An Introduction

ldquoAll time is unredeemablerdquo Eliot tells us

And yet it is but the nature of humankind to look back constantly

trying forever to understand that elusive point where its past held a

tryst with its destiny We like to tell ourselves that history is best

understood in retrospection and in the process end up rewriting it

over and over again Sometimes though the act of looking back is

nothing more than casual indulgence ndash nostalgia especially for a

generation you never belonged to can after all be wonderfully

cathartic

However when we at Third Lane decided to do a bit of retrograde

introspection of our own we decided to be more honest We

decided to pick a decade we thought we ldquoconnected with the mostrdquo

It is only when we went down the annals of the all-seeing internet

that we realized that we were not the only ones It seemed that

almost the entire country indeed the entire world connected

emphatically with the 90s It is everyonersquos favourite decade ndash

spawning hashtags to listicles to long-winded analyses with equal

fervor

What is it we wonder that makes it such an iconic decade ndash not

just in our country but throughout the world At the brink of the

90s the western worlds were at their peak of prosperity and

glamour producing everything from sitcoms to cellphones at an

almost arrogant pace At the same time there were deep ideological

shifts taking place ndash with the Berlin wall taking down with it the

dream of a utopia and the Cold War coming to a final definitive

end

This surreal coexistence of giddy optimism and bleak politics was

felt on our homeground as well

In India the 1990s began with an assassination and ended with a

war A bloody birth and a bloody demise - and in between ten

tumultuous years The economy opening up to the world the advent

of international brands a complete metamorphosis of the world of

entertainment - changes that left a lasting mark in the cultural

landscape of the nation It was the decade of indie pop of

Aishwarya Rai and Sachin Tendulkar of AR Rahman and Pepsi But

it was also a decade of extreme political violence from the

demolition of the Babri Masjid and the insurgency of Kashmir to the

Bombay blasts and the riots it provoked It was indeed the best of

times and the worst of times a decade of blood and glitter

It seems universally accepted that the 90s changed the world as we

know it Today as history crumbles around us one more time as we

grapple with the loss of the familiar and the way forward seems

darkly uncertain it seemed comforting to us to look back once more

at the ultimate hurrah of the last century We like to call ourselves

the ldquo90s kidsrdquo in tandem with anyone else on social media who can

But perhaps the worst scandal in this characterization is as John

Updike said - we do not know that we were a generation

During our course of research we have found many stories that

have been written re-written and covered better than we ever

could Surprisingly however we have still managed to find things

that remain largely under-documented

And so Third Lane brings you the 90s - one more time - in

vignettes that explore this incessantly relevant decade from different

avatar she has been granted by popular culture in the years since

But when we scratch the glitter what do we find

The Advent of Advertising

Television was introduced in India through the state controlled

Doordarshan in 1959 and was restricted to ldquoeducationalrdquo

programmes until 1982 when the National Programme introduced

entertainment programmes This was part of the governmentrsquos

project of modernization that would ldquolead India into the twenty-first

centuryrdquo The impetus provided by the improvement in broadcast

technology introduction of colour television and an active effort to

restructure programming were reflected in the sharp increase in the

sales of television sets from 5 million in 1985 to 35 million in 1990

By 1992 the reach of television had expanded to include 80 of the

population Television established itself as an invaluable medium for

the creation of social and cultural hegemonies and the most crucial

facilitator of the shift of economic focus from capital goods

investment to consumerism

Hum Log the first dramatic television serial to be produced in

India and broadcast on Doordarshan in 1984-85 was conceived along

the lines of a Mexican telenovela with the ostensible aim of

encouraging family planning The production of this hugely popular

serial and that of other narrative serials to come were enabled by

the introduction of a commercial sponsorship scheme that allowed

corporations to cover the production costs of a show in exchange of

ninety seconds of advertisement time The lucrativeness of this

scheme for sellers of products is epitomised by the success of Maggi

noodles after FSL started sponsoring Hum Log Unlike current

television formats the advertisements then did not interrupt the

narrative flow of a programme and were clustered at the beginning

After FSL started sponsoring Hum Log the Maggi noodles

commercial occupied the crucial few seconds before the beginning

of an episode when it had access to a large captive audience The

sales of Maggi noodles increased more than three-fold in just one

year and made packaged food acceptable and attractive to the

Indian middle class The contribution of advertisements in not just

selling specific products but manufacturing the aptitude to consume

is evident in the fact that a major part of the 90rsquos nostalgia

ubiquitous on the internet today is composed of memories of

advertisements and the products they sold

Purnima Mankekar in her book Screening Culture Viewing Politics analyses the way viewers interacted with the narratives

