Brinawa Cheese Marook Farm - Hastings Valley, near Taree, NSWWhat is it? Pasteurised, Hard, Washed Rind, Cow’s Milk Cheese made with Vegetarian Rennet.

Why you need to know about it: Brinawa is made by cheese makers David Marks and his Swiss born wife Heidi Fallding on their 400 acre, bio-dynamic dairy farm. ‘Marrook Farm’ is hidden away in Elands, in the idyllic, hinterland on the Mid-Northern coast of New South Wales. River Flats Estate Lamb ShanksServes 4 Ingredients: 4 lamb shanks1/4 cup River Flats Estate Premium EV Olive Oil2 brown onions, peeled 7sliced2 carrots, peeled & chopped4 celery sticks, sliced1 parsnip, peeled & chopped 1 small turnip, peeled & cubed 1 sweet potato, peeled & cubed1 large can chopped tomato

4 cloves garlic, crushed2 bay leaves2 pieces River Flats Estate "Wild Lemon", pith & flesh removed, chop skin very finely . Salt and freshly ground black pepper

Method: In a very large pan, brown shanks all over in oil, remove, add onions to pan, cook stirring till browned. Return shanks to pan, add remaining vegetables, garlic, bay leaves and "Wild Lemon ". Cover & simmer over low heat for approximately 3 hours or until meat pulls away from the bone (more is better than less!). Season to taste. Serve in a "nest" of mashed potato. June in your garden - Tree TipsMost nurseries carry a range of deciduous trees throughout winter. We are constantly seeking the latest multi-graftings and any new release varieties for our customers. Once you have made your choice, prepare the area you want to plant in by digging a hole about the size of an normal bucket. If you hit clay start to build a mound that will be at least 30cmH made up of Rich Organic Garden Soil. Fruit trees particularly need a mound for good drainage. You can add compost or a slow release fertilizer before planting, or alternately add gypsum to help break up hard ground. Plant 2 weeks later by re digging the hole, filling with water and letting it drain then placing the tree in, spreading the roots and filling with good garden soil. Keep any budding bulge above ground level, pressing the earth firmly around, then water well and don’t forget to mulch.Shape your deciduous ornamental trees & shrubs now, removing any criss- crossing branches.Cut back deciduous trees to either control their height, or to stimulate new growth.Established deciduous fruit trees need winter spraying against a variety of fungal diseases, mites, scale & aphids. National Whale Day sees start to Newcastle’s Whale Watching SeasonNational Whale Day was launched in 2008 by IFAW (International Fund for Animal Welfare) as a day for all Australians to celebrate their love of whales, as well as draw attention to some of the threats they face today.

Coinciding with Australia’s Fifth National Whale Day NOVA Cruises will begin their 2012 whale watching cruise season from Lee Wharf Newcastle on Saturday 2nd June. NOVA Cruises pioneered whale watching cruises from Newcastle in 2007 and since then have treated thousands of guests to awe inspiring displays of Humpback and Southern Right whales frolicking off the Newcastle coastline. Although the whales are the stars of the show the cruise can also feature seals, penguins, dolphins, turtles, sea birds and other marine life.

Peter Hanrahan General Manager for NOVA Cruises predicts “that this year over 15,000 Humpback whales will be making their annual migration from the freezing Antarctic waters passing Newcastle on their way to the warmer tropical waters

of Northern Queensland for breeding.”

Over the past month the team at NOVA Cruises have experienced an increase in the number and volume of whales passing Newcastle which indicates the main population is on its way. Newcastle Theatre Company presents Hotel Sorrento by Hannie RaysonIn her 1992 article “A Sweet Pensive Sadness” Hannie Rayson wrote that with Hotel Sorrento she “wanted to write a play of ideas; something which would send an audience out into the night with all sorts of things to talk about over coffee.” Her central question with Hotel Sorrento “was how far we had come in terms of our quest to articulate an Australian identity and what kinds of changes had taken place during the past decade” and “was interested in how the experience of living elsewhere alters one’s perceptions of home. And, conversely, for those who’ve stayed and contributed to the life of the culture from ‘the inside’, where is the line between a healthy nationalism and blind patriotism?”

Rayson’s interest “was to try and weave themes of cultural identity through several layers of the narrative”, to explore ideas about loyalty, “or betrayal,

from the perspective of the expatriate’s response to her country, her fiction and her family.”

At the heart of Rayson’s Hotel Sorrento is the family and the sisters.

Newcastel Theatre Ccompany’s Production of Hotel Sorrento is directed by NTC & YPT stalwart Barbara Delaney.

The recent publication of her semi-autobiographical novel by Meg Moynihan is the hiatus for a Moynihan family reunion. The three Moynihan sisters, Hilary, Meg and Pippa are reunited in their hometown – idyllic Sorrento, on Victoria’s Morning Peninsula.

