Hospitality & Catering Newsletter September 2017 January 2018 What’s been happening in the Hospitality & Catering department since our last newsletter? September 2017 Tuesday 5 th - The Hospitality & Catering department welcomed guest speaker Simon Ward, Head of HR & Marketing at Eltham’s Tudor Barn. Simon gave a presentation to the whole department about life at Tudor Barn & what it takes to be a top chef/waiter/ess. Simon also gave students lots of tips about interview techniques & the do’s & don’ts at interviews. Tudor barn will be looking for part-time chefs & waiters/resses over the Christmas period. Friday 8 th - City View reopens City View re-opens the doors for the New Academic Year with very nervous & keen Hospitality & Catering students. New staff at the College were invited to sample the wonderful food cooked & served by our students! It was a huge success! Tudor Barn in Eltham works very closely with the Hospitality & Catering department. Several students have completed year -long work placements there with many going on to full-time employment including James Hale, Liam Messenger, Andrew Mills & Karl Misslebrook Our new Level 2 Hospitality & Level 2 Catering students are keen & anxious to deliver their first service in City View Restaurant.

What’s been happening in the Hospitality & Catering department since our last newsletter?

September 2017

Tuesday 5th

- The Hospitality & Catering department welcomed guest speaker Simon Ward, Head of HR & Marketing at Eltham’s Tudor Barn.

Simon gave a presentation to the whole department about life at Tudor Barn & what it takes to be a top chef/waiter/ess. Simon also gave students

lots of tips about interview techniques & the do’s & don’ts at interviews. Tudor barn will be looking for part-time chefs & waiters/resses over the

- City View reopens

Thursday 14th

- Fine Dining commences

Our new Level 3 students had been eagerly awaiting their chance to shine on their first ever Fine Dining evening with their tutor Chef Mark –

Wow! What an amazing success!

Monday 18th

- Ofsted inspection!

Ofsted inspector Richard Moore visited the department during the Ofsted inspection & was very impressed with the students that he saw & the

standards of work that they were achieving so early in the academic year. Well done team!

Friday 22nd

- Work experience begins for our Level 3 students

We’d like to welcome the Holiday Inn, Bexley to our suite of Work Placements. This year Aiden Williams & Katie Board will be representing the

Hospitality & Catering department during their 1 day per week stint at the Holiday Inn. George Hutchings & Ebonnie-anne Cook will be

undertaking their Work Experience (WEX) at the Tudor Barn Eltham. Maxine Charles will be working with Aramark catering for her WEX;

Kelly Fabian will be working towards her dream of becoming a Catering teaching at John Roan School where she will be working with Year 9 &

10 students as part of her work placement. Finally Joshua Kennedy will be perfecting his pastries at the Plumtree Café in Greenwich as part of

his WEX.

- MacMillan coffee morning

A big well done and thank you to the Hospitality and Catering students who took the time to make and donate delicious cakes and sell them today

at the college’s Macmillan Coffee morning. Great work for a great cause!

Thursday 5th

- Trip to the Inter Continental, Greenwich

Hospitality lecturer Jade took her tutor group, who are studying L2 Food & Beverage service to the Inter-Continental Hotel in Greenwich.

The visit was a huge success with students being shown around the hotel & all of the facilities. The students were lucky enough to have a talk &

Q&A session from the whole management team including the Hotel General Manager, Food & Beverage Manager, Reception Manager and

Executive Chef. The students were surprised and inspired by how young and dynamic the team were and how quickly they had progressed up the

career ladder. The students really enjoyed the visit & found it to be enormously beneficial. Early next year, each student will be spending a

week’s work-placement at the hotel.

Thursday 12th

- City View Restaurant re-launch!

Just before the summer holidays the Catering department was lucky enough to be awarded a phenomenal £22,000 donation from the Savoy

Educational Trust. With this hugely generous donation we were able to replace all the restaurant furniture, purchase a state of the art Rational

oven, top of the line Barista coffee machine as well as a purpose built portable cocktail bar. All these items have benefited the students

enormously as we have been able to expand and develop the curriculum with the new equipment.

Last night the department came together; with ex-students, employers & some of our longstanding customers, to say a very warm thank you to

the Savoy Educational Trust with a spectacular dinner, delivered and served by the L2 Hospitality and L3 Catering students. Well done team. A

fantastic event to be proud of and thank you again to the Savoy Educational Trust for their generosity.

Evening Dining

Fantastic service and great value for money. The students run the restaurant in such a very professional

manner and the food is of a ‘London restaurant’ quality without the London prices. Definitely a hidden gem

and worth a visit at lunch time or Thursday evening visit.

Thursday 9th

- Charity Event

Every year the Hospitality and Catering Department host a fundraiser to support a local charity and other good causes. This year the department

put on a week of fundraising activities to support the Demelza Hospice & purchase IT Tablets for Catering students to study and do research for

their programmes.

All students contributed throughout the week. The Level 1s made and iced cupcakes. The Level 2s sold those cupcakes and raffle tickets, as well

as an opportunity to have a 'selfie' with our Shooters Hill therapy dog Findlay. They also had a competition to design a cocktail to sell for the

cause at the evening dinner. The finale was the Level 3s producing and delivering an outstanding menu at the evenings spectacular fine dining

event which finished our week long fundraising.

In addition to this, it was with great pride that the deparment welcomed back returning students that wanted to mentor and support the

fundraising cause; Rex de Guzman, Mason Brock, Ryan Goodrich and Mathew Bolton. The ex-students were such an inspiration to the current

students and a great example of the different career paths our industry can offer. It was wonderful to see past and present students working

together.

