the best nectarine season in years?

The forecast this year is for a hot summer,

if that happens people will have the best

fruit they’ve seen in three years, because

the heat encourages sugar development.

A long, hot, dry summer will be a great

season for growers and consumers.

How long have you been growing

this stone fruit for Woolworths?

I’m part of the third generation in the

company, founded by my grandfather

Bill in 1948. He grew all sorts of vegies

and fruit. My father, two brothers and

three cousins are all part of the business

now. We’ve been supplying Woolworths

with nectarines for the past 20 years.

How do you make sure customers get

fruit in the best possible condition?

Every nectarine is carefully hand-picked.

We put a lot of care into picking, packing

and transport to ensure eating one of

our nectarines is as close as possible

to eating it straight off the tree.

What should we look for when

shopping for nectarines? Look for a slight

give when pressing a nectarine very lightly

with the tips of your fingers. There should

be a nice sweet aroma, too. When you get

it home, never store it in the fridge. Leave

it in the fruit bowl to develop its full flavour.

Are nectarines popular? Demand has

been increasing, especially as people

discover white nectarines. They’re firmer

and sweeter, which people like. But some

like nothing better than a classic, juicy

yellow nectarine that melts in the mouth,

with juice running down your chin!

fruit toast with warmnectarines & yoghurt

Prep 5 mins | Cook 5 mins | Serves 4

2 nectarines

1 cup mascarpone or Greek yoghurt

1 tsp vanilla extract

½ cup caster sugar

40g butter, chopped

pinch ground cinnamon

4 thick slices fruit bread

1 Halve nectarines and remove stones.

Cut into wedges. Combine mascarpone

with vanilla in a bowl and set aside.

2 Heat a small non-stick frying pan

over medium heat. Sprinkle sugar evenly

into pan and shake over heat until sugar

melts and turns golden. Add butter and

cinnamon, swirling to combine. Add

nectarine wedges. Simmer, uncovered

for 3-5 minutes until they are just soft.

3 Toast bread, halve diagonally and

place onto serving plates. Top each

with a dollop of the mascarpone,

nectarines and sauce. Serve.

Peeling tipTo peel nectarines, cut a shallow cross

in bottoms. Cover with boiling water

in a bowl for 1 minute. Peel when cool.

poached chicken& nectarine salad


2 chicken breast fillets

2 nectarines

150g mixed lettuce

½ small red onion, finely sliced

1 avocado, peeled, seeded and sliced

dressing

⅓ cup fresh orange juice

¼ cup extra virgin olive oil

1 tbs wholegrain mustard

2 tbs shredded basil

1 Place chicken in a deep frying pan

and cover with cold water. Bring water

to the boil over medium heat. Reduce

heat to low. Cover and simmer for 10

minutes. Turn off the heat and leave

for a further 5 minutes.

2 Meanwhile, halve nectarines and

remove stones. Cut into wedges

and combine in a large bowl with

lettuce, red onion and avocado.

3 To make dressing, whisk orange juice,

oil, mustard and salt together in a bowl

until combined. Stir in basil. Shred

cooked chicken and add to salad. Pour

over dressing and toss together. Serve.

Prep 10 mins + marinating time

Cook 20 mins | Serves 4

900g pork roast scotch fillet

2 tsp ground ginger

1 tsp ground cumin

2 garlic cloves, crushed

1½ tbs oil

6 nectarines

risoni salad

1 cup macro organic risoni

150g tub roasted red capsicum,

pecorino, cashew & basil dip

3 sliced spring onions

¼ cup chopped coriander

1 Soak 12 bamboo skewers in water.

Cut pork into 2cm cubes. Combine

spices, garlic and oil in a large bowl.

Add pork and stir until well coated.

Refrigerate for 30 minutes.

2 Meanwhile make salad: cook risoni in

boiling, salted water for 10 minutes until

just tender. Drain and rinse in cold water.

Drain well and transfer to a bowl. Stir in

the dip, spring onions and coriander,

reserving a little for garnish. Set aside.

