It’s finally here. If you’re like me, the

anticipation of summer’s arrival generally starts

about a week after New Year’s Day.

Don’t get me wrong – I love all four seasons,

but there’s something about long summer days

spent outside the confines of our homes that

brings a sense of true happiness. And that’s

just the sentiment we are celebrating with this

edition of Indulge – the many joys of summer.

Truth be told, putting this issue together in

recent weeks has been no easy task, what with

the colder-than-average temperatures, excess of

rain and rare appearances by the sun.

It’s tough to get excited about summer fashion,

boating and beaches when you’re still wearing

your fleece-lined boots and scarves every day.

A few weeks ago, I was driving home from a

mildly rainy softball game with my fiancé. It was

close to 9 p.m., and the sun had finally broken

through the clouds for the last half hour, and

was shining brightly as we drove.

Stopped at a light near a popular park, I

looked around, and what I saw made me smile.

Droves of people were

walking dogs, playing Frisbee

and tennis, lapping up any

amount of sun they could.

The park was absolutely

packed with people.

It was a quintessential West

Coast moment, when a brief reprieve from the

rain drew a whole neighbourhood out for some

fun and fresh air.

As we wrap up this issue, it’s hard to say what

kind of weather this summer will bring, but I’m

sure scenes like this will be common over the

next few months. I hope you enjoy our latest

edition, where we “Take it Outside” to focus on

all things summer. From B.C’s best beaches, hot

summer fashions to outdoor living spaces, plus

a look at getting creative with a barbecue.

Be sure to look out for our fall fashion edition

towards the end of the summer, as well as our

upcoming wedding edition, where we’ll be

looking at the latest in bridal trends.

W hile he may not have his Red Seal,

Donnie Ungaro is every inch the chef

– and he has that in ink. The Culinary Ink

tattoo that shines from the well of Ungaro’s

left arm bears testament to his commitment to

the business at hand. In his case, business is a

matter of good taste and personal choice.

As a caterer and personal chef, Ungaro

brought Culinary Ink into being at the start

of 2009. A life coach lent a hand by posing a

simple question: “What would you do if you

had a million dollars already?”

That made the answer an easy one for

Ungaro. As a cook, he has been at it since he

was 10 years old.

“My mom had major surgery when I was

younger and my dad did his best in the

kitchen, but could still burn fish sticks,” said

Ungaro who stepped in to help. “It was a real

challenge and I managed to pull off my first

Thanksgiving dinner by the time I was 11.”

Kelowna-bred and raised, Ungaro first came

to Vancouver to attend the Pacific Institute of

Culinary Arts and later work within the Hyatt

Regency’s kitchen. The notion of “peeling

asparagus seven hours a day” failed to appeal,

so Ungaro returned to Kelowna for a fresh

start at Fresco, working

alongside chef/owner

Rod Butters, a long-time

devotee of all things fresh.

It awoke within

Ungaro an edible ethos and passion for

local ingredients that has served him – and

his clients – well ever since. “It was really

a fantastic awakening to work with all the

great local ingredients that came through the

door. Micro greens, white alpine strawberries,

rainbow carrots – amazing stuff.”

What of the local bounty excites him most?

His eyes light up. “Sea asparagus and heirloom

tomatoes for sure.”

While the kitchen fueled his passion for

cooking, they also drained his energy and

time, a simple reality of the restaurant industry

that sent him back into the family insurance

business. Following the

loss of his father and

grandfather within three

months of each other,

Ungaro did two things:

anchored the memory of both with star tattoos

on his forearms; and found himself a life coach.

Life has been improving ever since – and so

has his business.

Since setting up his cooking kitchen near

Granville Island, Ungaro has been back to

“I am a big believer in getting people into local food”

doing what he loves most – and being

loved for it.

On Mondays and Wednesdays, he is a

personal chef, showing up at his clients’

homes to bring families to the table.

“I get the clients cooking with me and

show them every component. We have a

great time,” said Ungaro.

“It’s a bit like taking the Food Network

into your house and getting schooled on

what’s fresh, local and available. Without

being pretentious or intimidating about

it, it’s a great way to get the education out

there and into people’s lives.”

Alternatively, the catering side of the

Culinary Ink equation keeps things varied

and invigorating. From weddings to more

corporate affairs, such as Virgin Radio’s

launch party, Ungaro has learned to

balance his love of local with the wants of

his guests.

“I am a big believer in getting people

into local food and I love shopping the

independent markets. The farmers markets

are great and they are important. If we

don’t support them, they won’t be there.”

