The Pig Roast Competition- People's Choice award winner and five-time pig roast competition winner Gary Callicoat will return with his team, Sir Pigs Alot and the Knights of the Holy Grill. We hear that the New Tampa Noon Club and the Wesley Chapel Club are both gearing up to challenge the reigning

he culinary department of Wharton High School, headed by

Chef Edward Bujarski and wife, Lourdes Sarmiento, delivers

a fine-dining experience for $7 every Friday from 10:30 a.m. to 1 p.m.

Bujarski took over the department in 2001 and Sarmiento came on

board in 2004. The facility is a massive kitchen and restaurant. The

kitchen is two or three times the size of the dining room and is run like

a kitchen at any other professional restaurant except that this one is

staffed entirely by high school kids. There are four different "teams"

that students rotate through so they learn all phases of the process.

Gard Manger: This station prepares the first course, usually a salad, soup or other appetizer.

Saucier: This station prepares the main course. Patissier: Bakes the breads and prepares the desert.

Baking/Pastry: This station keeps seasonal baked goods stocked in the pie case.

Max Hardy began his culinary training in the Culinary Arts Program at Wharton High School. While Max was in this high school Culinary Arts program he started his own catering company and was later contracted by Wharton High School’s Executive Chef to cater events for the Tampa community throughout the school year. Determined to continue his education in Culinary Arts, Hardy received a full scholarship

to Johnson & Wales University for his exceptional culinary skills. Graduating at the top of his class from Johnson & Wales, with a degree in Culinary Arts, Hardy founded his own private catering company Chef Max Miami.

The Wharton Culinary Department does not just serve food on campus. It also caters events all year long. The students cater large events where they will serve 250 or more people: 30 different courses at 10 different stations. The department never charges more than $15 per head and all of the profits go right back into the program. The department caters the Teacher of the Year Awards at the David A. Straz, Jr. Center for the Performing Arts with Strawberry

ig Brothers Big Sisters of Tampa Bay is reminding the community of its

vision that all kids have the opportunity to reach their full potential, and they’re asking for your help. The agency pairs volunteer mentors with children facing adversity, so that local youth in Pasco, Polk and Hillsborough Counties have the one-to-one guidance they need—guidance that leads to academic success and positive choices. Big Brothers Big Sisters matches “Bigs” (mentors) with “Littles” (mentees) throughout Pasco, Polk and Hillsborough Counties, and it has two programs it’s specifically recruiting for right now, thanks to grant funding provided by the Office of Juvenile Justice and Delinquency Prevention. One program targets at-risk youth, ages 9 and up, who live in Dade City. While many of the children served by Big Brothers Big Sisters are in single-parent and low-income households, that’s not always the case. Big Brothers Big Sisters is the

oldest and most successful mentoring organization in the country, and it holds itself accountable for demonstrating positive academic and social outcomes for the children served. Last year, in Pasco, Polk and Hillsborough Counties: • 96% of our Littles were promoted to the next grade level• 95% showed an increase in self-confidence• 99% had no involvement in the juvenile justice system The agency depends on community support, in the form of both volunteers and donations, in order to achieve these results. It costs approximately $1,000 a year to make and maintain a match between a Big and a Little, to cover background checks and ongoing professional support services. “Operation Bigs is our newest mentoring program, and provides support for many single and two-parent military families who appreciate the opportunity to provide their child with more academic support as well as new cultural and other opportunities from another trusted adult,” says Stephen Koch, CEO and President of Big Brothers Big Sisters of Tampa Bay.

