Estimados amigos,
¡Bienvenidos a bordo! Junto con enviarles un cordial saludo, tengo el agrado de presentarles la edición de agosto de la guía de vinos in-wines, cuyo primer número fue muy bien recibido por los pasajeros de Premium Business.
en efecto, esta nueva publicación de entretenimiento a bordo de LAn, que nació como una forma de celebrar la calidad y variedad de los vinos de sudamérica, ha recibido muy buenos comentarios, lo que nos compromete aún más a continuar ofreciéndoles un producto de calidad.
La industria del vino en esta región del mundo ha venido demostrando en los últimos años un crecimiento y una profesionalización que les ha ganado las preferencias de los consumidores de todo el orbe. Por ello, nuestro esfuerzo en destacar sus avances y novedades.
en este número, les presentaremos cinco nuevos vinos que podrán disfrutar en nuestra carta. Queremos, también, que conozcan algunos de los restaurantes de Lima, Buenos Aires y santiago que tienen una muy buena carta de vinos.
Como verán en esta edición de in-wines, uno de los aspectos más fascinantes del mundo de los vinos es la variedad de temas que se pueden conversar en torno a ellos: la riqueza de su variedad de sabores y aromas. Las diferencias que marca un terroir, conocer nuevos emprendimientos vitivinícolas en valles “no tradicionales” o aprender cómo armonizar un determinado plato con el vino, potenciando sus sabores.

en esta segunda carta del año presentamos este Sauvignon Blanc 2009, EQ Coastal de Viña Matetic del Valle de san Antonio, con sus notas de frutas cítricas y f lorales, marcados tonos minerales y atisbos de ají verde y espárragos.
el Alto Valle de Tupungato nos entrega este Chardonnay 2009 de Bodega Rutini. su color amarillo dorado y reflejos verdes, pleno de frutas tropicales y sutiles notas de vainilla, proviene de los 9 meses de crianza en barrica francesa.
en el río Loncomilla del Valle de san Javier, Concha y Toro produce su Serie Riberas Gran Reserva Syrah 2008, un vino profundo, de gran color con tonos violáceos y delicadas notas achocolatadas.
Un patrimonio del Valle de Colchagua son las viejas parras de Cabernet sauvignon de 55 años de la Viña Viu Manent. sus racimos compactos, pequeños y de bayas muy oscuras dan como resultado el Cabernet Sauvignon Reserva 2007: un vino completo, sabroso, carnoso y de larga permanencia en boca.
esta vez queremos sorprenderlos con este gran Malbec 2005 Primus de Bodega Salentein. es una edición limitada, elaborada solamente con cosechas que producen vinos de calidad superior y envejecidos por 19 meses en roble nuevo francés.
Y, por último, el espumante Baron B, Extra Brut, Cuvée Speciale, elaborado con las mejores uvas Chardonnay y Pinot noir de las zonas más frías de Mendoza, se destaca por su equilibrio y armoniosa elegancia. en tanto, el champagne Louis Roederer Brut Premier, un assemblage (blend) de Pinot noir, Pinot Meunier y Chardonnay, superará las expectativas de los paladares más exigentes.
in this second issue of the year, we present the EQ Coastal 2009 Sauvignon Blanc by Viña Matetic. Made from grapes grown in the san Antonio Valley, this wine has citric and floral notes, marked mineral tones and hints of green chili pepper and asparagus.
The Upper Tupungato Valley brings us Bodega Rutini’s 2009 Chardonnay. its golden color with green reflections, tropical fruit fullness and subtle notes of vanilla are the product of aging for nine months in French oak barrels.
Concha y Toro makes its Serie Riberas 2008 Gran Reserva Syrah on the banks of the Loncomilla River in the san Javier Valley. This deep wine boasts a great color complete with violet tones and delicate, chocolaty notes.
The 55-year-old Cabernet sauvignon vines at Viña Viu Manent are part of the heritage of the Colchagua Valley. The small, compact bunches of very dark grapes yield the 2007 Reserva Cabernet Sauvignon, a complete, tasty, meaty wine with a long finish.
we wanted to surprise you with the great 2005 Primus Malbec from Bodega Salentein. This limited edition wine is made from the highest quality harvests and aged for 19 months in new French oak barrels.
And our last two selections are certainly not the least of the list. The Baron B Extra Brut Cuvée Speciale, a sparkling wine made from Chardonnay and Pinot noir grapes grown in the coldest regions of Mendoza, stands out for its balance and harmonious elegance. in addition, the Louis Roederer Brut Premier Champagne – a blend of Pinot noir, Pinot Meunier and Chardonnay – will exceed the expectations of even the most discriminating palate.