While Ungaro encourages people to cook

with abandon and embrace the mistakes

that happen along the way, he also

volunteers time to train the youngest cooks

via the Growing Chefs program.

“Working with the kids is inspiring. We

bring in flats of dirt to grow gardens in

the classroom. Every other week we go in

with fresh ingredients like purple carrots,

watermelon radishes or kohlrabi and it’s

amazing.

“Most of us just don’t realize everything

that grows in our backyard.” said Ungaro.

“Then we switch it up. Next week, they

bring in their own ingredients.”

From beautiful countertops around the

barbecue to tiles and stones by the pool or

pond, granite has people talking this summer.

While stone dealers rave about granite’s

lasting quality in the elements – not only is

it heat and scratch resistant, stones are also

hard to stain – homeowners fall for its looks.

Outdoor kitchen countertops are intensely

coloured with patterns of remarkable veining.

Natural granite blocks show off grains and

mineral specks in every earth tone imaginable.

At work and play, there’s plenty to appreciate

when granite is in the picture.

“I would recommend light and dark

elements,” Surrey design professional Danielle

Howell says, advising that in setting up outdoor

spaces, let elements of contrast play off each

other to “add visual balance.”

Finding light and dark granite that works with

the yard and house is not difficult – the market

in the Lower Mainland is healthy and growing.

About 1,500 polished choices exist for counter

tops, barbecues and bars. In an outdoor kitchen

area, granite’s many mixes of grey, black, brown,

green, orange, rust, gold and even pink inspire

homeowners to define their

own visual balance.

“Contrast keeps things

interesting,” Howell

explains. Interest is behind

the trend toward distinctive

colours, something she sees at work with

Surrey’s Hari Stones Limited. This is one of

many Lower Mainland companies bringing in

exotic granite from the eastern coast of South

America, South Asia and several European

shores.

When choosing tiles for the floor, steps or

patio, put contrast in the passenger seat and let

unity do the driving.

“Focus on a colour that will tie all the

elements around the space together,” Howell

suggests.

Small showroom sample squares are great

to hold for comparisons. Getting a

sense of the overall character in a big

piece like a worktop or table needs

more full-size thinking. Make time

to visit a warehouse and see how the

patterns play out in an entire slab.

“Each granite slab differs in hues, flakes and

speckles,” Howell said.

The differences found among various granite

slabs are a result of the stone’s journey from

the centre of the earth. All granite was once

molten, oozing magma, moving in channels

in the earth’s crust, it eventually stilled, cooling

ever so slowly, creating the treasure of patterns

and colours. Patterns are formed by different

levels of feldspar, quartz and mica.

There are a handful of coveted colours from

Canada in the granite market.

“Cambrian black is probably the most

popular granite in brushed form,” says Robert

Bordt of Surrey’s Apex Granite and Tile

Incorporated.

This is North America’s best seller for rough

blocks, slabs, tiles and construction-ready

granite. While the polished variety works well

in countertops, it is slippery when wet, Bordt

cautions. Brushed is rougher, and that texture

works well everywhere besides countertops.

Massive amounts of raw granite are quarried

in B.C., by the thousands of tons, in the

mountains around us.

The stone has a long history with both

builders and sculptors. A quarry discovered as

early as 1887 cut granite from the Sunshine

Coast, and a Nelson Island location provided

the stone used to build the B.C. legislature in

the late 1890s.

One of the ruling natural granite monoliths in

the world is about 200 kilometres inland. The

700-metre Stawamus Chief is thought to be the

second largest in the world.

“When I see that cliff from the Sea to Sky

Bordt admits, even after a lifetime exposure to

stone. Robert and his brother, Doug, have been

in the business since they were teenagers, and

are well aware of the stone’s appeal.

“People have a fascination with granite,” he

says. “Homeowners are drawn to it.”

Granite is abundant, stylish and lasting. That

allows homeowners to design a high-style

A backyard should be a place of comfort,

peace and relaxation, where homeowners

can kick up their feet and truly enjoy the

sanctuary they’ve painstakingly created.

Quite often, however, a backyard can be

anything but tranquil, where noise from nearby

roads or loud neighbours can quickly turn an

enjoyable afternoon into a headache.

The addition of a water feature to a yard can

not only help hide some of the unpleasant

background noise in the neighborhood, it can

also help to create a tranquil, calm and unique

atmosphere, transforming a backyard into a

peaceful oasis.

According to Karen of Western Water Farms

in Langley, there are water features available for

yards of every size, and the options range from

moderate to extravagant.

“You could create something with as little as

two square feet; there are many fountains and

ponds that are pretty small,” she said, noting

that on the other end of the spectrum,

lake-sized backyard ponds or several ponds of

different sizes feeding into each other are

examples of some larger-scale ideas.

