At this time last year we launched the in-wines wine Guide an exclusive publication for our Premium Business passengers since then we have released three successful issues of the magazine

we have two very good pieces of news to share with you First the Custom Content Council the leading association for the custom publishing industry in the United states has chosen in-wines as the Best new Magazine of 2010 and honored us with a gold medal at an important ceremony in new York

second this year we will update our wine list and publish a new in-wines wine Guide every three months rather than every four we have made this decision with our frequent passengers in mind and as part of our effort to promote Latin American wine

i invite you to enjoy this issue which covers topics like the mouthwatering winery restaurants of Argentina and Chile the special characteristics of red wines made from grapes grown in the Andes at high altitudes and the experiences of foreign winemakers who have fallen in love with the region

De los cerros de Colchagua el vino Biodinaacutemico Coyam 2008 de Vintildea Emiliana un vino que ha obtenido una gran cantidad de premios y reconocimientos en concursos internacionales y en revistas especializadas es un ensamblaje de syrah Carmeacutenegravere Cabernet sauvignon Merlot Mourvegravedre Malbec y Petit Verdot Presenta aromas a frutos negros maduros que evocan la mora y el casis ademaacutes de una textura sedosa con cuerpo y volumen

Una maravilla para disfrutar con mariscos pescados cebiches y ensaladas frescas es el Nimbus Sauvignon Blanc 2010 de Vintildea Casablanca del valle de mismo nombre seco fresco y chispeante de gran expresioacuten aromaacutetica que evoca frutos ciacutetricos como la lima y el pomelo

in 1989 he tried his first Argentinean wine a Catena Zapata that pleasantly surprised him His second in 1998 was a Comte de Valmont that disappointed him And though his first experiences with Argentinean wine were polar opposites Danish enologist Hans Vinding-Diers chose to remain in that country Forever He fell hopelessly in love with Patagonia and the potential of its wines After spending eight years with one company Vinding-Diers decided to go solo He found a semi-abandoned vineyard with plots that had been planted with Malbec and Pinot noir in 1932 and 1955 The twisted old and very wise vines turned out just 1300 bottles in 2001

Together with noemi Marone Cinzano his ldquopartner in life and warrdquo Vinding-Diers developed a high-quality organic and biodynamic winemaking system This feat is all the more impressive given that his vineyard is located in the heart of Patagonia ndash in other words in the middle of nowhere Their first wine a 100 Malbec called noemia debuted with a rating of five stars from the British journal Decanter nothing less than the highest possible score According to Hans this triumph is just the beginning ldquowe are committed to bringing this terroir and this passion to the bottle ndash and to having as much fun as possible in the processrdquo

in 1989 he tried his first Argentinean wine a Catena Zapata that pleasantly surprised him His second in 1998 was a Comte de Valmont that disappointed him And though his first experiences with Argentinean wine were polar opposites Danish enologist Hans Vinding-Diers chose to remain in that country Forever He fell hopelessly in love with Patagonia and the potential of its wines After spending eight years with one company Vinding-Diers decided to go solo He found a semi-abandoned vineyard with plots that had been planted with Malbec and Pinot noir in 1932 and 1955 The twisted old and very wise vines turned out just 1300 bottles in 2001

Together with noemi Marone Cinzano his ldquopartner in life and warrdquo Vinding-Diers developed a high-quality organic and biodynamic winemaking system This feat is all the more impressive given that his vineyard is located in the heart of Patagonia ndash in other words in the middle of nowhere Their first wine a 100 Malbec called noemia debuted with a rating of five stars from the British journal Decanter nothing less than the highest possible score According to Hans this triumph is just the beginning ldquowe are committed to bringing this terroir and this passion to the bottle ndash and to having as much fun as possible in the processrdquo

separar las claras y yemas de 5 huevos Batir las yemas y agregarles un tarro de manjar blanco o dulce de leche revolviendo bien Aparte batir las 5 claras durante 10 minutos en la batidora eleacutectrica y agregarles de a poco un almiacutebar preparado con 1 taza de azuacutecar granulada y media taza de agua el que se habraacute hecho hervir en una olla hasta que tome punto de pelo (al introducir un tenedor en el almiacutebar este se estiraraacute formando un pelo) Batir el merengue hasta que se enfriacutee Una vez listo mezclarlo con el manjar o dulce de leche con yemas y agregar una cucharadita de esencia de vainilla

en una fuente que pueda ir al horno colocar 12 galletas de champantildea largas y vaciar encima la crema de manjar Dorar en horno bien caliente por unos 4 a 5 minutos vigilando que quede doradito y no se queme servir friacuteo

separate five eggs Beat the yolks and then add 400 grams of white manjar or dulce de leche stirring well Make a simple syrup by bringing to a boil half a cup of water and a cup of granulated sugar and cooking until it threads (if you dip a fork in the syrup threads form when you lift it away) in a separate bowl beat the whites for ten minutes with an electric blender then very gradually add the simple syrup and beat until cooled Fold the egg-white mixture into the dulce de leche custard and add one teaspoon of vanilla extract

Place 12 ladyfinger cookies in an oven-safe dish and pour the dulce de leche mixture over them Bake at 400degF for four to five minutes until golden brown (be careful not to let it burn) Remove from oven and chill before serving