The final figure raised was £1403.43, the department would like to thank the customers, students and staff that contributed and supported the

event throughout the week and at the Charity Supper, as well as our suppliers who very kindly donated a large quantity of the food & drink to

the department. Your phenomenal generosity and support is incredible. Thank you

given a thunderous applause by all of the customers.

Charity Event 2017

Thursday 9th

- Open Event

As ever the Hospitality & Catering students did the department proud by showing prospective students & their parents/guardians around the

department – which was absolutely buzzing due to the Charity event. Adem Huy was particularly impressive giving an extremely professional

tour & speech. Prospective students were amazed with what’s on offer in the department & the career paths our ex-students have under-taken.

Thursday 9th

- Full Circle School

Full circle school joined the Level 2 Hospitality & Catering students in City View Restaurant. The small group of students were given a tour of

the whole department including seeing the level 1 catering students in action, preparing lunch for the Atrium. After the tour the students learnt

how to fold napkins.

Monday 13th

– New Vic Food Hygiene Training

Students from New Vic Sixth Form College undertook their Basic Food Hygiene training with lecturer Jade; in preparation for working in our

professional kitchens the following week as part of their Business project to design dishes to sell at Christmas markets

Tuesday 14th

- Visit from St Pauls School

St Paul’s School paid us a flying visit, every student made the most wonderful non-alcoholic Sunrise cocktails demonstrated by our very own

Hospitality students. After mocktails the students were shown around the department, including observing the Level 3 students preparing lunch

for City View Restaurant. The event was finished with all students’ receiving a goody bag & a certificate.

Wednesday 15th

- WI & Intercontinental

City View Restaurant had an exceptionally busy service not only hosting the amazing ladies from W I but also the General Manager & Head of

HR from the Inter-Continental Hotel – both were incredibly impressed by the standard of food but also the professionalism of the Chefs &

Waiters/resses

Wednesday 15th

- Parents evening

Louise Kirby & Diane Roberts welcomed parents & guardians to the first Parents Evening of the Academic year. Diane & Louise handed out teas

& coffees along with cakes that had been made by our L 1 catering students – a very professional service, well done to all.

Monday 20th

New Vic Dish Development

Students from New Vic Sixth Form College spent a day with Chef Sarah & Jade designing & developing dishes as part of their Business Project.

The students worked in teams & worked extremely hard perfecting their dishes of Chocolate Brownies, Blue Berry Pancakes & Joloff Scones.

The students were then going to sell their dishes at Christmas markets to see which team could best package, market & sell their products.

Friday 17th

& 24th

November - Thomas Tallis

Carlene King brought in her group of Yr. 10 GCSE catering students from Thomas Tallis to City View Restaurant to ‘Run the Restaurant for the

day’. Our L2 Hospitality students worked with the students from Thomas Tallis showing them the finer points of polishing cutlery & glassware &

table-laying. The students correctly laid tables & were then treated to a special lunch cooked by our NVQ 2 students under Chef Stephen’s

guidance. Part of the experience was for the students to experience dining in a restaurant & to understand how food is presented in a restaurant.

After lunch the students were taught napkin folding, followed by cocktail making. Our Hospitality students demonstrated the ever popular non-

alcoholic Sunrise mocktail & then assisted each student to make one for themselves. The session was finished with a quiz & all students received a

Form College goodie bag & a certificate. The students absolutely loved the day & some will be applying to us for full-time courses

as a result of their experience in the restaurant.

November – 14th

December - Christmas lunches, Gastro Supper & Advent Feast

In December City View Restaurant was fully booked. Students cooked & served over 40 customers daily for Christmas lunches, & for Fine

Dining events; Pre-Christmas Gastro Supper & our annual Advent Feast. It was one of our best Christmases ever with all students working

incredibly hard & gaining fantastic experience & amazing feedback from our customers.

It was a fantastic Christmas at Shooters Hill this year with all the Catering and Hospitality students making the department so proud. The NVQ

Level 1 catering students made the highly anticipated, Christmas lunch for the whole college. The staff and students look forward to this festive

lunch all year! The Atrium cafeteria queue was long, but happy customers said it was well worth the wait! Very well done level 1’s.

Friday 15th

- Christmas breakfast

As a thank you to our students for working so hard & so professionally over the Christmas period; on the last day of term, the Hospitality &

Catering Team cooked & served a breakfast for all of our students – it was a great way to finish off the autumn term & thank our amazing

students.

Monday 15th

Good luck to our Level 2 catering students who are starting their WEX at Plumcroft Primary and the Dorchester Hotel. Craig-Lee Richards will

be the first representative at Plumcroft Primary School & George Tootill will be our ambassador at the world famous Dorchester Hotel! Good

Wednesday 17th

- Plumstead Manor

It was a pleasure today to welcome Year 9 and Year 10 students from Plumstead Manor to 'Run City View' for the day. Our NVQ L2 Hospitality

students mentored the Plumstead Manor students throughout the day showing them how to safely and hygienically lay a professional table

setting. The girls also got to learn napkin folding, order taking and non-alcoholic cocktail making as well as having a delicious lunch served by

our Hospitality students and a tour of our professional kitchens. The day finished with a fun competition, prizes and certificates. Well done

Thursday 18th

- London City Airport

On Friday 18th

November our Hospitality lecturer Jade Wilde took her NVQ 2 Food & Beverage Service students to London City Airport to visit

British Airways. As part of the visit the students were trained in emergency procedures, an in-flight safety demonstration, trolley service & had a

guided tour of the ‘landside’ section of the airport including security and check-in. They were also able to partake in a Q&A session with Pilots,

Cabin Crew, Air Traffic Control staff and the Recruitment team at which point they were able to ask about the qualifications and the process

involved in pursuing these amazing careers. This highly anticipated trip was hugely successful; all of the students were still buzzing a week later

with many now wanting to look further into careers in the aviation industry!
