Brief Guide to Chemicals

Acid Reduction Solution Used to reduce the level of acid in wine or must.

Bentonite A fining agent used to clear wine, it attracts particles in the wine and falls with them to the bottom as sediment.

Campden Tablets Added to wine after fermentation to preserve the wine.

Citric Acid Occurs naturally in most fruits, simple to use with a pleasant fruity flavour. Added to country wines to create flavour in otherwise low

acid flat wines.

Fungal Amylase Starch reducing enzymes, turning the non-fermentable starch into fermentable starch. Also contains pectin destroying enzyme.

Irish Moss Used to prevent protein haze.

Lactic Acid A weak acid, good to use in red wines which are excessively acidic. Added to induce a malo-lactic fermentation to reduce acidity.

Malic Acid Malo-lactic fermentation occurs naturally in fresh wines (i.e. Champagne). It is a third fermentation that normally occurs in the bottle

and produces a pleasant freshness to white wine and reduces acidity a little.

Oak Chippings Can be added at any time during fermentation, depending on how strong an 'oaky' flavour is required in the wine.

Pectolase Powder A pectin destroying enzyme, used with fresh fruit or vegetables high in pectin. A pectin haze could form and prevent the wine

from clearing.

Potassium Sorbate (fermentation stopper) A preservative added to wine at the end of fermentation to prevent re-fermentation.

Precipitated Chalk (Calcium Carbonate) Helps to reduce acidity.

Rohapect Enzyme (Pectolytic enzyme) Helps to maximise colour yield and stabilises colour in wine.

Sodium Metabisulphite Used as a sterilising agent to clean equipment, also to suppress unwanted bacteria and 'wild' yeasts before a

fermentation, and to preserve a wine after fermentation has completed.

Tannin Powder Tannin is naturally found in the skins of grapes. Improves the taste of red wines and gives the impression of dryness in the

mouth. Beneficial to wine being stored for a long time.

Tartaric Acid A natural acid found in grapes and is said to improve the character of the wine.

Tronozymol Yeast nutrient and energiser. Ideal for 4 week wine production and preventing stuck fermentation and aids country wine making.

Vitamin B1 Nutrient especially useful for flower wines.

Wine Sweetener To improve the sweetness of finished wine if it has fermented out too dry. Contains saccharin.
