Welcome to the Christmas edition of Home + Couture, and this month, as I’m sure many of our readers will do, we have really pushed the boat out. We have taken the strain out of choosing presents this year, by including a huge selection of design must-haves, from international retailers to local, independent design houses based on our doorsteps.

Winter might not be too depressing for those of us fortunate to live in sunny climes but we can still all do with a bit of cheering up – so we have decided to try to counteract the darkness and lack of sunlight with our Stylish Living article, “Let there be light”. With great tips and reviews on the best lighting solutions around, you’re sure to be enlightened… ahem.

We have an exclusive feature on the Bouroullec brothers – the siblings who have taken the design industry by storm, and proved to us that beauty is still first and foremost in creating a design concept that stands the test of time.

Our two blogs – homecouturestore.com and homecouturemagazine.com – have grown and grown in popularity, so we have decided to increase our news round-up section this month, bringing you what’s hot and what’s what in the design and fashion world.

Don’t miss out on our regular gardening guru Sally Beale – whose expert know-ledge this month provides us with innovative ways to gear your Mediterranean garden to become more water-efficient – something we all need to concentrate on for the dry months ahead.

Finally, I’d like to mention the great support we’ve had from our readers for our new website homecouturemagazine.com. Thanks to you, we have wildly excee-ded our initial projections in population and activity on the website – thanks for sharing and posting to Facebook all of you. As a thank you, we have added yet another string to our digital bow in the form of a new business directory – laun-ching in January next year.

I guess all that’s left to say is Merry Christmas – we look forward to touching base again in what’s set to be a very exciting 2013.

New York fashion designer Alexander Wang has been appointed to one of fashion’s high-est positions: creative director at Balenciaga, in a move set to shake up the luxury fashion house. Wang will showcase his debut au-tumn/winter 2013-14 collection during Paris Fashion Week. Alexander Wang should offer this traditional label a new vision to take the brand even further in today’s modern world of digital and retail. He will divide his time between New York, where his eponymous label is based, and Paris, the home of Balenciaga’s head office.

In the Paris district of Saint-Ouen, the flea market is a 1,000 square metre site of the newly opened Ma Cocotte canteen, designed by one of the world’s most renowned desig-ners, Philippe Starck.The 250-seat cafeteria-style restaurant is housed within an industrial loft. The ground floor functions as a large dining room with views into the open kitchen, while the upper level two living rooms and two terraces for guests to enjoy. The kitchen is run by chef Yannick Papin, who prepares a culinary menu of classic Parisian food using simple and local ingredients.As Philippe Starck puts it, “Ma cocotte is not a restaurant, it’s a bowl. A bowl of hot soup, a bowl of steaming coffee, a bowl of fragrant tea, a bowl of wine… Ma cocotte, on a beau-tiful winter morning, is fire, arms welcoming to warm your heart and body. Internationally renowned British artist Damien Hirst has offered his touch to the classic Vipp bin. Designed exclusively for the opening of the Astrup Fearnley Museum in Oslo, the bins are covered with artwork titled Chlorampheni-col Acetyltransferase, more commonly recog-nised as Hirst’s infamous colourful polka dot prints.Originally designed by Danish craftsman Hol-ger Nielsen in 1939, The Dotted Vipp Bin is a tribute to the first pedal bin that was supposed to remain in his wife’s salon but instead took over the world. Playful, fresh and modern, this design updates the classic can beautifully.

VAlentino: MASter oF couture exhiBition

A new major exhibition at London‘s Somerset House celebrates the life and work of haute couture master Valentino, showcasing over 130 exquisite haute couture designs worn by icons such as Jackie Kennedy Onassis, Gra-ce Kelly, Sophia Loren and Gwyneth Paltrow.“Valentino: Master of Couture – a journey into the secretive world of Italian couture” is on show until 3 March 2013. The exciting instal-lation is divided into three sections. Visitors start with a private view of Valentino‘s world through photographs from his personal archi-ve, offering an intimate portrait of the life of the master… A unique look at the incredible story behind the fashion icon.

SuStAinABle FloAting hoMe By SAnitoV Studio

Named after the Greek river god, Inachus is an innovative and sustainable floating home by London-based architects Sanitov Studio. The floating house was launched during the London Design Festival 2012 as part of their future-cities project.Influenced by Danish design, and manufactu-red by British master boat-builders, the smart residence is outfitted with appliances and systems which can be operated by smart-phone or tablet. This floating dwelling joins 40 other existing houses that are categorised as energy efficient at level five status, due to its zero heating, ventilation and carbon emissi-ons. During London Design Festival it was on exhibition at St. Katherine‘s dock. Now the In-achus has returned to its permanent mooring in Wandsworth riverside quarter.

SWing Furniture By duFFy london

British design group Duffy London has deve-loped a divergent aesthetic eating experience, creating a room within a room with chairs that float around the table. Constructed using a steel frame and wooden table top, the surface is suspended over the ground, making vacu-uming a breeze. A GEO lampshade and eight hanging seats are incorporated to sway play-fully. The Swing table perfectly accompanies the suspending atmosphere.

BrAd Pitt the Furniture deSigner

Hollywood actor Brad Pitt has turned into the direction of furniture design. His first collec-tion, in collaboration with furniture maker Frank Pollaro, includes a set of tables and chairs, a double-pod bathtub and a bed re-sembling an ocean liner. The pieces all take inspiration from Pitt’s eclectic influences which, according to the man himself, span from arts and crafts to Bauhaus and Tiffany lamps.Brad Pitt is no stranger to the world of ar-chitecture: he has collaborated with Frank Gehry to build homes in New Orleans, drop-ped by the offices of Rem Koolhaas in Rotter-dam, and has said he is “pushing his kids” to become architects.höVding: FAShionABle

Swedish design duo Anna Haupt and Tere-se Alstin have created Hövding, an invisible helmet made for style-conscious cyclists. Hövding appears to be a funny looking col-lar around your neck, but what you don’t see is the folded up airbag hiding inside. When the airbag’s sensors are alerted to “abnormal movements,” a helmet-shaped hood deploys to protect your head.They even took it a step further: the collar fea-tures changeable shells that you can switch to match your outfits. Perhaps in the future the Hövding might spell the end of the bog stan-dard safe but ugly looking cycling helmet.

