Behind every great dish is that onesecret ingredient that tickles yourtaste buds and takes you by sur-

prise. This week, I decided why not spicethings up with yuzu, the surefire ingredi-ent that adds some zest to life.

For those unfamiliar with yuzu, it’s acitrus fruit and plant originating in EastAsia. The fruit (although rarely eaten as afruit) resembles a tiny grapefruit withuneven skin, and you can’t miss itsdistinctly refreshing aroma. I’verecently become a fan of yuzu andhave grown fond of its tart flavorthat makes you wanna say “Wow!”

Here at the following Ono, YouKnow establishments, you’ll seeexactly how yuzu is incorporatedinto beautiful culinary works of art.It’s an essential ingredient in ponzu,a citrus-based sauce, and is evenutilized in alcoholic drinks, givingoff a bit of a bite. Yuzu will take anymeal to a whole new level!

Yoshi Japanese Dining & Bar

It's 5:30 p.m. on a Wednesday.Yoshi Japanese Dining & Bar justopened its doors for the evening,and the place is already filling upwith eager patrons who can’t waitto sink their teeth into authentical-ly eclectic Japanese fare. “Do youhave reservations?” a server asks awalk-in customer. “If not, you’llhave to sit at the bar because all thetables are reserved.” This alonetells me that this contemporarydining establishment has to begood, as it’s drawing in diners bythe dozens.

Originally known as Yakitori Yoshi, thisMakaloa Street restaurant revamped itsmenu from specializing in yakitori dishesto offering sushi, sashimi and teppanyakioptions, as well as a versatile full bar.

And if you’re yearning for yuzu, Yoshi’sYuzu Kosho Chicken ($10, a la carte) willmake you say yum!

“Out of all our chicken items this is themost popular by far. It’s a bit on the spicy

side because of the yuzucitrus, and it’s also mixedwith black pepper,” saysserver Jarred Yuen.

This masterpieceboasts boneless morselsof locally raised chickenseasoned and grilled toperfection on the teppa-nyaki grill. The chicken

skin is cooked to a crisp, while themeat is left soft, tender and juicy.According to Yuen, the meat is fla-vored with a dash of yuzu sauce,but the majority of the sauce is lefton the side for dipping.

“It’s kind of like a lemon chick-en, only more flavorful,” heexplains. “Yuzu is growing in pop-ularity and nowadays you’ll oftenfind it used in Japanese cooking.”

So, turn up the heat and bring onthe tang with Yoshi’s Yuzu KoshoChicken, also available as part ofthe restaurant’s teishoku set menu($25), which comes with twoitems, soup, salad and rice.

through the door. Owner Mark Kitagawa,chef/manager Johnathan Mosley and therest of the staff know you on a first-namebasis, are familiar with your favoritedishes and treat you like family. Now, ifyou have yet to experience the outstand-ing cuisine and premier customer serviceat this okazuya, what are you waitingfor? Located on Nuuanu Avenue, NuuanuOkazuya is a small “hole-in-the-wall”shop that offers all the okazu (sidedishes) you’ve ever dreamed of.

“Okazuyas are very unique toHawaii. Okazu means side dish andya means shop,” Mosley explains.“Okazuyas specialize in side dishesthat pair well with rice, so I’malways thinking of what goes wellwith rice or noodles.”

And believe us, Dining Out livesfor okazu goodness! NuuanuOkazuya never disappoints asthere’s a multitude of items tochoose from, all exuding abundanthome-cooked flavors. We recentlycaught up with Kitagawa andMosley before the lunch rusharrived to get a glimpse and taste ofall that is Nuuanu Okazuya.

DO: Nuuanu Okazuya is thriv-ing with business. Looking back intime, how did this favorite localeatery get its start?

Kitagawa: The opportunitycame around when the originalowners, the Nagamine family, werelooking for someone to take overthe establishment because they hadalready been in business for morethan 30 years. I saw a decline in the

number of okazuyas while growing up,so I wanted to keep the tradition alive.

DO: Obviously the okazu tradition isalive and well here. What is your busi-ness philosophy?

Kitagawa: We try to constantly addnew items to the menu. I think we havethe largest selection of okazu items inHonolulu. For a small shop like this,what comes out of the kitchen is unbe-lievable. Everything is made fresh in ourkitchen, nothing is brought in.

DO: Known for its variety of tra-ditional Japanese, Okinawan andlocal fare, there's something for justabout everyone at NuuanuOkazuya. Correct?

