I have some favorite oldies that I re-watch more than anything. I especially don’t watch the news anymore. Violence and drama only make me feel bad and I choose to feel positive and be thankful for everything the Lord has given me. Our glass really can be half full or half empty, dependent on our state of mind. I have watched my family deal with sickness and death. I can sympathize with those who hurt. I can also share the joy of someone who is happy and blessed because I am there now. I don’t know a lot about President Trump and the coming election or his opponent Joe Biden. However, I have heard from several sources that the issue of abortion is on the forefront of differenc- es. My friends have a brand new baby girl and the image of her just minutes after birth are on my phone and in my heart. She was per- fect in every way. She was crying and kicking within minutes, too. I cannot imagine, or even want to think, that there are persons who could kill, what they call a fetus, just days before she is taken from a mother’s womb as a living child. My mother shared with me a story about a woman who was on a jury to decide a man’s guilt in a “murder.” A pregnant woman and her husband got into an argument with her ex-husband. In a fit of rage, the ‘ex’ picked up a bat and slammed it into her stomach, and the baby, inside. The woman went into labor and the baby was dead. The jurors were to decide if the man was guilty of murdering a baby, or if a fetus (not yet a living person) had been destroyed in an assault. The sentence for the two crimes was vastly different. The verdict at the first count of the jurors was 11 to 1 for the assault charge. But this one lady on the jury held her ground and asked for a Bible to be brought in. As she read passages of scripture about babies and the miracle of creation, jurors began to be touched, and changed their vote. At last count, all votes were for the murder charge. That is my decision also. Murder is killing someone. I hope and pray that all voters, in every state, take the Bi- ble and read for them- selves why abortions are nothing less than first degree murder. What is news anyway? Food for all palates Wow! I can hardly be- lieve that, already, fall is here. My grandmother always told me that the day would come when seasons didn’t happen. One day is sunny and hot; the next is windy and in the 50’s. So what foods are good just any day? This past week, I had stewed okra and fried okra... stewed squash and fried squash...all served with tomatoes and sweet tea. I also had some Mexican burritos and Chinese fried rice. I have a new recipe for the fried rice and it is really easy. You must start with cold rice, so cook some and refrigerate it. Begin with 3 tablespoons of oil heated in a large skillet. Add the cold rice and a teaspoon of minced garlic and stir for about 10 minutes to slightly brown the rice. (Three cups of cold rice will feed four people.) Using a spatula, move all the rice to one edge of the skillet. Have all your other ingredients ready to add to the other side of the skillet: 4 green onions, grate one carrot, chop one piece of ham or a pork chop into bite sized cubes. Beat 2 eggs with a whisk and then pour over the veggies and meat. Stir well till egg is scrambled and then move the rice into the mix and add 2 tablespoons soy sauce. Continue to cook and stir until everything is thoroughly mixed. I like to add some bean sprouts just for fun. I wanted to make a cake so I could share a strawberry shortcake with some friends. I usually use a bought angel food cake but I decided on a pound cake and it was a really good choice. To all you dieters, beware! In the bowl of a stand mixer soften 3 sticks of butter and one 8 oz. cream cheese; beat together and add 3 cups of sugar. Now beat for at least 3 minutes till light and fluffy. Next, add 6 eggs, two at a time, while continuing to mix. Add 2 teaspoons vanilla flavoring and 2 teaspoons almond extract. Add one half teaspoon baking powder to 3 cups of all purpose flour and then add the flour to cake batter a third at a time. When all the flour is completely mixed in the batter, turn off the mixer and grease and flour a bundt pan or 2 loaf pans. Spoon in the cake batter; it is too thick to pour. My oven is gas and gets really hot so I baked my cake at 300 degrees for one hour. The original recipe calls for 325 degrees for one hour. The crust should be cracked and golden brown. Slice when cool and serve with straw- berries and whipped cream. It is good plain, too. Oct. 2 Ballard Chamber C.C.
