NEXT HPR MEETING: Sunday July 1, 2018, noon, at Hall of Nations. House of England members are automatically members of HPR-come and observe how HPR is run by the delegates! NEXT LADIES AUXILIARY LUNCHEON: Wednesday July 11, 2018, noon, at the Hall of Nations. This will be hosted by House of France. Men invited also. Only $5 for a lovely luncheon and cultural information shared. HPR QUEENS UPDATE: Queens voted for their 2018-19 board and broke up for the summer. Meetings will resume at the end of August. Sign up by August 31st to be a House Queen or Princess. HPR NEWS: (From June meeting.) Hosting Hours: Cottages have to be open Saturdays and Sundays for 5 hours between 11am and 5pm. New cottages: No update-bids being made to get construction started. Applying for grants to cover costs. ARYA was awarded the “2017 HPR Volunteer of the year “congratulations Arya. Directories will not be printed this year- electronic version only. Plaza de Panama construction has been delayed by lawsuits so International Christmas Festival is on for December. Not sure where Beer Garden will be. City wants to combine HPR with other vendors. HPR desperately needs someone to take over the website and publicity-any house member willing? HPR Lawsuit is basically ‘in limbo’- no action. House of Lebanon in danger of termination due to failure to provide required paperwork. They have until July meeting to produce the detail requested. When we host on weekends we have to take our trash to the dumpster behind House of Sweden- City does not allow us to put in cement trash containers any more. We now have to have a health dept permit for lawn programs- HPR will purchase one for the year. Inspectors will do random checks at events through the year. One House used Balboa Park Club restrooms to change clothes for entertainment-this will not be allowed in future. Hall of Nations will be used- we have requested purchase of one or two portable partitions for use in the Hall. Houses have to round up the 6 original keys issued by the City for the cottages! (Impossible!). The City will put on new locks and issue keys at HPR cost (each House about $100). We might be fined for not having the original old keys. Hall of Nations hosting for July: 7/8=Lebanon, 14/15= Mexico, 21/22=Colombia, 28/29=Peru. Lawn Programs for July: Sunday July 1: House of USA Sunday July 15: House of France Sunday July 22: House of Colombia Sunday July 29: House of Peru Tuesday July 24: House of England and some of the other cottages open noon to 2pm for school children and other visitors. House of Chamorros will be in the Hall of Nations.

Elaine made this amazing cake to serve in the cottage on the royal wedding day. It was delicious. LEMON ELDERFLOWER CAKE: IN HONOR OF PRINCE HARRY & MEGHAN MARKLE’S WEDDING CAKE 19 May 2018

(The sponge portion is adapted from Bon Appétit’s lemon and raspberry wedding cake)

· 3 cups all-purpose flour · 1 Tbsp. baking powder · 1½ tsp. kosher salt · 2 cups sugar · 2 lemons, zest finely grated (about 2 Tbsp.) and juiced (about ½ cup) · 1 cup (2 sticks) butter (room temp) · 6 large eggs, room temperature · 2 tsp. almond extract · ½ tsp. vanilla extract · ¼ cup vegetable oil · 1¼ cups whole milk

· Whisk flour, baking powder, and salt in a medium bowl. Combine sugar and lemon zest in another medium bowl and massage with your fingertips until mixture is very fragrant and looks like wet sand, about 1 minute.

· Beat butter in the large bowl of a stand mixer fitted with the paddle attachment until smooth, then add sugar mixture. Beat on medium-high speed, scraping down sides of bowl occasionally, until mixture is extremely light and fluffy, 6–8 minutes.

· Reduce mixer speed to medium and beat in eggs one at a time, incorporating each fully before adding the next. Scrape down sides again to make sure all ingredients are incorporated. Beat in egg yolks and vanilla and almond extracts. Reduce mixer speed to low and slowly stream in oil; scrape sides again (this is important because it’s a high volume of batter).

· Add dry ingredients in three additions, alternating with milk in two additions, beginning and ending with dry ingredients. Slowly stream in lemon juice (at this point the batter might look a little curdled, which is normal). Remove bowl from mixer and fold several times by hand with a flexible spatula, scraping bottom and sides to make sure batter is evenly mixed.

· Divide batter evenly between prepared pans and smooth top.

· Bake cakes with pans side by side, rotating positions halfway through, until centers spring back and a tester inserted into the center comes out clean, 35-40 minutes. Note: This cake will still look relatively pale when fully baked.

· Let cakes cool in pans 10 minutes. Cut around sides with a thin knife and invert onto wire racks; remove parchment. Let cakes cool completely.

Glaze: To bump up the Elderflower-Lemon flavor I opted to tuck a glaze under the frosting. The glaze is a quick/simple cocktail of 1/8 cup water, 1/3 cup sugar (heated together so sugar dissolves) 4 Tbsp butter (also melted) and ½ cup Elderflower liqueur & ¼ cup lemon juice. Pour over the two cake rounds while they are still in the pans. Once glaze is absorbed (5 minutes or so), invert cakes onto two separate plates.

Frosting 1 c butter 5 cups powdered sugar 1/4 c milk, 1/4 c elderflower liqueur 1/8 c lemon juice 2 t almond extract 1 t salt

Thickly frost one of your two rounds, then place the other on top. This is quite a tall, handsome cake. If you’re feeling ambitious, you can split both layers (making a 4-layer cake). Or not. It’s quite nice either way.

If you wish to leave the sides unfrosted, that is a nice look too, perfectly respectable. Garnish with lemon peel or lemon slices. A few red raspberries and/or mint leaves looks very nice as well. Happy baking!

Graham David Hughes, born in Liverpool, is an adventurer,

filmmaker, television presenter and Guinness World Record holder. Hughes was the

first person to visit all 193 United Nations member states and several other territories

across the world without flying He did so over a period of nearly four years and

completed the task in November 2012.

While on his journey he presented the television program Graham's World on the

National Geographic Adventure channel, a weekly look into his ongoing quest to break

multiple world records by visiting every country on earth without flying.

The Odyssey Expedition was a quest to drop in on every one of the 193 UN member states. For the United

Kingdom, Hughes visited all of the four constituent countries that make up the kingdom, and counted the UN

member state as four separate countries. Hughes also visited the non-member state of Vatican City, as well as

the partially recognized non-member states of Palestine, Western Sahara, Kosovo, and Taiwan, for a total of

201 "countries" without flying. He says people tend to wonder how he got into the further-out countries like

North Korea, Iraq and Afghanistan, but claims "they were the easy ones"

Highlights of the trip included imprisonment in the Republic of the Congo, getting caught sneaking into Russia,

and running the blockade into Cuba. He was arrested in Estonia and Cameroon and spent jail time in Congo

and Cape Verde.[9]

Hughes completed his expedition on Monday 26 November 2012 after entering South Sudan. He travelled

overland back to his hometown of Liverpool to keep the spirit of The Odyssey.

Guinness World Records were reportedly unhappy with his entry into Russia as it was the only country he

entered without passing an official border post In January 2013 Hughes returned to Russia, this time with an

official visa.

While on The Odyssey Expedition, Hughes helped raise funds and awareness for the charity WaterAid.

WaterAid is an international non-profit organization that was set up in 1981 as a response to the UN

International Drinking Water & Sanitation decade (1981–1990). The organization was first established by the

UK water industry on 21 July 1981 as a charitable trust at their main office premises in London.