3 Preheat a barbecue grill on medium-

high heat. Halve nectarines and remove

stones. Cut each nectarine half into

3 wedges. Thread pork and nectarine

alternately onto skewers. Cook skewers

for 8 minutes, turning, until golden on

all sides and cooked through. Serve

the pork skewers and risoni salad

garnished with reserved coriander.

750g pumpkin, peeled, deseeded,

cut into wedges

2 zucchinis, trimmed, thickly sliced

olive oil cooking spray

250g Woolworths Select Frozen

Broad Beans, peeled

¼ cup walnuts, roughly chopped

1 tbs vegetable oil

4 Woolworths Chicken Thigh

Roll Ups – Mustard & Dill

rocket leaves, to serve

1 Preheat barbecue to medium

heat. Spray pumpkin and

zucchini with oil and season

with salt and pepper. Chargrill

for 2-3 minutes each side until

golden and cooked through.

Transfer to a plate and keep warm.

2 Combine broad beans and walnuts

in a bowl with oil. Cook on hotplate for

2-3 minutes. Transfer to plate with vegies.

3 Spray chicken with olive oil. Chargrill for

1-2 minutes. Transfer to a heatproof dish,

close barbecue lid and cook for 20-25

minutes. Remove from barbecue. Cover

and rest for 5 minutes. Place pumpkin,

bean mixture and chicken onto serving

plates. Top with rocket. Serve.

470ml Connoisseur Gourmet

Ice-cream

2 cinnamon sticks

200g Homebrand Caster Sugar

⅓ cup Homebrand Australian Honey

½ cup water

8 sheets filo pastry

40g Homebrand Butter, melted

1 nectarine, stone removed, sliced

1 punnet raspberries

mint leaves

1 Line 4 muffin pan holes with plastic. Divide

ice-cream among holes. Refreeze to firm.

2 Stir cinnamon, sugar, honey and water

in a pan over low heat until sugar dissolves.

Increase heat and simmer for 5 minutes.

3 Preheat oven to 180°C. Line a 20 x 30cm

baking pan with paper. Cut pastry sheets

in half. Brush each with butter and layer

on top of each other in pan. Prick with

a fork. Bake for 15 minutes until golden.

4 Remove pastry from oven. Pour half

the syrup over. Set aside to soften. Add

fruit to the remaining syrup.

5 Cut out 8 x 7cm rounds from pastry

and place 4 onto serving plates. Remove

ice-cream from pan and place onto filo.

Top with second filo rounds, fruit and

syrup. Garnish with mint and serve.

3 red capsicums

olive oil cooking spray

1 cup green olives

2 tbs extra virgin olive oil

1 tbs white wine vinegar

½ cup basil leaves, roughly chopped

3 bunches asparagus, trimmed

2 x 250g packets haloumi, cut into

1.5cm thick slices

crusty baguette, to serve

1 Heat a barbecue hotplate on medium-

high heat. Spray capsicum with oil. Cook

for 10 minutes or until charred on all

sides. Transfer to a bowl, cover with

plastic wrap and stand for 5 minutes

to cool. Peel and remove seeds.

Roughly chop and place into a bowl

with olives. Whisk oil, vinegar, salt and

pepper in a jug and add to salad. Toss

well to combine. Sprinkle with basil.

2 Cook asparagus on barbecue plate

for 5 minutes until just tender. Cook

haloumi on barbecue plate for 1-2

minutes until golden. Transfer to serving

plates. Serve asparagus and haloumi

with salad and crusty baguette.

½ shredded coconut

1 egg

1 tbs milk

1 tsp vanilla extract

vegetable oil, for deep frying

2 ripe bananas, peeled, halved

plain flour, for coating

Harry’s Pavlova Ice Cream

mint, to garnish

1 Combine breadcrumbs with

coconut in a bowl. Whisk egg in a

separate bowl with milk and vanilla.

2 Heat oil in a large saucepan. Coat

banana pieces in flour, shaking off

excess. Dip into egg, then coat with

coconut crumbs. Re-coat by dipping

into egg and crumbs a second time.

3 Lower banana pieces in batches,

into hot oil and deep fry, turning,

until golden all over. Remove with

a slotted spoon and drain on paper

towel. Serve with ice-cream and mint.

