Our Chapter President, Kathy lives in Fair Oaks, CA with her 17 year old daughter. She feels blessed to have been giv-en a unique opportunity to be a stay at home single mom while her daughter was in high school, and decided it was also a perfect time to go

to school herself. She has been previously employ-ment as a Certified Addiction Specialist. Kathy is cur-rently in the last year of her Bachelors in Hospital Ad-ministration with the hopes of settling into a large hospital system until retirement.

Kathy believes in getting a complete experi-ence in everything she does which is why she appreci-ates her time as an officer with NSCS, serving as the Executive Vice President for a year and now as our Chapter President. She also sits on the Kaplan Univer-sity Student Advisory Board and is also a student rep-resentative on the university's Assessment Advisory Committee. Kathy is looking forward to 2015 and all the projects in the works so that our members can augment their online university experience. Congrat-ulations Kathy!

Scholars, it is that time of year where we pick out our New Year’s resolutions. Most of the time we never stick to our resolutions after we pick them. Why not pick out a

goal to fit our scholarly lifestyle instead? Let’s learn about how to pick out a SMART goal. SMART stands for specific, measurable, attainable, realistic, and timely (Top Achievement, 2011). The first step is to be specific about your goal. Simply stating ”I want to ob-tain a Bachelor’s Degree” is a little vague and not spe-cific enough. Stating “I will finish my first term of my Bachelor’s Degree with at least a B in both courses on the 3rd of February, 2015” is more specific. The sec-ond step is to figure out how to measure your pro-gress. In my example, measuring would be done by the Kaplan gradebook, as well as, the ten weeks starting on the 3rd of December, 2014 and ending on the 3rd of February, 2015 to finish these two courses. The third step is to make sure your goal is attainable. The goal above is attainable with hard work and dedi-cation. The fourth step is to make sure that your goal is realistic. If you were to choose a goal such as win-ning a million dollars, that would not be realistic. The goal above is realistic, it can be done, it just takes de-termination and dedication to make it happen. The last step is to set a time frame. The above goal has the time frame of December 3rd, 2014 to February 3rd, 2015. If you follow all of these SMART steps you can set SMART goals for yourself. measured predominantly based on your physical prowess versus your mental aptitude. Those times have all but gone and have been replaced with cognitive ability. When they made the change it was not until they started to reach the senior

ranks that the shift to civilian higher education would begin to be the primary emphasis. That was mostly because there was a fairly high percentage of person-nel who would complete at least a 20 year career in the military. According to various current reports, less than 20 percent of service members will ever complete a 20 year career and retire. Facing this is-sue, the armed forces have made the shift to empha-sizing civilian higher education very early in a service member’s career for two primary reasons. The biggest reason is it will help prepare them for early leadership and in a greater number of cases will help retention of the service member. The sec-ond reason is that this will help to make sure that the service member will be somewhat prepared when they make the transition to civilian life. I have seen this change take place in the last 12 years of my mili-tary career before I retired. It is not only important for us to make sure we take the right steps to help our civilian higher education, but as leaders in the military and in the civilian world we should always emphasize to our subordinates the importance of higher education.

Dear KUNSCS, Last winter there was a blizzard causing my whole town to lose power for three days. I ended up getting very behind on schoolwork since I could not log in to my computer for entire week-end and was unable to drive any-where to access Wi-Fi due to the snow. By time the electric and internet was restored on Monday I was left with just a day before assignments were due. My papers ended up getting turned in late and it threw me off schedule for the rest of the term. I would really like to avoid this situation again this winter. Do you have any suggestions for being pre-pared when outages occur?

Dear Disconnected, It’s unfortunate when it happens, but utility outages can occur at any time for many different reasons so it is a good idea to be ready with a back-up plan. To stay on track keep a notebook with each week’s reading materials, discussion topics, and assignment rubrics as the course syllabus. This way you will have the information you need to work offline. Also, make a list of alternative internet op-tions such as a neighbor’s house, library, or café with free Wi-Fi that could be used to access KU campus if necessary.

As college students and scholars life can become a tad stressful for us. Did you know that coloring, yes coloring, can help you de-stress? Jennifer

Morgan from Morgan Counseling Services states that coloring generates wellness and stimulates parts of the brain that control fine motor skills and emotions (Naughton, 2014). This has been done since the early twentieth century as a relaxation technique started by psychologist, Carl G. Jüng (Santos, 2014). Circular designs known as mandalas are best known to help with stress. Some countries have even started selling coloring books for adults. France and the UK are two countries where adult coloring books are bestsellers. So, the next time you are feeling stressed or over-whelmed pick up a pack of crayons (not markers or coloring pencils) and a coloring book for some thera-peutic relaxation. With Valentine’s Day approaching I thought a sweet treat that is surprisingly easy to prepare would be a

perfect recipe to share! Make some up for the sweet-hearts in your life and let us know how they are!

Cheesecake Filled-Chocolate Covered Strawberries

1 lb. fresh strawberries 8 oz. cream cheese, room temperature 1/4 – 1/3 c. confection-er’s sugar 1 tsp. vanilla extract 1 cup chocolate chips 1 graham cracker

Wash and hull out your strawberries, throw-ing out the ones that aren’t a pretty, vibrant red. If they have mushy bad spots, don’t use them!

In a stand mixer, or using an electric mixer, beat your cream cheese on medium speed for 3-4 minutes until the cream cheese is fluffy and smooth. Add the confectioner’s sugar and vanilla and beat un-til combined. I say 1/4-1/3 cup sugar because if you want them a little sweeter, add some more! Spoon mixture into a large ziploc bag (Tip: Put the ziploc bag into a drinking glass with one of the

corners pushed down to the bottom of the glass. This allows you to easily fill with the mixture and puts it right to the corner.) With the bag open, squeeze the filling to the corner of the bag and let the air out. Snip about 1/2″ off the corner of the bag. Now, grab a strawberry. Put the tip into the center of the strawberry and squeeze from the top of the filling in the bag. Fill the strawberry un-til a little bit of the filling is coming out of the strawberry. Repeat until all the strawberries are filled.

In a microwave safe bowl, put your choco-late chips. Microwave in 30 second intervals until the chips soften (probably about 1 minute total), stirring between shifts. Once the chips are softened, stir until they’re a uniform melted good-ness.

Grab your filled strawberries. Using tongs or your fingers dip strawberries into chocolate and lay onto a parchment or wax paper lined baking sheet. Repeat until the strawberries are covered.

Refrigerate until the chocolate is set, about 1-2 hours.

Crush up a graham cracker in a ziploc bag using the bottom of the glass. Pour onto a small plate. Dip the exposed cheesecake end of the strawberries into the crushed graham cracker, placing them onto your serving tray. Repeat until done. Sprinkle with remaining graham crackers. Refrigerate until you’re ready to use them!
