DO I NEED A FOOD HANDLER’S CARD? Food Service Worker Cards are required for any person who handles, prepares, serves, sells or Gives away food for human consumption, including those whose duties are restricted to busing or washing dishes. The rule does not apply to workers in facilities that handle food or beverages exclusively in a closed package or container. New workers must obtain their licenses within 30 days. Cards are obtained by coming in to one of our offices. You have the choice of taking a written test after reviewing a study booklet of food safety information, in one of our offices (click here for testing schedules, locations, and maps) or by using an approved on-line testing web site

(click here for a listing of approved web sites). If you chose an on-line testing center the bar-coded certificate and the appropriate fee must be presented to our regional offices in order to obtain your FSW card. Cards must be renewed every three years by re-testing. This includes older cards issued prior to 1997. The fee to take the test is $10.00 per attempt. When the test is passed, the fee for the card is $5.00. An original of the card must be kept at the workplace. Those who wish to retain a copy for their own records or for multiple job locations may obtain duplicates of their license for $3.00. We accept cash and credit cards at our four testing offices. Food Service Worker cards are valid for a period of three years.

WHAT DO I NEED TO GET A FOOD HANDLER’S CARD? You must bring Proof of Legal Status/ID to take the test or the class or get the card. Testing is conducted on a walk-in basis at our four locations. Allow enough time to complete the test. Last exam will be given out at 11:15 am and 4:15 pm; all exams are picked up at 11:30 am and 4:30 pm. No testing is done on holidays. ARE THERE ANY JOBS? With the recovery of the economy here in the metro area and as people are able to enjoy an occasional meal out, segments of the Food Industry has boomed into a cascade of new restaurants opening over the past six months. As new places are opening and needing staff, established venues are scrambling around to locate good applicants and/or to hold on to the staff they have. This means that the normal downturn for the hot AZ Summer does not necessary come into play. This is a good time to be looking. But, this does not mean that it is easy or a done deal as the job market isn’t that tight right now. In this book you will find 1000’s of available jobs that are they need to fill. They will run a wide range through the industry and even though the jobs posted will change with time, the mechanics on how to find them, how to apply for them and the insider INTEL won’t. So, if you are reading this book 6 months or a year from now, the actual jobs posted will be long gone but; the book will guide you to the newest generation of jobs, careers and opportunities. DO I NEED EXPERIENCE? THE ANSWER IS “YES” AND THE ANSWER IS “NO.” This is a complicated answer to a complicated question. The real answer will vary with every employer that you meet. Let’s simplify the process for you. If I am applying to be the next Iron Chef, I will need experience, a blog, and a recipe portfolio to get a real interview. If I am looking at general food service industry

employment, then it is more tied to having basic skills, your motivation for wanting the job and your acquired knowledge of the company (their history, their menus and the way they do business). =================================================

WHO IS THIS GUIDE FOR? We try to focus at the lower end of this market because if you are already the next Iron Chef – you do not need our help…you have paid the dues or have great talent that stands by itself. This guide is for the person who has been cooking in one form or another for all their life and has decided to turn what they like to do…NO…what they love to do into a career. This guide will assist you to get a foot-in-the-door and start your own journey to being your own version of the next Iron Chef.

WHAT ARE BASIC SKILLS? For most entry level openings in this industry, you DO NOT need to have professional experience. In fact, everyone reading this guide is more or less over qualified for these positions. WHATZ? How can you be over qualified and have never worked in a professional kitchen? The answer is easy. The question was “do you have experience?” Did they say professional experience? No! Do not read more into the question than what was asked.

Here is the guide to experience:

A. Did you grow up in a rich family with cooks, butlers and maids? B. Is it then fair to say that you have been cooking, assembling or preparing

food for yourself or others for most of your life? C. FOR STAY-AT-HOME PARENTS: Don’t you prepare meals for your

family at least several times per day not to include special diets or threats? Don’t you make multi-person meals? Don’t you plan out your meals before you start cooking? Don’t you keep control of the food in the pantry and go to the store (inventory and purchasing – budgeting also on tight budgets) when you need to restock?

D. When you cook for your family do they ever throw the food back at you? If not then that is the best sign that the food is good. Do people complement your cooking or ask for a recipe?

