About 3/4 cup Sun-dried Tomato Pesto 8 slices ciabatt a bread, about 3/4" thick About 2 tablespoons butt er, soft ened 8 ounces Fonti na cheese, shredded Baby arugula. Pile it on and grill!

SPINACH, TOMATO GOAT GOUDA GRILLED CHEESE
Wilt about 4 cups spinach in 2 tbsps olive oil on medium heat. Butt er 2 tbsps 4 slices rusti c bread. Sprinkle 2 pinches red pepper fl akes on the bread. Work with 2 halves and add caramelized onions, some sliced goat gouda then pile the spinach on each half, add a few slices of tomato and more gouda. Close the sandich and grill - you can use a bit of oil on the grill to insure no sti cking of cheese. Delicious!