portrayed on Doordarshan through an ethnographic study of lower

middle class and upwardly mobile working-class households in Delhi

Her observations cast light upon the way television shaped gender

communal and national identities set the stage for the tumultuous

90rsquos and changed forever the approach to discourse on social and

political reform The products advertised on Doordarshan came to

symbolise middle-classness and many of the households Mankekar

interviewed saw the possession of these as essential to establish

middle class status The aspirations ignited and legitimised by

advertisements stressed already precarious finances The middle and

lower middleclass households that were already entrenched in the

dowry system often sought to fulfil these aspirations through

outrageous demands for dowry Several of the people Mankekar

interviewed saw a direct link between the proliferation of

advertisements on television and increasingly elaborate demands for

dowry and the penetration of the dowry system into communities

where it had not been historically

prevalent Refrigerators and scooters

now joined jewellery and cash as dowry

demand staples Ironically

advertisements for consumer durables

that drove this trend often framed

serials with overt anti-dowry messages

A Woman of the Nation

Though the introduction of commercial Adverstisements in print and Doordarshan alike showcase stereotypical gender identities hiding behind apparently progressive narratives

sponsorship shifted the focus of Doordarshan to entertainment

these entertainment programmes had specific state sponsored

agendas One of these was national integration in the wake of the

rise of secessionist movements in different parts of the country The

urgent need to create a national culture was the main motivation

for the broadcasting of the National Programme in the first place

So while viewers from one part of the country were exposed to the

culture of another part by the dramatization of stories written and

set in different parts of the country in Ek Kahaani Buniyaad Yugantar and others the brutal excesses of the