The genius of illustrator Roger Hargreaves‘ designs has meant that they have since been adopted by the fashion industry, both officially and unofficially. In October 2006, Adam Har-greaves created the first Little Miss character based on a real person, Stella McCartney, which he named Little Miss Stella. Two unofficial fashion interpretations were presented in 2012 – Mr Yohji of Yohji Yama-moto and Little Miss Rei Kawakubo of Com-me des Garcons. Rendered in monochrome, both made use of each designer‘s trademark characteristics. Now French store Colette hosts a special Mr Men and Little Miss colla-boration. A selection of unique illustrations in black, white and blue adorns T-shirts, iPhone cases, skateboards and pin badges.

FroM WAter toWer to luxury reSidence

A derelict central London water tower has been converted into a new residential luxury home. Owners Leigh Osborne and Graham Voce bought the 19th century 99-foot (30-met-re) tall tower, which comes with a huge steel water tank, in 2008 for £395,000 and conver-ted and extended the 150-year-old Grade II listed landmark into a luxury home.The brick structure is mixed with modern and clean looking interiors; the cool quotient on this one definitely sets the bar for these types of projects. This project featured on Kevin McCloud‘s 100th anniversary episode of Grand Designs. The tower houses four bedrooms with a fabulous 360-degree view, with a lift shaft alongside. At the bottom is a modern, cube-shaped living space.

“Picasso Black and White” is the first exhibiti-on at the Guggenheim in New York to explore the remarkable use of black and white throug-hout the Spanish artist’s prolific career. A chronological survey, spanning 1904 to 1971, it includes paintings, sculptures and works on paper, all of which highlight the artist’s choice of black, white, and grey in lieu of colour.Claiming that colour weakens, Pablo Picasso purged it from his work in order to highlight the formal structure and autonomy of form in-herent in his art. The exhibition runs until 23 January 2013.

AlexAnder McQueen: FAShion ViSionAry

A brilliant new book celebrating the work of the late designer, “Alexander McQueen: Fa-shion Visionary” is written by fashion historian Judith Watt. She examines each collection from a career that shook the British fashion industry and produced some of the most me-morable shows of all time.The book charts McQueen‘s meteoric rise to the top from the start of his career as a tailor at Anderson & Sheppard on Savile Row to his couture début at Givenchy in Paris, and then straight to fashion super-stardom under Gucci.“In a working class family in London you have to bring the money in and artistic routes were never the means to that end. But I put my foot down. I thought, ‘I’m not gonna do that. I’m not gonna get married, live in a two-up, two-down and be a bloody black cab driver,” said McQueen.

ALFRED LICHTEREnd of an era for celebrated artistMallorca-based German painter and sculptor Alfred Lichter passed away at his Alaró home in November, aged 95. Lichter, whose work was featured in the summer issue of Home+Couture, had been working right to the end of his life. Born in Upper Silesia in 1917, he moved to Mallorca 30 years ago. A foundation in his honour was established in Alaró in 2011. Shortly before his death, Bodegas Macià Batle dedicated a special edition of their 2009 vin-tage to his career. London was the capital of style this autumn, when over 1,000 exhibitors displayed their creativity and innovation at five key destina-tions, celebrating a decade of design. The Victoria & Albert Museum was once again the hub of the London Design Festival, with numerous talks and exhibits – some in “sec-ret, rarely visited” areas of the museum.Visitors climbed the staircase to the cupola to check out Keiichi Matsuda’s “Prism” ins-tallation (commissioned by Verve Clicquot), discovered the ethereal “Mimicry Chairs” designed by Japanese studio Nendo, and were invited to sit on garden benches crea-ted by 10 renowned designers especially for the festival’s 10th year.

The festival’s Landmark Project focused on “design you can’t see”, with the BE OPEN Sound Portal in Trafalgar Square intriguing those who entered an anonymous round structure designed by Arup to hear original work by five sound artists. The line-up for the inaugural Global Design Forum included such luminaries as Dame Zaha Hadid and Thomas Heather-wick, while prizes were awarded to Sir Terence Conran (for life-time achievement), artist, designer and writer Alexandra Daisy Ginsberg (emerging talent), Sugru inventor and founder Jane ni Dhulchaointigh (entrepreneur) and design studio El Ultimo Grito, run by Roberto Feo and Rosario Hurtado (London Design Medal).

Before spending vast sums of money on elaborate interior design schemes, carry out your own survey by moving furniture and accessories around to see the effects the changes can make. Create new features and try different window treatments such as Venetian blinds or layers of diaphanous fabric such as fine muslin. If you decide to redecorate as opposed to refur-bishing your space, then bear in mind the effects different colours and textures can have on the level of light in a room. Pale colours are reflective, while dark colours and materials absorb light. White ceilings reflect light, as do cream carpets, but dark wooden floors and dark-coloured walls absorb light and make rooms feel more claustrophobic. The mood and atmosphere that you are trying to create will determine the colours and materials you use.

