NATIONAL DAY AT ONE°15The Club is celebrating our nation’s 52nd birthday in a grand fashion. Do join us at the Red & White Party happening on 8 August at Boaters’ Bar. On this occasion, we have also lined up a range of food and drink promotions. At LATITUDE Bistro, take a nostalgic culinary journey down memory lane and sample our chefs' interpretations of local dishes. Over at WOK°15 Kitchen, Singapore's favourite seafood dish, the Chilli Crab, is on promotion at $6+ per 100g. For tipples, National Day is the perfect time to try the Singapore Sling at Bar Nebula. You can find all these and more on pages 44 and 45.

SAILING TOWARDS OUR 10TH ANNIVERSARYFollowing closely behind National Day is ONE°15's 10th anniversary celebration happening on 10 September. An exciting birthday bash is in store and we welcome your family and friends to join us for a very special celebration! Turn to page 32 for a sneak peek of what's in store.

We are also commemorating this milestone by lining up a number of water activities that reflect the spirit of the sea. For those who wish to learn a new water sport, sign up for the wakeboarding class. Or if you just want some fun under the sun with the family, RSVP for The Great Kayak adventure or the Sea Sports Extravaganza. More information can be found on page 31.

UPDATES AT THE CLUBWhile our 10th anniversary is a meaningful time for us to look back on all that we have achieved, it is also a good time for us to reflect on the ways we can improve. Over the last few months, we have done a series of maintenance works to enhance your experience at the Club. This included retiling our swimming pool, resurfacing the tennis courts and installing new window panels in our Hill View Rooms. I would like to thank all Members for your patience during the works. Do swing by the Club to enjoy our new and improved facilities.

As a Member of ONE°15, your privileges extend far beyond our Club facilities. Members also enjoy access to a top-tier selection of Singapore’s best private clubs. Hence, I am pleased to let you know that visiting our Affiliate Clubs is now more convenient. Members no longer need to obtain a letter of introduction – simply bring along your membership card to visit The British Club, Tower Club and Laguna National Golf and Country Club. Aloft at Hermès is an art space located on the third floor of Singapore’s Hermès flagship store. The space is one of five art spaces around the world run by the Fondation d’enterprise Hermès, which supports a variety of arts initiatives and develops its own exhibitions. This July, Aloft at Hermès presents its first exhibition of contemporary ink paintings with Oneness by Minjung Kim. Mirroring the classic Chinese literati paintings from the Song and Yuan dynasties, Kim’s works reflect a state of Zen – a perfect marriage of spiritual and physical unification. Her watercolour works depict misty, meandering mountains that take no specific shape, but rather flow and ebb like the waves of the ocean. She will take the visitors through a journey of transcendence and allow guests to enjoy a hypnotic cultural experience. Oneness is now showing at Aloft at Hermès till 30 July. It is open to the public with no admission charges.

On board the majestic vessel, Longitude caught up with Vincenzo Poerio, CEO of Benetti, for a chat on the superyacht industry.

How has the past few years been shaping up for the custom superyacht industry?The superyacht industry is not a huge market but it is a very niche market for wealthy people. In a year, we build around 14 yachts. But what is growing in the market now is the size of the yachts. Bigger boats are under construction; the current average has reached 55m. We also have three yachts that are more than 100m in production. More people are buying bigger boats, which is different from how it was around three years ago.

What are your thoughts on Asia as a superyacht destination?Ambrosia was built ten years ago and is Asian-owned. It is a huge boat. This shows that ten years ago, Asians were already interested in the superyacht life. But it’s not just about building the yacht. Because with the yacht, where can you go? What is important for Asia to do now is to define yachting places for cruising. In Europe, we have the Mediterranean. In the US, we have the Caribbean. In Asia, we need to find the best area for people to experience the superyacht life.

It is also important to have proper infrastructure. I see that Arthur Tay of ONE°15 has a very good vision of building marinas all over Asia. This is a good way forward. Once proper infrastructure is in place, the superyacht market will grow further.

