The grind depends largely on your own texture preferences. Before you grind any meat finely, you will need to first grind it through a coarser plate (known as "first grind"). For binding purposes, we recommend grinding half of your sausage meat coarse, & half of it fine. For burgers, it will depend on preference. A tightly packed burger is finely ground. A loosely packed burger should be a medium grind. Again, we recommend a mixture of grinds for burgers. The coarse plates are good for fat when you're adding it to sausages that will be fat-distinct like salami & pepperoni. The largest diameter plates are used to chunk meat for stews or chum for fishing.