repression of secessionist movements remained excluded from

television and largely from the consciousness of the middle class in

the Hindi heartland News bulletins on Doordarshan were also

accused of devoting very little air-time to important news

concerning opposition governments at the states Another aim of the

government was to broadcast programmes that would further the

cause of emancipation of women and the late 80s and early 90s saw

a slew of ldquowomen-orientedrdquo programmes that claimed to foreground

womenrsquos experiences and problems These programmes sought to

inform women of the importance of hygiene and family planning

promoted education for women and featured assertive female

protagonists The target audience of these programmes connected

with these narratives One of the women Mankekar interviewed

recalled how the popular serial Rajani inspired her to confront the

local milk delivery service that had started delaying deliveries

messing up the busy schedules of women in the area

The ldquowomen-orientedrdquo narratives however operated ldquowithin

the systemrdquo and did not transcend the boundaries drawn by the

hegemonic patriarchal culture keen on protecting the sanctity of the

family and on seeing women as flagbearers of ldquoIndian culturerdquo

modernising to better perform her role in the family and in the

service of the nation while retaining all the glorious traditions of an

ancient country Kavita Choudhary who wrote directed and starred

in Udaan a popular serial about a woman IPS officer spoke to

Mankekar of the tradeoff that she had to face as a feminist as an

activist between the access to a large audience and the dilution in

ideology mandated by this access So while Kalyani the protagonist

of Udaan fought bandits and tried to reform a corrupt system her

father emerged as the true hero ndash as the facilitator of her success

by allowing her the same opportunities as his son and as her moral

compass and dispenser of crucial advice This phenomenon is echoed

in the recent movie Thappad which has gained wide acclaim as a

woman-oriented narrative but I wonder if the makers of the movie

had any of Kavitarsquos awareness of the patriarchal framework that

they had chosen to place their narratives in

Another feature of these narratives against social evils was the

treatment of women as an object of reform ldquodowry-victimsrdquo who

needed to be rescued by the state This formulation effectively

ignored the efforts of activists who had worked to empower women

in various socio-political contexts Women activists when portrayed

on television were either bogged down by a relentless stream of

woes resulting from their activism or were rampaging hordes out to

destroy the fabric of Indian culture and break up families Thus

while to some extent womenrsquos independence was encouraged

womenrsquos collective action for social justice was either ignored or

vilified ndash suppressing the contribution and potential of several

grassroots movements and organisations that had worked tirelessly

for empowerment of women and fought for equal rights and

opportunities

Growth of the Autonomous Womenrsquos Movement

The evolution of the womenrsquos movement in India has been

characterised by an acknowledgement of the existence of multiple

schools of thought within it and of the diverse needs of the

constituency of women whom it sought to represent Since pre-

independence times the movement had been closely linked with

other democratic and radical movements and by the 1990s it was

more sophisticated and self-aware than its ldquoWesternrdquo counterparts

Indian feminists since the inception of the movement were anti-

colonial and anti-imperialist criticising western feminism for its

inability to engage with other social justice movements long before

intersectional feminism became woke Womenrsquos movements had

often risen out of struggles for justice in other spheres ndash from

militant peasantsrsquo movements from trade union movements and

from the struggle for a safe environment They were led

spontaneously by women from disadvantaged communities women

workers and labourers who while fighting against the oppression of

their communities applied the same sense of social justice and

freedom from oppression to identify and collectively resist their

exploitation within their communities and families

In the 1980s the country saw a large-scale mobilisation of

women against two major forms of violence against women in India

ndash dowry murders and rape The government was forced to take

notice and amend legislation While these amendments were

inadequate in formulation and in implementation the magnitude of

the agitations drove home the political potential of the constituency

of women For the largely middle-class face of the movement it

underscored the importance of supporting individual women

alongside continuing the agitation for changes in societal and legal

frameworks Several womenrsquos centres were established in different

parts of the country that provided health care legal aid and

counselling in an explicitly feminist framework The new centres

also sought to build a sisterhood of women across class and caste

drawing upon Indian traditions of female friendships Saheli a

womenrsquos centre in Delhi approached this though a workshop on

song dance drama and painting for women from all over the

country This approach reinforced the possibility of joy and

playfulness in exclusively womenrsquos spaces and inverted hierarchies

when middle class women learnt traditional song dance and art

forms from working-class or peasant women Unlike the present

when Madhubani painting and Gond art can be appropriated by

Instagram artists without any acknowledgment of the lived

experiences of the communities that have developed and kept these

art forms alive the knowledge of the rich and diverse cultural

heritage of the country in the 80s came with an awareness of the

different forms that oppression might take depending on the

subjectrsquos position along axes of gender caste class and community

In 1991 Giti Thadani founded Sakhi a network for lesbians all

over the country to communicate via letters This expanded the

access to community

support beyond the circle of

urban activists and paved

the way for the

establishment of several

other initiatives to provide

platforms for lesbians to

interact with and support

one another In 1998 upon

the release of Deepa

Mehtarsquos Fire in India

lesbianism gained public

spotlight as it was attacked for being ldquoagainst Indian culturerdquo while

drawing large crowds to theatres The lives of transwomen however

continued to be precarious as they were excluded from spaces that

were opening up due to globalisation in the late 80rsquos and 90rsquos It

would be more than a decade before conversations on transrights

would gain traction in India

The Politics of Division

As the womenrsquos movement focused increasingly on empowering

individual women the establishment of the political significance of

the constituency of women led to the mainstream political parties

co-opting the narratives of the womenrsquos movement The individual

women of the movement and those that womenrsquos centres were

working to empower started to be pitted against the ldquoreal womanrdquo