With clients from all over the world, what do you think is the main difference in the boating experience for Europeans and Asians? The biggest difference I notice is Asians prefer yachts with more indoor than outdoor space. Maybe it is the climate – the weather is hot and humid so indoor space is important. In the Mediterranean, you get all four seasons so air conditioning is not necessary. This changes the design of the boat. Superyachts that cruise in the Med have completely open decks. If you look at Ambrosia, it is very big on volume because there’s more enclosed areas than outdoor areas.

Speaking of yacht design, what are today’s current trends?Benetti has 150 years of history and what we noticed is the shape of yachts has been changing tremendously. In the past, yachts used to be squarer. Now with new technologies, you can get more intricate and interesting shapes. In addition to that, windows on yachts used to be smaller. But today, we have big floor to ceiling windows facing the sea. In a sense, technology now allows us to bring the sea into the boat.

What has been Benetti’s key to success all these years?Just like many other businesses, our people are the key to our success. It takes a long time to finish building one superyacht, around three and a half years. And during these three and a half years, there are hundreds of people working together. The sales people, design people and production people. Together, we are building a dream. A lot of love and passion is put into building a yacht.

Where is Benetti headed next?We are now moving towards focusing on quality over quantity. We are not interested in building more yachts for the sake of building. The fact that even after ten years, Ambrosia is still considered a beautiful and technologically advanced superyacht says something. So we intend to grow not in numbers, but in quality.

But it’s not all bad news – we also witness the ocean’s breathtaking beauty, power and energy.

This team of divers felt it was time to give something back. Pulau Sibu is a small island located in the Johor Marine Park, just a three-hour drive from Singapore. Situated at the northern point lies Rimba Resort where guests come to snorkel, dive and enjoy the atmosphere. At Hi-Tide Divers, we have the ocean at heart, sharing our passion with anyone who will listen. Living on an island and diving day in and day out, it is only natural that we become ambassadors of the sea. We recognised the need for dedicated efforts towards conservation and knew it was in our power to make a change.

After a year's worth of research and trips to various organisations around Malaysia, the Rimba Conservation Crew (RCC) was born.

THE L AUNCH OF PROJEC T PENYUOne of our biggest projects this year is the start-up of our turtle hatchery, Project Penyu. Project Penyu aims to increase the turtle population in the area. Sea turtles face all kinds of threats – from crabs and monitor lizards to pollution and poachers. Nests are dug up, the eggs removed and either shared amongst members of the community or transported to market where they can sell for RM4-5 per egg (SGD $1.30/3.80.) Extinction is a real possibility for these ancient creatures, with Greens and Hawksbills both featuring on the endangered lists. Fortunately it isn’t too late. Hatchery programmes and marine protected areas have helped to curb their decline, with populations in Sabah showing remarkable recovery rates.

Hatcheries are essentially a safe space for eggs, allowing them to incubate under natural conditions without the risk of being poached or eaten by wild animals. Nightly patrols are carried out and the eggs are carefully transported back to Rimba and reburied. After two months, the babies hatch and once we have collected the data we need we immediately release them, instinct driving them towards the sea. It is imperative that the nests are found and relocated almost as soon as the eggs have been laid and for this we needed transport.

ONE°15 LENDS A HANDDue to the topography of the island, many of the smaller beaches on Sibu are only accessible by boat. After posting some flyers at marinas asking for help in our quest for a small boat, ONE°15 answered our prayers. We are incredibly grateful to ONE°15 for donating a rib dinghy to the RCC which will enable us to carry out our patrols. The dinghy will be taken out around the island on a nightly basis to look for nesting turtles or freshly laid tracks that indicate a new nest.

OUR ENVIRONMENTAL EFFORTSWith the environment in mind, we have taken big steps within the resort and our dive centre over the past year. We replaced the sales of plastic bottles at the bar with filtered water dispensers, stopped serving plastic straws and ditched as much single-use plastic as possible in the restaurant. We use natural products in the spa and are looking to have natural soaps in the chalets.