⅓ cup vegetable oil

2 tbs Woolworths Select

White Wine Vinegar

3 garlic cloves, crushed

2 tsp smokey paprika

1 tsp piri piri seasoning

1 tsp sea salt flakes

½ tsp white pepper

1kg green prawns, peeled, tails intact

650g small washed potatoes, sliced

2 tbs olive oil

1 lemon, rind finely grated

and 1 tbs lemon juice

2 tbs rosemary sprigs

green salad and lemon wedges,

to serve

1 Combine oil, vinegar, garlic, paprika,

piri piri, salt and pepper in a large ceramic

bowl. Add prawns and toss to coat.

Cover and refrigerate for 30 minutes.

2 Combine potatoes, oil, lemon rind,

juice and rosemary in a bowl. Season

with salt and pepper. Toss to combine.

Transfer potato mixture onto a large

sheet of foil in a single layer. Fold foil over

and seal edges well. Slide onto a tray.

3 Preheat barbecue hotplate to medium

high. Slide foil parcel onto barbecue,

cover with lid and cook for 15 minutes.

Turn and cook for a further 15 minutes

or until potatoes are tender.

4 Add prawns to barbecue plate and

cook for 2 minutes each side, tossing

frequently, until golden and cooked

through. Serve prawns with potatoes,

green salad and lemon wedges.

Prep 10 mins + marinating time | Cook 10 mins | Serves 4

4 kaffir lime leaves

1 bunch coriander with roots

2 long red chillies, deseeded,

finely chopped

165ml can coconut milk

4 salmon fillets

2 Lebanese cucumber, peeled

1 large mango

1 tbs vegetable oil

steamed rice and

lime wedges, to serve

1 Remove spines from lime leaves and

shred finely. Wash and finely chop

coriander roots. Reserve coriander

sprigs. Combine lime leaves, coriander

roots, chilli and coconut milk in a ceramic

dish. Add salmon fillets and turn to coat.

Cover and refrigerate for 30 minutes.

2 Halve cucumbers lengthways.

Remove seeds with a teaspoon. Finely

dice cucumber and place into a bowl.

Remove cheeks from mango, scoop

out flesh and dice. Add mango to bowl

with cucumber. Chop half the reserved

coriander sprigs. Add to the mango

and cucumber mixture.

3 Preheat a barbecue plate on high.

Grease barbecue plate with oil.

Remove salmon from marinade and

cook skin-side up, on plate for 2-3

minutes or until golden. Turn and cook

for 2-3 minutes or until cooked to your

liking. Serve salmon with steamed rice,

cucumber salad and a lime wedge.

950g Woolworths ButterfliedGarlic & Herb Lamb Leg

345ml bottle ale1 tbs vegetable oil4 medium vine-ripened tomatoes,

roughly chopped250g punnet baby roma tomatoes,

halved lengthways¼ cup extra virgin olive oil2 tbs balsamic vinegar¼ cup mint leaves, shredded

1 Place lamb leg into a ceramic

heatproof dish. Pour over ale, cover

and refrigerate for at least 2 hours

or overnight if time permits.

2 Remove lamb and bring to room

temperature. Preheat a barbecue

on medium heat. Discard liquid.

3 Grease barbecue plate with oil. Add

lamb and cook for 3-5 minutes on each

side or until golden. Transfer to a metal

baking dish and place on the other

barbecue plate. Cover with lid. Cook

for 25 minutes for medium rare or

until cooked to your liking. Cover lamb

with foil and rest for 10 minutes.

4 Meanwhile, arrange the chopped

tomatoes on a platter. Top with roma

tomatoes. Whisk oil and vinegar in

a jug. Season with salt and pepper.

Drizzle dressing over tomato salad.

5 Slice lamb meat and add to the

serving platter with tomato. Top

with the mint leaves. Serve.

1 Fill 2 ice cubes trays with mint

leaves and water. Freeze until solid.

and set aside to cool.