el sentido del olfato es el más complejo en la cata. el vino entrega centenares de aromas que se clasifican en tres grupos: primarios (uva), secundarios (fermentación) y terciarios (madera y/o evolución).
Vía nasal directa Primero, sin agitar la copa, huela el vino introduciendo la nariz dentro de la misma y aspirando lento y profundo. Así se evalúa la intensidad y su finura o tipicidad. en esta fase se liberan los olores primarios y propios de la uva (afrutados, florales, herbales).
Luego, gire con brío la copa e introduzca nuevamente la nariz. Aromas de mayor peso, refuerzo de secundarios y el recuerdo de algunos terciarios, como vainilla, coco, café, caramelo y habanos se desprenden en esta etapa.
Vía retronasalUna vez el vino en la boca, el efecto de la saliva junto a la temperatura bucal lo entibian, y permite la volatilización de otras moléculas aromáticas que son transportadas desde la boca a las fosas nasales.
The sense of smell is the most complex factor in wine tasting. experts have grouped the hundreds of aromas that wines can offer into three categories: primary (grape), secondary (fermentation) and tertiary (wood and/or aging).
Direct Nasal Route First, gently bring the glass to your nose. Breathe slowly and deeply, evaluating intensity, fineness and typicity as the wine releases the primary aromas (fruity, floral, herbal) that are unique to each type of grape.
next, swirl the wine around in the glass and bring it to your nose again. Movement releases the heavier aromas of secondary scents and even hints of tertiary notes like vanilla, coconut, coffee, caramel and tobacco.
Retronasal Route Once the wine is in your mouth, warmed by your saliva and body temperature, other aromatic molecules become volatile and are transported to the nostrils from the mouth.

Para retener los aromas del vino, intente asociarlos a otros registrados en su memoria. Por ejemplo, las notas cítricas y verdes en un Sauvignon Blanc chileno producido en zonas más frías nos hacen recordar al típico olor de la manzana verde. / It is easier to remember the notes that you find in a wine if you link them to other aromas. For example, one could compare the citric and green notes of a cold-climate Chilean Sauvignon Blanc to the scent of green apples.

De a dos / Two by Two
Desde que sebastián Zuccardi comenzó a estudiar enología, tuvo una inquietud personal que muy pronto transformaría en realidad: Alma 4, un espumante hecho a pulso con tres amigos. Un experimento. Una apuesta. Y un resultado que dio de qué hablar, al punto que logró abrir la oportunidad de verter esa energía en el negocio familiar. Gradualmente su padre, José Alberto Zuccardi, se transformó en algo así como un socio: “fuimos desarrollando una nueva relación. Ya no sólo como padre e hijo dentro de una bodega, sino que como dos personas que comparten un proyecto. es importante que los hijos hagan su opción personal de vida y que uno como padre no impida que lo hagan con toda la libertad”, dice José Alberto.
Ahora sebastián, luego de hacerse cargo del viñedo y la bodega de Mendoza, está involucrado en otros proyectos, como los del Valle de Uco, donde generan Malbec, Cabernet sauvignon, syrah y Chardonnay, y también se ha dedicado a probar otras variedades para sus vinos de alta gama: la joyita de la nueva bodega experimental de Familia Zuccardi. Y es que desde la experiencia vital, cada uno aporta distintos puntos de vista. en el caso de José Alberto, los errores y aciertos a lo largo del tiempo; en el de sebastián, una visión nueva sobre la realidad con menos condicionamientos. Y juntos, por sobre la sangre y el apellido, comparten la pasión por la calidad y la innovación.