Hi-Tide Divers has also gone “eco”. We are taking part in several exciting programmes. In May, we conducted surveys on our house reef to assess the health of the corals and marine life. Awareness is also a huge part of what we do. The aim is to inspire and educate our guests, school children, companies and the local community on the importance of conservation. The Conservation Club is run daily to give children an idea of our impact on the planet and how to be a little kinder to the environment. We intend to extend this to the school in our local village, while also teaching them to snorkel and dive. After several discussions with the local community, we realised that it would be an uphill battle against cultural beliefs and socio-economic priorities. But with the new generation rising, we hold strong hope for the future.

Taking the ONE°15 Brand Beyond Our ShoresThe Club envisions the ONE°15 brand as a globally recognised name synonymous with world-class marinas. With this in mind, the Club has established a network of ONE°15 branded marinas in the region and beyond. The ONE°15 Brooklyn Marina in New York, USA is owned and operated by ONE°15. Three other marinas are also currently under construction – ONE°15 Puteri Harbour in Johor, Malaysia, ONE°15 Marina Guishan in Zhuhai, China, and ONE°15 Pantai Mutiara Marina in Jakarta, Indonesia. Not only has this expansion made a name for ONE°15, it has also made a name for Singapore.

As the Club charts continuous progress over the years, it remains mindful of the need to protect the environment. ONE°15 strives to operate a clean marina. It has embarked on several eco-initiative projects and in 2015, the Club was named Green Maritime Company of the Year at the Asia Boating Awards 2015. More recently, the Club became Southeast Asia’s first IS0 14001 accredited ‘Fish Friendly’ marina. The accreditation was given to ONE°15 by the Marina Industries Association (MIA) in 2016. In all, these accreditations showcase the Club’s position as a stalwart guardian of the environment.

Growing the Interest in Yachting In a bid to encourage more people in the region to be interested in the yachting lifestyle, ONE°15 has hosted a variety of signature international yachting events. One of them is the Singapore Yacht Show, Asia’s best boat show. It has also organised events such as the SB20 Asian Grand Slam and Asia Pacific Championships. During the festive season, the marina lights up with the ONE15 Christmas Boat Light Parade™, Singapore’s first and only festive water parade. The eventful boating calendar has created a buzzing yachting community. Both locally and beyond, there is now a growing wave of interest in all things nautical.

S ome people say that behind every successful man is a woman. But in Pamela’s case, behind every

successful General Manager (GM) is a great personal assistant. The role is a demanding one, but Pamela has mastered it.

Pamela began her journey with ONE°15 as Assistant Manager of Front Office back in 2007. “The Club was still very new then. Even the system we used for booking the hotel rooms was manual. Can you imagine!” she reminisces. “And with a new club, especially a members club, you can’t afford to make any mistakes.”

Pamela’s meticulousness and hardworking attitude proved to be invaluable. She went on to become the HR and Training Manager before moving on as Personal Assistant to the GM. Amongst other duties, she is in charge of planning the GM’s schedule. It is a task she takes very seriously. After all, a well-planned schedule for the GM means he can effectively run the Club.

Pamela admits that when she first started at ONE°15, she had little knowledge about marinas. It was when the Club hosted the Volvo Ocean Race in 2008 that she got her first taste of yachting. Now, her favourite moments at ONE°15 are during the Singapore Yacht Show (SYS) season.

“The SYS is our signature event. The mood is always so exciting,” she says with pride. “Preparations for the show are not easy. But at the end of it all, you get a sense of

For Alan, working at LATITUDE Bistro had not always been the plan. But once Alan started

when it first opened, a decade flew by in a blink of an eye. And young Alan who entered the Club as Captain of LATITUDE Bistro is now a Supervisor, in charge of maintaining the day-to-day operations of the restaurant.

Alan recalls with a laugh how it took him two months of consideration before he finally took up the job. “I still remember, the land opposite the marina was barren. But now, it is a bustling place lined with beautiful houses and gorgeous boats,” Alan reminisces nostalgically.

