The Mendoza Province is one of Argentina’s most important wine regions, accounting for nearly two-thirds of the country’s entire wine production. Located in the eastern foothills of the Andes, in the shadow of Mount Aconcagua, vineyards are planted at the some of the highest altitudes in the world with the average site located 1,970–3,610 feet (600–1,100 meters) above sea level.

Chile has a long viticultural history dating to the 16th century when the Spanish conquistadors brought Vitis vinifera vines with them as they colonized the region. In the mid-19th century, French wine varieties were introduced.

SIBARISCABERNET SAUVIGNON This wine has an intense ruby red colour with an elegant and complex aroma. The palate is round and velvety, displaying excellent balance between fruit and oak. It is ideal with meats and ripe cheese.

CASAS DEL BOSQUE CABERNET SAUVIGNON GRAN BOSQUEMedium ruby red in colour. This wine offers up a nose redolent of crushed loganberry, truffle, nutmeg and just a hint of leather. In the mouth rich yet firm tannins set-off complex flavours of dark plum, graphite and cedar.

UNDURRAGA T.H. PINOT NOIR

Intense and complex Pinot Noir dominated by black cherries, raspberries and spices on the nose, with hints of liquorice and a subtle note of coffee notes. Wide palate, concentrated ripe cherries and blackberries, with a bright acidity, soft tannins and a lingering finish.

UNDURRAGA ALIWENCABERNET/MERLOTThis wine has a beautiful violet red colour with an elegant aroma. Oak characters have immaculately combined with the fruit flavours, making it ideal for all occasions.

CASAS DEL BOSQUE PINOT NOIR GRAN RESERVA

Ruby red in colour. On the nose intense aromas of blackcurrant, bramble and cedar dominate with just a hint of nutmeg. In the mouth red plum, allspice and a touch of leather are all in evidence. A well integrated oak backbone is backed-up by abundant, well-rounded tannins imparting excellent structure and length.

SIBARIS PINOT NOIRAn elegant medium intensity, clay colour with an aroma enhanced by fruit notes. It is ideal with red meats, poultry and mild cheese.

In the early 1980s, a renaissance began with the introduction of stainless steel fermentation tanks and the use of oak barrels for aging. The number of wineries grew from 12 in 1995 to over 70 in 2005. Chile is now the fifth largest exporter of wines in the world, and the ninth largest producer.

CASAS DEL BOSQUE CHARDONNAY RESERVAPale straw in colour. On the nose aromas of walnut, ripe pear and pomegranate dominate. In the mouth a citrus backbone is fleshed-out by ample mineral notes finishing with a very subtle smokey/woody note. A bright, zesty acidity imparts excellent structure and length.

CASAS DEL BOSQUE SAUVIGNON BLANC GRAN RESERVAAromas of grapefruit, smoke and flint dominate on the nose with just a hint of sea air. In the mouth guava and

kiwi is backed up by just a touch of passion fruit. A bright, zesty acidity imparts excellent structure and length.

UNDURRAGA T.H. SAUVIGNON BLANCThis is a lifted and exuberant Sauvignon Blanc, pale straw green in colour and vibrantly aromatic. Ripe citrus and tropical fruit aromas of pink grapefruit, passion fruit and guava dominate the nose. Subtle lychee aromas come through on the finish. It is consistent and broad on the palate, with great volume,

pleasant acidity and a sweet passion fruit aftertaste.

CASAS DEL BOSQUE SAUVIGNON BLANC RESERVAOn the nose intense notes of lime, green melon and fresh ginger dominate with just a hint of salinity. In the mouth, bright flavours of ginger and citrus zest give way to a tight mineral backbone and rapier-like acidity.

SIBARIS CHARDONNAYA beautiful gold coloured wine with a delightful balance of fruit and oak on the nose. Elegant fruity flavours dominate across a soft yet complex palate making it ideal with cold meats, seafood and fish.

Off-Dry Riesling: Pairs with sweet and spicy dishes. The slight sweetness of many Rieslings, Gewurztraminers and Vouvrays helps to tame the heat of spicy dishes.

Pinot Noir: Is great for dishes with earthy flavours. Recipes made with ingredients like mushrooms and truffles taste great with reds like Pinot Noir, which are light bodied but full of savoury depth.