variously defined by political parties especially the Hindu right

wing according to their agendas In 1986 the opposition hijacked

the protests against the Muslim Womenrsquos Bill to attack the minority

community In 1987 a section of the opposition in a perverse

appropriation of the arguments for womenrsquos agency argued for

womenrsquos right to ldquovoluntarilyrdquo commit Sati These phenomena were

precursors of a bigger agitation that would lead to widespread

communal riots in different parts of the country

The formulation of women as the guardians of the virtue of a

community was at the centre of much of the narrative used to other

the Muslim community ndash the allusions to a golden past ndash without

any consideration of historical evidence or chronology ndash where

Hindu women had elevated status framing the contemporary

discrimination against women as necessary restrictions for their

protection put in place after the invasion by Muslims and the

legend of soaring Muslim fertility rates that would soon lead to the

Hindu population being overcome in numbers were all constructed

on the turf of the politics of gender The women ascetics who

emerged as the voice of the Ramjanmabhoomi agitation urged Hindu

men to fight for the protection of the honour of their women The

Hindu right with its flexibility to accommodate certain notions of

modernity like the womenrsquos education and employment managed to

woo into its folds multitudes of middle class women For them this

space ndash provided within the Hindu right wing sphere with its

explicit commitment to maintaining the sanctity of the family ndash was

easier to access without antagonising their families than those

provided by the mainstream womenrsquos movement The frameworks of

these organisations however remained deeply patriarchal and

firmly rooted in the belief that the family had absolute ownership

over womenrsquos time labour and bodies

Women in the Box

When post further and deeper economic reform and liberalisation

in the early 1990s transnational satellite television entered the

Indian market there was hope that this would lead to more varied

and sensitive programming on national television But the market

proved to be a censor of equal if not greater calibre The satellite

channels like Star TV and Zee TV catered specifically to the urban

middle class which was the target audience for the corporations

that bought advertisement slots The indigenous programmes offered

by these channels was sweepingly homogenous in representing the

Hindi speaking urban middle class not allowing even the token

representation that state sponsored television reserved for regional

and class diversity

The economic reforms of 1991 had led to a massive boom in

service sector employment many young women from middle class

backgrounds started living away from home which introduced them

to new freedoms and anxieties Tara a popular serial telecast on Zee

TV between 1993 and 1997 portrayed single working women living

together leading complicated lives and making complicated choices

Another slightly older contemporary of Tara Doordarshanrsquos Idhar Udhar approached the depiction of single working women living

together from a comic angle There were also shows portraying the

complexities of marriage like Saans and Kora Kagaz But the serials

were soon homogenized further and started portraying some

version of the ldquonew Indian womanrdquo who is modern and educated

might be employed but also unfailingly puts family first ndash and

shoulders the triple burden of work household duties and

engagement with the community with an unfaltering smile

By the late 90rsquos adding to the capitalist censoring of content

were increasingly frequent episodes of moral policing that tried to

control the depiction of women on screen on charges of obscenity

or of offending religious sentiments While Deepa Mehtarsquos Fire faced

violent protests for its on-screen depiction of lesbianism the same

director was prevented from shooting Water in India since it

depicted the poor condition of Hindu widows This the protestors

argued was irrelevant since it was a thing of the past and would

only offend Hindu sentiments

Good News Bad News

The coverage of news which was expected to improve with the

withdrawal of explicit state control maintained a similar urban bias

As Uma Chakravarty notes in an EPW article the coverage of the

Kargil war which struck at the close of the decade was

characterised by aggressive nationalism and obscured all critiques of

war as a tool of conflict resolution The chat shows and debates

aired on these channels also had an exclusively urban and middle-

class focus By the 90rsquos the model of advertisements had changed ndash

ads now interrupted narratives and news bulletins In a tone

strangely prescient of the present times when social media is

constantly bombarding us with a melange of news and

advertisements Chakravarty observes

The only time the other India (that outside the urban middle class consumers) comes into focus is in the news during election time or in the form of disaster stories ndash natural havoc or class caste and ethnic violence But

before anything sinks in this reality too is immediately overlaid by the glossy urban India via the mandatory commercial breaks which must go on regardless of the tragedies that the news might fleetingly bring to the viewers consciousness lsquocommerce is clearly above tragedyrsquo and the ads impose their own reality as the camera cuts from the particularities of a tragic event to the universality of consumption desires What does this do to our sense of comprehension Does the other India register even when the camera does focus on it when every two and a half minutes our senses are invaded by the ubiquitous lure of goods

The culmination of this increasing urban middle class focus in

national discourse was a modification of the very parameters of

development Globalisation came to be viewed as an indicator rather

than a tool of national development As Prabha Krishnan and Anita

Dighe observed ldquoeducated articulate persons view their own and the

countryrsquos progress and development in terms of the goods and

services available to the eliterdquo This desensitization of the politically

powerful middle class to the existence of other realities aside from

their own meant that the evils of globalization remained largely

excluded from public discourse and hence unmitigated These evils

were particularly prominent for vulnerable women ndash as corporations

turned to them for cheap flexible employment as they were left

behind with domestic and often breadwinning responsibilities in

rural areas when the men migrated to cities and as they were

tasked to bear the emotional burden and to provide a sense of

familiarity as their families

adjusted to unfamiliar

surroundings The networks of

womenrsquos centres and the

strength of the womenrsquos

movement suffered as they

were ignored or vilified in

public discourse

Gender In-difference

In an essay titled

ldquoCommunalising Gender

Engendering Identityrdquo Ratna Despite the many tensions between the urban and the mass-movement oriented feminists the Sammelan showed that the Indian womens movement does still have a common feminist perspective

