Before we had the technology of keeping food fresh with a refrigerator, we had to preserve our food by pickling. In fact, fer-menting food is the original food preserva-tion method. When you get a 12 pack, you get the flexibility to scale your fermenting project up to 6 gallons if needed (twelve, gallon jars). You also have flexibility of add-ing extra weights when you need to, and the entire stock of 12 is not in use. You usually dont need all 12 kits, but is sure nice having them when I do need them.