E. Do you enjoy the art of creating a great meal from nothing? Do you enjoy cooking? Have you ever dreamed of being the Iron Chef?

If you have answered yes to more than one of these questions, then, you are over qualified for most entry level jobs in this industry. If you answered yes to #E then, you are a great fit for what the employers are seeking. What we want to do is teach you how to frame the answer to “Do you have experience?”

Here is a cool introduction that you can use or abuse as an answer to this question:

“You know…I have been cooking all my life and people say that I am very good. I have been thinking…why couldn’t I take what I like to do {pause for effect} What I love to do and turn it into a career…that is why I came down here today to introduce myself…I know that I have a lot to learn but, I am willing to start anywhere…do anything that you need me to do …because that is how I am going to make this career real!” ==========================================

RESUME OR NOT? Once you start working in this industry you will know that no one (entry level) gets hired based upon a resume. This is an industry where no one wants to see a resume. They want to see you. They want to look you in the eye and to see what your motivation is. So, if you want to work in this industry, don’t waste the time doing a resume. What would be good for you to create is a master application (cheat sheet) with the names, address and phone numbers to the places that you have worked. You will need this to fill out the application. It is critical that you have this information so that the employer can quickly, easily verify your previous experience. The easier you make it for them to verify the quicker you can start! =================================================

HOW DO I APPLY? This will vary based upon the company, its size and policies. Here are some universal truths:

A. Small companies put much value on face-to-face communications and put even more value upon a person who was interested enough to present themselves in person. The correct time is 2-4PM on any day M-f. This time block is in the industry the down time between finishing lunch and the start of dinner prep. This is a time slot when they are free to have a conversation with you as to why they should hire you.

B. Large companies by nature, require to fill out an online application (even here no resume needed) to apply for openings. Please remember that hundreds of people do the same application as you did every day. There may be 500+ applications done for every opening posted online. You need to do the application but, you need to consider this the first step not the last.

C. To go introduce yourself approach shows that you are motivated and that you are really interested in working for them. With large companies, the Insider Tipster is to be proactive and give you the advantage of introduction. This advantage cannot be over stated as critical to jumping in front of all those other applicants. This gives you the advantage of showing the employer that you are motivated and really want to work. Most employers assume that you will do this if you are really interested in their particular job offering.

D. By not going over to introduce yourself, what message do you send to this employer? You tell the employer that you are not really interested in this particular opening. The employer may assume that you are not able to come over dues to transportation or daycare issues. The employer may assume that you are shy and that is a kiss of death in this industry. The employer may assume that you went to work elsewhere or that you are no longer interested.

E. By going over to introduce yourself you lay most if not all of these concerns to rest and have an opportunity to impress the employer that you cared enough about this job that you would make the time to talk to them. It’s a courtesy…it is a matter of respect.

F. Even an employer in need of staff does NOT need to hire you. You need to make the case that you deserve consideration based upon your skills, you availability, your motivation and your willingness to invest 10-15 minutes to educate yourself on who they are and what they do.

G. Study the menus. This is true for every job title. Know what they are known for. Know what their specials are as they will ask you in the interview. Watch the videos as this is where you learn who they are, how they operate and/or how well you will fit in there. Many places now incorporate the videos into their interviews and will send you home if you have not watched them.

WILL THEY HIRE ME? Many of our Previously Incarcerated brothers and sisters continually worry and stress over this issue to the point that they are incapable of applying for anything. The old Urban Legends, misconceptions of “been there…done that and they will not hire me…” or their own insecurity/shame of themselves wills the “they will not hire me…” into reality. The truth is far from the Urban Legends and for every employer there is a different standard. In the food industry it is fair to say that you get an even break and will find people who are able to understand the difference between “I AM A MURDER!” and “Someone broke into my house…” or “I stole a Big Screen TV” and “I stole to feed my babies…” The standard rule is generally that if your crime does not relate to the job that you are applying for, they don’t care. They will look at the age of the crime and importantly, what you have done since then. It is fair to say that they are not interested in who you were or in what you did. They are interested in who you are and most importantly, what you bring to the table (skills, ability). The best advice is to try…imagine…what opportunities you lost by not trying? As the old man use to say: “…the worst thing that they can do is hire ya kid and make you go to work!” =================================================

