xed time

automatically by means of the probe through the core, supplied as standard with all models

In both cases, the change to positive (+3°C) or negative (-20°C) storage at the end of the cycle, is automatic. You can begin the chill blasting/freezing cycle in the evening, before leaving work, and return the following morning to fi nd the product perfectly chill blasted and stored.

Where chill blasting is repetitive for product type and quantity, a customised programme can be memorised with a pre-set time. Simply recall the programme to perfectly chill blast the product, without having to use the needle probe. 99 programme memories.

Positive soft and hard chill blastingIt is important to use the most appropriate chill blasting system. The soft cycle is ideal for delicate, lightweight and thinner products: food temperature is lowered quickly but without damaging the outside. The hard cycle is perfect for denser products, with high fat content, or those to be stored in large pie-ces. In both cases, the product is cooled to a core temperature of +3°C.

Negative chill blasting (freezing)Ideal for increasing a food’s storage life (by weeks or a few months), quick blast freezing preserves the product’s original appearance, aromas and fl avours, and stops macro crystals forming, thereby keeping quality and texture intact. The product is cooled to a core temperature of -18°C.

CreamingDuring creaming, the liquid mixture is quickly brought down to a temperature of -7/-10°C, and the solid-paste blend is formed, that we recognise as ice cream.

Macro crystalsIn order to reach a serving temperature of -14/-16°C, some of the water present in the ice cream, must freeze. Excessive use of the freezer cabinet, which was desi-gned to store pre-frozen products, or to freeze small quantities. The process is therefore very slow, taking more than 12 hours, with high Energy consumption following extended use of the compressor. The avera-ge life of the appliance is inevitably reduced.

Large ice crystals form. This takes place following the joining of water particles present in the product, due to the excessive duration of the freezing phase. This damages the physical make-up of the product, and leads to signifi cant dehydration upon defrosting.

With Ice Chill, on the other hand, you can freeze whatever you like (raw or cooked food) in less than 240 minutes, and in complete respect of the pro-duct structure. Weight loss is avoided, and you are guaranteed that that original appearance and consi-stency will remain unaltered. You will be able to car-ry out many blast chill cycles every day, increasing production and your ability to successfully deal with particularly intense periods. The frozen product is appropriately stored in the freezer cabinets.

Uncooked croissants and semi-worked products in general are still widely stored in negative temperature freezers (-18°/-22°). This has 2 negative effects:

What’s the forecast?Proving is a delicate process that decides the quality, fragrance and fl avour of the fi nished product. Time, temperature and humidity can all affect results. As these change in cycles, with the seasons, you are then obliged to al-ter your doughs and mixtures in order to en-sure you maintain your high quality.

You set the standardA retarder/prover appliance creates an ideal microclimate able to prove pasta, croissants and cakes how, and when, you decide, whate-ver the weather. Exploit your creativity, test new yeast cells and raw materials, with re-sults that are always excellent.

Everything ready, and right on timeSimply set the temperature, humidity level and time. The low temperatures used allows you to slow and block the fermenting of yeast cells, reactivating them later, in order to obtain the proven dough precisely when you need it.

More effi cient, less wasteBring preparation of doughs forward and plan proving of partial quantities over the following days, on the basis of actual customer demand. As such, you can also reduce night working hours, avoid pointless waste, and have more time to devote to creating new delights.

% HR ControlThe active humidity control during proving stops the dough from drying out, and prevents superfi cial cracks from forming. The humidity level can be set from 60% to 95% depending on the percentage of water contained in the product.

How to useIn automatic mode, the duration of a given phase and the move onto the next phase, is set by the processor. Cycles can be repeated weekly, taking into account the day of the week on which the bakery is closed.

In manual mode, you decide which phase to start and how long it is to last. You can use LevTronic as a normal refrigerator, or as a simple prover.

The dough is cooled quickly to a maximum of -6°C.Fermentative growth of yeast cells is inhibited.

As a shift fi nishes, the product can stay quite happily in the display cabinet. The static refrigeration on the 4 sides of the container will ensure that mozzarella, sieved tomato, grilled vegetables, cured meats, and all the other ingredients you choose to include in your menu of pizzas, are perfectly stored. The containers slope towards the worker, facilitating their removal. The motor compartment can be opened for regular cleaning of the condenser.