Even the most simple of lighting schemes will benefit from some sort of layering of light sources – no matter how beautiful your ceiling pendant may be it is impossible for it to illuminate the whole of your space. The solution is to install different light sources controlled by separate circuits that allow you to vary your mood with the flick of a switch.Let’s start with the living room – the multi-functional space where we entertain, watch TV, relax with a glass or two and even make love when the mood is right. Lighting can be described as direct and indirect. Direct gives a downward glow such as light from a central pendant and other forms of over-

head lighting such as recessed mounts in the ceiling or track lights. Indirect lighting casts an upward glow. Wall lights boost overall lighting levels and can shine down or bounce light up to the ceiling. Task lighting from table and floor provides localised bright spots for all our activities, while accent lighting highlights architectural features or artwork.If you plan to layer lighting the different circuits allow each ele-ment to be controlled independently – general lighting and wall lights could be on the first circuit and task lighting such as table or desk lamps could be on a second circuit and accent lighting on a third. This layering of light allows light levels to be manipula-ted to produce different light effects.A good lighting scheme in the dining room can have a drama-tic effect when entertaining. The main objective is to provide a hospitable atmosphere with warm, flattering light. A striking pendant that can be raised or lowered is a good choice when the dining room is used for homework or sorting out those dreaded household bills.

Pendants create a powerful decorati-ve statement when hung in multiples of two or, especially, if you have a refectory table and want to illuminate its full length. Pendants will also suit the spacious proportions of a large room and have the effect of defining the dining area in an open plan space. Larger dining rooms benefit from wall lights or sconces but make sure that they don’t cast light into the faces of your guests. In small spaces where the dining table has to be folded away against a wall use the light from small table lamps at one end of the room and flattering candlelight from a candelabra or a group of tall candles as a centrepiece for your table.

Lighting is one of the most important elements for the kitchen. It not only adds mood and ambience with decorative pendants and stylish fittings, but it is also an essential safety feature with task lighting to illuminate worktops, sink and hob. Knowing what goes where will help you plan the perfect space. The kitchen is full of potentially harmful elements so the purpose of task lighting is to illuminate the preparation and cooking zones so that you can slice and simmer in safety. Consider installing light fixtures under wall cupboards, beneath shel-ving or on the wall at the back of the work surface. There are plenty of designs to choose from, including low voltage spotlights, integrated LEDs and frosted glass wedges for a modern look.You can let your creative side take over when it comes to decorative lighting. There is a huge range of interesting and unusual designs that will enhance the look of your kitchen. If you have contemporary styled units, stick to steel, chrome or frosted glass, making sure the fitting shades the bulb to avoid glare. Again, a row of pendants works well hung over a breakfast bar to make a striking impact, as well as illumi-nating the area below. Remember that pendant lamps should hang 75 centimetres above the surface for best effect.

You may think that all the lighting you need in the bedroom is a pair of bedside lamps. However, layering in the bedroom is just as important. Use a dimmer switch to control light levels controlled from both the door and the bed. Wall-mounted swing arm lights are a good alternative to bedside lamps, especially when one partner likes to read in bed, as the light can be angled towards the pages of the book. Good lighting is necessary in the dressing areas of your bedroom; for instance, lights that switch on when wardrobe doors are opened. You can of course use scented candles, not only to fragrance the room but also to set a romantic lighting scene. But do remember to blow them out before you fall asleep or your flickering flames can become a fiery fiasco.

Electronic devices for controlling the level of light or to set a lighting scene are compact and discreet. The benefits are twofold: you can set different lighting scenes at the touch of a button and at the same time save energy – and cash and the environment.With any design practice the idea is to be ins-pired, even playful, with your lighting scheme and today’s lighting designs range from beau-tiful crystal chandeliers and elegant lamps with pure silk shades to fun lamps of all shapes and sizes and colourful funky shades. There is plenty of scope to have different designs for every room in the house so go ahead and bring life and light into your home.

THE BOUROULLEC BROTHERS HAVE BECOME A HOUSEHOLD NAME IN THE DESIGN INDUSTRY OVER THE LAST DECADE. WHILE TO MANY THE PROS-PECT OF BECOMING A HUGE SUCCESS WITH YOUR BROTHER AT YOUR SIDE MAY SEEM THE STEREOTYPICALLY PERFECT SCENARIO, RONAN AND ERWAN BOUROULLEC PREFER TO PAINT A MORE HONEST AND INTRICATE PORTRAIT OF THEIR WORKING RELATIONSHIP.

Their achievements in the design industry have never been in question but it would seem that, on the odd occasion, working alongside a sibling isn’t always as idyllic as one may have hoped. As Erwan told Billionaire.com: “We have no real relationship outside of work, apart from Christ-mas dinner, and that’s more for our parents. When you decide to be a ‘creator‘, part of who you are starts to be increasingly linked with what you do. And being brothers you start to wonder who you are when you’re making the same work and getting your identity from that work. It’s a good question for a shrink.”

There is a notable tension between the brothers, suggesting a combative relationship that ext-ends to the working environment. They are two distinct personalities – both of whom are vying for dominance. However, rather than having a negative impact on their work, it would seem the two brothers are unified by a shared aspiration of reaching the pinnacle of balance and refinement of good design.

There is a refreshing openness and honesty that emanates from both brothers and seems to translate quite intricately into their work. It is this clash of personality that breeds the overwhelming quality and innovation of their work, which incidentally has caught the eye of one or two design experts along the way.

Their “disintegrated kitchen”, presented at the Salon du Meuble in 1997, provoked the interest of Giulio Cappellini, who commissi-oned the first of their industrial design pro-jects – Lit Clos (closed bed) and the Spring Chair.

In 2000 none other than Issey Miyake took a shine to the brothers, asking them to design a space for his new collection of A-Poc clo-thes in Paris.

The most fruitful partnership for the Bouroullec brothers to date has stemmed from the interest of Rolf Fehlbaum – chairman of Vitra – which began in 2002 and has since spawned some of the Bouroullec brothers’ best known projects to date.

The collaborations do not end there either: the Bouroullec brothers have also forged fruitful relationships with Kvadrat, Magis, Kartell, Alessi, Mattiazzi and most recently Flos and Mutina.