when sebastián Zuccardi started studying enology, he had a personal goal that he would soon make a reality: Alma 4, a sparkling wine that he designed with three friends. what began as an experiment and a bet had such spectacular results that sebastián was invited to pour all of his energy into the family business. His father, José Alberto Zuccardi, gradually became a business partner. “we developed a new relationship. we weren’t just a father and son working in a winery. we were two people working on a project. it is important for children to make their own life choices and for parents to allow them to do so with complete freedom,” José Alberto says.
Today, sebastián has taken the helm of the Mendoza vineyard and winery, but he is also involved in other projects. in the Uco Valley, he is growing Malbec, Cabernet sauvignon, syrah and Chardonnay. And he has started trying new varietals for his premium wines, the jewels of the Zuccardi family’s new experimental winery. individual life experiences allow each team member to contribute different points of view. José Alberto, for example, has learned from the mistakes that he has made as well as the victories that he has enjoyed over time, while sebastián contributes a new vision with fewer constraints. in the end, more than just a bloodline and a last name, this father-and-son team shares a passion for quality and innovation.

siempre supieron que iban a trabajar juntos toda la vida; que algo los iba a unir. Además de su amor, fue el vino. Caminaron por diferentes calzadas de la enología, hasta que notaron que todo hacía que se acercaran. estudiaron varias opciones: comprar un viñedo, tener un restaurante y abrir una tienda gourmet. Pero el vino ganó fuerza. Juntos crearon Bravado wines y desde ahí nació el primer hijo: Facundo, una exquisita y personal mezcla tinta. Al año siguiente apareció Marina, un sauvignon Blanc hecho con las tripas, sin mucho análisis ni grandes volteretas.
Como no existen jerarquías entre ellos, sino que grandes acuerdos, este segundo vino nació con una inusual fluidez. “Funcionamos democrática-mente. Jamás hemos discutido por más de dos minutos un tema técnico”, aclara Felipe, y agrega: “a diferencia de Facundo, que fue más meditado, este lo probamos, nos gustó, nos encantó y lo hicimos. es como el sauvignon Blanc: potente y fresco”. el futuro los espera juntos: además de seguir con las asesorías a bodegas como Laura Hartwig, echeverría y otros clientes de Brasil y el Reino Unido, este año verán nacer a sofía, un Pinot noir 2009 de Casablanca, y a Tirso, un Carignan 2008 de Loncomilla. Constanza Schwaderer & Felipe GarcíaBravado Wines, Chile
They always knew that they would work together for the rest of their lives, united by their love for each other and for wine. Constanza schwaderer and Felipe García explored different aspects of enology, but they noticed that everything brought them together. so they looked at various options, like buying a winery or creating a restaurant and gourmet shop. in the end, wine had a stronger pull. Together, this couple created Bravado wines, and soon they were celebrating their firstborn: Facundo, an exquisite and unique red blend. The following year brought Marina, a sauvignon Blanc made by instinct, rather than a lot of analysis or fancy moves.
since there were no power struggles or disagreements to work out between them, this second wine came about with unusual fluidity. “we work democratically. we have never argued about a technical matter for more than two minutes,” Felipe notes. He adds, “Facundo was more planned, but we tried this one, we loved it, so we decided to make it. This wine is just like the sauvignon Blanc grape: potent and fresh.” The couple’s future is promising. in addition to advising Chilean wineries, like Laura Hartwig and echeverría, as well as clients in Brazil and the U.K., this year will bring sofía, a 2009 Pinot noir from Casablanca, and Tirso, a 2008 Carignan from Loncomilla. what a lovely family!