"H ello!” the suave looking father of three boys greets his fellow colleagues with

a bright smile as he arrives dressed to the nines in a suit and tie. They greet him back cheerily, acknowledging his dapper outfit by cheekily raising eyebrows, teasing him for putting on a jacket. But that is Azhar for you – a responsible team member, always putting his best foot forward.

Having been with the Club for 10 years, Azhar, the Assistant Manager for Security, is a well-liked figure. Probably the hardest worker in the room, Azhar was already taking up roles outside his job scope before he was promoted to the role of Assistant Manager. Ask him

To the staff at ONE°15, Pamela is more than a colleague. She is also a friend, whom many turn to for advice when the going gets tough. “I see my colleagues more than I see my family, to the point that I actually call the Club my first home,” she shares. “I know what to expect during the Club’s challenging seasons, so newer colleagues come to me for advice,” she reveals.

As Pamela looks back at her 10 years with ONE°15, she feels grateful to have been a part of the pioneering team. “It’s like seeing the Club grow from a baby to adulthood. When we first opened in 2007, we had a lot of issues to iron out. Sometimes it made you want to cry!” she remembers fondly. “Today, I feel proud of all that we achieved,” she concludes with a smile.

Having been with the Club for as long as he has, Alan has not only watched how ONE°15 has evolved over the years. He has also formed close bonds with the Members that patronise the Bistro. Alan shares that the enjoyment he gets from serving and establishing good relationships with Members is his motivation at work. Some of them patronise the Bistro three to four times a week and he regards them as close friends. “They’re almost like family. The children even call me uncle,” he chirps happily. Alan beams as he adds on, “I know what some of their favourites at the Bistro are by heart. Even for the children!” Evidently a person who takes extreme care in his job, Alan puts in double

“It is the one thing that has motivated me to work 10 years at ONE°15,” he answers eagerly. As a security officer for the Club, he strives to ensure the safety and security of the Members and places them in high regard. “I am very passionate when it comes to keeping everything safe. I have been in this industry since my National Service days and it is now a part of me,” he shares enthusiastically.

“Another thing that drives me is the satisfaction I get from making sure that everyone, especially the Members, are safe while enjoying themselves at the Club,” he adds. Azhar’s commitment is

extremely commendable, as his work is not easy.

He recalls that just years ago, the engine room of one of the boats parked at the marina caught fire. Thanks to Azhar’s quick response in informing the relevant authorities, no one was hurt in the process. The fire was put out quickly.

His boyish persona may seem casual at first, but you can see it in his eyes that he means business when it comes to the safety of the Members. “Security and safety is paramount to me,” Azhar insists. It is no wonder then that in 2016, Azhar was awarded a Certificate of Commendation from the Singapore Hotel Association for his efforts in maintaining a safe and secure Club.

He attributes his work attitude to his managers, Ryan and Liu Rui, whom he is extremely thankful for always giving him useful advice. Alan says he was once ill-tempered and would always be too quick to blow his top. He is also grateful to his colleague Jennifer, whom he regards like a daughter, for being there to always calm him down whenever he loses his cool.

But Alan has since mellowed down. Always looking out for Members, Alan is on a mission to personally get to know as many of them as he can.

A businessman, an internationalist and a humanitarian – those are some of the words that describe Graeme. Taking a look at his accomplishments, you can’t deny

that Graeme has had an illustrious career. He has spent much of his life pioneering and managing world-class global mining, energy and infrastructure operations in Australia, Asia and Africa.

Graeme counts developing PT Adaro Indonesia, the largest open cut coal mine in the Southern Hemisphere, as one of his biggest successes. But despite making a name for himself in the coal mining industry, Graeme reveals that that hasn't always been his plan. Back at the University of New South Wales, Graeme had studied sociology. “It just goes to show that you always end up doing different things in life,” he says with an easy smile.