The brothers are somewhat of an enigma in the design industry – they do not really adhere to one design ethic or style. Instead their main fo-cus is to create beauty, as once this has been achieved other aspects such as balance and atmosphere follow suit.

“When something is beautiful and also right, what it contains is often a very particular balance,” says Erwan. “The functionality, the technique, that’s the minimum… The most difficult question of design, what we strive foremost to achieve, is to create the culture that surrounds us… how do we shape the visual environment.”

It would seem that this unorthodox approach to pro-duct design has paid off. Voted Designers of the Year at the Salon du Meuble in 2002, their other awards include the Grand Prix du Design (Paris, 1998), the New Designer Award at the International Contem-porary Furniture Fair (ICFF New York, 1999), the Finn-Juhl Prize (Copenhagen, 2008), the Danish Design Award (Copenhagen, 2010) and more recently the Designer of the Year award for Now! Maison & Objet (Paris, 2011). Additionally, the Facett collection (Lig-ne Roset) and the Worknest office chair both won the “Best of the Best” Red Dot Design Award, respec-tively, in 2005 and 2008. In 2009, the Vegetal chair won the ICFF award for outdoor furniture and the Steelwood Chair won the Compasso d’Oro in 2011.

The fact that there is no real identifiable consistency within their work has paved the way for the multitude of collaborations the brothers have enjoyed so far in their respective careers. As Ronan told Billionaire.com, “Having a style isn’t important, because each project has to work for the company you’re working for — it’s more about building a body of work.”

However, there clearly are some parallels with the work of one Philippe Starck – stemming from the brothers’ ability to inject humour into their projects while maintaining the highest levels of quality.

They openly concede that their working relationship can be somewhat disagreeable but they are unified by their shared inspiration to create objects of beau-ty. For instance, Erwan Bouroullec’s inspiration stems

from his interest in the mechanics of production, how the multitude of collaborators they work with use ma-chines or materials and how these techniques can be explored to create new forms and functions.

Ronan Bouroullec is also motivated by these practi-cal aspects of a project — finding an attractive yet er-gonomic solution to open plan offices — and draws inspiration from the elegance and simplicity of both primitive tribes and highly functional and technical objects.

Like many designers before them, the Bouroullecs have turned their talents to art – producing a series of limited edition prints that are currently being exhi-bited by Twentytwentyone gallerist Sebastian Wrong. The sketches provide a break from the frustrations of the design industry while fulfilling the brothers’ indivi-dual needs for creativity.

As Ronan told the Daily Telegraph, ““Between your first sketch and the final product there might be four or five years. So this is a very direct way of expres-sing ourselves. And each of us doesn’t have to worry about what the other brother thinks.”

The frustrations of the design industry have taken a toll on the brothers, jading their naïve perception of a democratic and efficient design industry. “The reali-ty is that sometimes you find everything silly and it’s frustrating not to be able to go further with the de-signs. But life is life. And the industry is the industry.”

Did you cook growing up… and what made you decide to become a chef?When I was younger, more than cooking I liked to eat. After finishing junior high school I had to decide between going on to the senior years or a professional course. I decided on cooking, even though I didn’t have a very clear idea of what it meant to be a professional chef.

What was the first dish you cooked?The first dish I prepared was traditional cannelloni, which I made at the school for my family. Nothing like Es Molí d’en Bou’s star dish, En Canelón 2001. It was a completely different recipe. I recall it being very spicy – I used too much pepper.

Are there any particular ingredients that define your cooking?No specific ingredient but always cooking with two very clear premi-ses: fresh and high-quality ingredients.

What would you say makes Molí d‘en Bou stand out from other haute cuisine restaurants?I don’t like comparisons. We adhere to a coherent form of work to ensure our clients enjoy the most complete gastronomic experience possible. We aim to be consistent with our work philosophy.

What haute cuisine trends are on the rise at the moment? Cooking with a local product. The most important thing is to have a lot of personality and originality, and to be able to express and capture that in the way you cook.

What is the most important message you give to your team?The engine required to move the team is enthusiasm. This is a profes-sion in which a keen dedication to work, and to not letting down our clients, marks the rhythm of our efforts.

What is the secret to gaining a Michelin star? And holding on to it?A Michelin star is the result of work well done, coherence, rigour and very high quality standards. To retain it you have to continue along the same line, and try to improve.

The best tip for a home cook?Cook with love and good ingredients.

What are your main plans and objectives for 2012?To improve day by day.

The Man behind the Chef

PreParatioN

for caramelised cream mousse

½ lt milk

8 egg yolks

10 gr corn starch

100 gr sugar

½ lt cream

2 fish tails (gelatine) 5gr

iNgredieNts

• Prepare a baking mixture with the milk, egg yolks and corn starch.

• Caramelise the mixture with 10 grams of sugar. Note: it is im-portant to carry out this process when the mixture is fairly cold.

• Grind the caramelised mixture and save.

• Whip the cream to prepare the mousse.

• Re-hydrate the fish tails and dilute them in a small amount of heated caramelised mixture, then mix with the rest of the mixture.

• Gently blend the mixture with the cream. Save the mixture in the refrigerator.

iNgredieNts for apricots with sobrasada and honey

200 gr honey

100 gr sobrasada (soft spicy sausage)

250 gr dried apricots (re-hydrated in cold water for 24 hours)

6 gr pectin

10 gr sugar

PreParatioN• Heat the honey and sobrasada together at low heat. Once melted, pass through a fine strainer.

• Grind the re-hydrated apricots with the honey and sobrasa-da molasses.

• Pass the resulting purée through a fine strainer.

• Heat the purée of molasses and apricot on a low heat.

• Mix the petrin with the sugar and add to the purée of molas-ses and apricot. Cook for a few minutes then let the mixture cool down in a mould. Allow to rest in the refrigerator for 24 hours.

the fiNishiNg touCh• Using a piping bag, lay out the creamy caramelised mousse on a dish.