Kitagawa: Yes, we offer 70 to100 different items a day. Popularones include Furikake ChickenKatsu, Nishime, Kinpira Gobo,Chow Fun, Fried Saimin and ShoyuChicken. What makes our FurikakeChicken ($3.50 per piece) so spe-cial is the secret sauce that we use.Other best-selling items includeKonbu Maki ($2.25 each), whichfeatures pork and gobo wrapped inkonbu (seaweed) and tied togetherwith kanpyo. Another popular dishis Stuffed Bittermelon ($2.25 each),stuffed with pork hash and boiled in

a special flavored sauce. Squash withChicken and Tofu ($1.80 per serving) is quitepopular with our longtime customers. We usea long squash or Chinese squash, and stuff itwith chicken and tofu cubes.

DO: You folks also specialize in an assort-ment of fishcakes. What is the No. 1 choiceamong customers?

Kitagawa: Our most popular fishcake isBoiled Egg Fishcake ($1.35 each). It featuresa boiled egg wrapped with fishcake, coatedwith panko and then deep-fried.

DO: Is there a particular item you offerhere that not too many patrons are aware of?

Kitagawa: Yes, that would be our DailyBento ($5.73). It’s one of those things that noteveryone knows about, but for those whoknow we have it, it sells out rather quickly.You can’t go wrong with this bento. It con-sists of a bed of rice topped with FurikakeChicken, Spam, Egg Omelette, Big Island

Portuguese Sausage, Fish (ahior mahi, or salmon), KabochaPumpkin or Gobo.

DO: Johnathan Mosleyserves as manager and chef atNuuanu Okazuya. How didthe partnership between youtwo come about?

Mosley: I got my start atNuuanu Okazuya becauseMark needed some help in thekitchen, so he asked me tohelp out, and the next thingyou know I’m the chef. I haveno formal culinary training, Ijust have a knack for cooking.I’ve been cooking since I was5 years old. It’s a passion.

DO: Chef Johnathan,you’re always changingthings up and offering some-thing new for your cus-tomers. Where do you findyour inspiration?

Mosley: I’ll constantlythink of new ways of prepar-ing items. For instance, wehave a kabocha pancake that Icreated on a whim and wedecided to incorporate it witha sweet potato pancake, so it

looked like a yin-yang pancake. Whatever I’mcooking at the time, I’m always thinking ofways to make it different and add a twist to it— by making it more flavorful or presenting itin a different way. You never know what youwill get here. I recently did seven differenttypes of eggplant — we had spicy, extra spicy,marinated eggplant, grilled eggplant, etc.

DO: What is a new item on the menu thatis doing well?

Kitagawa: One of our newest items isGrilled Spicy Tofu ($1.50 each). We grill itand sprinkle it with Cayenne pepper, then weseason it with a habanero-based soy. It’s deli-cious! John also has a knack for making dif-ferent types of andagi and has created morethan 100 different types of flavors. We don’thave all the flavors available every day, butyou can pre-order if you like. Our newest fla-vor is Caramel Pecan.

DO: The andagi assortment is really quiteimpressive! The possibilities are endless,wouldn’t you agree?

Kitagawa: Yes. Traditional andagi (35 centseach) is very popular as well as Andadogs (ahot dog wrapped in andagi, $1 each). Johnkeeps on inventing new flavors and now does aterrific peach cobbler andagi (most flavoredandagi is priced at 75 cents each).

Fresh shrimp is lightly sauteed with sweet chiliand served on beds of baked phyllo dough, whichprovides a crunchy base for the sweet shrimp. Thecolorful dish is then accented with a sweet chili andan avocado dipping sauce to provide even more fla-vor options.

Another new option is Baked Scallops on the HalfShell ($7.95). Tender raw scallops are topped with aJJ’s special mayo, chili and mozzarella cheese sauce,and baked until the edges are golden brown.

Few things are more French than pate and JJ’sParisian ($7.95) would satisfy any Francophile. Theduck mousse is mixed with truffles and port wine tocreate a creamy spread that goes, oh, so well with thefresh French bread and small side salad that comeswith the dish. A port-wine gelatin adds extra flavorand texture when dropped on top.

Baked Lobster Avocado ($7.95) has been a long-time customer favorite. Lobster is placed on Frenchbread, topped with the Chef's Special Sauce andmozzarella cheese, and baked. The mayo, chili and

For all its tasty pleasure, few really experimentwith escargot. That’s too bad because thesalty/sweet mollusk is delicious with nearly every-thing. Thankfully, JJ steps away from the typicalramekin baking/serving dish in favor of a FrenchBaguette cradle that mixes things up in just the rightway. The baguette is stuffed with escargot, a garlic-infused ranch dressing, mozzarella cheese andbaked until the bread absorbs all those wonderfuljuices that before you had to spoon out. Who or what inspires you as achef/manager/owner? In thebeginning, it was more like I neededa job to support myself through highschool and college. My brotherasked me to help out with a projecton Kauai, so that was how I openedmy first restaurant. We were so busywe barely had time to take a day offfor a year-and-a-half! I knew I want-ed to work with food and be in therestaurant industry, and I alwaysknew I wanted to come back toOahu, but first I went to Californiato experience more types of cuisine,especially Northern Chinese cook-ing. With Asian Mix, I thought itwould be nice to open a place thatwas fast and affordable, but offeredquality cooking. I like seeing myregular customers who come in afew times a week. It’s important tome to be able to provide them with anice dinner that is convenient andquick with the best prices in town.

