Medicinal Teas
Rooibos
Rooibos (Latin name:Aspalathus linearis) is a well-tasting herbal tea with aunique, spicy and sharpcharacter and a wonderfullyharmonious and strong body,without herbal taste nuances.
The name is based on theplant’s pine-like leaves whichferment into a reddish-browncolor due to the oxidation oftheir cell juice. When water ispoured over the leaves, italso shows a bright red-brown color.
While Rooibos is very wellsuited for pure consumption,it is also perfectly suitable foraromatizing. Similar to BlackTeas, it can optimally be com-bined with fruity flavors suchas citrus, berry or tropicaltastes, it also goes well withsoft, creamy-tangy flavors likevanilla, caramel or nut.
This very tasty thirstquencher can be enjoyed atany time, during the day orat night, and it can beenjoyed cold or hot. It is alsopossible to use it as a multi-functional herbal tea: in themorning. It is a pickup, itquenches one’s thirst duringthe day, and it is a relaxant atnight.
This herb is also praised forits relatively high concentra-tion of minerals and traceelements.
There are reports about sta-bilizing effects the phenol-carboxylic acids and theirantibacterial features have onthe intestines, and thehydroxy acids contribute to ahealthy skin.
In addition, Rooibos containsquercitin and quercitrin, anti-spasmodic substances whichare also said to have antide-pressive capacity. The rutinflavonoid is supposed to pro-mote the blood circulation,and it is said to have antiox-idative effects, as does thevitamin C which is containedin a relatively high dose.
The sorted, cleansed anddried leaves are delivered totea shops as coarse-cut forbulk sale, or as finecut foruse in tea bags.
Tea (Latin: Camellia sinensis)is a plant that has beenknown for thousands ofyears, and it built up its rep-utation as a hot drink every-where in the world. Teabushes grow in warm, elevat-ed tropical locations and arekept at a height of about onemeter through regular cuttingand harvesting. The leaves ofthe plant grow to be about 10to 12 centimeters long. Themost important regions fortea growing are China, India,Sri Lanka, Indonesia andsome African countries.
At Martin Bauer, we usemodern processing technolo-gy to gently refine commonBlack and Green Teas. Indoing so, we mix the high-quality raw material homo-geneously and then flavor it.
For fannings, we use encap-suled flavor granulates withlong durability and stability.In the process of makingpekoes, liquid flavors arebeing applied as a homoge-neous spray in modernclosed-circle compressed-airsystems.

Green TeaGreen Tea is made throughhigh-temperature processing– hot steam or roasting – ofthe fresh leaves. This processinactivates the enzymes inthe cell juice to avoid fer-mentation.
The taste variants of theunfermented Green Teasrange from flowery-soft tofresh-green and spicy-smoky.By adding aromatic herbaland fruit components, spicesor flavor ingredients, thevariety of tastes can beincreased significantly. Citrus flavors are popular, asare vanilla-cream styles orflowery, scented additions.
The most important ingredi-ents of Green Tea are caffeine(3– 4 %) and polyphenols(25–35 %). The most signifi-cant group of the latter arecatechins of which the epi-gallocatechin-gallat (EGCG)features the greatest bio-activity.
In addition to the invigorat-ing effect of the caffeine,Green Tea has many otherhealthy characteristics likethe antioxidative, virostaticand bacteriostatic effects.Enjoying Green Tea may alsoreduce one’s blood pressure.
Black TeaBlack Tea and Green Tea pri-marily differ in the so-calledfermentation process. In theproduction of Black Tea, thepre-processed leaves oxidatethrough the enzymes of theirown cell juice and throughaerial oxygen. This leads toseveral aromatic pre-stages.The oxidation gives theleaves their red-brown color.
The most important ingredi-ents of Black Tea are caffeine(3 – 4%) and polyphenols(approx. 30%). They stimu-late and have energizing aswell as stomach-soothingeffects. Traditionally, the con-sumption of Tea is closelyassociated with rest. How-ever, Tea also stimulates bodyand mind.
Thanks to its balanced andharmonic taste, Black Tea hasenjoyed a long history of useamong consumers. Tastesrange from mild-fine-floweryto fresh-aromatic-mild tostrong-malty-smoky. Depending on the amount oftea tannins contained, thedegree of astringency ishigher or lower. Its colorsrange from bright gold-brown to deep black-brown.
Flavoring of any kind canincrease Teas’ variety oftastes almost without limits.Citrus is the most populartaste, with “Earl Grey” (berg-amot) being by far the mostpopular flavored Black Tea. In addition, mild caramel-cream tastes are very popularbecause they match the general character of the Teavery well.