Add an ineffective father, Wal, a bemused English husband, Edwin and a tormented teenager, Troy and the result is a powerful, reflective play which explores identity, both personal and national, whilst retaining “the family” at its core. Not without its

share of typically Australian humour, “Hotel Sorrento” features Sandra Monk, Wendy Ratcliffe, Amy Edwards, Marie Warburton, Alan Bodenham, David Murray and newcomers to NTC, Michael King and Brayden Porter.

A recent experience has prompted me to reflect of benefits, and otherwise, on talking straight. I was involved in negotiating the purchase of a business and was asked for our 'best offer' as the 'agent' didn't want to get into a bidding war. His desire was to take the best offers from a couple of potential purchasers to the vendor. I was very comfortable with this approach and the best offer was confirmed. A day later, the Agent confirmed that our offer was accepted. Initially we were surprised by how quick the offer was accepted and wondered if our offer was too high. The following day, a second and presumably higher offer was received by the Agent. The vendor decided that whoever was the first to present the contract for exchange would be the successful purchaser. Whilst we very not

tally happy with this, having had our offer accepted, we agreed to proceed of that basis, knowing that we had a couple of days head start. We moved quickly with a haste visit to the bank and the solicitor as well as arranging for a building inspection.Then a day later we received an email from the agent. Until now, it had always been a phone call. This time, we were advised that the Agent had received yet another offers and the vendor would make a decision as to who would be the successful bidder after the 3 contracts had been exchanged.As you can imaging we were not at all happy with this scenario as we would be outlaying money with only a 33% chance of being successful. So after due consideration, we advised the Agent that our offer was being withdrawn. Ethical behaviour in business dealings is paramount to developing long term relationships based on truth and trust. While the Agent might well justify his actions on the grounds of acting in the best interests of his client, the vendor, he did himself no favours in establishing a professional relationship with us. Saying one thing and doing the opposite is a recipe for a burnt relationship. In business, as in our personal lives, truth and trust as very important. Acting in the best interests of everyone concerned and respectively telling the 'real' truth in our business dealings will provide a solid and positive basis for working together.

Fire up this winter with Newcastle’s Hottest Festival

Flaming sculptures, fiery street performances, pyrotechnics and artistic light shows will set Newcastle aglow for three Saturdays in June, when the annual L!vesites Winter Heat Festival returns.

One of Newcastle’s biggest annual events, Winter Heat warms up the city with a free program of fire-themed entertainment, street art, light displays and workshops held between 6pm-9pm on June 9, June 16 and June 23.

The Winter Heat festival fire starts on Saturday June 09 with a stage show for kids by local music duo Liam and Damo, at Pacific Park, opposite Newcastle Beach. The park will and surrounding streets will be illuminated by a stunning light installations designed by local artist Ken O’Reagan.

The festival continues on Saturday June 16, when Newcastle’s beautiful Honeysuckle Promenade will light up

with an impressive art installation, live music, fire twirling and pyrotechnics.

For Winter Heat’s finale on Saturday June 25, Newcastle’s Civic Park in the CBD will be transformed into an inferno of artistic installations, fire sculptures, flaming fountains, and burning rocks. This event will open with a mass drumming workshop facilitated by local drumming group Rhythm Connect, followed by a soundtrack of beautiful classical strains from the strings of talented local four-piece band Ensemble Arc.

Throughout the month of June, Newcastle’s restaurants, cafes and bars will light a fire in the bellies of festival goers with special winter menus, while hotels and B&Bs across the city will offer great weekend rates for those looking to make the most of the event.

Warina Wool & CraftMore than 35 years ago, Nina watched friends spinning wool and was fascinated by the thought of turning a handful of fluff into yarn. She thought that it would be difficult and beyond her capabilities. Her spinner friends offered her the opportunity to try and after several urgings, and with their support, did she sit down with a spindle and a bag of fleece and produce her first very lumpy skein of wool. She was then given a lesson on a spinning wheel and a new passion was born. Wool, alpaca, angora goat, dog, rabbit and cotton have all been spun at one time or another to make skeins to knit with. She also has vegetable dyed skeins to give a different look to the fibres she has spun.

What started as a hobby, grew into a business when her husband's work collegues began ordering her hand spun wool for their wives to knit into jumpers. As the demand grew, Nina began knitting and selling her garments made from her own handspun wool.

At Handmade in the Hunter Market, Nina demonstrates spinning all day and talks about her craft while her husband, Warwick (another spinner) handles the sales of her skeins, knitted toys and assorted knitted clothing items. Nina is also available for spinning lessons (by arrangement)

Lindemans, Cessnock

Cessnock is a sub-region of the Hunter Valley, 120 kilometres north of Sydney, 40 kilometres west of Newcastle and 30 kilometres from the coast.

Pastoralists commenced settling the land in the 1820’s. The township of Cessnock developed from 1850, as a service centre at the junction of the Great North Road, with branches to Black Creek (Branxton) and Maitland.

During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. Changes in mining, including automation and the introduction of sophisticated computerised equipment, have lead to the closure of some mines in the area and this, together with the natural ageing of the population, has resulted in a decline in population in some villages over the

last twenty years.

Consequently many areas have undergone a change in character, with rural residential housing development and weekend retreats becoming popular.

