As chain restaurants con-tinue to proliferate in

the Southernmost City, smaller and locally owned and operated neighbor-hood eateries are becoming more im-portant to Key West’s culinary scene.

It’s a consideration that benefits places such as Thirsty Mermaid Raw Bar Restaurant, 521 Fleming St., which combine an intimate atmo-sphere with locally-sourced ingredi-ents to create offerings that foodies are unlikely to find elsewhere.

It’s a recipe for success that’s worked well for restaurateurs Kristen Onderdonk and her husband Tom-my Quartararo, who own Antonia’s Restaurant on Duval Street, and Lit-tle Pearl Fish House & Wine Bar, on Olivia Street, and along with their Executive Chef/Partner Ryan Shap-iro, the Thirsty Mermaid.

Each of these eateries has its own per-sonality and focus, but all of them offer ultra-fresh ingredients, splendid craft beer and wine selections, and knowl-edgeable staff to make the formula work.

Locavores take note: Since opening doors in February of 2017, the part-

ners have obtained a wholesale and retail permit which allows them to pick the day’s catch right on the dock as it’s being unloaded from the boat that just caught it.

“I also have a license to sell Florida lobster that I’ve caught from my own boat,” Shapiro said. “We have some-thing for everybody, but if you order seafood, it’s going to be the absolute freshest we can find.”

Open for lunch and dinner, Thirsty Mermaid offers a selection of fresh raw oysters from all over the U.S. and Canada - a selection which changes daily. Craft draft at the bistro mostly pays homage to Florida brewers; di-vine wines - mostly whites, and an in-credibly popular rose, are now avail-able on tap as well as by the bottle.

As one might expect from the name, Thirsty Mermaid includes nu-merous raw bar options, like the pop-ular Ceviche du Jour.

Tantalizing appetizers include house specialties such as the Mac & Cheese Croquettes, served with a truffle aioli.

Oven Roasted Chicken Wings take flight with a delightful chili pineapple glaze, and the Fried Oysters with chi-potle remoulade are always a good bet. The Yellowfin Tuna Poke is adorned

Nothing beats perfectly pre-pared “bob-a-que,” right?

For a while there, however, it seemed as though there was some-thing of a dearth of local dining es-tablishments specializing in this par-ticular culinary art.

Fortunately, for dedicated carni-vores like myself, there is The Dirty Pig Blues & BBQ, located at 320 Grinnell St., (in the old Finnegan’s Wake/Lucy’s building.)

This family venture, helmed by lo-cal DJ and entrepreneur Ben Solove and his brother Dan, has only been open for a few months now, but has already become a local fave for its fan-tastic food, live blues music, and local hospitality.

From their custom-built, 120 square-foot smoker dubbed “Sweet Melissa,” by the Allman Brothers-lov-ing Soloves and Executive Chef John Hines, bursts forth a cornucopia of meticulously smoked delights, in-cluding brisket, chicken, sausage, ribs, and more. I was privileged to sample a little bit of everything, and left the eatery both sated and content.

The St. Louis Cut Spare Ribs, available in full or half-rack, or a la carte, are exceptional, with the meat literally “fall-off-the-bone” tender.

This is honest, stick-to-the-ribs fare, prepared with pride. It’s hard to pick a favorite, and thanks to to the many options, one needn’t agonize over the choice: The Two Meat BBQ Plate includes a quarter-pound, or a third of a pound each of pulled pork, turkey, pork tenderloin, brisket, or smoked sausage. The Real Big Plate includes a third of a pound of said meats. Both meals are served with a

choice of two house-made sides, in-cluding absolutely amazing baked beans, bacon mashed potatoes, mac ‘n’ cheese, and Ben Solove’s secret rec-

ipe collard greens (with bacon and a hint of jalapeno) among others.

Da boyz at the “Pig” have even taken to smoking breakfast sausage

patties. The Fatty is made by rolling a log of sage sausage in a special rub, then smoking it to perfection in the hickory fired pit.

Naturally, the brothers Solove prepare their own sauces and dress-ings in-house, and even the desserts, prepared by Dan’s wife Kimmy Sue, are baked fresh on the premises daily. Her Carrot Cake is out of this world, as are Aunt Phyllis’ Blonde Brownies, the Southernmost Butter Pecan Cake, and the Chocolate Bourbon Cake (crafted with real bourbon from the Key West Smuggler Company).

Vegan/vegetarian diners won’t feel left-out either, and receive “some love” on the menu by way of a yum-my Veggie Burger, a Smoked Len-til Sloppy Joe, and even a Jackfruit Pulled Pork Sandwich, which I’ve al-ready planned to try on my next visit.

The restaurant may also be the only place in Key West to sample Snyder of Berlin BAR-B-Q flavored potato chips, a regional specialty of Somerset County, Pennsylvania.

There are two Happy Hours, from 4 to 7 p.m., and again from 10 p.m. to 2 a.m. - which see a dollar off all beer, wine, and liquor drinks - as well as a special late night menu featuring sandwiches, burgers, ribs, and even Brisket Tater Tot Nachos.

If you haven’t already, get yourself down to the Dirty Pig, and prepare to let your belt out a notch or two!
