This week, I paid homage tomy Chinese roots with atribute to dim sum. Dim

sum is a staple when it comes toChinese dining culture, especiallyin Hong Kong, here at home andin some parts of the Mainland.

For those who aren’t too famil-iar with this vibrant cuisine, dimsum involves small individualportions of food, all usuallyserved in a small steamer basketor on a plate.

Dim sum translates into “a bitof heart,” and it’s with a big heartthat these dishes are made. Thisculinary art form takes a tremen-dous amount of skill and is oftenmade in vast quantities to meet

thepopular demands of hungry din-ers.

Being raised on dim sum, youcan say I’ve tried it all — from theever-popular pork hash or SiuMai to the adventurous morselsof chicken feet. Yes, you read thatcorrectly — chicken feet! Nowdon’t tell me that doesn’t haveyou chomping at the bit to savor.

Not sure of where to find thebest dim sum in town? I’ve gotyou covered. Without furtherado, here’s a peek into the worldof dim sum — “Ono, You Know”style!

Of course, the Baked Char SiuManapua and Baked CustardManapua will always leave yousatisfied, as well as the SteamedChive Dumpling with Shrimp.

Yet, I dare you to rise out ofyour comfort zone and try theBraised Chicken Feet with BlackBean & Pepper Sauce. You maybe turned off at the mere thoughtof it, but who knows? You justmight take a liking to the heartyflavor of the sauce and chewinessof the meat. I certainly did! Beprepared to work for it though, asyou have to eat around manybones. If you’re not up for thechallenge, how about theSteamed Pig’s Feet with Peanut orthe Shanghai Dumpling?

this family owned restaurant wasfounded by Kin Ball Lee in 1984.Today, restaurant directorMichael Lee believes that thesense of ohana is key to a runninga successful business. And for me, dim sum is an inte-gral part of bringing my own fam-ily together, as it’s great cuisinefor sharing. Often on weekends,my family and I will all gather toenjoy a vast amount of thesetasty Chinese delicacies. In fact,my uncle likes to call it “dim alot!”

“Everything is made freshevery morning, and we haveabout 34 dim sum here,” Lee

ZIPPING INTO THE HOLIDAYShere’s something of a buzz surroundingZippy’s these days as the holiday seasonapproaches — much of it to do with ananticipated rush on Thanksgiving Mealsto Go.

“We were so busy last year with ourturkey dinners,” says Thomas Kehoe,Zippy’s Kahala manager, “that we’reexpecting a really busy time again thisyear.”

Thomas believes that one of the rea-sons for the growing popularity ofZippy’s holiday meals is convenience,and a taste of home-cooked comfortfood.

“People know what to expect whenthey’re getting Zippy’s mashed pota-toes and gravy,” says Kehoe, “andour customers really like the stuffingand our dinner rolls. It’s food thatthey’re comfortable with, and that

they know tastes good.” A word of warning,though: If you’re think-

ing of ordering and

leaving the stress of turkey day cooking tothe professionals, make the call right now.While there’s a huge number of meals togo being prepared (last year Zippy’s soldseveral thousand meals), they are notunlimited.

Jay Crisologo and a number of otherstaff members helped man the phonelines last year, and this year they arepreparing for the task with almost mili-tary-like precision.

“We have a call center where we knowhow many turkeys are left at each loca-tion,” says Crisologo, “and we count downas people order. If a certain store sells out,we can direct customers to the next near-est store. Last year we were taking ordersright up until 5 p.m. on Thanksgiving Eveand sending people to the nearest Zippy’slocations to pick up. People were reallyhappy to know they could pick up theentire meal. ”

And while a Zippy’s-made Thanksgivingmeal is indispensable if you’ve forgottento defrost

the turkey or don’t have time to shop, italso can be a great gift.

“We had so many customers last yearbuying the dinners as gifts,” saysCrisologo. “And we had multiple ordersfrom companies buying the meals as giftsto their employees.”

There are a couple of different optionswith Meals To Go. A whole turkey packageis $71.95 and includes a 10- to 12-poundpound cooked turkey, gravy, mashed pota-toes, stuffing, cranberry/pineapple relishand a dozen sweet dinner rolls. A second,smaller option, features half a turkey(about 5– 6 pounds of roast turkey),comes with the same selection of sidedishes and costs just $37.95.

Desserts, including pumpkin or custardpies, can be added for just $6.70 morewhen you purchase them at the same timeyou order your meal to go.

“The desserts and the appetizer plat-ters are really popular too,” saysCrisologo. “People like to be able to pickup a platter of sushi or pupu if they’regoing somewhere for dinner.”