Chardonnay: For fatty fish or fishin a rich sauce. Silky whites, such as Chardonnays from California, Chile and Australia, are delicious with fish like salmon or any kind of seafood in a lush sauce.

Champagne: Is perfect with anything salty. Most dry sparkling wines, such as brut Champagne and Spanish cava, actually have a faint touch of sweetness. That makes them extra-refreshing when served with salty foods.

Cabernet Sauvignon: Is fabulous with juicy red meat. California Cabernet, Bordeaux and Bordeaux-style blends are terrific with steaks or chops. The firm tannins in these wines refresh the palate after each bite of meat.

Sauvignon Blanc: Goes with tart dressings and sauces. Tangy foods won’t overwhelm zippy wines like Sauvignon Blanc.

Dry Rose: For rich, cheesy dishes. Some cheeses go better with white wine, some with red; yet almost all pair well with dry rose, which has acidity of white wine and the fruit character of red.

Pinot Grigio: Pairs with light fish dishes. Light seafood dishes seem to take on more flavour when matched with equally delicate white wines, such as Pinot Grigio.

Malbec: Won’t be overshadowed by sweet-spicy barbeque sauces. Malbec, Shiraz and Cotes-du-Rhone are big and bold enough to drink with foods brushed with heavily spiced barbeque sauces.

Syrah: Matches with highly spiced dishes. When a meat is heavily seasoned look for a red wine with lots of spicy notes.

LAGAVULIN SINGLE MALT SCOTCH WHISKYLagavulin 16 year old is an Islay single malt Scotch Whisky produced at Lagavulin on the island of Islay, United Kingdom. The earliest documented record of Rum is from Barbados. In 1631, only four years after British settlement of Barbados, traveler Henry Colt referred to Barbadians as “devourers upp of hott waters and such good distillers therof.” In 1651, Giles Silvester noted “the chiefe fuddling they make in the island is Rumbullion alias Kill Devil, and this is made of sugar cane distilled - a hot hellish and terrible liquor” By the mid 1650s ‘rumbullion’ had been shortened to ‘rum’.

4. Remove foil and base ham with glaze. Replace ham in oven, repeating every ten minutes, for a further 30 minutes or until an internal temperature over 160°F is reached.

1. Preheat an oven to 350°F.2. Using a large, sharp knife, cut off the

skin and all but 1/4 inch of the fat from the ham, leaving the surface as smooth as possible. Score the top and sides of the ham diagonally in two opposite directions about 11/2 inches apart, creating a diamond pattern. Stick a clove into the corners of each diamond.

3. Place the ham on a rack in a roasting pan. Add the lime juice and 2 cups water to the pan.

4. Bake the ham for 2 hours. After 1 hour, add more water to the pan if needed.

5. Meanwhile, make the glaze: In a bowl, combine the brown sugar, rum, kosher salt and cayenne pepper and stir until smooth. Let stand for about 10 minutes for the sugar to dissolve partially.

6. Remove the ham from the oven and brush some of the glaze evenly over the ham. Return the ham to the oven and bake for about 1 hour more, brushing it with more glaze every 15 minutes, for a total baking time of about 3 hours. The glaze at this time should be golden brown.

7. Transfer the ham to a carving board, cover loosely with foil and let rest for 15 to 30 minutes.

8. Pour the liquid from the roasting pan into a large fat separator or glass measuring pitcher.

9. Let the fat rise to the surface, then pour or spoon off as much fat as possible. Float a piece of paper towel on the surface to absorb the remaining fat.

10. Pour the de-greased liquid into a small saucepan and add any remaining glaze to make a sauce and thicken. Set aside.

11. Carve the ham and garnish the platter with the orange wedges and serve with the sauce.

Guava Ginger Holiday Glazed Ham1 Farmers Choice Large Picnic Ham15 to 20 Whole cloves

FOR THE GLAZE20 oz Strong guava juice or puree ¼ cup Fresh ginger juice1 cup Sorrel juice (optional)¾ cup Packed light brown sugar 2 tblsp Libby’s Yellow Mustard 1 btl Ready prepared stewed guavas

1. Preheat an oven to 350°F.2. Place the ham in a pan and cover with foil.

Bake in oven as directed by packaging.(Approximately 1½ hours)

3. Remove the ham from the oven about 30 minutes before the end of the heating time.

4. Score the top and sides of the ham diagonally in two opposite directions about 11/2 inches apart, creating a diamond pattern, but not cutting to deep, as you only want to break the skin and fat at the top of the ham. Stick a clove into the corners of each diamond.

