Making salads or even breakfasts in a jar makes them easy to pre-prepare the night before, easy to transport and super

fun to eat!

As a general rule, you want to choose salads that don’t have delicate leaves which may get squashed and land up soggy, like cos lettuce. Choose raw, harder vegetables; leaves like Kale and Spinach and think about the layers carefully - put

Carrot & Beetroot Salad

You will need:

3-5 beetroots, peeled and julienned6 carrots, peeled and julienned2 bunches spring onions/scallions, thinly sliced diagonally1/2 cup Fresh Mint Leaves3/4 cup of roasted PistachiosSalt & Black Pepper3/4 cup Raisins1/2 tsp Fennel Seeds, crushed1/2 tsp Red Pepper Flakes

Dressing:2 Tbsp Lemon Juice3 Tbsp Olive Oil1 tsp honey

To make:Combine all ingredients and top with dressing.

Nutritional Happiness Factor:Beetroot is like a super food for the liver. It detoxifies and is incredibly cleansing for the blood. It is also high in iron and stabilises blood sugar levels.

Prawn & Kelp Noodle Salad You will need:

1 handful of Kelp Noodles (these are ready to eat)3-4 pre-cooked prawns, cut into bite-sized pieces1 cup of julienned carrots1 cup of julienned cucumberhandful of oregano1 cup of bean sprouts (preferably your own)

Dressing:1 Tbls olive oil1 Tbls umeboshi vinegar1 tsp honeysalt and pepper

To make:Layer ingredients in a jar or in a bowl and top with dressing, once ready to eat.

Chickpea Salad You will need:

1 cup of chickpeas (garbanzo beans) (get the dried ones and soak overnight in water)2 cups of tomatoes, cut into halves1/2 cup of cut up parsley1/2 cucumber, cut into slices1/2 red onion, cut into little pieces

Dressing:2 Tbsp lemon juice2 Tbsp olive oil1 Tsp mustard

To make:Rinse the chickpeas after soaking overnight.Then mix all the other ingredients, pour over dressing and enjoy.

Nutritional Happiness Factor:Chickpeas are great if you get hungry easily as they how a low glycemic index and lots of fibre. They reduce cholesterol and are super high in protein. These little ones are also high in folate and manganese - great if you are trying to get pregnant!

Bonus! Bircher Muesli Recipe You will need:

Sealable glass jar1 cup of jumbo sized rolled oats1/2 almond or rice milk1/2 cup of watersplash of maple syrupHandful of pre-soaked nuts and seeds2 Tbsp cocoa nibs1/2 cup of organic frozen blueberries

To make:Place the oats in your jar and pour over the milk and water.Add a splash of maple syrup, nuts and cocoa nibs.Place the frozen blueberries on top.Leave overnight and enjoy for breakfast the next morning.Stir it together with a long spoon.

Experiment on your own! You can combine your salads in the morning with left overs from the night before.

As a guideline, you could use:• Something green (chickweed, seaweeds, Kale) • Sauerkraut• Sprouts• Left over rice, roasted vegetables• Tin of Salmon or left over chicken• Fruits like oranges • Seeds like sesame seeds or pumpkin seeds