With 48 hours advance notice, you canpick up a sushi platter — 40 pieces makisushi, 12 pieces cucumber, 12 takuan and10 pieces inari sushi — for $25.50 (Oahuonly).

Four party platters (like the one fea-tured in the photo) also are offered. Pricesrange from $19.95 for Chicken Katsu, to$28.95 for a Korean Chicken Platter.

The most popular Pupu Platter No. 1($23.95) features teri beef, chicken katsu,Portuguese sausage, mahimahi and hotdog.

“We are usually busy from breakfastthrough dinner on Thanksgiving,” saysKehoe. “People really enjoy coming andtrying the Thanksgiving specials — andnot all of them are turkey.”

Finding bliss with each bite at Zpizza

There’s no better com-fort food than pizza,and for those of you

fretting the island’s lack ofpiping-hot cheesy good-ness, you need look no far-ther than Zpizza. The hipWard Center joint sports anumber of traditional pieson the menu, but what setsit apart are its specialty piz-zas.

“The Napoli is one of ourmost popular pizzas,” saidgeneral manager AliianaFiu. “It’s got the fresh toma-toes, fresh basil and low-fatmozzarella; each ingredientkeeps its integrity. G olden Duck celebrates 50years of creating some ofthe island’s best Chinese

cuisine. The casual, family-friendlyrestaurant has stood in several locations throughoutthe years — first near Aloha Stadium and thenMcCully — but most are familiar with its location onSouth King Street.

Last month Golden Duck opened a second locationright across from Kahala Mall at 4230 Waialae Ave.Diners can expect to find the same exceptional dish-es such as Chicken with Broccoli, Stew Duck withBitter Melon, Sweet Sour Spare Rib, and Shrimp FriedRice, but owner Aaron Fong says the Kahala locationalso will have exciting new options.

“It is similar items, but a little more variety,” hesays. “They have sizzling platters and Maine lobsters— fresh lobsters and fresh Dungeness crabs in thetanks. Everything is fresh.”

So why the new locale?“We have a lot of local customers, and many of them live

in Kahala, but they don’t want to come too far,” says Fong.“For years they’ve requested to open one in Kahala, so I wasthinking it about it two years ago, and finally I find a spot,then we just opened.”

It is this dedication to customers that has contributed toGolden Duck’s many years of success. Or maybe the flock ofduck figurines inhabiting the front of house have somethingto do with it ...

“We have a lot of repeat customers who are real loyal, andwhen they come they just give me a duck,” Fong says with alaugh. “In Chinese lore, I think the duck means good luck.”

The holiday season is about to getinto full swing at On On ChineseRestaurant in McCully. Long

established as one of the city’s mostpopular Chinese restaurants, On On is aperennial favorite with families lookingto spend quality time eating together —

When Chang Hak Jeonand his wife, Mi Hee,hear the alarm go off at4:30 every morning, itsignals the start of a

day filled with food preparation. Theowners of one of Honolulu’s oldestKorean restaurants believe in makingeverything from scratch, and when amenu involves five varieties of kimchee, homemade soups, marinades,meats and more than 50 different buffetitems, the preparation for lunch anddinner has to start early.

Fortunately, they love what they do. “We do get up very early to start,”

says Chang, who was a chef in Koreaand owned a bakery before coming toHonolulu. “But it makes us happy to bebringing a taste of authentic Koreanfood to our customers. We think ourfood is something that everybody canenjoy.”

Mi Hee is just as enthusiastic abouttheir tough schedule. “I really love to doit,” she says of the preparation thatincludes making gallons of red beansoup. “The soup takes more than threehours to make each morning, but it isvery good, and people really like it, soit’s worth the work.”

When Mi Hee and Chang boughtCamellia Buffet on Beretania, theybegan to make small changes to the buf-fet in order to bring the flavors of theirhome to Honolulu. the casual, Korean buffet. “When I looked around, I saw that

not too many people offer all-you-can-eat sushi and seafood,” says Chang.“So we decided to include them onour menu and see what customersthink. We feel that we can offer peoplegreater choice with seafood as well asour meats.”

So far, response to the recent din-ner buffet additions of nigiri and makisushi have been overwhelmingly pos-itive.

“Customers are very happy to seeso much seafood on the buffet,” saysthe restaurant’s Sandy Maeda. “It’svery popular, especially for peoplewho like meat and fish. And, ofcourse, it’s a very good deal. Withthe tako, sashimi and now the sushi,we have a lot to offer.”