Kapoor and Brenda Cossman identify three approaches to the

question of gender difference According to the first women are

perceived to be fundamentally different from more specifically

weaker than men and hence need to be protected with special

provisions The second approach sees men and women as equal in

the eyes of the law and hence any legislative provision that treats

men and women differently is seen as unacceptable This is

consistent with the formal notion of equality According to the third

approach women are considered to be a historically disadvantaged

group and some ldquopositive discriminationrdquo is deemed necessary to

prevent the perpetuation of underlying inequalities ndash an approach

consistent with the notion of substantive equality

The patriarchal discourse which perpetuates gender roles

represents the first protectionist approach The proponents of this

approach often dismiss the concept of sameness as a ldquoWestern

concept of equalityrdquo inconsistent with Indian traditions Despite the

dominance of the protectionist view the sameness view had started

making some inroads in the 90rsquos particularly in context of the

liberalisation during this period Both approaches however fail to

grasp the disparate effect that gender neutral legislation often has

on men and women and the necessity of legal support for women

to overcome centuries of subordination and to participate in social

and political processes in equal capacity Currently women represent

a meagre 13 of Indian Parliamentarians The participation of

women in the decision-making bodies of the major political parties

is also dismal While reservation of one third seats at the Panchayat

level was introduced in 1993 and has increased the participation of

women in local government a similar provision for parliamentary

elections has been pending for twenty odd years

The formal notion of equality has since then established firm roots

in the psyche of Indians The anxiety of not conforming to this

notion sometimes leads women to disavow feminism altogether and

to overcompensate for any special provisions that they might

receive as women This year during the celebration of womenrsquos day

in the Rajya Sabha a woman MP from the ruling party suggested

that Menrsquos Day should also be celebrated while during the same

session the male chairman cut off another woman MP from the

opposition as she spoke about the increase in violence against

women insisting she speak about ldquopositiverdquo matters on the

celebratory occasion Several women MPs urged the house to focus

on the womenrsquos reservation bill but whether this will be acted upon

is yet to be seen

Three Dots

In recent times with the focus on intersectional feminism on the

international front many Indian feminists have turned their gaze

inwards However this is mostly achieved through the application of

frameworks developed elsewhere to Indian contexts and the

awkward modification of trending hashtags Because of the ubiquity

of the populist narratives of history that focus on personalities

rather than the evolution of ideas young feminists are deprived of

the rich treasure trove of the experience of their forerunners A

dive into the history of the womenrsquos movement in India can lead to

the discovery of valuable insights that would help us build an

inclusive movement crucial for the reinvigoration of the struggle for

social justice ndash especially important as unprecedented horrifying

disasters continue to affect women disproportionately

One of my earliest memories of exploring food goes back to when I

was barely 10 years old and my mother would take me along on

her shopping escapades in New Market after school Footpaths

bustling with stalls and vendors hawkers at their creative bests

shouting for our attention fellow shoppers brushing past us with

the brisk purpose afforded only to a seasoned shopper and of

course the questionable aroma of food frying somewhere on the

street mixed with general sweat and humidity ndash and amidst all of it

my mother striding on deliberately with one hand tightly clasping

mine After shopping to the point of exhaustion buying everything

from table cover to cutlery bone china cups to fancy nightdresses ndash

there was inevitably a food stop Well not just one We had a well-

tested routine Start with jhal muri and dahi vada then go into

Monginis for some patties shammi kebab and to stand in the AC for

a bit Then some more street shopping hard bargains and bunch of

plastic bags after which we would head to Aminia for our Biryani

stop and sometimes even teatime snacks at Nahoums This routine

never wavered ndash no matter how full we were how tired we felt or

how long the waiting queue stretched because food has always been

essential to a shopping spree

Needless to say I was a 90rsquos kid through and through and

growing up in India in the 90rsquos was an exciting affair lsquoCable TVrsquo was