Decir que Robert Parker no es ya el crítico de vinos más influyente en el mundo sería algo exagerado. La verdad es que lo sigue siendo, sigue allí, en ese pedestal, dictaminando su gusto por los vinos voluptuosos, potentes, vinos como “bombas” de sabor. Pero también es cierto que su trono comienza a tambalear, y no solamente porque tanto él como sus colaboradores se han visto envueltos en una serie de malos entendidos (o conflictos de interés, mejor llamarlos) sino que también porque el público que ha crecido con él, el consumidor que en un comienzo lo siguió a pie juntillas, hoy está volando con alas propias; está dejando el nido Parker para seguir su propio camino.
Y es normal, por cierto. el nivel de conocimientos del público, sobre todo del norteamericano –la gran audiencia de Parker– ha subido y busca rumbos propios, aunque por cierto que esto es sólo algo incipiente, difícil de medir, pero está en el aire. Los puntajes de Parker siguen teniendo una feroz influencia en mercados nuevos como el chino o el ruso, sin embargo su poder ya no es universal. Y en pro de la diversidad, es bueno que así sea; por el bien de todos, por el bien de Parker.
it would be an exaggeration to say that Robert Parker is no longer the most influential wine critic in the world. He is still up on that pedestal, preaching his predilection for voluptuous, potent wines that are like “bombs” of flavor. However, it is also true that Parker’s clay feet are beginning to show. On the one hand, he and his collaborators have been involved in a series of misunderstandings (or conflicts of interest, to be more specific), and on the other, his audience has grown with him; those who were initially faithful followers are now ready to test their wings and leave the Parker nest.
Of course, this evolution is to be expected. The consumer’s knowledge of wine has increased, particularly in north America, which is Parker’s base. People have begun to follow their own counsel. Though this change is an incipient development and difficult to measure, there is no doubt that it’s in the air. Parker points continue to have a huge influence on new markets like China and Russia, but their power is no longer universal. And in the interests of diversity, that’s a good thing – for all of us, and for Parker.

Dejar remojando la noche anterior 1 kilo de porotos negros o colorados en un recipiente con agua. Al día siguiente, pasarlos por la picadora y mezclarlos con 1 cebolla grande rallada; sazonar con sal. Revolver bien con una cuchara de palo hasta obtener una pasta homogénea. Con esta pasta, formar bolitas y freírlas en aceite (ojalá de dendé, que se extrae del fruto de una palmera brasileña y se puede encontrar en tiendas de delicatessen) bien caliente. escurrir el exceso de grasa sobre papel absorbente y reservar. Para el relleno, triturar en un mortero 2 ajíes picados, 1 taza de gambas secas (si no se consiguen, puede usar gambas pequeñas cocidas), 2 dientes de ajo molidos y 1 cebolla picada. Freír el relleno en un par de cucharadas de aceite por 5 minutos. Hacer un pequeño corte en los acarajé y rellenarlos con las gambas. servir bien caliente.

The night before, soak two pounds of black-eyed peas in a bowl of water. in the morning, run the peas through a food processor with one large onion, chopped. season with salt. stir with a wooden spoon until you get a homogenous paste. Mold the paste into small, slightly oblong balls and fry them in very hot oil. ideally, they should be fried in aceite de dendé, bright orange palm tree oil, which can be found in specialty shops. As you remove the acarajé from the hot oil, set them aside on paper towels to absorb the excess fat. For the filling, use a mortar and pestle to grind two chopped chili peppers, one cup of dried shrimp (or use small cooked shrimp as a substitute), two minced garlic cloves and one chopped onion. Fry the filling in a couple of teaspoons of oil for five minutes. Make a small cut in each acarajé and fill with the shrimp mixture. serve piping hot.

Lavar 4 berenjenas medianas y quemarlas sobre la llama de la cocina hasta que la cáscara esté totalmente quemada, y por dentro queden tiernas y blandas. Dejar enfriar y quitar la cáscara bajo el chorro de agua. Picar la pulpa de las berenjenas finamente con un cuchillo.
Cortar en cuadritos 2 tomates y picar finamente 1 cebolla chica, 2 dientes de ajo y un ramo de perejil. Juntar todo con las berenjenas, mezclar bien, aliñar con sal y pimienta recién molida, y perfumar con semillas de cilantro. Agregar 1 cucharada de tahine y 2 cucharadas de jugo de limón. Revolver y rociar con aceite de oliva al gusto; espolvorear un poco más de perejil picado y servir a temperatura ambiente. Queda muy bueno acompa-ñado con tostadas.
wash four medium eggplants. sear directly over the flame on your gas stove until the skin is totally charred and the meat inside is tender and soft. set aside to cool, then remove the skin under running water. Finely mince the eggplant pulp with a knife. Mince two tomatoes, one small onion, two garlic cloves and a tablespoon of fresh parsley. Add to the eggplant. Mix well. season with salt, freshly ground pepper and ground coriander. Add one teaspoon of tahini and two teaspoons of lemon juice.
stir well and drizzle olive oil on top. sprinkle with a bit more finely chopped parsley and serve at room temperature, with toast points.
