An Introduction to This Gift Packet

Gifting Amish Friendship Bread is one of the best things about the starter and its bread. It’s about how sharing something simple—and delicious—can change a person’s day. It’s about taking something from your kitchen—and the kitchens before you—and passing it on. It’s about friendship, it’s about connection. It’s about being thankful for what we have and shar-ing it with others.

In my new novel, The Avalon Ladies Scrapbooking Society, the sequel to Friendship Bread, I knew the spirit of the bread would continue. The focus of this novel is about memories, about how we hold on to things that are slipping away. Scrapbooking is the means by which we prove our connection—to ourselves, our past, our present, our future. It reminds us of the people who have been a part of our journey. Scrapbooking reminds us of who we are.

“I don’t scrapbook,” is the first thing out of people’s mouths when they hear the title of my book. I then go on to explain that scrapbooking takes many forms, that at its heart it’s about memory keeping. “Ohhh,” I’ll hear, because they understand that. They know about memory keeping, about holding something close, about the risk of losing that very thing.

Care and Feeding of Amish Friendship Bread StarterNOTE: Do not refrigerate the starter. It is normal for the batter to rise and ferment. If air gets into the bag, let it out.

Directions

Day 1: Do nothing.

Day 2: Mash the bag.

Day 3: Mash the bag.

Day 4: Mash the bag.

Day 5: Mash the bag.

Day 6: Add to the bag: 1 cup flour, 1 cup sugar, 1 cup milk. Mash the bag.

Day 7: Mash the bag.

Day 8: Mash the bag.

Day 9: Mash the bag.

Day 10: Follow the directions to the right:

Pour the entire bag into a nonmetal bowl.

Add 1 1/2 cup flour, 1 1/2 cup sugar, 1 1/2 cup milk.

Put 1 cup of starter aside to keep or bake with, and divide the remaining batter into 1-gallon Ziploc bags with 1 cup per bag. Your starter yield may be more or less depending on how active your starter has been.

Kitchen notes

Remember to gIve the starter along with a copy of the Care and Feeding of Amish Friendship Bread Starter as well as the recipe for Amish Friendship Bread. Should this recipe not be passed onto a friend on the first day, make sure to tell them which day it is when you present it to them.

Amish Friendship Bread Starter“If you haven’t received a bag of Amish Friendship Bread starter but would like to make the bread, this is the recipe for starting your starter.”

1 (0.25 ounce) package active dry yeast¼ cup warm water (110° F/45° c)1 cup all-purpose flour

1 cup white sugar1 cup milk

In a small bowl, dissolve yeast in water. Let stand 10 minutes.

In a 2-quart glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly with a whisk or fork.

Slowly stir in 1 cup milk and dissolved yeast mixture.

Cover loosely and let stand at room temperature until bubbly. Consider this day 1 of the 10 day cycle. For the next 10 days handle starter according to the instructions for Amish Friendship Bread.

Kitchen notes

The starter should be left at room temperature. Drape loosely with dish towel or plastic wrap. Do not use metal utensils or bowls. If using a sealed Ziploc bag, be sure to let the air out if the bag gets too puffy.Also, when you make a starter from scratch, you can sometimes end up with a much greater yield than 4 cups depending on the temperature of your kitchen and eagerness of your starter. If this happens, reserve one cup for baking and divide the remaining batter into Ziploc baggies of 1 cup each to freeze or share with friends.

Amish Friendship Bread“We love all the wonderful variations but the classic Amish Friendship Bread recipe is by far the simplest and the best.”

ingreDients

Directions

1 cup amish Friendship Bread starter3 eggs1 cup oil1/2 cup milk1 cup sugar1/2 teaspoon vanilla2 teaspoons cinnamon

1 1/2 teaspoon baking powder1/2 teaspoon salt1/2 teaspoon baking soda2 cups flour1-2 small boxes instant pudding (any flavor)1 cup nuts, chopped (optional)1 cup raisins (optional)

Preheat oven to 325° F (165° C).

In a large mixing bowl, add ingredients as listed.

Grease two large loaf pans.

Dust the greased pans with a mixture of 1/2 cup sugar and 1/2 teaspoon cinnamon.

Pour the batter evenly into loaf or cake pans and sprinkle the remaining sugar-cinnamon mixture on the top.

Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.

Cranberry Amish Friendship Bread Drop Scones“Light and fluffy, these cranberry drop scones have just the right amount of sweetness.”

ingreDients

Directions

2 cups amish Friendship Bread starter3 cups flour2 teaspoons baking powder1/4 teaspoon salt1/2 teaspoon baking soda

1/3 cup sugar1/2 cup butter (frozen or well-chilled)1 egg, beaten1 cup fresh cranberries

Preheat oven to 400° F (200° C).

In a mixing bowl combine flour, sugar, baking powder, baking soda and salt.

With a pastry blender, cut in butter until mixture resembles coarse crumbs. If you don’t have a pastry blender, grate the frozen butter with a box grater and incorporate with your fingers. Make a well in center of dry mixture; set aside.

In another bowl combine starter and egg. Add the wet mixture all at once to dry mixture. Using a fork,

stir just until moistened.

Turn out onto lightly floured surface. If the dough is too sticky add flour until it becomes easier to handle. Add cranberries and fold in carefully, using two spoons.

Drop heaping spoonfuls onto an ungreased baking sheet.

Bake for 15 to 20 minutes until golden.

If you’re watching your cholesterol, this recipe can be a little tricky. Fortunately there are plenty of oil and egg substitutes available; our favorite is flaxseed meal. If you like raisins, combine different variations (golden, Thompson, and red flame) to keep it flavorful and interesting. We also like to use candied pecans or walnuts (leftover from the holidays and kept frozen in our freezer) to add an extra sweet crunch.

KitCheN tip: Dried vs. Fresh

Don’t have fresh cranberries on hand? Swap with 1/2 to 3/4 dried. rehydrate by soaking in hot water for 5 to 10 minutes, or until soft. Pat dry. You can also soak in orange juice if you’d like a flavor boost.

Cook Time: 15-20 minutes

Yield: 12 drop scones

Kitchen notes

You can also use dried cranberries in place of fresh or frozen. If you don’t like working the dough with your bare hands, use two spoons to help incorporate additional flour and whole cranberries. If your kitchen is hot or humid, chill the flour mixture and mixing bowls before use. Be careful not to overwork the dough.