Today, Graeme, an Australian-born Singapore citizen, is the Chairman and CEO of IntraAsia Capital, a holding company based in Singapore. It has four areas of interest – real estate, agriculture, financial services and energy. Amongst other businesses, the company owns a coal mining operation in Tanzania. In Mauritius, the company is growing and producing Vita Rice – a form of healthy, arsenic-free rice with a low glycemic index.

Having businesses in different parts of the world is Graeme’s favourite aspect of his job. “I constantly live in aeroplanes. I travel a lot and I believe greatly in meeting people from around the world,” he says. “As an internationalist, I believe in the importance of globalisation. Especially for a country like Singapore, it’s important to participate in global investments to expand the future of the country.”

A busy schedule has not stopped Graeme from investing his time in humanitarian projects. He has served as the Chairman of the Humanitarian Indonesian Foundation, working on bringing free cataract operations to the poor. Graeme has also established the Mbalawala Womens Group in Tanzania that aims to achieve social equality by giving women the opportunity to learn new skills. In the Mauritius, Graeme is the Chairman of the AfraAsia Foundation. He hopes to integrate children from troubled families into school systems.

“The kids in Mauritius with troubled backgrounds tend to be neglected. There is no incentive for them to go to school because no one is pushing them to,” he explains. “We have buses to take the children to school everyday. My principal desire is, and although I may not be alive to see it, is to get these children to become the prime ministers of Mauritius,” he continues. “Because I believe that children from underprivileged families, once they get over the hurdles, are some of the most dynamic people.”

For Graeme, getting involved in humanitarian work is simply a way for him to give back to society. “I don’t come from a wealthy family. I worked very hard to be as successful as I am today,” he reflects. “In my family, there was always a strong emphasis, on me and my brothers, to always do something to help people.”

When not busy with his business or humanitarian work, you can find Graeme outdoors, either engaging in a game of tennis or exercising. In fact, Singapore’s tropical climate is one of the reasons why he decided to call the island his home. “I don’t like the cold,“ he shares candidly.

The perfect complement to his outdoor lifestyle is a membership with ONE°15, of which he has been a member for the last ten years. Not to mention, Graeme is also an avid boater. “I enjoy chartering boats for special occasions like birthdays,” he shares. “A charter is also perfect for business meetings, because out in the sea, there’s nowhere else you can go.”

Having been a member of ONE°15 from day one, Graeme has had the joy of witnessing its growth over the years. He looks back with pride on all that the Club has achieved. “I remember I did a PPCDL course with ONE°15 many years back. And back then you could move freely around the marina,” Graeme reminisces. “Now the marina is packed!”

Extending his congratulations to the team at ONE°15, he says, “The first ten years of a business are always the most difficult. The fact that the Club has grown so much shows that it has made a mark not only for itself, but also for Singapore.”

EXPERIENCE THE TASTE OF MAGIC

A wonderful selection of epicurean delights cooked to perfection. That was what guests at the Experience the Taste of Magic dinner,

hosted at ONE°15 on 18 May, looked forward to. The event is the first epicurean dinner organised by the Disciples Escoffier Asia in Singapore, with proceeds going towards aiding less-privileged students in funding their culinary studies. The dinner was graced by Guest-of-Honour His Excellency Mr. Marc Abensour, Ambassador of France to Singapore.

During the dinner, guests were treated to a seven-course dinner cooked by several chefs from Michelin-starred restaurants who had converged in Singapore

The impressive line-up of master chefs included Emmanuel Stroobant and Jonathan Allaert from restaurant Saint Pierre, Michael Michaelidis from Joel Robuchon, Kirk Westaway from JAAN, Laurent Brouard from Bistro du Vin, Masakazu Ishibashi from Shoukouwa, renowned home chef Felicien Cueff and Koh Han Jie, the winner of the Disciples Escoffier Young Talent Escoffier 2017.

Guests enjoyed a multi-sensory experience as they watched the masterchefs plate the dishes in the middle of the Constellation Ballroom. Accompanying the dinner was a selection of the best French wines.