“The opportunities really become endless.”

With the addition of a water feature comes a

little extra work and responsibility, however –

something homeowners should be prepared

for before they decide to go ahead with any

installations.

Fish ponds are a popular choice, but require

a filtration system as well as a well-maintained

ecosystem in the water in order for its

inhabitants to stay healthy. Homeowners who

are away for periods of time will also require

someone to look after the fish in their absence.

Waterfalls are not only relaxing but can also

be quite decorative, and there are many

pre-fabricated waterfall and stream kits available

that don’t require nearly as much maintenance

as a fish pond.

Fountains are probably the easiest water

feature to add to any yard, with dozens of

varieties to choose from including tabletop,

wall-mounted, barrel fountains ‚ even those

with built-in lighting. And if a homeowner is

planning on being away for any length of time,

a fountain can simply be unplugged. i

Whether doing cannonballs off the

dock or floating leisurely on a brightly

coloured pool noodle, water is a source of

endless entertainment.

And like any giant playground, the right

equipment makes all the difference.

Adam Smith at Performance Watersports in

Surrey agrees. In addition to new and improved,

ultra-lightweight life-jackets, he says there are

a few must-have accompaniments for water-

bound families this summer.

“For boats, big, multi-rider tubes are always

really popular because you can tow three to four

people at a time,” he said. “They are way more

fun for the kids and easier for the parents.”

He also recommends families get a board

for wakesurfing, a water sport that is gaining

popularity with all age groups.

“Wakesurfing has really taken off,” he said. “It’s

much easier on the body than wakeboarding.

You can get mom doing it, dad doing it. People

of all ages are really getting into it.”

For younger children learning to ski, Smith

suggests investing in a good pair of “trainers” –

water-skis with the tips attached.

“They’re super beneficial in teaching kids how

to get out of the water,” he said. “They basically

do the hard work for them.”

I was astounded (but not surprised) to learn, researchers found that school-aged children shown brand-name logos are able to identify hundreds of them.

When shown images of nature and plants many of them found in their own backyards, however, they were unable to name even 10.

With the increasing amount of time spent in front of screens, the divide between man and nature widens deeply.

It’s time to reconnect with nature!There is infinite wonder around us to see

and experience. In even the smallest portion of grassed area, there is a tiny world just begging to be discovered.

One thing Wee One and I love to do is explore – we go on many adventures. One day, we found ourselves at one of our usual stops, the Langley Centennial Museum. We love to lose ourselves in glimpses of the past and seek inspiration, however, on one visit, we were drawn to the gift shop looking at books.

A lovely book caught my eye, 109 Walks in British Columbia‚ Lower Mainland by Mary and David Macaree. This was a superb find. More adventures to plan, as the pages are filled with inviting spots to look for more wonders.

Then it was off to another very fun place, where kids can run, roam and learn about the birthplace of B.C.; the Historic Fort in Langley. Wee One has spent hours running, looking out at the Fraser River and taking in the beautiful surroundings and being entertained by the staff eager to teach him what they know.

Rounding out our adventures, we acquired a notebook, birding book, a pair of binoculars, a magnifying glass – it is amazing to see his face light up when he makes a new discovery. I pop out my iPhone to Google things never seen before – while technology is a powerful part of our everyday, you really can also use it to enhance time spent outdoors.

Can’t wait for the next adventure day. I’ll have my books, picnic lunch, tools and iPhone charged and ready to go. I love how technology can be a part of, and actually enrich, these outdoor experiences.

As the only skin-tightening machine of

its kind in the Fraser Valley, New Beauty

Institute owner Caree Ludwar describes the

Titan by Cutera as her “absolute favourite – the

gold standard for lax-skin treatments.”

Using safe infrared light energy delivered

through a sapphire tip, Titan comfortably

tightens sagging skin on not only the face but

also other areas of the body, including the

abdomen and thighs.

About an hour before the treatment begins, a

topical numbing cream is applied to the

targeted area, allowing the patient to remain

comfortable throughout the procedure.

As the dermis well below the skin’s surface is

heated by the infrared light, long-term collagen

skin’s outer surface is protected through

While anti-aging technology has evolved

considerably over the past few decades,

one treatment has become a household

name in the battle against wrinkles –

Botox Cosmetic.

As one of the many non-surgical options

offered by Dr. Mathew Mosher at YES

Someone who understands the whole

spectrum of anti-aging options available –

from simple facials to surgical procedures

– is the best candidate to administer such

treatments, he said.