just beginning to come to households bringing with it primetime

telecasts of The Bold and The Beautiful and Baywatch Kids were

grooving to the latest pop music videos by the likes of Britney

Spears Backstreet Boys and Boyzone There was a whole new

lifestyle seen in these soaps and videos right from outfits and

trends to food and traveling It was also a time when India had a

huge influx of foreign brands at least in the metro cities like Delhi

Mumbai and Calcutta What did all these changes mean for the

Indian cities Suddenly there was a lot to catch up to with the

western world in a very short time ndash and eventually over the

coming decade this culture shock would change the very lifestyle of

the Indian urban crowd

Before the 90rsquos eating out meant an expensive affair and was

usually reserved for a grand occasion There were clear categories of

restaurants ndash Indian Chinese and Continental The outing was made

into an elaborate event ndash putting on onersquos Sunday finest indulging

in a taxi so yoursquore not disheveled by the time you arrive at the

restaurant booking a table and combing through the menu ndash trying

to decide between the safe favorites or exploring something new

Stand-alone restaurants werenrsquot many and usually dining with

children usually meant going to a place that did not serve alcohol

which led to the options being quite limited In our family these

ldquospecialrdquo fine-dining events happened usually if I won prizes in

school or on birthdays ndash in a nuclear family there werenrsquot that

many reasons to celebrate in style But the go-to stops were always

our favorite places in the city ndash Waldorf for Chinese or Mocambo for

Continental We always knew what to order and it was comforting

to soak in these classic places that had been around for years

Then the 90rsquos arrived The New Economic Policy (NEP) in 1991

opened up the Indian Economy to foreign investments better

technology and tougher competition almost surely plunging India

into a globalization arena The Indian market began to change ndash and

with it the demands of the Indian middle class More and more

international brands proliferated the market At the same time ndash

with the newly opened economy facilitating a lot of new airline

routes at budget prices ndash there was an increase in international as

well as interstate travel So the 90rsquos middle class had money to

spend and an unprecedented exposure to cultural experiences

outside of their local comfort zone One of the most interesting

effects of this could be perceived in Indiarsquos food culture ndash

international food brands with partnerships in India had money to

invest and the restaurant business went on to become one of the

highest employing sectors in the country hiring chefs service and

cleaning staff ushers and more There were also well-travelled folks

coming back to their homes having experienced a taste of

international food and willing to explore different cuisines

The 90rsquos also saw the first television cookery shows in India

Cookery shows at that time were not just about recipes and dishes

but a platform for people to learn about international cuisines

exotic dishes and innovative ingredients Some of the shows even

dabbled in virtual tourism along with the food and culture One of

the first shows of this kind was Sanjeev Kapoorrsquos Khana Khazana

which ran for a whopping 17 years on Zee TV Then there were

Tarla Dalal Aditya Bal Ritu Dalmia Kunal Kapoor and many more

celebrity chefs that hosted a slew of successful TV shows with

regular spin-offs that ran in regional channels as well This led to

dishes being experimented on at home and food cultures becoming

slowly more diverse Exotic pastas were now being made in an

Indian household with an indigenous twist ndash and of course the kids

benefitted the most as the primary tasters and critics

The palate of a country however is never merely defined by

what gets served in the restaurants or at home ndash but also by what

sells on the streets

When our grandparents and parents tell us they hardly ate

junk food growing up itrsquos probably true ndash There wasnrsquot much in the

name of processed food back in the day Now thatrsquos not

saying pakoras and jalebis were healthy but at least the ingredients

and sourcing made them better suited for our systems We were

never really a nation and culture of grab and go when it came to

food Eating even in the busiest of times and with limited income

was traditionally an elaborate and multi course affair By the time

the 90rsquos came around though junk food was already a firm fixture

in the Indian food scene But it was heavily local and mainly street

side ndash with chaats rolls vada pavs dosas pani puris ice pops and

candies bakery food like filo pastry with fillings called patties or

puffs depending on what part of India you were in In contrast ndash I

remember when the first Dominorsquos Pizza outlet opened near my

place ndash the thin paper menus the aromas of dough in the oven

wafting through the open kitchens and filling up the place the hot

card-board boxes piled up and taken out by the uniformed delivery

folks with an unfamiliar sense of urgency Ordering and getting food

delivered quickly so we could be on our way was a curious and

fascinating novelty And slowly it came to be that we started saving

more of our pocket money for these luxuries than spending on

knick knacks and street side indulgences like phuchka and choor moor though it was hard bargain indeed

