Caribbean islands are a little like cupcakes. They comprise the same basic ingredients – sun, sea and

sand – and then assert their individuality with an array of toppings. There are those with a sprinkling of historical sites and golf courses or a sugar coating of rainforests and waterfalls. Then, for some, a swirl of animal encounters and thrill rides is their pièce de résistance. of the West Indies’ agricultural past. The
