Welcome to Six Senses Vietnam’s newsletter on what was, what is, and what will be… As I sat in school willing the clock to tick, I tried to understand my mother’s remarks to, “enjoy the time I have now, because it speeds up as I age.” I could not fathom this concept; time as a unit of measurement is immutable. Forty minute classes seemed to drag into decades. Now, with such decades materialized, I begin to understand. Time is the pearl of the oyster of which most of us do not have enough, and this becomes infinitely more important as we grow. When the holidays and the new year come knocking we cannot help but take time to appreciate the love of those around us, and give thanks to those who may be less fortunate. Moreno Casaccia took on the responsibility of Executive Chef at Six Senses Ninh Van Bay

as of mid-November. Relocated from his most recent position with Four Seasons Canary Wharf, London, UK, where he worked in management positions since 2005.

Fluent in his native Italian tongue as well as French and English, Moreno is no stranger to the requirements of five-start dining. His first stints throughout Italy and France took him into Michelin-starred kitchens such as the three-starred Paris restaurant Taillevent. He moved to the UK in 2004 and is currently enjoying the new opportunity that is Asia. In particular his farm-to-fork experience will translate perfectly to the resort, as you can see he has already found the extensive organic and screened gardens!
