On Christmas, many of us will take onthe challenge of cooking 12-20 pluspounds of poultry. This is not somethingwe do every day. The basics of roasting aturkey at 325 degrees for approximately 15minutes per pound are pretty simple. But,there is more to the safe preparation of theturkey.

Before purchasing the turkey, assessyour freezer and refrigerator space. Is thereample freezer space to store a frozenturkey and enough refrigerator space tothaw a turkey?

Thawing a turkey takes time. In therefrigerator allow 24 hours (or more) foreach 4-5 pounds of turkey. Hold no morethan 1-2 days after thawing. You can speedup the process by thawing in cold water.Place the turkey in its original packaging incold water, allowing 30 minutes per poundto thaw. Change the water every 30 min-utes. Cook the turkey immediately after itis thawed. Do not thaw frozen food on thecounter.

It is safe to cook a turkey from thefrozen state. The cooking time will take atleast 50 percent longer than recommend-ed for a fully thawed turkey. For example, afrozen 18-20 pound turkey will take about6 1/2 hours. With a fully thawed turkeycheck for doneness after 4 hours.Remember to remove the giblet packageduring the cooking time.

Even if your turkey has a “pop-up” tem-perature indicator, it is recommended thatyou also check the internal temperature ofthe turkey in the innermost part of thethigh and wing and the thickest part of thebreast with a food thermometer. A wholeturkey is safe when cooked to a minimuminternal temperature of 165 degrees.Consumers may prefer to cook the turkeyto higher temperatures of 170 degrees inthe breast and 180 degrees in the thigh.

4-H hosts ‘Family Fun in Snow Day’ at Andes Tower Hills

Potluck meals are popular holiday activities and mayhelp trim food costs for the host. The host and the guestshope to remember the potluck for being fun and deli-cious, not as a cause for foodborne illness.

Keep the potluck meal safe by following safe food-han-dling practices.

Whenever possible, prepare your dish on the same dayas the potluck event. Cook food thoroughly and use a foodthermometer to check doneness. Never partially cook adish and finish cooking it the following day.

If you do prepare your food the day ahead, cool itquickly in shallow pans. Always reheat foods to at least165 degrees.

Do not prepare food for a potluck if someone in yourhome has been experiencing diarrhea, vomiting, or fever

within the past week. You could pass their sickness on toothers through your food!

If you plan to bring foods that need to be kept warm orcold, keep these foods at a safe temperature by usingcoolers or insulated containers.

If you cannot keep hot foods hot (140 degrees or high-er) or cold foods cold (40 degrees or colder) for two hoursor more, consider bringing foods that do not require tem-perature control such as cookies, cakes, breads, nuts, pack-aged snacks, beverages or non-food items.

When your food is served, keep any eye on the clock. Ifit will be on the serving table for a long time, use smallbowls or trays. Replenish these from larger quantities keptin the refrigerator or oven.

If potluck attendees are tempted to touch food at theserving line with their bare hands, provide long-handledserving utensils that will not be buried in the food.Increased food-handling increases the chances of spread-

ing foodborne illnesses.If you plan to use a slow cooker to keep food warm at a

potluck, boil the food on the stove or in the microwavewhen you arrive at the potluck site and then use the slowcooker to keep it piping hot

If you are uncertain about the safety of food at potlucksyou attend, make wise choices. Cooked foods that aremoist and high in protein are riskier choices if the storagetemperature is unknown. These risky foods include meat,poultry and hot dishes made with them, baked beans, andpotato and pasta salads. Avoid eating lukewarm maindishes. Look for raw fruit and vegetable dishes, breads,and nonperishable desserts such as cookies and cakes.
