    Prawns Masala

    IngredientsServes : 4

    1 Kg Prawns 5 Oninons 3 Tomato 2.5 teaspoons Ginger Garlic paste 2 tablespoons Red Chilli Powder 1 teaspoon Turmeric

    1 Tablespoon Coriander Spoon 1/2 Tablespoon Garam Masala 5 Chilli 2 sprig Curry Leaves to garnish Chopped Coriander Leaves 2 Tablespoons Vinegar or Lime Juice 7 Tablespoon oil 1/2 teaspoon Mustard seeds to taste Salt 1/2 Cup Water

    Directions Prep: 5min Cook: 10min Extra time: 30min marinating Ready in: 45min1. Remove and clean the prawns with marinated salt. 2. Marinate the prawns with 1/2 tablespoon, 2 tablespoon red chilli powder, 1 tablespoon ginger

    garlic paste and vinegar. use either vinegar or lime juice. Keep this for 30 minutes. 3. Add 7 tablespoon oil, heat it well and splutter mustard seeds.

    4. Add finely chopped onions saute it, ginger garlic paste. fry until the onion becomes golden brown.

    5. Add masala, Once the onion turns golden brown, add chopped tomato and finely choppedchillies. cook it for 3-4 minutes.

    6. Make sure that tomato is mashed. Add 2 sprigs of curry leaves and mix it well. 7. Add prawns and mix it well with the masala. 8. Close the lid and cook it for another 5 minutes. 9. Add water to the prawns masala, add salt to taste. cook it be not closing the lid. 10. Serve it hot once the masala becomes thicker.

    Kerala Fish curry

    IngredientsServes : 4

    1 medium Fish 3 tablespoon Coconut Oil 1 teaspoon Mustard seeds 1/2 teaspoon Cumin 1/4 teaspoon Fenugreek 3/4 cup Chopped red Onion 4 Green chilies, slit lengthwise 1 1/2 tablespoon Corriander powder 1 teaspoon Red chili powder 1 teaspoon Turmeric powder 3/4 cup Grated Coconut 1 cup chopped tomatoes 1/4 cup Chopped corriander leaves 7 Curry leaves Salt to taste

    2 cups Water 1 tablespoon Tamarind paste

    Prep: 15min Cook: 20min Ready in: 35min1. Cut fish into small equal pieces. 2. Heat oil in a pan and add mustard and let splutter. Now add cumin, fenugreek, onion and

    green chilies and stir fry. To this add Corriander powder, Red chili powder, turmeric powder and coconut and stir well until coconut fries and a coconutty aroma starts coming out. Nowadd tomatoes, coriander leaves, curry leaves and salt. Stir till tomatoes are well cooked.

    3. Add fish,water and tamarind paste to it and cook till done. Serve with steamed tapioca or Kerala parotta.

    Goan Fish Curry

    IngredientsServes : 4

    200 gms Fish (Pomfret or any fleshy fish) 1/2 coconut Grated 1 1/2 tablespoon Coriander seeds

    4 Peppercorns 4 cloves of Garlic 5 Red Kashmiri Chillies 1/2 teaspoon Tumeric powder 2 Pieces of Kokum Salt to Taste

    Directions Prep: 15min Cook: 20min Ready in: 35min1. Clean and cut the fish into thin slices. Apply salt generously. 2. Grind together the coconut, red chillies, corriander, peppercorns and garlic cloves into a fine paste. 3. In a pot put in the ground paste along with tumeric powder and bring to a boil. Then add the fish and

    salt to taste. Lower the flame and let cook till the fish is tender. Lastly add the kokum. Serve over hotwhite rice.

    Shortcut

    You can add coconut milk and use powder masalas for the rest of the spices.