5. In a small bowl, combine the brown sugar, mustard and just enough of the guava and ginger juice, and if needed the sorrel juice; this adds more flavour and colour.

6. Spoon the glaze over the ham and bake uncovered for the remaining 30 minutes.

7. Remove the ham from the oven, transfer to a platter and decorate with stewed guavas.

Grapefruit and Mango Glazed Ham1 Farmers Choice Picnic Ham1 btl Kraft Balsamic Vinaigrette

FOR THE GLAZE19 oz Eve Grapefruit Juice6 oz Sunquick Mango Concentrate4 tsp Kraft A1 Steak Sauce2 tsp Teriyaki sauce½ Juice of 1 lemon½ tsp Powdered clove¼ tsp Scotch bonnet pepper

1. Preheat an oven to 350°F.2. To prepare the glaze, place the glaze

ingredients in a medium saucepan over a medium heat and reduce by 1/2 or until thickened.

3. Marinate the ham with Kraft Balsamic Vinaigrette for 1 hour.

4. Place the ham in a pan and cover with foil. Bake in oven for 1 hour.

6. Preheat oven to 350°F and grease a small 6 inch baking sheet pan.

7. In a large bowl, combine the dry ingredients.

8. In a separate bowl, mix together the coconut milk and melted butter. Gradually add this mixture to the cornmeal mixture, stirring to form a batter. Whisk in the egg and then fold in the chopped scotch bonnet peppers.

9. Pour the batter in the sheet pan and bake until a cake tester inserted into the center comes out clean (Approximately 30 to 35 minutes). Remove from the oven and cool in the pan for 10 minutes, then place on a wire rack and let cool completely.

10. Using a 4 inch cookie cutter, or another round object, cut 4 circular pieces out of the cooled cornbread.

The Slaw½ Cucumber½ Mango½ Red sweet pepper1 oz Lime juice½ oz Vinegar5 oz Cilantro¼ Finely diced onion1 oz Chopped parsley ¼ Diced yellow onion Salt and pepper to taste.

1. Peel 1/2 of cucumber (and remove the seeds), ½ mango and ½ red bell pepper.

2. Using a sharp knife, cut these length ways in half, and then julienne into thin slices and place in a bowl.

3. To the bowl, stir in the lime juice, vinegar, salt/pepper, cilantro, onion and parsley. Set this aside to marinate.

The Creamy Santa Fe Sauce½ cup Kraft Santa Fe Cooking Cream 4 tblsp Regular cooking cream½ oz Chopped onion½ oz Garlic Salt and pepper to taste.

1. Using a small saucepan, sauté the onions, garlic, salt and pepper on a medium heat.

2. Add the Kraft Santa Fe Blend Cooking Cream and regular cooking cream into the saucepan, stirring for about 3-5 minutes or until the mixture thickens to sauce consistency. Remove from heat.

3. Remove from heat.

The Plantain Garnish Plantain Pinch sugar, salt, pepper and

Cinnamon Oil for frying

1. Slice the plantain into thin slices lengthwise using a mandolin or sharp knife.

2. Deep fry sliced plantain until golden brown in colour.

3. Sprinkle the fried plantain slices with salt, pepper, sugar and cinnamon while still hot.

Plating the Dish1. Using a ladle, pour The Creamy Santa

Fe Sauce into the center of the plate.2. Place the beef tenderloin steak in

the centre of the sauce, and rest the circular cornbread on top of it.

3. Place the slaw on top of the steak and cornbread, and balance the plantain chip in the slaw.

4. Finish by drizzling the Kraft Raspberry Vinaigrette over the dish. Serve immediately.

The Beef-Tenderloin12 oz Beef tenderloin1 large Onion2 oz Garlic Cloves4 oz Thyme4 oz Cilantro5 oz Marjoram

1. Using a food processor, make a marinade by combining the onion, garlic, thyme, cilantro and marjoram adding salt and pepper to taste. Pulse until completely minced.

