    Bharta

    ASouth Asiandish bearing a resemblance tobaba ganoush.

    Baingan bharta is a part of the national cuisines of both Indian

    cuisine andPakistan. It is primarily avegetariandish thatcomprises bhurtha (minced vegetables) made fromeggplant

    (baingan) which is grilled over charcoal or direct fire, to infuse the

    dish with a smoky flavour. The smoked eggplant is mashed withfreshcilantro(coriander leaves),chili pepper, onion andmustard

    oil.[9]

    Traditionally, the dish is often eaten with an Indian flatbread

    (specificallyrotiorparatha) and is also served with rice and/or

    raita, ayogurtsalad. Baingan bartha is also eaten in Bangladesh.

    A spicy Indian snack that consists of a core food (like soaked

    A savory Indian snack made out of puffed rice, vegetables and a

    tangytamarindsauce.[11]

    Bhelpuri is often identified with thebeaches ofMumbai(Bombay), such asChowpatty.

    A snack consumed inNorth India. It is available in varied versions

    Bikaneri

    Bhujia

    A famous crisp snack and is prepared by usingbesan(gram flour)

    and spices, originating from,Bikaner, a town in the western stateofRajasthanin India. Its other ingredients includemothdal, salt,

    red chilli, black pepper, cardamom, cloves, groundnut oil, etc. The

    dough is formed into a snack by pressing through a sieve anddeepfryingin vegetable oil. It is light yellow in colour. It is famously

    known to be born inBikaner, and over the years has not just

    become a characteristic product of Bikaner, but also a genericname.

    puri

    An Indian snack which is especially popular in the state of

    Maharashtra. The dish is a form ofchaatand originates from the city

    ofMumbai.[19]

    It is served with mini-purishells (golgappa), whichare more popularly recognized from the dishpani puri. Dahi puri and

    pani puri chaats are often sold from the same vendor.

    Dahi

    Dosa

    rice

    An easily digestible, dehuskedricewhich is flattened into flat lightdry flakes. These flakes of rice swell when added to liquid,

    whether hot or cold, as they absorb water, milk or any other

    liquids. The thicknesses of these flakes vary between almost

    A sweet dessertpuddingassociated mainly with the state ofPunjabinIndia&Pakistan.

    [25]It is made by placing grated carrot in a jar

    containing a specific amount of water, milk and sugar and then

    cooked, stirring regularly. It is often served with a garnish of

    almonds and pistachios.[26]

    The nuts and other items used are first

    sauted inghee, a South Asian clarified butter.[27]

    GheverARajasthanisweet traditionally associated with theTeejFestival. Itis disc-shaped, and made from oil, flour and sugar syrup. There are

    many varieties of Ghevar, including plain, mawa andmalaighevar.

    Ghugni

    An evening snack in Eastern India (Assam,Bengal,Bihar,Orissa).Black gram(Kala Chana) or driedyellow peasor dried white peas

    is cooked with gravy, in the traditional eastern Indian style. It is

    then served with kurmura(puffed rice), and at times with hotonion

    pakoda/bhajiya.

    Gulab

    jamun

    A popular cheese-based dessert, similar to adumpling, popular in

    countries of theIndian Subcontinentsuch as India, Pakistan, Sri

    Lanka, Nepal and Bangladesh. InNepalit is widely known asLalmohan, served with or withoutyogurt, and is a popular dessert

    on all occasions. It is made mainly from milk solids, traditionally

    from freshly curdled milk. These milks solids, known askhoyainIndia, are kneaded into a dough, sometimes with a pinch of flour,and then shaped into small balls and deep fried at a low temperature