Fish Tacos with Chipotle CreamIngredientsFISH:2 tablespoons olive oil 2 tablespoons freshly squeezed lime juice1/4 teaspoon salt Freshly ground black pepper1 pound white flaky fish fillet, like tilapia or halibut

CHIPOTLE CREAM:1/2 cup plain nonfat yogurt 2 tablespoons mayonnaise2 teaspoons chipotle pepper, 8 (6-inch) corn tortillasin adobo sauce 1/2 cup corn kernels 1/4 cup fresh cilantro leaves (thawed if frozen)1 1/2 cups shredded green cabbage or lettuceLime wedges

Directions In a small bowl, whisk together the oil, lime juice, salt and pepper. Pour over the fish fillets and let marinate for 20 minutes. Put the yogurt into a strainer lined with apaper towel and place over a bowl to drain and thicken for 20 minutes. Remove the fish from the marinade and grill on a preheated grill or nonstick grill pan over a medium-high heat until cooked thorough, about 3 minutes per side. Set the fish aside on a plate for 5 minutes. In a small bowl combine the thickened yogurt, mayonnaise, and chipotle pepper. Heat the tortillas on the grill or grill pan for 30 seconds on each side. Flake the fish with a fork. Top each tortilla with 1 tablespoon of the chipotle cream. Top with fish, cabbage, corn and cilantro and serve with lime wedges.

COMMUNITY OUTREACH The New Tampa Family YMCA's Annual Livestrong Spinathon held in March was a huge success! Thank you to all those who participated in our Spinathon. Together the New Tampa Family YMCA raised over $7,000 to support our Annual Community Support Campaign and Livestrong Cancer Survivor Program. With over 60 participants ranging in age from 11 to 88 the Spinathon was truly fun for all ages. With their support and the support of several local businesses the YMCA's livestrong Cancer Survivor Program will

continue to flourish and grow. Thanks to the Livestrong Yoga Group for cheering on the spinners as well as each other. Behind the Pink Ribbon

People almost always recognize the pink colored ribbons printed on shirts, towels, coffee cups, or just

about anything. That distinct pink ribbon has become uniquely identified with breast

cancer. Breast cancer, two words no woman wants to hear in her doctor's office. But as scary as these words may be there is hope. Breast cancer treatment has evolved significantly over the past two decades. Advances in breast cancer research and improved technology have turned a once

devastating diagnosis into a treatable disease. Paramount in achieving this is early detection. For this reason, Dr. Collins cannot stress enough to women 40 years of age and older the importance of yearly mammograms. Breast cancer most often presents without symptoms which is why screening mammography is an important tool for early detection. When a diagnosis of breast cancer is made Dr. Collins reminds her patients that there are treatment

options. This disease does not affect everyone the same and treatment is not "one size fits all." Surgical treatment options are much improved and do not always require complete removal of the breast (mastectomy). Most patients have the option of breast conservation therapy where only the cancerous portion of the breast is removed. Even in cases where mastectomy is required women now have various options available for breast reconstruction. Most of these surgical treatments can be offered by Dr. Collins and the facilities at Florida Medical Clinic. But it should be kept in mind that cancer treatment is best achieved through a team approach where many doctors from different specialties come together to provide a treatment plan for an individual patient. Dr. Collins will work with physicians in other specialties at the Florida Medical Clinic to offer comprehensive care to her patients. At Florida Medical Clinic Dr. R. Collins will perform surgeries including breast surgery, advanced laparoscopic procedures, intestinal surgery, hernia repairs, gall bladder

Girl Scouts is celebrating 100 years of building girls of courage, confidence, and character, and Girl Scouts of West Central Florida (GSWCF) invites all girls entering grades 1 – 12 to celebrate with us at camp this summer, whether or not they are Girl Scouts! Overnight camps are offered throughout June and July at two of the council’s camp properties, and day camps are offered throughout the eight counties GSWCF serves – there’s something for every girl! Non-Girl Scouts are welcome to register for summer camp, and many girls join each year through the camp pathway as part of the new-age membership model of Girl

Scouts. Girls who join at the time of summer camp pay a one-time, annual membership fee of $12. GSWCF-owned Camps Dorothy Thomas, Scoutcrest and Wildwood are American Camp Association (ACA) accredited; three of 16 ACA-accredited camps within a 100 mile radius of Tampa, according to the ACA website Horseback riding, water skiing, STEM (science, technology, engineering and math), healthy living, arts and crafts, and swimming are among the many activities offered at Girl Scout summer camps.