The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. The town has a number of fine restaurants, guesthouses and galleries.

The Convict Trail is a conservation project that is restoring the convict-built Great North Road. This is one of Australia's national historic treasures.

In September 2012 we are launching Mural Month, where additional tours will be run, a Mural will be painted and there'll be lots for visitors to do and see in the area - so stay tuned.

There are now over 50 murals, making Kurri Kurri the largest mural town in Australia. New murals are currently

2012 Weston Art ShowThis year’s Weston Art Show is the 49th staging of this popular regional event, making it the second-longest running art show in the Hunter Region.The Show, to be held at the Weston Civic Centre in Station Street, Weston between 19 and 23 June, has been an outreach of the Anglican Church in Weston throughout its history.Many well-known regional artists, including Gerhard Ullmann, Marea Kozaczynski-McCaig, and Chris and Frances Fussell have experienced success at the show. The show also encourages the work of local young artists through special sections for primary and secondary students.This year sees the introduction of a newly-sponsored section for indigenous artists, which adds to the wide range of genres in which artists may enter.The official opening of the show will be held at the Weston Civic Centre, Station Street, Weston on 19 June from 7.00pm. FIRST CLASS 11Now in its fourth year, First Class is an established annual exhibition project celebrating the calibre of work produced by students from the Hunter and Central Coast regions. The exhibition is selected from nominated local Higher School Certificate submissions produced in the previous year and curated to a theme. In 2012, the curators sought artworks that reflect on the student artists’ interactions with the world as they navigate through it.

A range of restaurants and cafes offer al fresco dining, river views, heritage surroundings and a cosmopolitan standard of menu. Grab a bottle of the finest wine available for tasting from the local wine cellar then select your café, even the most finicky of foodies will find something to their liking.

Morpeth does have its own museum, a service that traces family names and

shields, St Johns Theological college and is home to the beautiful St James church to name but a few of the significant buildings throughout the town.

Just down the road a way is a structure of a different nature. The infamous Maitland Gaol is now open to the public, experience what it's like to walk in the footsteps of some of Australia's most notorious criminals.

Morpeth, the town, the heritage, the buildings and carriage ways make this a place to not only visit but make a regular event.

Open every weekend from March to Nov 30th 10am – 3pm. When you visit Tocal Homestead its not hard to imagine days gone by. Tales of architects and graziers, bushrangers, businessmen, social reform and philanthropy are woven through the highs and lows of life on this unique property.

There is a lot on offer for visitors to the Allyn & Paterson River Valley, just two and a half hours’ drive from Sydney, an hour from Newcastle and where Dr Henry Lindeman planted his first grape vines in 1843.

Here you will discover the geographically blessed towns of Paterson, Vacy, Gresford and East Gresford, ringed by the ancient Moonabung Ranges and criss-crossed by the pristine waters of the two rivers that flow from the Barrington Tops.

First stop could be historic Tocal Homestead for tales of the olden days of bushrangers, graziers, and other characters who inhabited one of the

greatest Australian cattle and horse studs of its time. Have a look at the rare architect-designed barn built around 1867, and the gracious Colonial Georgian country house. Tocal Homestead is a very popular venue for weddings and milestone celebrations.

Paterson has inspired many artists to pick up a brush to try to capture this picturesque Australian country town on canvas. Take the time to look at the many fine old homes, grand commercial buildings, museums, art gallery, pubs, cafes, parks and shops that contribute to Paterson’s unique style.

9km north of Paterson is Vacy, with rugged Mt George to the west. It is well worth a visit to the café, hotel, arts & crafts shop and general store for a taste of country hospitality, great food and quirky crafts. Travel over the Vacy bridge, circa 1898, to Bunna Bunoo olive grove and gift shop. You can see

the roof tops of the cabins and lodges such as Banjos Bushland Retreat and Cabins in the Clouds on Mt George, perfect destinations for weekend getaways or a longer stay.

The small towns of Gresford and East Gresford are the gateway to Lostock Dam, Mt Allyn and the Chichester State Forest to the north. Take the Allyn River Road drive past homesteads set among rolling green hills and granite outcrops. Visit Clevedon craft shop, Natural Furniture Works, the Beatty Hotel and Camyr Allyn winery. History lovers will enjoy a drive to St Anne’s Anglican Church and suspension bridge, and St Mary’s on Allyn at Allynbrook.

Carla comes to TownMuswellbrook Regional Arts Centre will be hosting its first ever Artist In Residence project in 2012. Carla Fletcher, Melbourne artist will be in residence in Muswellbrook from 20th May til 4th of June this year. Carla has a strong interest in landscape, portraiture and animal studies. She was a finalist in the 2010 Archibald Prize a prestigious and

recognised position for any artist.

During her residency Carla will be spending her time mostly researching the local landscape and land use and working up some preparatory sketches in the studio. She will also be visiting several local schools to visit year 11 and 12 students. Her last formal appointment whilst in Muswellbrook will be a public “debrief” to be held at the Muswellbrook Regional Arts Centre on Fri 1st June 2012.