Snacking is inherent to our countryrsquos food culture and you

could see that reflected in the way our festivals shopping grounds

exhibitions and even roadside melas leave a special corner for food

Particularly I remember the Book Fair ndash a grand almost-

carnivalesque affair in Bengal ndash an experience that grew to be as

much about food as it was about the rush of new books elaborate

launches and favourite authors So when the new brand of fast

foods came as a wave bringing scale and efficiency to meet the

cravings of an entire generation the changes were here to stay

The Changing Face of Indiarsquos Metro Cities and the Origin Story of

Bangalore

Radhika Misra a Marketing Communications Consultant who was

finishing college during the 90rsquos offered us a first-hand account of

this many-fold transformation of the Indian palate Radhika

remembers that some of the things we now take for granted

growing up like going out for ice cream ndash to a parlour ndash was a

culture that actually came to be in the 90rsquos decade As a young

student in Kolkata and Mumbai hanging out in restaurants wasnrsquot

exactly inexpensive so for her it was about priorities and

preferences She recalls that in those days in Mumbai there used to

be barely any restaurant doing a street food format (except Kailash

Parbat and that used to be a trip to take to gorge down on some

delicious and variety of chaats) But even before cosmopolitan

economies revamped the food scene in the country Mumbai was set

apart by its culinary diversity For instance there was the

flourishing world of cafes originally opened by Zoroastrian Irani

immigrants to India before independence like Britannia Cafeacute

Mondegar Leopold Cafeacute and Bar A good meal meant Berry Pulao

Mutton Dhansak and Sali Boti with some traditional Irani chai to

wash it down ndash classics that have withstood the onslaught of time

and western influences Indiarsquos sweet tooth however had a different

story to tell Speaking about her internship with Taj Hotels in

Kolkata Radhika mentioned how desserts during the 90rsquos had

already started adapting to western influences taking the next step

from familiar ice creams and cakes to lush layered desserts and

decadent cheesecakes

But really it was our conversation about Radhikarsquos next city of

work Bangalore that proved to be a history lesson for me Bangalore

was probably the city that changed the most in 90rsquos Before this

decade most of us knew Bangalore as the garden city a retirement

haven and a defense base Growing up even I would often visit

Bangalore in late 90rsquos on vacations as I had family here During

these visits the now-familiar idea of Bangalore as a ldquopub cityrdquo

eventually came to light for me ndash during stealthy escapades when

my cousin would do his due diligence of showing me the city by

taking me to every pub possible Yes letrsquos just say that checking IDs

wasnrsquot much of a thing back then

Radhika tells us how it all started in the 90rsquos how this pub city

I now call my home came into existence during the decade with

some popular watering holes She fondly remembers Black Cadillac

which opened around that time as the place to be The whorsquos who

of Bangalore would hang out there and sometimes have chance

encounters with rock artists of the era too visiting the city for

concerts Pub World Windsor Pub Pecos ndash all had distinct clientele

chilled beers local food and usually good rock music I remember

first seeing lsquoHappy Hoursrsquo boards in Bangalore and for years it

remained an essential parameter to pick a place for a party You

see fancily named cocktails werenrsquot really a thing back then

probably with the probable exception of Cuba Libre And why would

it - when a pint of beer was about 15 bucks

Milestones in Indiarsquos Food culture

Although the cultural shifts spawned by economic liberalization

mostly affected the cities ndash the 90rsquos remain a focal point in the

evolution of Indiarsquos food history ndash simply because it witnessed so

many milestones that have today become inextricably associated

with our culinary culture

The 90rsquos marked the emergence of specialty restaurants ndash starting

with hotels and eventually stand-alone too ndash that started catering

to the culinary curiosities of the new-Indian middle class Shyam

Rao Retd Naval Officer who was posted in Mumbai Pune and Vizag

during the decade remembers that there were suddenly options of

Indian food beyond Punjabi and Mughlai Specialty Restaurants

started by Anjan Chatterjee opened up their first outlet of Oh

Calcutta in Mumbai 1994 ndash bringing Bengali cuisine outside of

Bengal for the first time in a fine-dining format Mahesh Lunch

Home had been operational in Mumbai since the late 1970s serving

a simple short menu of Mangalorean food In the early 90rsquos

however they started expanding to other coastal dishes -introducing

tandoori and coastal food that became a huge success in fact their

Tawa Fry Gassi and crablobster with butter pepper garlic put

Karnataka cuisine on a national and eventually global platform

Double Seven that had popped up in the preceding decades and

entry in India in the 1950s was ousted after the implementation of

boosted sales for both brands These companies signed some of the

biggest movie celebrities for endorsements with millions of fan

following There were televised and radio ads hoardings official

sponsorships for Cricket World Cup and print ads to the extent that

they became part of grocery lists in households ndash the drink you

always keep handy in your refrigerator It thus came as no surprise