2. Trim off excess fat and sliver skin from the beef tenderloin, using a sharp knife. Wrap the beef tenderloin with plastic and form a tight log by tying the plastic wrap in a knot at both ends of the log. Place in a refrigerator to set for 10 minutes. Cut into 4 steaks of about 3 ozs in size.

3. Unwrap the beef steaks and fully cover with the marinade. Place these in a bowl and refrigerate for 30 minutes. Remove from refrigerator 15 minutes prior to cooking.

4. Using either a grill or a stove top grill pan, pre-heat using a medium heat (130 degrees) on high for 5 minutes, and lubricate the grate or grill pan with oil.

5. Place beef on hot grate or grill pan until well-seared, turning every 5 minutes until grill marks appear on the meat.

This recipe was constructed with the intention of utilizing different proteins to give you the opportunity to experiment with different items. It’s not a 30 minute meal but the finished dish is amazing.

1. Bring a small pot of salted water to the boil. Add the asparagus and cook for 2 minutes.

1. Cook sweet potatoes in boiling water until tender (about 15 minutes), remove from heat and strain, discarding water.

2. To the cooked sweet potatoes, add the butter and Kraft Mango Chipotle dressing. Crush.

3. Season the crushed sweet potatoes with salt, and sugar to taste.

Baked Beets2 Large beets Salt and pepper to taste

1. Pre-heat oven to 350°F 2. Sprinkle beets with salt and pepper

and wrap in foil and bake until tender. Cool, peel and slice beets.

Seared Maple LeafDuck Breast2 Maple Leaf Grade A duck breast 2 tblsp Chinese Five spice powder Salt and pepper to taste 1 tsp Sesame oil 1 tblsp Vegetable oil (such as Mazola

Canola or Corn Oil)1 tblsp Honey

1. In a bowl, marinate the duck breast with salt, pepper, Chinese five spice powder and sesame oil(for best results marinate 24 hours before cooking).

2. Heat a large non-stick pan on a medium heat. Add the vegetable oil and the breasts, skin side down. Cook for 4 minutes on both sides for medium rare. Remove the duck breasts from the heat and brush with honey. Set aside to rest for 15 minutes before slicing, in order to keep the juices within the meat.

Duck Confit4 Maple Leaf Grade A duck legs 6 oz Salt 1 Small onion – roughly chopped 5 Cloves of garlic – roughly chopped1 Stalk of celery – roughly chopped1 Small carrot – roughly chopped16 ozs Duck fat or vegetable oil 3 Star anise pods5 Cardamom pods1 Cinnamon stick 1 Sprig of thyme 1 Sprig of rosemary 10 Whole black peppercorns

1. Rub duck legs with all the salt and leave to cure for 1 hour.

2. Wash off the salt and pat dry.3. Place the duck legs in a small baking

pan, add the remaining ingredients and cover with duck fat or vegetable oil. Place pan in oven at a very low temperature (200°F) and cook for 5 hours or until meat falls off the bone.

Garnishes1. Vanilla Apples – Peel and thinly

slice one apple. Place slices in small saucepan with syrup a vanilla bean. Cook until tender.

2. Candied Orange Zest – Using a sharp knife, julienne the zest of one orange. Place in a small saucepan and bring to boil changing the water three times. Discard water and add syrup to peel, cooking for 15 minutes.

Braised Lamb Shanks2 Lamb shanks Salt and pepper to taste 1 oz Vegetable oil (such as Mazola

Canola or Corn Oil)2 cups Red wine 1 Medium tomato 1 tblsp Tomato paste 1 Medium carrot diced (do not peel)1 Medium onion – diced (do not peel)1 Stalk celery – diced 1 Garlic pod cut into half, but not

peeled 1 Sprig of thyme 1 Sprig of rosemary 1 Sprig of marjoram 1 Bay leaf 2 Star anise pods6 oz Lemon grass 3 Cloves of garlic2 Cardamom pods1 Cinnamon stick 1 Orange slice 1 Lemon slice 1 litre beef stock 1. Heat a frying pan with the oil over a

medium heat.2. Season the lamb shanks with salt

and pepper and pan fry in the oil until browned on all sides (approximately 3 minutes per side). Remove from pan.