MINGLING IN THE MARINA O n 26 April, Members of ONE°15 gathered for an

evening of mingling at the monthly Members’ Night, held at Boaters’ Bar against the stunning

backdrop of the marina. The casual setting created the perfect ambience for Members to meet and socialise over food and drinks. Adding finesse to the atmosphere was a ‘live’ band.

When night time rolled over, Members embarked on a sea trial on board Safyna, a 23ft bowrider and Esprit de Paris, a 48ft open top cabin cruiser. The cruise was a memorable experience that gave Members the chance to admire Singapore’s beautiful coastline at dusk.

P romising young swimmers gathered at the Infinity Pool on 29 April, ready to showcase their skills and compete for the top prizes at the Club’s annual Swim/Kick Competition.

The little swimmers swam with great enthusiasm as their families cheered them on.

The morning concluded with an awards ceremony, where winners of the various categories were awarded trophies and medals. Beaming with happiness and pride, the kids enthusiastically posed for photos on the podium. Congratulations to all winners!

H is Excellency Mr. Nathan Wolf, the Ambassador of Mexico to Singapore was invited to lunch at the Club on 5 May. During the visit, H.E Mr. Nathan Wolf was also given a tour of the

Club’s facilities.

O n 27-28 May, ONE°15 Members and their guests hit the courts for the annual Tennis Club Championships. Participants battled it out in three categories – Juniors,

Men’s Singles and Ladies’ Doubles. The Juniors and Ladies’ Doubles were played in a best of three, round robin format, while the men played a knock out tournament.

Emerging as the Men’s champion was Steen Dylandhl Frandsen. Steen snatched the title from Stefan, who put up a strong fight despite unfortunate leg cramps. Erin Lee and Zack Burack clinched the title for junior champions after showcasing impressive skills at their young age.

Winners of the Ladies’ Doubles were Yuko Fujita and Edina Johnson, who outlasted a game of stamina between equally matched teams. This was the first time the Club organised a female doubles match and the ladies enjoyed themselves tremendously.

I t is almost impossible to ignore the popularity of Cantonese cuisine in Singapore. For a country that is a melting pot of cultures with gastronomical

influences from all over the world, Cantonese food holds a uniquely firm ground in Singapore. From the sweltering neighbourhood hawker stalls, otherwise affectionately known as tze char stalls, to air-conditioned fancy restaurants, Cantonese culture is deeply rooted in Singapore. But is this because Singapore is a predominantly Chinese country?

The demand for Cantonese cuisine goes way beyond cultural tastes as it even holds significance in the Western continents today. So how did an Eastern cuisine get so popular all around the world? How did Cantonese food become an international gastronomical culture with branches all over the globe?

FOOD THROUGH THE AGESCantonese cuisine is one of, if not, the most widely served style of Chinese food. However, a common misconception is to disregard their differences and treat all as identical. Cantonese is just one of the eight major styles of Chinese food, some of the others being Sze-chuan, Shandong and Hunan. To draw a relatable analogy, the difference between Chinese and Cantonese fare is similar to the difference between European and Italian cuisine.

The Chinese have many dialects, usually pertaining to regions. One of which is Cantonese, a major dialect in the Southern part of China. And Cantonese implies “Canton,” which is present-day Guangzhou – the birthplace of Cantonese cuisine. The popularity of Cantonese food rose

over time as the locals migrated out of the country and set up restaurants all over the world. Despite the globalisation of Cantonese food, the cuisine nevertheless retains its authenticity.

INGREDIENTS FOR GOODNESSCanton, or present day Guangzhou, has generally a subtropical monsoon climate, typical of south-eastern China. As a temperate region, farmers in Guangzhou enjoy a year-round growing season. And this has influenced the Cantonese fare that everyone enjoys today, one that focuses on freshness and retaining the natural taste. The usage of light and fresh ingredients was and remains the crux of Cantonese cuisine ever since it was introduced. It also contains milder seasonings as compared to other regional cuisines such as Sze-chuan, which is characterised by hot spices.