“We have Spam sushi, and we alsohave a spicy tuna with avocado rolland a BLT — bacon, lettuce and toma-to — in a mini roll,” Maeda says.“People like the different tastes.”

C ollege students, shift workers, club-hoppersand insomniacs: What do you do when yourtown rolls up its sidewalks?

If you’re an East Honolulu night owl who is hungryfor something a little more sophisticated than drive-through fare, you might want to check out AnytimeCafé.

Located in Market City Shopping Center, thisfunky Kaimuki eatery was opened in February of thisyear by Ken and Cindy Wong. The Wongs also ownthe Sumo Ramen and Curry restaurants here onOahu.

When the Wongs first began making plans forAnytime Café, they thought a lot about the restau-rants in Hong Kong. “Late-night, café-style dining isvery popular in Hong Kong; you can eat anytime,”explains Cindy Wong, who says the cafés back homeinspired their extended hours. “We’re open in themorning, but we also stay open late, too!”

Want a take-out order of baked spaghetti andmeatballs ($8.95) to enjoy while you watchLetterman, or oxtail soup ($10.95) at the end of asplit shift? Craving French toast with peanut filling,Hong Kong-style ($6.25) at 10 p.m. on a Tuesday?

Anytime Café offers a diverse menu with somethingfor breakfast enthusiasts, late-night diners andeveryone in between.

“We have Asian, Italian, American, plus local fla-vors like Loco Moco and oxtail soup … we even haverisotto!” Wong says, proudly. “Our risotto and pastaare from Italy, and they are so good. Our wonton andnoodles are from Canada.” She explains thatVancouver, where their noodles are made, is hometo a large population of Hong Kong expatriates.“People say that some food in Canada is better thanin Hong Kong!” she adds.

Located in the space formerly occupied by theupscale Banana Leaf Italian Bistro, Anytime Caféoffers an eclectic selection of affordable dishes. TheWongs, who parted ways with their Banana Leaf co-owner early this year, have made it a point to keepprices down in the new place. No entrée costs morethan $11.95.

The couple’s commitment to quality and value isreflected in their dishes. Their wontons, for exam-ple, are made in-house according to the exactingspecifications of Ken Wong. Most local wontons con-tain pork and perhaps a tiny bit of shrimp for flavor.

Anytime Café takes it a step further. “We cut a bigshrimp into thirds, and include a third in each won-ton. You can really taste it!” says Cindy Wong.

There are plenty of international classics here,including the Fried Dumplings ($4.95), House Burger($7.95), Shrimp Wonton Noodle with Broth ($7.95),and Chicken Parmesan ($9.95). Dear Single Diner, I’m sorry for the way

you were treated, but thefatal mistake you madewas not complaining to amanager on the spot.Restaurant owners areabsolutely powerless tohelp with complaints ifthey are unaware of thebehavior of staff mem-

bers. I return a greatmany number of e-mailseach week urging peopleto complain to managers,and then I usually end upcalling the restaurants ontheir behalf. Almost allrestaurant managers arehappy to hear complaintsso they can rectify them.Next time, ask to speak toa manager. It might seemdifficult, but you’ll usuallyend up leaving the restau-rant happier — and want-ing to return.

“We also offer a lot of authentic HongKong-style dim sum that you might notfind at other places,” Lee adds. “Thosewould be things like the spinach andshrimp dumplings and the Chiu ChowStyle Dumplings.” Basically, the Chiu ChowStyle Dumpling is a seafood dumpling thatyour taste buds will go crazy for.

Lee also gave me a brief history lessonon dim sum that over the years has growninto an art form all its own.

“As travelers were passing through vil-lages in China, they wanted somethingsmall, fast and easy to eat, and that’s howdim sum originated,” explains Lee. “Fromthere, it just grew and became very popu-lar among the Chinese.”

And the great thing about dim sum isthat it can be eaten at any time of the day,for breakfast, lunch or dinner — you pick!However, here at Hee Hing, it’s served pri-marily for lunch daily from 10:30 a.m. to2:30 p.m.

With 36 options to choose from, allmade to order, Chan and his staff serve atleast 100 orders of dim sum a day. BeefLook Fun has been one of my personal dimsum favorites for years. This tasty dishshowcases minced beef and Chinese pars-ley wrapped in the famous look fun noo-dle, or a thick white noodle. Chan saysthey also can prepare it to your liking,whether that be with char siu, shrimp andscallop, or if simplicity is what you’re after,plain look fun noodles topped off withtheir special soy sauce is the way to go.