3. To the same frying pan, add all other ingredients except the tomato paste and wine. Cook for 5 minutes, stirring constantly. Add tomato paste and cook for an additional 3 minutes.

4. Add wine and reduce by 2/3, then stir in the beef stock.

5. Add the browned lamb shanks to the mixture and cook until tender (about 3 hours).

6. Set aside and allow to cool. Remove the lamb shanks and strain the remaining liquid. Replace strained liquid (sauce) into the pan on a medium heat and reduce by 2/3.

7. Remove lamb meat off of the bone and put into a bowl. Add enough sauce to the bowl to just moisten the lamb meat (not too much to make it too wet). Mold the lamb into 4 small

Plating the Dish1. Pour a little of the caramel sauce in the

centre of a plate. Using the back of a spoon, swipe the sauce across the plate.

2. Drizzle the marshmallow vodka glaze on top of the tatin, and then place the tatin beside the caramel sauce.

3. Sprinkle a tablespoonful of caramelized nuts atop the tatin, and a spoonful of cookie crumbs beside it.

4. Place a scoop of ice-cream on top of the cookie crumbs and drizzle with caramel sauce. Use the caramelized nuts to garnish the top of the tatin. Serve immediately.

Tart Tatin2 Granny smith apples1sheet Pillsbury puff pastry250 g Granulated sugar75 g Water1 Lemon50 g Unsalted butter

1. Peel, cut in half and core apples.2. Place sugar, water and lemon juice

in a small saucepan cooking until a caramel forms and turns golden in colour.

3. Add butter to caramel and stir. 4. Pour mixture into 4 cupcake tins, and

place an apple half on top of caramel. Bake at 165°C for 15 minutes or until soft.

5. Remove from oven and cover with a disk of puff pastry, snipping a hole in each disk with a scissors so the steam can escape. Dust with sugar and bake for a further 20 minutes, or until pastry is golden brown

4. Use two spoons to quenelle (shape) the sweet potatoes and place on the lamb mold. Top with an asparagus spear.

5. Cut the asparagus stalk into 3 even cylinders 1 cm in height and place in front of the duck leg. (See photo)

6. Place 2 pieces of the vanilla apple on top of the duck leg.

7. Add some orange zest on the breast followed by the foam.

3. Basil and Pickle Ginger Foam – In a small saucepan, add 2 cups of water, 1 teaspoon lecithin, ½ teaspoon oil, 3 sprigs of basil and 2 ozs pickled ginger. Warm over low heat. Remove from heat and blend with an emersion blender until bubbles start to form.

4. Green Pea Puree – 1 cup green peas, ½ cup of cooking cream, 1 sprig mint and salt and pepper to taste. Blend all ingredients together and place in a squeeze bottle.

METHOD

Dumplings1. Mix together all dry ingredients

and make a well in the middle.2. Mix the essence with a cup of

water (You may not need to use all).

3. Add small amounts of the water mixture at a time and stir together until stiff dough is formed.

4. Roll into balls of preferred dumpling size.

Soup1. Heat sauce pan and add chopped

herbs, spices, onions, garlic, half pumpkin diced and split peas with salted butter. Sauté for 5 minutes.

2. Add hot water to cover ingredients and boil until they have broken down.

3. At this point, add the Ham Hocks and boil until fully cooked and falling off the bone, add more water if needed.

4. Remove Ham Hocks and pull apart into fine strips.

5. While soup is boiling, add Ham Hock strips, salt, black pepper and pepper sauce to taste.

6. Add all vegetables (diced) and reduce heat to cook at a simmer to keep the shape and texture of ingredients added.

7. Add dumplings, simmer until dumplings are fully cooked.

8. Garnish with fresh parsley and serve.

Much of Chef Jordan’s knowledge of cuisine stems from an interest in cooking that was sparked at an early age by his mother and grandmother. He first started his culinary career 14 years ago when a Chef asked him if he was interested in learning how to cook. Chef Jordan asked him to teach him to bake because he could cook already. Chef Jordan aspired to be part of the acclaimed Barbados Culinary team, and was inspired to enter his first culinary competition by one of the culinary team members. He has since achieved numerous awards

Henderson Butcher finds pleasure in the preparation and presentation of dishes

which resemble a form of artistry more than a meal.

