the end of 1571, Cabrera was named adelantado to explore territories in the south of Potosí.

• on July 6, the expedition chose a location on the banks of the Suquía River, around 400 km south of Santiago de Estero. Given the privilege of naming the settlement, Cabrera named it Córdoba de la Nueva Andalucía, in honour of his wife's birthplace.

Asado – Barbecue • Our version of the barbecue is called ASADO. People

usually get together to eat asado on weekends. Besides the meat itself it is very common to eat spicy sausages (chorizos) and sweetbreads (molleja) . This is called the famous Parillada mixta. Bread and salads are the perfect side dishes. During the week days, we prefer milanesas. (breaded meat filets).

Alfajores • The alfajor is a traditional and very popular

sweet layered pastry which reminds a yo-yo. It's commonly filled with dulce de leche (caramelized milk) and coated with chocolate. The most famous alfajores in Córdoba are made in Estancias del Rosario a place in the

Small Hills of Córdoba.

EMPANADAS• The traditional cuisine is called criolla and it is

represented by the empanadas. (salty pastries which can be filled with meat, chicken, ham and cheese. The regional cuisine offers dishes such as Matambre (rolled stuffed steak cut in slices and served cold) and Locro .

Mate Mate is the most traditional drink and it is very popular. It's similar to tea but it´s more a way of socializing than a plain drink. The most common way to prepare it is to fill the mate with the leaves of a plant called yerba, put a silver straw on it (bombilla) and then put hot water. Some people also add some sugar.