• Shape it into the form of a spiral, like a traditional ensaima-da.

• Add small cubes of the apricot and sobrasada molasses mixture.

• Accompany with cubes of fresh apple and a quenelle of apple sorbet.

• Finish off with pieces of dry ensaimada and a small sprin-kling of powdered icing sugar.

That was back when the first tourists started arriving, and gradually they have developed into solid brick and concrete structures that can be confused with regular bars or restau-rants a few streets inland. This is not to say the original steel pole and bamboo-roofed chiringuitos do not still exist, just that it is often possible to guess what price you will pay by weighing up the place.

They went through a bad time a few years ago when many regional authorities decided that if they were actually built on the beach they must either be moved a few metres inland or demo-lished. Since chiringuitos employ thousands of people and are generally reckoned to be as much of a tourist attraction as the sand itself, the outcry stifled the authority’s initiative and only a few are affected. In Mallorca and on the Costa del Sol there are

some really very smart beach bars – or beach restaurants as they should rightly be known. Once they become fashionable by attracting the right crowd, there is usually no looking back. It is not unknown for the paparazzi to hang around waiting to see who turns up for lunch or a copa and a tapa.

The idea of a series of beach bars spanning the globe is a quantum leap, but the founders of Nikki Beach decided to have a go. It seems to have worked. Apart from Marbella and Mal-lorca, Nikki Beach is at St Tropez, St Barths, Miami and Koh Samui. Based on a policy of much more than just a beach bar, probably it is the gastronomic side of Nikki Beach that sets it apart. With name chefs (Mario Larese in Marbella and David Farber in Mallorca), and separate menus for lunch and dinner, good wines and a relaxed ambience, you would

probably have no difficulty spending every day there, from morning to late, eating superb food. There are lounger beds, great cocktails and frequent parties with top DJs through the season.

One of the nicest things about Nikki Beach is that it is fine for all ages. The younger crowd may be rather more vibrant, but the locations are so extensive that there is no problem fin-ding a shady, palm-tree-framed niche to read the newspapers and enjoy a bottle of wine if you prefer that.

And don’t mind the paparazzi. The worst that can happen is that they will take a good look at you as you arrive, exude a collective sigh, and let you pass without even taking your picture.

about the ChefNikki Beach Mallorca’s executive chef David Farber was born in Surrey and raised in Byfleet. He studied at catering college in Guildford, worked at the Post House in Guildford, preparing menus for the Trust House Forte Group, cooked for royals and celebrities at the Stafford Hotel restaurant in Lon-don (Paul Newman took home their salad dressing recipe) and was head chef at the Terra Sana Group in Marbella from 2001 to 2009 before becoming executive chef at Nikki Beach Marbella.

He spent winter 2011 at Nikki Beach St. Barths and moved to Nikki Beach Mallorca for its launch in June 2012. His Spanish wife Raquel was a waitress at the Stafford… they have one child, 10-year-old Hugo, who is already a “good chef”.

His definition of good food is: “seasonal, fresh and where possible locally sourced”.

any visitor to mallorca in the 1970s or even 1980s cannot fail to recall how grim the wines were. they were not exactly bad, just characterless, and it is

not surprising that in those far off days most local wine lovers preferred to drink mainland products. although many wineries had been functioning for decades or, in some notable cases, centuries, they did not make much money out of selling wine; of-ten this was just a small part of a larger agricultural operation with livestock and food production.

When the first tourists started to arrive in the 1960s, the worst of the post-Civil War hangover was just clearing, and thankfully everyone had enough to eat. But this was little help to the wine trade as the northern Europeans had little interest in Mallorcan wines. All they wanted was an alcoholic drink at the lowest price...

Since then Mallorcan winegrowers have adopted a policy of producing quality wine at a price that keeps them in business with enough funds to keep renovating, but not expensive enough to turn off consumers. If comparisons are made with other Spanish wine regions that have set out on the same road, Mallorcan products are in fact among the very best on the price/quality scale.

It all really began in the late 1980s and ear-ly 1990s when an almost imperceptible wave of confidence started to permeate through the Mallorcan wine industry. No longer was it necessary to make mediocre wine to sell at give-away prices. Rather, with increased knowledge and improved techniques, Mal-lorquín wine makers could compete with the best in Spain, even Europe.

Many sons and daughters of bodega ow-ners were studying winemaking abroad, and even on miniscule holdings of a mere two or three hectares they started planting vines – with a marked preference for the autochtho-nous, or native, varieties: moll and prensal for white wines and manto negro, callet and fogoneu for reds.

The historical trajectory of winemaking on the island started centuries before Christ under Roman rule, enabling Pliny to write, “…Balearic wines can be compared with Italy’s best.” Even when the Moors ruled from 903 until 1229, wine was still drunk, and to celebrate the Reconquest Jaime I issued licences for the production of wine in Bunyo-la, Campos, Felanitx, Manacor, Porreres and Valldemossa. The next great moment was in 1800, when the phylloxerah-ravaged France was buying wine wherever it could, and bet-ween 1865 and 1890 every drop produced in Mallorca was shipped to France. The arrival of phylloxera in Mallorca put a stop to this, and it was not until the beginning of the last century that the industry got into gear again.

If you live on the island and are a wine lo-ver, then you must surely have tried, hopeful-ly, more than a few of those featured in this article. If this is the case you will have almost surely never felt the need to buy mainland wine again.

If you are still stuck in the Rioja, Ribera-mo-de, you are missing out big time. Mallorca wines are quite simply very good indeed, and there is hardly a small family-run bode-ga that does not make at least one outstan-ding product. You may need to put up with some of the local quirks though, such as the tendency to use Mallorquín only on the labels, and even on websites, together with an unusual lack of clarity when it comes to revealing the type of grape used.