One of Barbados’ most accomplished chefs and an ambassador for Bajan Cuisine, Chef

Butcher utilizes an infusion of culinary styles to create contemporary Caribbean dishes which he

themes “rustic elegance”.

A gourmet-cuisine trained chef, Chef Butcher was the 2012 Team Manager for the award winning Barbados Culinary Team. He has also represented Barbados at the Taste of the Caribbean Culinary Competition at which the team won gold. Chef Butcher has also won several individual medals at competition level.Chef Butcher has showcased in London, Germany and at the South Beach Food and Wine Festival in Florida; and the Central Park Taste of Summer in New York, to great acclaim.To further the contributions he has made to the culinary industry in Barbados Chef Butcher is presently recording his own television show encouraging Barbadians to use local ingredients to create food that can rival any international dish.

Chef Andre Nurse is the youngest Chef to have ever won the NIFCA Culinary Competition’s Professional Division, copping the title in 2009 on his first entry into the competitive arena and created history by capturing both titles: ‘NIFCA Cook Off’ and the ‘Culinary Arts Cook Off’. This afforded him the opportunity to realize one of his career goals, that of joining the Barbados Culinary Team. He is currently the Chef at The Grille Restaurant at Hilton Barbados.In September 2011, Chef Nurse was afforded the opportunity to work at the Hilton Dubai Creek Hotel, which opened doors for him to work at the second leading restaurant within Dubai, Verre Restaurant (owned by

world renowned Chef Gordon Ramsey).Chef Nurse lives by faith and perseverance. He strongly believes that his creative possibilities as a chef are boundless and he is very passionate about being a chef. He aspires to be the Caribbean Chef of the Year. This very talented young chef has aspirations to further his culinary studies, rise to be an Executive Chef and someday own his own catering business.

Chef Michael Harrison’s talent was cultivated in the kitchens of world renowned establishments such

as Gleneagles Hotel in Scotland, Le Gavroche Restaurant in London, North Island in

the Seychelles, Carambola Restaurant in Barbados, and the White Barn Inn

in Maine, a Five Diamond Hotel, where he had the privilege of preparing dinner

for former US President, George W. Bush. Chef Harrison has trained alongside several top chefs

including 18 months with world famous Chef Michelle Roux Jr. at Le Gavroche, a 2 Star Michelin Restaurant in

London. He has enjoyed the rare pleasure of preparing dinner for the late Princess Diana of Wales. He has been a guest Chef at the Patroon Restaurant in New York and Restaurant L in Boston, both events sponsored by Food and Wine Magazine.Chef Harrison is the recipient of several prestigious awards and accolades, including gold, silver and bronze medals in Barbados and throughout the Caribbean. In 2013, Chef Harrison headed the Barbados Culinary Team as Manager and won Team of the Year as well as several other gold and silver awards.Chef Harrison is the first Barbadian to take up the post of Executive Chef at Cobbler’s Cove, and is celebrated for his unique style of preparing contemporary Caribbean cuisine.

Pastry Chef Julian Broome began cooking at the tender age of eight, when his grandmother invited him to assist her in making cou-cou and salt fish. It was standing there in that kitchen that he considered his career in the Culinary Arts. By the age of 15, he had fallen in love with pastries and desserts.By the age of 20 he had created his own business, Moses Bakery & Pastries, using his natural talents and baking skills taught to him by family members. He then decided to do formal studies, and applied to do a cooking course at the Barbados Hospitality Institute. Chef Broome was delighted to join the Barbados Culinary Team in 2011 as

the alternate Pastry Chef, and watched eagerly as the team competed in the 2012 Taste of the Caribbean Competition. Currently the Chef de Partie Pastry Chef in charge of desserts in Lacajou, the fine dining restaurant at Sandy Lane Hotel, Chef Broome aspires to be the Caribbean Pastry Chef of the Year. He plans to continue to grow his catering business and bakery, and to seek more opportunities to expand his knowledge in his chosen career.