Exuding such characteristics are seafood dishes, where a good example would be steamed or fried goby fish. Topped off with spring onions, ginger and sometimes a little bit of freshly cut chilli, the dish brings out the natural aroma and taste of the fish itself. Light soy sauce is also drizzled over to complement the au naturel seafood aroma. Seasoning used complement and do not alter flavours drastically. Common ones include sesame oil, rice wine, shrimp paste and the tangy sweet and sour sauce.

Perhaps one unique and distinctive aspect of Cantonese cooking worth mentioning is the usage of offal and organs in dishes that are typically considered inedible by other cultures. Intestines, tongues, livers and even chicken feet are but a few that you would not find in, say, Western food cultures. As queer as eating chicken feet might sound, it is considered a delicious and popular staple in many Cantonese Dim Sum restaurants – delectably known as “phoenix claws,” loved by the young and old alike.

DELEC TABLE DIM SUMDim Sum is not only a classic and favourite, but is a style of Cantonese food that has garnered much popularity around the world. Take a stroll through Chinatowns all around the world and you will find it difficult to resist the allure of piping-hot Dim Sum in bamboo baskets. Dim Sum translates to “touch the heart”, and it does exactly that by sating the appetite. In the past, Dim Sum was just a form of snack. Tea is served to complement Dim Sum served in bite-sized morsels. But its thriving popularity has now changed things. Dim Sum is no longer munched on as an in between supplement, but rather as a complete scrumptious meal.

From tender chicken feet with aromatic fermented black beans to soft and fluffy buns filled with savoury char siew (soft roast pork) that ooze a special sweet sauce with every bite, Dim Sum has everything you are craving for. Be it steamed or fried, sweet or savoury, barbecued chewy meats or shatteringly crispy bean curd skins – there is nothing a proper Dim Sum meal cannot satisfy.

STIR-FRY WITH A BREATHIn understanding Cantonese cuisine, one of its most iconic cooking styles cannot go unmentioned. The cornerstone of Cantonese cooking lies in perfecting a stir-fry. This difficult art of toss-and-fry is more affectionately known in the Cantonese culinary scene as Wok Hei, which translates to “the breath of the wok”. Wok Hei refers to the exquisite flavour infused from the hot wok onto the food during the stir-frying process. This is what makes Cantonese cooking so delicious, and difficult to master.

To provide a clearer picture, Wok Hei is a complex and slightly charred aroma emitting from a plate of piping-hot stir-fry fresh out of the kitchen. Lightly cloaked over the plate of food, this unique flavour and exquisite fragrance is not found in other culinary cultures. Wok Hei can only be explained as a mosh of skills, science and some wok magic. A concept that is slightly abstract, it cannot be seen but can only be smelled.

MAGIC, SCIENCE AND EVERY THING NICE Integral to the production of Wok Hei is a combination of a few factors – a seasoned iron wok, extremely high heat and

the honed skills of a master chef. Achieving Wok Hei is much more complex than merely raising the temperature – even the most accomplished chefs spend years trying to perfect this art. The magic happens as the chef advances from a typical stir-fry, which involves the tossing of food about non-stop, to momentarily allowing the cooking flames into the wok. Only when done in a specific manner will the stir-fry achieve the fragrance and flavour of Wok Hei.

Scientifically, this is known as the Maillard Reaction, a chemical reaction between amino acids and a caramelisation of sugars that gives that extra flavour and distinct smoky deliciousness. It is essential to keep the temperature sufficiently high to achieve this reaction – overcrowd the wok, lose heat and the food might be steamed instead.

Anyone can cook but mastering any cuisine requires time, effort and practice. Wok Hei may just be but one of the many cooking styles in Cantonese cuisine and yet, it adds that spark to an ordinary plate of stir-fry. And that is the reason for the long queues you see lined outside a Cantonese restaurant – where you are guaranteed to have a belly good time.
