Progressive Indian Nestled in the crowded streets of Bangkok, try one of Asia’s Best Restaurants, Gaggan. Borrowing from the sophisticated ‘molecular cuisine’ school of thought, yet retaining true Indian cooking traditions as the foundation of his style, chef Gaggan Anand has crafted a new form he refers to as ‘Progressive Indian’. The result is a wholly innovative perspective on common Indian dishes featuring surprising textures, stylised presentation and a new sensory experience while savouring traditional Indian flavours; the Gaggan twist.

The first Indian chef to work with Ferran Adrià at ‘El Bulli’, Anand learned the mysteries of liquid nitrogen, gels, essences and all the wizardry of molecular cuisine. A fan of Rock Music and experimenting with food, Anand lets his food talk for him, inviting guests to what he calls his home. In a world of refinement and sugarcoating, chef Gaggan Anand is a rarity. A blunt, honest and direct individual,the unorthodox ways of chef Gaggan Anand have not only granted him the respect of the world’s best hospitality professionals, but also granting his eponymous restaurant the recognition of The San Pellegrino Best 50 Restaurants of Asia, winning the overall category as Best Restaurant in Asia 2015.

The definition of Progressive Indian cuisine, coined by the chef himself, is present throughout the whole experience of the meal.Guests are received in a colonial-style house on a peaceful street, with whitewashed walls, minimal furniture, ceiling fans and open-view kitchens. The airy space invites visitors to relax before the meal.

The three set menus, which range in quantity and variety, and with playfully-named dishes, like ‘Beauty and the Beast’, ‘Viagra’ or ‘Green with Envy’ start conveying the idea that the experience is going to be far from common.