If you could serve food to acelebrity, who would it be andwhy? What dish would you serve?Clint Eastwood. He is one of myfavorite actors. I would serve himtofu and vegetables with bok choy,choi sum, and carrots, cooked in alight oyster sauce, plus a littlesteamed rice. It’s very healthy.

What is your favorite dish on themenu? Why? My favorites areHouse Fried Rice and Shrimp withWalnuts. We don’t put soy sauce inthe fried rice — its flavor comesfrom shrimp and chopped upVirginia ham, a salty ham that givesit a lot of taste. Shrimp with Walnuts

has a sauce made from mayonnaise,balanced with some lemon and a lit-tle sweetness. The walnuts are deep-fried and honey glazed, so they’rereally crunchy and sweet.

Is there a dish that you createthat’s not on your menu, butavailable upon request? We like tobe flexible and make our customershappy by taking special requests.Since we can make dishes to order,if we have the ingredients and thecustomer can describe what theywant, we’ll make it. It’s all aboutbuilding relationships with new andregular customers, and we’re happywhen they keep visiting us!

Ichiriki specializes in the interac-tive eating adventure known as hotpot cooking, and it’s based centrallyin both Aiea and Honolulu. Nabe is aJapanese term for hot pot cooking,referring to all sorts of dishes cookedin “one pot.” According to East Asiancultural beliefs, eating from one potallows diners to grow closer andform long-lasting relationships.

“The hot pot itself is meant forfamilies,” says managing partnerMasaki Sasada. “In Japan, it bringspeople together — sticking chop-sticks in and sharing the broth bringsfamilies, friends and guests closer.It’s a very family-friendly restaurant.We cater to everyone from kids toseniors, all ranges of ages.”

don’t really like things too spicy, so I pre-fer the miso. The best thing about ourrestaurant is that after you’re done eatingthe ingredients in the soup, you get todrink it afterward. Our soups are original,too — some of the flavors we feature, youcan’t find them anywhere else on theisland.”

For those looking to spice it up, AngryGoma ($22.95) has it all. “It’s really goodif you like spicy food,” says Sasada of thesesame-flavored broth that also includes aplatter full of beef, pork, seafood and veg-etables — not to mention extra jalapenoor habanero peppers if one is so inclinedto add them.

Another specialty available at Ichiriki isKobe Beef Shabu Shabu ($28.95 for 5ounces, $37.95 for 9 ounces). Diners aregreeted by a hearty platter of the thinlysliced Rib-Eye steak that can be cooked totheir liking in the hot pot, and dipped in theincluded ponzu or goma “sesame” sauces.

And after the meal, Sasada recom-mends Ujikintoki ($4.95), a green teashave ice on a bed of mochi balls or icecream and topped with azuki beans. Therefreshing dessert provides a nice counterto the hot pot cooking, and blends flavorand sweetness without overpoweringeaters’ taste buds.

Ichiriki also offers a host of specialdeals, including “Early Bird” specialsavailable from 4 to 6 p.m., Monday

through Thursday, as well as “Late Night”specials that are served from 9:30 p.m.,Monday through Saturday.

“You’ve got to come in and check it outfor yourself,” Sasada says. “We focus a loton customer service, and we treat you likefamily. We get a lot of positive commentsabout that. And, the food is excellent. Youcan’t ask for anything more than that.”

New flames are rising at Hy’sSteak House, where the smokyscent of Kiawe wood flows

from the restaurant’s custom broileronto each plate of beautifully grilledmeat and seafood, giving patrons ataste of something truly extraordinary.The establishment has been at the fore-front of fine dining in Waikiki for thepast 35 years, and its ability to reinventitself while remaining a traditionalsteak house has kept it in a league ofits own.

Executive chef Erwin Manzanojoined the team in early August, buthe’s no stranger to the eatery. “I washere back in 1988. I started as a dish-washer and our previous chef promot-ed me to sous chef. I was here for 15years,” he says. In 2003, Manzano leftthe restaurant to pursue other culinaryendeavors before returning to Hy’s lastmonth. “I’m happy to come back. It’slike coming back home to where Icame from — where it all started.”