SA ROTAWhen Miquel Sastre Bordoy bought the fincas Els Camps de Sa Vinya and s’Aljub Vermell in 1993, he knew this area had been host to some of the oldest vineyards in Europe, dating back to the 14th century. Located in the driest part of the island, the tendency is for low yields but high quality. The wines under the Sa Rota label range from an admirable Chardonnay up through the range to this outstan-ding Crianza at around €12. bodegasbordoy.es

TURgEnTCan Majoral is a small family bodega in Algaida (Pla i Llevant region), founded in 1979, and using organic and biodynamic production methods without pesticides. The wines are not filtered and the reds are aged in French oak barrels for at least 12 months. The Turgent is made from Syrah/Shiraz and only 3,500 bottles are made annually. Good value at €16, although there is a younger range of wines, Buti-balausi, that starts at €7.50 for the Negre 2009.canmajoral.com

SOn CAUlESMiquel Gelabert‘s vineyards are small plots spread bet-ween the municipalities of Manacor, Felanitx and Petra (Pla i Llevant region). No grapes are bought in from other growers. Amazingly, in this small area totalling nine hectares, Gelabert finds room to plant 30 different grape varieties, ranging from the local Gorgollosa red to Gewürztraminer and Viognier white. All the reds are aged in an underground cave that has been used for storing wine since 1900.There are 18 wines, each one interesting in its own right, and practically all have been awarded prizes in various wine tastings. The excellent Gran Vinya Son Caules is made from Cabernet Sauvignon, Callet, Mer-lot, Syrah and Mantonegro and, if you can find it, costs around €23. SOM BlAnCIn common with most Mallorca wineries, Galmes i Ribot, located in Santa Margalida, is a family-run operation and was founded in 1960 as grape growers selling to bodegas. In only 15 hectares there are 11 grape varieties including some, like escursac, gorgollassa, callet, fogo-neu, giró ros and prensal blanc, that are native to Mallorca. Hand-picked, the grapes produce six organic wines of great quality, including the Som range starting at €7, up to Som Catali-na, made with the best selected grapes, at €20. Customers can buy wine by the barrel to be bottled with their own label when mature. The Som Blanc is made with only Mallorca grape varieties and costs a very reasonable €8.50. galmesiribot.com

vERánA real fairy story behind this wine… A German family bought an abandoned village in 1960 and slowly restored it to its former glory, including the winery and vineyards. Located in the Binissalem area, it is now a working farm producing fruit and animals as well as wine, of which there are five varieties: Verán, Gran Verán and Sant Gall, using local Manto Negro and Premsal grapes, plus Marcellan, Cabernet Sauvignon and Shiraz. The white Verán wine sells for around €8, and the red, €18 for the 2007… Excel-lent, well-made wines, recommended by El Mundo as being unusually promising. bodegabiniagual.com

SyRAh nEgREFounded a century ago and currently producing 12 different wines in Petra (Pla i Llevant region), Vinyes i Bodegues Miquel Oliver is a great favourite and has won many international awards. With only 12 hectares of vineyards, oenologist Pilar Oliver works miracles producing wines that are as good as any on the mainland, and the Original Muscat M.Oliver 11 was the first dry muscatel to be made in Spain (€6). This Syrah Negre for €12 is a beautifully-made wine, although for around €5 the Son Calo range is good value. miqueloliver.com

Jl FERRER CRiAnzAAlthough only founded in 1931, many people think of the Ferrer wines, from Binissalem, as the typical, if not classical, Mallorca red wine. But in fact the Spanish Civil War did not come at an opportune moment for the bodega and it was not until the 1960s and 1970s that the wines really became accepted. At a very reaso-nable €7.20 for the Crianza you cannot expect a great wine, so it may be better paying €14.50 for the Reserva, or even upgrade to its Veritas range that includes a barrel-fermented white, a cava and a white dessert wine. JAUME dE PUnTiROJaume de Puntiro is a young winemaker from a smallholding family from Ca Sa Consellera that has made wine for as long as anyone can recall, and even in living memory sold the wine from pigskins. The vineyards in Santa María del Cami benefit from a microclimate afforded by the Sierra Tramontana, grapes used being native Manto Negro, Callet and Moll, plus Cabernet Sauvignon, Syrah, Merlot and Muscatel. There are nine organic wines in all, from young white, red and rosado up to the amazingly good JP Tinto Reserva Especial 2006 (Manto Negro and Caber-net Sauvignon), €34, and the Buc Tinto Crianza, same year, same grapes, at €14. SyRAh MORTiTxVinyes Mortitx is an unusual project. Located in the Sierra de Tramontana, it started in 2001 as a group of wine lovers who wanted to make the best wines Mallorca could produce, using artisanal methods. There are now 57 partners and, although the present range of three reds, two whites and two rosados are made with classic grapes like Syrah, Merlot and Cabernet Sauvignon for the reds and Malvasia and Muscatel for the whites, they are working with native grape varieties to find the best combinations for new wines. RiBAS-SiO nEgREOne of the oldest family wineries on the Island, tracing its roots back to 1711… With a respectable sized vineyard of 40 hectares in Consell, where the average age of the native vines is 45 years, they make the Ribas and the Sió brands that you will see in many stores in Mallorca, from €7 and €13, respectively. The Ribas de Cabrera is a deluxe product at €40, but the Soma Viognier white organic at €10 is a snip. MESqUidA TRiSPOlThe Mesquida Mora winery is a new project by Bàrbara and Jaume, who also run the family winery, Jaume Mesquida, in Porreres (Pla i Levant), founded in 1945, although ancient documents show the family was in-volved in making wine as far back as the 16th century. The range of four wines is organically and biodynami-cally-produced from 30-year-plus old vines, and the use of machinery is kept to the minimum possible. The objective of Bàrbara and Jaume is to make the best wines possible, at the same time reflecting the best characteristics of Mallorca viticulture. The label on the Trispol Crianza 2010 red made from Cabernet Franc, Syrah and Callet shows the tiles in the family house, and the wine costs around €15-17. Convenient, Attractive… and Water-Wise

THE MEDITERRANEAN GARDEN

If you are new to gardening in the Mediterranean area the first thing of which you need to become aware is the reverse of the gardening seasons. In northern Europe we are accustomed to spring planting, followed by an abundance of growth in summer, autumn colour and ultimately the dormancy of winter.