Preheat oven to 180°C. Line a large

baking tray with baking paper. Combine

⅓ cup brown sugar, ⅔ cup caster sugar,

2 tsp Woolworths Select Ground

Cumin, 1 tsp Woolworths Smokey

Paprika, ½ tsp chilli and 1½ tsp salt

in a bowl. In a separate bowl, whisk

1 eggwhite until foamy. Stir 500g mixed

unsalted nuts and dried fruit (we used

Woolworths Select Cranberries, Sultanas,

Cashews, Brazil nuts, Macadamias,

Pepitas and Walnuts) into the eggwhite.

Add sugar and spice mixture and toss

well until all are coated. Spread out

evenly on the prepared tray. Bake for

25-30 minutes, stirring occasionally,

until golden and sticky. Leave to cool

on the tray and then break into pieces.

Place 250g Woolworths Select Lite

Cream Cheese into a bowl and stir

until smooth. Add 100g finely chopped

smoked salmon, 1 tbs finely chopped

chives, 1 tbs finely chopped gherkin,

1 tbs lemon juice and 2 tsp horseradish

cream. Stir until well combined and

season with black pepper. Serve with

750g chicken or pork mince

1 small onion, finely chopped

100g Woolworths Select

Deli Style Lime & Black

Pepper Chips, finely

crushed

½ cup Woolworths Select

Dry Roasted Cashews,

chopped

¼ cup chopped coriander

1 garlic clove, crushed

2 tbs sweet chilli sauce

1 tbs olive oil

2 x 250g Middle East Sorj White

Bread or mountain bread

225g Fresh Cuts baby spinach

leaves and beetroot

extra sweet chilli sauce, to serve

1 Combine mince, onion, chips,

cashews, coriander, garlic and chilli

sauce in a large bowl and mix together

well (or process in a food processor).

Divide mixture into 12 portions and

shape each into a 12cm-long log.

2 Heat oil in a large frying pan over

medium heat. Add the koftas and cook,

turning occasionally, for 8 minutes or

until golden brown and cooked through.

Wrap kofta in pieces of bread with

spinach, beetroot. Serve with extra

sweet chilli sauce.

60g butter

1 large brown onion, chopped

4 rashers rindless bacon, chopped

Rosemary Wheaten Biscuits

⅓ cup chopped fresh parsley

⅓ cup Woolworths Select Hazelnuts

2 tsp finely grated orange rind

½ cup Woolworths Select Pitted

Prunes, chopped

2 macro wholefoods market free

range whole chickens

250ml Woolworths Select

Greek Style Yoghurt

¼ cup tahini

¼ cup orange juice

1 garlic clove, crushed

1 Preheat oven to 190°C. Melt half of the

butter in a frying pan over medium heat.

Add onion and bacon. Cook, stirring, for

5 minutes until soft. Transfer to a bowl.

2 Process biscuits, parsley, hazelnuts

and orange rind in a food processor, until

finely chopped and mixture resembles

breadcrumbs. Add to the bowl with onion

and bacon. Stir in prunes. Melt remaining

butter and stir into crumb mixture and

season with salt and pepper.

3 Place 1 chicken onto a chopping board.

Run fingers underneath the skin to

loosen and create a pocket. Push half

of the crumb mixture into space,

spreading evenly. Place in a baking dish,

breast-side up. Repeat with second

chicken and crumbs. Pierce skin a few

times with a knife to prevent the skin

splitting. Brush with oil and season with

salt and pepper. Roast for 25 minutes

per 500g until cooked through. Cover

with foil to rest chicken meat.

4 Meanwhile, combine all the remaining

ingredients to make the yoghurt sauce.

Slice chicken. Serve with yoghurt sauce.

couscous saladwith dried fruitPrep 15 mins | Serves 10

Place 1½ cups couscous in a large bowl.

Pour over 1½ cups boiling water or

stock. Cover and set aside for 10

minutes or until the water has been

absorbed. Fluff up using a fork. Add

½ cup Woolworths Select Raisins,

½ cup chopped Woolworths Select

Apricots, ⅓ cup roughly chopped

Woolworths Select Pistachios, 3 finely

chopped spring onions and 1 cup roughly

chopped coriander leaves. Whisk ¼ cup

olive oil, 2 tbs lemon juice and 1 crushed

garlic clove together. Drizzle dressing

over couscous and toss well to combine.

