Making Lunch FUN!It’s back to school time and a great time to take a look at some fun twists and turns on thattraditional lunch box fare! So, whether you’re sending your kids back to school or looking forsome healthy lunch choices with a twist, this month we’re going to explore some ways to makelunch more FUN!

1. Make a change from basic bread! Peanut butter sandwiches get a giant step up in flavorwhen made with sliced breads such as banana, cinnamon raison or apple cinnamon breads! Look to the bakery section of your local grocer for sweet varieties or try simple box mixes. They’re easy, affordable and delicious!

2. Kabobs rock! Use fun plastic skewers or simple drinking straws or stirrers to create colorful,yummy kabobs using fresh fruits such as grapes, strawberries, melon balls, apple slices,blueberries and more. Add a small container of strawberry yogurt, cream cheese dip orpeanut butter for dipping! You can also make kabobs from cubed chicken, turkey, ham, andcheeses. Wrap kabobs in plastic wrap to keep fresh! You’re even sure to get some helpersmaking these lunchtime favorites!

3. Pita pockets. Tuck sliced vegetables, turkey and cheese into a pocket with a small dollop offlavored cream cheese for a terrific pocket lunch!

4. Roll it up! Choose delicious flatbreads, tortillas, or just cold cuts—layer meat, cheese, andlight cream cheese to hold it all together. Or try a vegetarian variety with jam or strawberrycream cheese, sliced or crushed nuts, and sliced strawberries. Tightly wrap in plastic wrapovernight, then you can slice in the morning and place in container for easy munching!

5. Totally tubular! A great idea for small sub sandwiches is to use thin baguette bread orItalian Ciabatta breads and add your favorite fillings. Wrap in plastic. Slide into a clean,plastic tennis ball tube to keep it from getting crushed. You can fill the end with a baggie ofpopped corn, your cold drink or baggie of baby carrots! Great for “on the go” — and aneco-friendly way to re-use that container!

6. Lettuce wraps. Baby lettuce leaves make a great “wrapper” for dollops of tuna, turkey, orseafood salads. Chopped leftover chicken and a splash of your favorite dressing works too! You’ll find mini containers at the store to pack your salad/dressing separately and you cansimply slide the leaves in a baggie. Hummus, sprouts, sliced almonds, dried cranberries orcottage cheese also make great topping extras!

Whatever you pack — think “outside the box” a little this year for great ways to keep kidsinterested in eating right! Freeze their juice boxes overnight to help keep their food cool untillunch and enjoy!

Eating out is quickly becoming a luxury item for most families. This month,let’s take a look at some great ways to save at restaurants!Share a meal. Many restaurant portions are big enough for two, especially if yousplit an appetizer as well. Share a meal which is good for the budget – and thewaistline!

Early Birds. Many establishments offer lunch or early bird specials. Call aheadfor daily deals to learn the best places in town to eat early!

Clip, print and save. Check your local papers or look online to websites likewww.restaurant.com to find restaurant coupons or discounted gift certificates. Many now invite you to join their dining clubs and will even email you monthlycoupons!

New restaurants. Newly opened restaurants are eager to establish their customerbase. Keep an eye out for grand opening specials and advertisements!

Ask for a To-Go Box! Take those leftovers home for lunch the next day. What agreat way to turn a $20 restaurant bill into two $10 meals!

Mediterranean WrapTry this simple recipe for a great meal!Ingredients: 2 med. Zucchini, cut lengthwise into 1/4” slices 2 teaspoon olive oil 1/8 teaspoon salt Pinch freshly ground pepper 1 cup hummus 4 pieces whole-grain wrap bread 1/4 cup pine nuts 2 large tomatoes, sliced 2 cups baby spinach leaves 1/2 cup sliced red onion 1/4 cup fresh mint leaves Preparation:Preheat the broiler. Discard the outermost slices of zucchini and brush the rest withoil; dust with salt and pepper. Place on a baking sheet and broil about 3 inches fromheat for 5 minutes on each side, or until tender and slightly browned.

Spread 1/4 cup hummus on each wrap and sprinkle with 1 tablespoon pine nuts.Top with a few slices of tomato and zucchini, 1/2 cup spinach, a few sliced onions,and 1 tablespoon mint. Roll up and cut in half on a diagonal.