Our Mediterranean gardens require a shift in perception. The Mediterranean clima-te stimulates plant growth in spring, dormancy in summer during the hottest, driest months, and regeneracy in late autumn following the first rains. It could be said that we enjoy two springs here instead of one.

There are a number of factors, however, which can be intimidating for the new gar-dener, and these are hot, dry winds which desiccate plants, and an apparent lack of water just when it seems to be most needed in summer. We may ask how we can create that green, restful environment that we dream about, but by balancing the unfa-vourable aspects of the Mediterranean climate with the favourable ones we can create an evergreen, flowering garden throughout the year, in harmony with its surroundings, and easy to maintain.

Water-wise gardens are attractive and do not require constant attention, and reduced maintenance is matched by significant sa-vings in expenditure (water, fertiliser, labour). Choose drought-tolerant plants, reduce the lawn, water only when you really need to, and plan carefully... you are on your way.

First of all, study the aspect of your garden: its orientation towards the sun in summer and winter, its windiness and its shelter from storms. Do you have your own water from a well or a spring? If so, how much, and does it run all summer? Can and do you collect rain-fall in gutters, tanks, cisterns? Test the ph of your soil with a simple soil testing kit availa-ble from good gardening centres, and choo-se plants accordingly. Look carefully at what grows around your area on the roadside, in the fields and in open countryside, particularly the trees.

Remember that we tend to live outdoors here, so what do you envisage for your gar-den? Is it a place to relax, entertain, meditate or work? Set aside a working area in which to make compost, place prunings and create a “burning pile”. Do you have flat terrain or hilly: should you be emphasising a view?

prEparIng tHE groUnD

The first thing to establish in the garden is ground cover. This reduces evaporation and water loss, erosion and the growth of weeds, as well as keeping the soil moist during times of drought and wind. You can use evergreen vegetation or clippings from trees such as lar-ge palm fronds trimmed from Washingtonia filifera and Phoenix canariensis. Compost the earth at least once a year in autumn with rich, vegetable compost to lower its ph and incre-ase its fertility.

Compost can be home-made or bought from recycling centres such as Calvià 2000 and Son Reus. Plant “pioneer plants” first, such as drought-resistant trees, to establish shady areas and hold the soil in place. Examp-les of these are Almond (Prunus dulcis), Abe-

lia grandiflora, Acacia and Cupressus. Then shrubs Chamaerops humilis, Eleagnus, Cis-tus, Schinus molle and Teucrium fruticans.... Correctly planted and maintained, drought-tolerant natives will be established within a year or two, and will give years of pleasure.

graSS aLtErnatIVES

A lawn, though green and beautiful, is the most water and labour intensive landscape element in the Mediterranean garden. Lawns are fragile, require weekly cutting, edging and weeding, and regular raking, aerating and scarifying, and above all use over 70 per cent of all the irrigation put on the garden.

If you cannot live without one, choose a deep-rooted and tough variety, such as golf grass or Bermuda grass. But why not think of alternatives? Evergreen grass alternatives could be tightly planted Carpobrutus edulis, or the beautiful pink-flowered Hypericum. Grass can be successfully replaced by a number of structural alternatives, such as gravel, paving or stone, but think about almond husks too, as these give a natural look to the area and make a satisfying crunchy sound as you walk on them.

Carpets of ground hugging succulents are also attractive instead of lawn (Aptenia cor-difolia, Crassula, Sedum), as are herbs such as thyme and creeping rosemary. The list is endless!

Group plants together when planting, bearing in mind their water requirements. This way they receive as much or as little as each individual needs, and no water is wasted. Similarly, taller plants will shade shorter ones, and pots underneath them all will benefit from their shelter. Plan your watering schedule sensibly. Often we assume that plants need far more water than they actually do, and there is a theo-ry that they, like us, become accustomed and adapt to what they are given and are used to.

After years of indecision, I now subscri-be to the theory that once-weekly (or monthly, or whatever your schedule is) thorough and deep watering is more be-neficial than shorter and shallower, more frequent watering. Longer watering en-courages roots to go downwards, and not towards the surface, thus protecting them from surface burn during hot spells. This method uses less water, and encou-rages drought tolerance in your garden. Be brave and try it!

I am also of the opinion that buried “leaky pipes” provide the most efficient method of irrigation for automatic wate-ring systems, as all the water is dischar-ged underground, and nothing is lost to evaporation as with the old sprinkler systems. In dry periods do use the grey water from the house to irrigate pots and small areas, and always water in the early morning or late evening, never in the heat of the midday sun.

DrEam SpacE

Winter bloom is the great benefit of Me-diterranean gardening, so use it to full advantage, planting autumn-flowering bulbs and climbers such as Colchicum Sternergia, Bignonia, Passiflora, Plum-bago and Solanum. Spring gardens are spectacular with Crocus, Clivia miniata, Cyclamen, Muscari and Freesia. Ever-green shrubs such as Pistacia lentiscus and Olea europea silvestris may be clip-ped as topiary, to provide structure and interest in the drought season, and to form a backdrop to colourful borders.

Do not be afraid to experiment in your garden: it is, after all, a very personal space and should reflect your personality and character. By following just a few ba-sic rules of plant selection and planning, you will be rewarded with the garden of your dreams.

