Ingredients for Pineapple Curry Recipe Pineapple - 1 cup (cut small pieces) Green chillies - 2 nos Chilly powder - 1/4 tsp Turmeric powder - 1/4 tsp Salt -1 tsp Sugar - 2 tbsp Grated coconut - 1 cup Cumin seeds(Jeerakam) - 1/2 tsp Curd - 2 tbsp Mustard seeds - 1/4 tsp Red chillies(Kollamulaku) - 2 nos Curry leaves - 7 nos Oil - 2 tbsp Preparation Method of Pineapple Curry Recipe 1)Cook pineapple pieces along with chilly powder, turmeric powder, green chillies, sugar and salt. 2)Grind together coconut, cumin seeds and curd. 3)Once pineapple is cooked and becomes soft, add the coconut paste and cook for 5 - 10 minutes. 4)Heat oil in a pan or a kadai. 5)Add mustard seeds and when they splutter, add red chillies and curry leaves. 6)Pour this seasoning into the above curry. :- Serve with rice, pulao or biriyani. 1 cup pineapple, crushed or chunks 1 cup coconut milk rice

Preparation:Combine garlic, water, ginger, curry powder, soy sauce and sesame oil in a food processor or blender and process until smooth. Sautee onion and potatoes in olive oil for 4 to 6 minutes, or until onions are soft. Add garlic and spice mixture and allow to simmer for 15 to 20 minutes, covered, stirring occasionally. Add pineapple and coconut milk and simmer, uncovered for five more minutes. Serve over rice.

ANOTHER VERSION1. Diced Pineapple (3 cups) 2. Turmeric (1 tsp) 3. Curry leaves 4. Green Chilly (1 ) 5. Cooking oil (1 tbsp) 6. Mustard seeds (1 tsp) 7. Cummin seeds (2 tbsp) 8. Curd (1/2 cup) 9. Grated coconut (1/2 cup) 10. Salt per taste

Method:1. Blend grated coconut, cummin seeds, curd and water, and keep it

aside. 2. Add turmeric to the pineapple and boil till it cooks. Add the split green

chilly. Add the blended mixture into it and mix well. 3. Cook the pineapple for another 10 minutes , add salt to it. 4. Empty the pineapple curry in a bowl. 5. For seasoning, heat oil in a pan, add mustard seeds. When mustard

seeds splutter, add the curry leaves. 6. Pour this seasoning in the pineapple curry.
