How to...Application Procedure. Degree-seeking students enrolling at Colorado Mountain College must submit an Application to Colorado Mountain College. Transcripts of all previous college work are required for transfer students. You do not need to request transcripts if you are either currently attending Colorado Mountain College, or if Colorado Mountain College was the last school you attended.
For admittance to Colorado Mountain College’s Sustainable Cuisine program you must demonstrate basic skills pro-ficiencies through either acceptable ACT or SAT scores, or the Accuplacer placement test. We recommend that you take these tests as soon as possible because inadequate skills in reading, writing and mathematics may require you to enroll in developmen-tal courses. This may extend the time needed to earn your degree or certificate. For more details, contact a Student Services counselor at your campus, or visit www.coloradomtn.edu/testingservices. You must also have the ability to lift 50 pounds and stand for extended periods of time.
Admissions. Colorado Mountain College is an open enrollment comprehensive community college that also grants bachelor’s degrees. First priority for admission is granted to Colorado Mountain College District residents. Other students are admitted as staff-ing and facilities permit.

Colorado Mountain College’s unique Sustainable Cuisine
program teaches the art of crafting delicious cuisine us-
ing fresh, locally sourced foods that are healthy for our
communities and planet. You’ll gain the same foundation
of cooking and culinary management skills offered in
our highly successful Culinary Arts program, while also
exploring agro-ecology, sustainable food service opera-
tions and the politics of food.
The National Restaurant Association reports that nine
in ten fine dining operators believe that demand for
locally sourced foods will grow in the future. Chefs who
understand the emerging challenges and opportunities
involved in creating dishes with these ingredients are in

Courses of Study
Courses in Colorado Mountain College’s Sustainable Cuisine program focus on cooking skills and aesthetics, menu development and planning, sustainable agriculture and cuisine and the politics of food. You can earn a two-year Associate of Applied Science (AAS) degree in Sustain-able Cuisine (64-credit hours minimum), or choose from three certificate programs in Sustainable Cuisine.
The AAS degree and Sustain-able Food Systems Certificate require students to attend at least one spring, summer and fall term to experience agroecology in a variety of seasons. Many Sustainable Cuisine courses coincide with the AAS in Culinary Arts and may be applied toward that degree as well.

Students must submit a CMC Bachelor’s degree admission application and official college transcripts and meet the following eligibility requirements:
1. Have a minimum of 45 college level credits (100 or higher) from an accredited school.
2. Have a minimum of a 2.3 cumulative grade point average on a 4.0 scale.
Students whose cumulative grade point average does not meet the minimum requirement may be admitted on probation pending an admission committee review. If you are starting college or don’t meet the requirements, please contact a Student Services Office at your local CMC campus.