Foster + Partners have been commissioned to create the 200-metre skyscraper in Manhattan.The project – 425 Park Avenue – will feature green medians, contemporary art exhi-bitions and expansive sidewalks, while the tower itself will comprise three graduated tiers of column-free floors, each with landscaped terraces offering panoramic across Central Park. Construction is due to begin in 2015 and be completed in 2017.

big aNd… greeNThe tallest building in the world built by a UK architect has won the Royal Institute of British Architects’ 2012 Lubetkin Prize for the best new international building. Desig-ned by Wilkinson Eyre Architects, the Guangzhou International Finance Centre is a 440-metre high, 103-storey tower comprising a mix of office space, luxury hotel and top-floor sightseeing area. At ground level it connects with a major podium complex including a retail mall, conference centre and high-quality serviced apartments.„The tower‘s diamond shaped structure, exposed throughout the offices, atrium and hotel, looks simple but is the hugely complex key to the success of this building,” noted RIBA president and judge Angela Brady. “It not only allows the dramatic tape-ring atrium and raked floors but brings environmental benefits by using 20 per cent less steel than similar buildings.“

toroNto traNsformatioNThree “sculptures” that people can live in have been included in a project unveiled by architect Frank Gehry and Mirvish Productions with the aim of transforming Toronto’s downtown arts and entertainment district. Still at a conceptual stage, the development will consist of residential towers – from 80 to 85 levels in height – atop two six-story podiums, with a Mirvish art Collection space at the bottom atrium, and a new university facility of studios, exhibition galleries and lecture halls.“It is very special for me to be able to work in Toronto, where I was born, and to engage the neighbourhoods where I grew up,” Gehry told Dexigner.com. “It’s espe-cially interesting that this project involves the arts. That is always meaningful to me. With this project, I wanted to create buildings that were good neighbours to the surrounding buildings and that respected the rich and diverse history of the area. I also wanted to make nice places for the people who live in and visit the buildings.”

Wood grains from walnut to wenge and materials from granite to glass – as well as the general arrangement – are all owner-spe-cified. The principal plan is full beam master suite forward on the main deck, with four guest suites amidships below.

The owner’s stateroom is forward on the main deck and includes an opening balcony port side and a full-width en-suite bathroom with walk-in shower and steam room. Two large double guest suites aft and two double cabins are located on the lower deck, all with en-suite facilities.

The golf course was bought by Bolivian billionaire Jaime Ortiz-Patiño in 1984 as the former Las Aves (“New Soto-grande” course) and he rebuilt and resurrected it as Valderrama, helped launch the Volvo Masters and, in 1997, drew the international spotlight onto Sotogrande when Valderrama hosted the first Ryder Cup to be held outside the UK or US – and the Seve Ballesteros-led European team went on to beat the Americans.

Today, Sotogrande – with its top-class sports and leisure ameni-ties, prestigious marina, select hotels and restaurants, well-con-nected infrastructure, cosmopolitan lifestyle, and extensive and varied property portfolio – enjoys a considerably higher profile than it did 20, even 10, years ago and is capturing a significant share of the coast’s high-end real estate market.

For many years Sotogrande was something of a mystery to visitors to the Costa del Sol, and even to many residents living in the more populous eastern parts of the coast. Located just across the western Málaga border in Cádiz province, Sotogrande was seen as a discreet, almost secluded residen-tial resort for Spanish aristocrats and celebrities (though most certainly not today’s 15-minutes-of-fame TV reality types), It was somewhere you drove past in a fleeting moment on the way to Gibraltar, Tarifa or Jerez. It was, before the advent of La Zagaleta, the most exclusive address on the Coast – and, arguably, in Spain. Gradually, perceptions changed. Casa Son Vida has been created “as an expression of a new standard of progressive design that skews more futuristic than nostalgic… to capture the attention of the international design world with its sophistication and vitality, making Mallorca a new destination for those in search of design exploration and inspiration”.

“While Mallorca is undeniably gorgeous,” says Cosmopolitan president Michael Rimbeck, “we felt there was a gap in the market. Most real estate on the island is predictable or inevitably Mediterranean. We wanted to offer the increasing number of young, progressive and adventurous buyers who are attracted to the island a more daring and evocative alternative. A world-class network of architects and designers was assembled to complete the project. Son Vida 1 aims to redefine the notion of the luxury villa by moving most of the paradigms of luxury towards a more contemporary and forward-looking expression of architecture and technology. The project pushes the envelope in every direction and every sense; it is highly sus-tainable, basically off-the-grid, gives an unheard of sense of space and place, explores new construction technologies, and enters into a critical dialogue with the decorated box buildings in its vicinity. Described as an example of “design poetry in motion”, the 8,500 square foot (790 square metre) luxury residence has been designed to “transgress the constraints of site and context, redefining luxury architecture as it is typified by the traditional and prolific Mediterranean and Tuscan styles otherwise found on the island”.

According to Cosmopolitan, this act of defiance is accomplished by creating an entirely new structure that erupts unexpectedly from the walls of the existing Mediterranean home. The new structure evolves into a bold, curvaceous shape that completely evades conventional definition.

The idea is that the two pieces co-exist as separate entities, meeting abruptly and then quite literally turning away from each other. Their inter-action suggests a chance encounter and speaks to the deliberate and bold juxtaposition of the two elements. The new structure could even be likened to a futuristic spacecraft that has quite literally landed on a typical Mallorcan villa.”

Amsterdam-based Marcel Wanders Studio was commissioned for the interior design. With his “trademark wit and style”, Wanders appoints the interiors with signature furnishings and refined finishes.

A second villa has just been completed, two are about to break ground and two more are in the development stage, part of

Cosmopolitan’s goal of “inspiring a design revolution on the island”. As the company notes, “Poised on the brink of a design renais-sance, Son Vida is on the way to establishing itself as an architectu-rally progressive community, putting Mallorca on the global design map for years to come.”
