with its rolling hills and hearty weather, nashua, montana

is at the heart of Big sky wheat country. it’s also home to

nielsen farms, where we have been growing the highest

quality spring wheat since 1965.

over the years, we’ve honed our farming knowledge and skills

to produce the highest quality wheat and other crops. in 1990,

brothers Kyle and travis nielsen purchased the family farm,

continuing to utilize the latest in farming technology

and innovations.

in addition to our love of farming, we share a love of good

food—particularly fresh bread, served steaming hot at the family

dinner table. that’s why in 2004, we opened our restaurant and

bakery in Billings featuring the finest artisan breads, stone oven

pizzas and gourmet sandwiches made with wheat from our family

farm. our customers loved our home-style food, and soon loaves

of bread and pastries were flying off the shelves.

in 2008, we broke ground on our new commercial bakery in

Billings so we could begin offering our unique products to stores

and restaurants nationwide. We are serving up all this goodness

at two new franchise locations in Boise, iD and Biloxi, MS, with

more opening soon.

At grains of Montana, we do things differently. We do them right.

And with every bite, our customers thank us for it.

every grains of montana product begins with wheat grown

on our family farm in nashua, montana. and generations

of farming have taught us how to do it right.

our Spring wheat is grown right on the nielsen family farm, and

it’s produced using a crop rotation system. Alternating our fields

between wheat and legumes replaces the nitrogen in the soil in

a natural and environmentally friendly way. We take pride in our

farming practices and how safe our wheat is as a food source. in

fact, it’s so safe that during harvest time, our children eat wheat

right out of the hopper. Talk about a healthy snack!

Commercial bakeries buy wheat and flour from large corporate

grain companies that mix a variety of types and grades of

wheat—both good and bad—to make it as cheap as possible.

But at grains of Montana, our wheat is specially milled just for us.

And because we grow the wheat and control the milling process,

we are able to consistently produce high-quality flour with the

moisture content and elasticity that’s ideal for baking bread.

We believe in taking ownership of all phases of our bread cycle.

We use our own seed, plant it, nurture it to golden maturity then

harvest, store and mill it. it’s all nielsen Farms and grains of

Montana—and it’s all quality whole-grain goodness.

in november of 2008, we opened the doors of our 10,000 square foot baking facility in Billings, montana. it boasts the latest in commercial proofers, ovens, mixers and other equipment to ensure that we are able to fulfill even the largest orders on time while still maintaining the taste and quality we’re known for. it’s just one more way that your customers can bring homemade goodness from our family farm to their family table.

chocolate tartA piece of chocolate heaven. We pack a chocolate pate Sucree crust with a rich chocolate creme filling and top it with a dark chocolate glaze and candy cocoa nibs.

fruit tartAn almond pate Sucree crust lined with rich chocolate and filled with a lemon based pastry cream. perfectly paired with fresh fruit.

coffee caKeOur homemade coffee cakes are packed with fruit and topped with a buttery, almond streusel that delight the taste buds. Choose from blueberry or peach.

pumpKin roll A thick cream cheese and roasted walnut filling surrounded by a moist and spicy pumpkin cake. Finished with a dusting of powdered sugar.

peach coBBlerA true peach pie lover’s dream. We fill a 4” buttery pie crust with a sour cream and peach filling and top it with a sweet streusel.

ammonium sulfate. azodicarbonamide. l-cysteine hydrocloride. Diacetyl tartaric acid ester of mono-Dyglycerides. these are just a

few of the ingredients listed on the labels of bread you see in any grocery store and even in some bakeries. at grains of montana,

our label surprises people not just because of what it does contain (like whole wheat flour) but also because of it what doesn’t.

Most bakeries essentially use box mixes loaded with chemicals to extend shelf life. they also make it easy for untrained bakers to produce; simply

add water, flour and yeast and voila—an hour later you have bread.

We produce only artisan breads, made from scratch without fillers or stabilizers, by people

skilled in what they do best. Artisan baking is more labor intensive and time consuming,

but we wouldn’t have it any other way. We use

pre-ferments in all of our breads (a 12-hour process)

and give every dough the time it needs to rise the

old-fashioned way. this process gives our bread its

hearty texture, naturally savory taste and homemade

goodness. And that’s something that Diacetyl tartaric

Acid ester of Mono-Dyglycerides just can’t do.
