Preparation

1. Combine all glaze ingredients and simmer for 10 minutes. Cool and reserve.

2. Sauté shrimp with oil, salt and pepper for 2-3 minutes over high heat.

3. Cut rosemary into 4–5 inch pieces stripping the bottom 2 inches off each one.

4. Skewer shrimp with rosemary. Brush shrimp with glaze and place in 400 degree oven for 2-3 minutes.

5. Place on platter and drizzle with more glaze.

Butternut SquashButternut squash brings freshness, fl avor and nutritional goodness together in

one vibrant, colorful package. A winter squash, it makes a wonderful addi-

tion to any cook’s culinary repertoire and is the perfect seasonal ingredient

to spice up your menus during the chilly fall and winter months. Whether

roasted, baked or puréed, this versatile food—with its velvety texture and

buttery fl avor—makes a colorful and healthy addition to holiday feasts and

everyday meals that family and friends are sure to enjoy.

Melt butter in stockpot over medium heat; add onions and garlic and cook, stirring occasionally, until onions are tender, about 5 minutes. Stir in curry powder and brown sugar.

Add squash, apples and chicken broth to the onions. Bring to a simmer, then reduce heat to low, cover and cook until squash is tender, about 30 minutes.

Working in batches in a food processor, purée squash mixture until smooth. Transfer back to stockpot, stir in coconut milk to desired creaminess, and return to a simmer. Season soup to taste with salt and pepper.

CuRrIeD BuTtErNuT SqUaSh SoUp This soup can be easily prepared in advance and reheats well. Serve as the first course of an elegant holiday meal or for a casual evening supper with a simple green salad.SERVES 6–8

2 Tbsp butter1 1/2 cups chopped onions1 tsp minced garlic1 1/2 Tbsp curry powder1 Tbsp brown sugar1 butternut squash (about 2-1/2 lbs), peeled

and cut into 2-inch chunks(approximately 6 cups)

1 Golden Delicious apple,peeled and cut into eighths

3 cups chicken broth1 cup coconut milkSaltFreshly ground pepper

Butternut Squash Preparation1. Using a vegetable peeler, remove the skin of the squash.

2. Using a large sharp knife, cut the squash in half lengthwise, then scoop out the seeds.

3. Chop the squash as desired for your recipe.

Ingredients1 butternut squash, large, cubed1 yellow onion, large, diced3/4 lb red potatoes, large, diced3/4 lb apples, large, diced 1 Tbsp fresh thyme, chopped1 Tbsp canola oil1 Tbsp unsalted butter

Vinaigrette1/4 cup apple cider vinegar3/4 cup canola oil2 Tbsp Pike’s Place Horseradish1/2 tsp Kosher saltLarge pinch fresh ground pepper1 Tbsp honey

Preparation1. Combine all vinaigrette ingredients and set aside.2. In large sauté pan heat oil and butter over high heat to a smoking point.3. Carefully add all ingredients, except thyme.4. Sauté for 5-8 minutes or until the potatoes and squash are tender.5. Add thyme and cook for 1 more minute. 6. Remove from heat, spoon vinaigrette over the hash and toss well.

Prep Time: 15 minutes Cooking Time: 10–12 minutes

In one bowl cream butter, shortening, sugar, eggs and vanilla together. In a separate bowl mix fl our, salt and baking powder. Slowly add dry ingredients to wet ingredients until well blended. Scrape down bowl and turn dough out onto plastic wrap to form loaf approximately 4" x 12" x 1."Chill dough for several hours until fi rm…overnight, time permitting.

Roll dough on fl oured surface no less than 1/4" thick. Cut out shapes. Re-form dough from scraps and continue to roll and cut until all dough is gone.

Bake at 375° for 6–7 minutes, or until lightly browned at edges.

Over the last 20 years she has worked with the bakeries of our Meridian andBarkley stores (learning her cake decorating skills on the job!) and moved into Human Resources in 1997. A talented baker in her own right,Lisa says she has “been baking at home since I was a kid with my Aunt Marta, but decorating since themid-90s thanks to Haggen.

Mix all ingredients slowly at fi rst, then increase speed until creamy. Add coloring and fl avoring as desired.

vanilla caramels1 cup butter, cold, cut into pieces2 cups sugar1 cup light corn syrup1 14 oz can sweetened condensed milk1 tsp vanilla

In 6 quart stock pot, mix butter, sugar and corn syrup over medium heat until sugar is dissolved and begins to bubble. Stir sweetened condensed milk into sugar and butter mixture quickly and continuously with a heat resistant rubber scraper, until mixture reads 245° on candy thermometer (approximately 20-30 minutes). Remove from heat and add vanilla. Stir quickly, then pour into parchment-lined 9"x13" pan. Cool overnight. Lift parchment out onto cutting board. Cut 1" strips then individual pieces. Wrap in wax paper squares.