According to vice president andgeneral manager Bob Panter,Manzano’s cooking offers a breath offresh air with its body of sophisticated

flavors that keep unraveling. “It’s beengreat so far; he made an ossobuco spe-cial that was really popular and soldout last week,” says Panter.

The chef will continue to roll outenticing specials, starting with his latestdebut — Filet Mignon withChimichurri Sauce ($44.95). Yourknees will go weak for Manzano’s fan-tastically fresh chimichurri sauce,which complements any piece of meat.

“It’s an Argentinian kind of sauce,” saysPanter when describing the bright greenburst of parsley, mint, cilantro, garlic,olive oil, red wine vinegar and more.

“It’s such a versatile sauce becauseyou can top anything with it,” addsManzano.

On nights when the chef has pre-pared it, patrons may request hischimichurri sauce with any of therestaurant’s prime cuts.

Manzano also is excited to presenthis Arugula Prosciutto Salad ($12.95),made with fresh greens, cherry toma-

toes and radishes that add to each won-derfully salted bite of prosciutto. Thedelicate salad is drizzled with a freshwhite wine vinaigrette. “(Bob and I)had some ideas for a salad,” saysManzano. “I tweaked it here and there.It was actually Bobby’s idea to add thearugula, he loves it. So I made it justfor him,” he says with a laugh.

While regulars will undoubtedly fallin love with the chef’s new creations,they also will continue to return to theirfavorite steak house for those recipesthey’ve always adored. Diners may stillenjoy such classics as Lobster Bisque,and New England Clam Chowder ismaking a brilliant comeback afterbeing on a menu hiatus.

Red House in Honolulu is knownfor its seemingly endless abilityto create bold, new menu items.

Servers can often be seen roaming therestaurant with trays of their newest creations to give out assamples before they are officially added to the menu. Whenasked where he gets his ideas, chef and owner Justin Chunsimply points to his head and smiles. Apparently the source ofthe restaurant’s roving menu is Chun’s own ingenuity.

Chun had lived in Korea, Thailand and L.A. before coming tothe Islands. In each of these places, he worked in variousrestaurants, learning how to make different types of food andperfecting his cross-cultural cuisine.

“I am trying to make a fusion of all of these foods, and makesomething out of the ordinary,” Chun explains. “I try to makefood that people might not try anywhere else.”

Right now, Chun is in the process of cooking up somethingspecial. It’s still in the works, but he hinted that a Korean-inspired pasta dish may be making an appearance soon.

In accordance withits customer care, cus-tomer feedback is cru-cial to the restaurant’smenu. “Before we putin a new menu item,when people come into eat, we give them a sample ofthe dish to try,” Chun says. “Weask them to critique how ittastes, and we get their opinionon how we can change it aroundif we need to.”

“We make new dishes all thetime for people to try,” he adds.These sample periods are neverannounced, however, so you’lljust have to keep frequenting RedHouse and hope to get lucky.

“We go on what the customerswant, and we always want newideas from people,” Chun says.

Cool happenings are taking placein downtown Honolulu with theaddition of Ice Forest to Hawaii’s

dining scene. Owner Andrew Huangopened the doors to this winter wonder-land on Merchant Street earlier thisyear, and has been serving up an assort-ment of Taiwanese-style shave ice witha local flair.

“What sets us apart is that we makeeverything fresh, from the mochi balls tothe azuki beans; we even use local taro,”says Huang, noting that highly requestedmenu items are Original Custard withMochi Balls Shave Ice ($5) and RainbowShave Ice with Mochi Balls,Ice Cream and CondensedMilk ($5), among others.

Ice Forest’s signatureshave ice Double-Custard,Mochi Balls ($6) has beensweeting up the summerheat as well. It features amountain of the finestshave ice topped with yourchoice of flavor(s), originalcustard, coffee custard andcondensed milk.

“We don’t use any preservatives or arti-ficial flavoring; our custards are madefrom scratch every day. This is a twist onyour typical shave ice,” Huang explains ofthis decadent treat.

Shave Ice with Taro, Mochi Balls andCondensed Milk has made fans out of tarolovers as it’s melt-in-your-mouth deli-cious. Choose to top it off with milk or upto two shave ice flavors.

“You also can design your own shaveice, which a lot of people like to do,”he adds.

Fresco’s menu features traditional Italian recipes infusedwith fresh, local ingredients. Award-winning chef KentaroTorii inspired the menu, incorporating dishes from thenorthern, central and southern regions of Italy, and execu-tive chef Rodhel Ibay added a fresh local touch by includ-ing Hawaii grown and produced ingredients.

“Their concept includes the use of locally grown veg-etables and herbs from local farms, such as Nalo Farms,”says sales and marketing manager Eileen Furuya of thechefs’ inspiration. “We use fresh fruits, too, and oursteaks are grass-fed on the Big Island.
