Recipe of the Month With tea parties still the hot topic this spring we’ve asked Head Chef Anton Manganaro to share his famous macaroon recipe with you. Often served as a dessert canapé here at 195, they are a very popular item on our seasonal menu…

Ingredients:400g ground almonds440g icing sugar200g egg whites

280g caster sugar

Sieve almonds and icing sugar together twice so

it’s a fine powder. Put the eggs in a bowl and whip

together with the caster sugar until light and fluffy.

Fold the wet and dry ingredients together until it’s

a creamy consistency with a shine. Pipe the

mixture onto greaseproof paper on a baking tray

and allow to dry for up to 3 hours until a light crust

has appeared on the top. Place in the oven and

bake 12 minutes at 180ºc. Leave to cool.

For the Ganache:200g of double cream200g white chocolate

Boil 200g double cream in a saucepan and slowly pour onto 200g of melted white chocolate. Whisk

together until pipeable. Match up the macaroons into pairs and pipe the ganache onto each

macaroon and sandwich together.

For the best results freeze and defrost on day of consumption…and enjoy!

Try them here as Petits Fours on our dinner menu.

Run Sion Run! Our very own General Manager Sion Parry ran the Virgin Marathon on

Sunday 25 April for MS Society and finished in a commendable 4 hours

and 12 minutes. If you would like to show your support for MS Society and

Sion’s hard work, then click on the link below to leave a donation:

Meet the team Monika Kuszneruk - Financial Controller

Monika was born in Poland and spent her childhood in the beautiful city of Lublin. During her teens she trained to be a basketball player for a few years but decided to stop, despite the pleas from her coach and parents!

Monika focused on her studies and successfully achieved the Polish

equivalent of A-Levels in Finance and Accounting, before doing a Degree

in Finance and International Trade at the Polytechnic of Radom in Poland.

She came to London nine years ago – having only planned to stay six

months! When settled, she had various jobs and started her ACCA

studying, followed by her first accountancy job in Bromley Borough.

After applying for the role as Financial Controller here at 195 Piccadilly,

Monika received a phone call during her 30th birthday party to find out

she’d got the job. She’s been here ever since and thoroughly enjoyed her

time so far.

Outside of the office, she loves going to the cinema, theatre, concerts and

museums. She also likes to meet up with friends on a regular basis and is a

very keen reader – often suggesting the next best book to read in the

office!

Monika is happiest when she has a proper work/life balance. She loves working as an accountant as

well as spending free time with her beloved 5-year-old daughter Agata.