Mosher generally recommends his

patients return every three to four

months. While Botox Cosmetic isn’t a

permanent fix, Mosher noted a common

misconception – that if you stop using

Botox, the signs of aging will suddenly

catch up with you – is simply not true.

While British Columbia is well-known for its breathtaking

mountain ranges, challenging hiking trails and diverse

wildlife, this province is also home to dozens of beautiful beaches.

Whether it’s surf you seek, or just a peaceful spot to relax in the sun, the

perfect place for any beach lover is not hard to find. Travel expert Claire

Newell has shared with Indulge her picks for B.C.’s top 10 beaches.

Located in the West End, English Bay is one of the most popular swim-

ming, sunbathing and sunset-watching places in Vancouver. There are

many beaches that face English Bay, such as Third, Second and Sunset

Beach. On the south side of English Bay, you will find Jericho Beach,

Kitsilano Beach and Spanish Banks. The seawall travels all the way down

English Bay and onto renowned Stanley Park. This well-known area is

loved by locals and remains a tourist attraction for all visitors. You will

find loads of cyclists, walkers, runners, joggers and rollerbladers.

Qualicum Beach, about 12 kilometres north of Parksville beside Hwy

19A, spreads along the front of one of the most pleasant small towns on

the east side of Vancouver Island. Pause here at any of the beachside rest

stops and smell the salt air intermingled with the perfume from the many

private and public floral displays. From this point northwards, the pace

of Vancouver Island slackens noticeably. Not that the southern portion is

any more hurried, it’s just that there are more people and more

congestion. From here north, there is less traffic, and what habitation

there is clings to a narrow, coastal plain beside the ocean.

It is a favourite for both locals and visitors. The mile-long beach extends

along Lakeshore Drive and is backed by motels, restaurants, a playground

and splash park. This beach is also walking distance to downtown, Loco

Landing amusement park, and an excellent skateboard park. The beach is

lined with shade trees, the water is pleasantly shallow and there are water-

sport equipment rentals available as well.

You can spend days walking the beaches between Ucluelet and Tofino,

and in the process discover why some folks spend their whole lives caught

up in the surf and tidal rhythms here. Radar Beach, Long Beach, Combers

Beach, and Wickaninnish Beach run successively from north to south and

stretch for 25 km between Cox and Quisitas Points. Together, they

comprise the Long Beach unit of beaches, and the most visited

portion of the park. Despite its popularity, Long Beach remains a magical

place of sand and surf, sea lions and starfish.

Locarno Beach begins just north of the Jericho Sailing Centre. A

pedestrian and cycle path runs beside the beach from here west to Span-

ish Banks. The views here are a unique mix to say the least. You will see

the Vancouver city skyline, majestic North Shore mountains and the

powerful Georgia Strait all at once. If you’re looking for seclusion, there

are tucked-away places along nearby Spanish Banks’ sheltered beach.

In the South Okanagan, Osoyoos Lake is famed

as the warmest freshwater lake in Canada, with an

average summer temperature of 24°C/70°F and is

most popular for wakeboarding, waterskiing, tubing

and swimming. Gyro Beach is the largest beach in

Osoyoos and is the site of many popular

summer events. You’ll find plenty of shade trees,

warm shallow waters and closed-off swimming

areas, making it a perfect place for family trips.

Located at the North End of Yew Street, this is

definitely a happening place geared for the younger

crowds. There is a lovely outlook spanning from

open bay, to the North Shore mountains and Stanley

Park. Many locals definitely hit “Kits Beach” to see

and be seen, and if swimming in the ocean is not

your thing, try the saltwater outdoor public pool.

This seaside community is clustered around an

eight-kilometre sandy beach and the warm

shallow waters of Semiahmoo Bay and is flanked

on the south by the Canada/US border and Blaine,

Wash. White Rock Beach is famous for its 475-metre

pier, its 2.5-kilometre beach promenade and, of

course, the large white rock, a glacial deposit from

the coastal range weighing in at 486 tons.

This broad, safe and sandy beach is one of the

main attractions in the Comox Valley. This great

family destination also features spacious private

campsites, group camping facilities, a playground

for the kids, hot showers and a large picnic area

overlooking the water. For hikers, there are a series of

lovely trails winding through lush forest close by. At

low tide, the beach becomes covered with rich tide

pools, perfect for observing a variety of marine life.

Kal Beach is one of the most easily accessible and

one of the most popular sandy beaches in the area

of Coldstream which is located south of downtown

Vernon in the North Okanagan Valley. The 300-foot

sandy beach is a popular destination in the region

for swimming, volleyball, picnicking and boating

with hiking trails nearby. i