The Fried Shrimp dumpling also is one ofthe top sellers and consists of mouth-watering shrimp with a hint of celery togive a burst of flavor and crunch.

“The Shrimp Dumpling ($5.25) or HaGau is the most original dim sum. Whenpeople think of dim sum, they think ofthis,” Chan says. Siu Mai, also known aspork hash, is another customer favorite.

For $5.25, the Bean Curd Roll made withfresh bean curd, chicken and mushroom isa tasty option along with the Mochi BallRed Bean. Love this!

“The Mochi Ball Red Bean is more like adessert dim sum,” Chan explains. Andeven though this dessert may be a little onthe greasy side, it’s a popular dish formany and something I look forward toenjoying with my family, especially aroundChinese New Year.

If you’re new to dim sum, you may optfor the Half Moon ($2.30) with pork,shrimp and mixed vegetables stuffed in arice wrap, or sink your teeth into the PorkHash ($2.30), a dumpling filled to the brimwith pork and shrimp, which usually sitswell with most beginners. Believe me,these will turn you into a dim sum fanatic.

Personally, I can’t resist the Deep FriedTaro ($2.30). The Deep Fried Taro is warmand flaky, and consists of pork-filled taro,deep fried to perfection. It’s easy to eat,the pork is tender, and the taro is savoryand filling. There’s really no other way todescribe it than absolutely wonderful.

Lum suggests dipping your dim sum in amustard soy sauce, which will provide youwith that extra kick of flavor. Being thatyou can partake in dim sum as early as 8a.m. at this joint, that extra zest just maybe necessary.

And if you’re in search of a dim sumclassic, it’s found in the Baked Manapua($2.30). The bread, lightly sweetened andfluffy, pairs nicely with the bits of porkyou’ll find in each and every bite. I also ama fan of the Black Bean Chinese Malasadaalso known as Jin Dui. With its sweet flavorand chewy consistency, I’m pretty sureyou’ll like it, too.

At Bella Mia Pizzeria, there’sa taste of Italian cooking,American-style. Rich pasta

sauces, excellent eggplant rollati-ni, freshly made pizza and tastymeatballs are all on a menu thatreflects dozens of Italian favorites.

We stopped by and asked room-mates Christie Gora andRosemary Thomas what they’drecommend from the menu.

Christie:“I like the food here a lot; it’s so

good. The shrimp Parmesan andsome of the other dishes are differ-ent from most Italian restaurants.The shrimp is sweet and moist andreally delicious.

“We like that the taste of thesauces are different here, too. Themenu is unusual, there are morechoices than we’ve found in some

shrimp Parmesan that Christiebrought home recently and we werethinking about the taste. I guess youcould say that just the memory of thedish, the flavors and the taste,brought us back today. The food is sogood here. We ordered the shrimpParmesan again today! And I love theeggplant Parmesan, too. But every-thing is so good.

“And I like the atmosphere a lot. It’s

casual and friendly and relaxed. Andthe portions are so big, it’s easy toshare or take some home.

Filling• 1 teaspoon olive oil• 1/4 medium onion, finely chopped• 1/4 green bell pepper, minced• 3 large garlic cloves, minced• 1/4 teaspoon cumin seed, crushed• 5 large stuffed green olives, finelychopped• 1 1/2 pounds extra-lean ground round• salt and pepper, to taste

Preparation• In a sauté pan with heat set at mediumhigh, add olive oil and onions. Allow tosweat for 30 seconds before adding bellpepper garlic, cumin and green olives.Cook for a minute. Add ground beef andsauté until meat is thoroughly cooked.Refrigerate until ready to use.

Empanada shells • 4 cups all-purpose flour• 2 teaspoons baking powder• 1/2 teaspoon salt• 4 teaspoons butter

• 2 eggs• 1 cup cold water

Preparation• Mix dry ingredients together; set aside.Beat eggs, add to dry ingredients and cutin the butter with a pastry cutter untildough crumbles. Slowly add water whilekneading dough into a ball. Divide intotwo even balls and roll dough betweenyour palms until they form long ropes(about 8 inches). Place ropes back intobowl, cover with cloth and refrigerate forat least one hour. • Break off a piece about the size of a pingpong ball. Flatten with hand and roll onfloured surface until it is thin. Using asaucer, cut each piece into a round usingsharp knife. Put a tablespoon of cooledfilling into center then fold over and sealthe edges with a fork. Fry in hot oil.• Recipe should make about 18empanadas. You also can use a small formto make appetizer-sized empanadas.