You can also serve this delicious,succulent chicken with salad greens.

375g pkt rice stick noodles

250g snow peas, trimmed,

halved lengthways

250g baby corn, halved lengthways

6 spring onions, shredded

¾ cup mint leaves

¼ cup coriander leaves

½ cup lime juice

2 tbs fish sauce

3 tbs brown sugar

2 large red chillies, deseeded,

finely chopped

¼ cup chopped roasted

unsalted peanuts

1 Place noodles in a bowl, cover with

boiling water and leave for 5-6 minutes

to soften. Cook snow peas in boiling

water for 2 minutes or until bright green.

Drain, and refresh in cold water. Drain.

Transfer to a bowl. Add noodles, baby

corn, spring onions and herbs.

2 Combine lime juice, fish sauce, sugar

and chilli in a jug and pour over salad.

Toss to combine. Serve with peanuts.

honey glazed carrotsPrep 10 mins | Cook 15 mins | Serves 10

Peel 1 kg carrots and slice into rounds.

Steam over simmering water until just

tender. Remove from heat, discard

water and add 60g butter, 1½ tbs honey

and 1 tsp Woolworths Select Ground

Cumin to pan. When butter has melted,

add carrots and toss for 2 minutes until

heated through and glossy. Transfer to

a serving dish. Add 100g crumbled feta

and ¼ cup toasted Woolworths Select

Slivered Almonds. Serve warm.

cheesy herb cobbPrep 10 mins | Cook 35 mins | Serves 6

1 Woolworths Crusty Cobb Loaf

20g butter, softened

1 small onion, finely chopped

2 cloves garlic, crushed

4 rashers shortcut bacon, chopped

250g grated cheddar cheese

½ cup chopped parsley

60g melted butter

1 Preheat oven to 180°C. Place a large

sheet of foil, on a baking tray. Make 5

cuts across the cobb loaf, cutting down

to the bottom, but not right through.

Turn and make another 5 cuts crossways.

Do not cut through the bottom crust

(you want to be able to push filling into

the cuts, but leave the loaf intact).

2 Heat butter in a frying pan and cook

onion, garlic and bacon for 5 minutes

until golden. Transfer to a bowl. Add

¾ of cheese and parsley. Stir to combine.

3 Scatter mixture over the bread and

push down into the cuts. Drizzle melted

butter over the bread. Wrap the foil

around the loaf to enclose. Bake for

15 -20 minutes. Unwrap foil and sprinkle

cobb with remaining cheese. Bake

for a further 10 minutes or until the

cheese is melted and golden.

2 large red capsicums

4 thick slices Crusty Vienna Loaf

⅓ cup Woolworths Select

Extra Virgin Olive Oil

1 garlic clove, halved

500g ripe tomatoes,

roughly chopped

1 small red onion, finely sliced

100g pitted kalamata olives, halved

¼ cup torn basil leaves

¼ cup continental parsley leaves

1-2 tbs balsamic vinegar

1 Preheat a barbecue or chargrill over

medium heat. Cook capsicum, turning,

for 10-15 minutes or until skin blackens

and blisters. Place into a plastic

bag and set aside to cool.

2 Brush bread with some of the oil.

Chargrill for 30 seconds each side

or until lightly charred. Remove bread

and rub well with cut garlic clove. Tear

into bite-sized pieces. Place in a bowl.

3 Peel the blackened capsicum and

discard skin and seeds. Tear flesh

into pieces and add to bowl with

the bread, tomato, onion, olives,

basil and parsley. Season to taste with

salt and pepper. Toss gently to combine.

4 Whisk remaining oil and vinegar together.

Pour over salad. Toss to combine. Serve.

60g sliced salami

1 Preheat oven to 200°C. Lay

bread halves onto a baking tray.

Halve tomatoes crossways and

Dice and transfer to a bowl. Season

2 Top bread with salami, capsicum

and olives. Sprinkle cheese over and

bake for 10 minutes until cheese has

melted. Top with rocket and serve.