when local cola brands fell casualty to this intensely aggressive

marketing and distribution game eventually being acquired or

driven out of the market

Junk Food Revolution

Another game changer for the food industry were some very

prominent brands that entered the Indian ldquojunk-food marketrdquo in the

90rsquos and managed to completely change the consumption trend for

that have almost become indoctrinated in our fast-food culture

The Indian Burger

Interestingly McDonalds and KFC were not the first foreign burger

brands in India Wimpyrsquos from UK had opened up in 1982 in Delhi

There were also various Indian fast food places that had their own

form of burgers and even Bombayrsquos very own Vada Pav had steadily

been preparing Indians for the burger revolution Food historian

Pushpesh Pant in an interview with Business Today in 2015 said that

the Indian burger palate was already made and food chains simply

had to adapt to that And adapt they did opening the worldrsquos first

McDonaldrsquos outlet without beef on the menu in 1996 New Delhi

For the first time McDonaldrsquos offered vegetarian selections as well ndash

a menu carefully adapted to incorporate the diversities in Indian

food preferences The pricing was also kept competitive ensuring it

was affordable for the target population The real breakthrough

gimmick though was the launch of ldquoHappy Mealsrdquo in India (1997)

that included a toy and became something of a collectible The

trend caught on rapidly going on to be adopted by companies

ranging from Milo to Lays and has continued even to this day

KFC also opened their first outlet in Bangalore in 1995 Interestingly

they chose a non-metro city as their launch pad but Bangalore

already had a burgeoning upper middle class population and already

had a trend of families ldquoeating outrdquo This was crucial because you

could open up new dining options but spending power of the city

crowd and their willingness to step out and experiment with food is

how these new places would have to survive and thrive For KFC

however other challenges proved bigger In Karnataka KFCrsquos entry

into India was protested vehemently by farmers pointing out that

the growing number of foreign fast-food chains would shift the

demand from essential crops to livestock resulting in sections of

society without access to affordable food KFC eventually surfaced

through these protests and opened up several outlets in India but

didnrsquot quite adapt to the Indian market as much as it needed to

vegetarian options meant that they had long ways to cover before

they could gain the massive popularity they command today

The Pizza Craze

More than burgers however it was the pizza chains that helped

overhaul the existent idea of dining With various existing cafes and

snack But here were brands advertising pizza as a meal in itself

and one that you could have with family and friends The concept

India before the 90rsquos came and changed how we as a nation viewed

the experience of dining out With the emergence of these quick-

service restaurants customers could stand in queue place orders off

of colored photo displays behind the order counter and get plastic

trays with food wrapped in paper Quick service restaurants had

heavy competition abroad but in India these brands could not

simply set up benchmarks from existing formats that had seen

success in the rest of the world ndash they had to completely rethink

how to sell the idea in a country like India that had been used to

serving for the better part of the century and then to being

serviced and waited upon for the last couple of decades McDonaldrsquos

was a pioneer in the field again ndash being the first to be able to

successfully market the concept They realized that since their main

competition was the street food vendors ndash who had a leg up in

speed of service and pricing ndash simply serving a localized menu

the way the western world consumed coffee was yet to become a

trend in our country mainly because of it was priced higher and

most of the domestic production was being exported The entry of

Cafeacute Coffee Day or CCD in 1996 was a radical move ndash using the

coffee from plantations in Chikmagalur to make coffee and serve it

in style For the first time in India there were frappes cold coffees

lattes cappuccino espresso ndash more options than we knew and it

was addictive

But these cafes did something more than simply popularizing coffee

ndash they kickstarted a culture They promised an experience and

positioned themselves as connoisseurs of great quality coffee by

simply curating a menu with a lot of good coffee options with prices

stretched just enough to convey a sense of finery while at the same

time being affordable The new CCDs thrived on a basic but

concept of trendy and chic American cafes which could be used for

meetings casual dates catching up or even working into the urban

Indian lifestyle Coffee was no longer simply about sipping warmth

of the love for the drink to explore more variety

Coffee shops started popping up in every nook and corner in

Costa Coffee Barista and eventually Starbucks to enter and even

thrive in this tea drinking nationrsquos market

The 2000s

The last decade of the 20th century definitely left a lasting impact on

food in terms of concept influences consumption expanding our

horizon from what we were comfortable and familiar with to where

the world was at and going towards Were all the changes embraced

adopted and successful Maybe not But entrepreneurs chefs

businesses ndash all recognized the potential of food beyond just basic