INTERVIEW PROCESS…. We have assembled for many of the employers listed in the guide a feature that we call the Used Job Shack Insider. The Insider is a collection of people who have been recently hired by that company and they explain the interview process, the questions that were asked and give the tips on how they got their

job. This INTEL is priceless to the job seeker because it is the answer(s) to the test (interview). It gives you the ability to ace any interview with any of these companies. =================================================

HOW TO DRESS: Always apply or interview in your “going to work” clothes not your “going to the club” or your “hanging out at the park” vacation clothes. Leave the bling and forget the perfume – many people are allergic to perfume. Nothing say “you ain’t gonna get hired” more than an employer sneezing all over your application. Never over dress as this will make you look out of place, like you wouldn’t fit in. Save the suit for that corporate gig interview. Some cooks like to go dressed in their cooking jackets but, that can be read wrong if you are under qualified for the position that you are applying for…makes you look like you are all full of yourself… The dress standard is AZ Casual or slightly above that if you are applying for more customer focused positions in the front room – like hosts. =================================================

FINGERPRINT CLEARANCE CARDS… Some positions with local hospitals, schools and care facilities will require that you qualify for and/or have an AZ Fingerprint Clearance Card. Never get this card before you get the job offer as it is expensive and will not give you that much of an advantage. Many companies will pay for you to get the card or pay you back if they request that you get one. Save your money…But, know if you qualify for one.

WHAT IS THE FEE TO OBTAIN A FINGERPRINT CLEARANCE CARD? The fee for volunteers is $65 and the fee for all others is $69.

WAS IT THAT ONLY 2 HAD THE EXPERIENCE NEEDED? • Yes and No. This is really simple to answer. All ten people tried very hard

and did their best to fill out the application but, ONLY two used a “CHEAT SHEET.”

WHAT CHEAT SHEET? • The cheat sheet was the job description from the employer. It contains all

of the information needed to “ace” the application. It has the skill set laid out in detail (DOESN’T IT?). It has the key words and phrases needed (RIGHT?). Everything that you need to get this job is laid out for you.

When the employer asks you to explain what you did for a living, only 2 out of 10 applicants will start with the employer’s cheat sheet and use it to create the perfect answer that will show the employer that they have the skills that the employer was looking for. In other words, they connected the dots between what they did and what the employer was looking for.

AS THE OLD MAN USE TO SAY… “If I am a mechanic applying for a customer service job…the last thing I will talk about is repairing cars…I will talk instead about dealing with customers, researching, diagnosis of their problem(s), presenting this information to my clients, seeking their approval to resolve the situation (contract negotiation, contract bidding and “costing” the job)…securing the needed resources and materials to complete the project by means of researching available inventory(s) utilizing advanced inventory management, computer systems. If not available in inventory...the process requires additional and sundry collection of research techniques which would be inclusive of industry outreach and the potential of actually outsourcing the entire acquisition process to acquire the needed materials from an assortment of various vendors or contractors (which then adds an additional layer of contract negotiations) within the timelines of the contract. Oversee the actual project to completion while maintaining a continual dialog and open communication(s) with the clients to advise them on project updates and/or urgent situations that might require the urgent need to re-negotiation the terms of project involving costs and/or overruns…thus, further requiring the modification of the terms to the initial contract. Upon completion of the project, organize all vital project information, documentation(s) and present that to the client. This may include the utilization of approximate level of conflict resolution and marketing, public relations. Additional skills would center on the advanced usage of customized computer systems and software…” SEE THE DIFFERENCE: Here are the Requirements and Working Conditions: • 3 months’ work experience preferred. Preferred means just that. If you have professional experience talk about that…even if you did not do that as a primary duty. They didn’t ask you that! Unless they say professional experience…have you ever washed a dish, a pot or a pan in your life? Unless you grew up with maids and the likes, the correct answer is “I have been doing this all my life.”

I also filled out a paper application on site for my file. My interview was prompt, easy going, answered my questions, and detailed my duties and rate of pay. I was hired on the spot, sent to do a drug test, and within 2 days the results were back and I was placed on training schedule. Interview Question –I did not find any question unexpected or difficult. I have several years of job experience, so I drew on past experience to answer questions and to ask questions. Negotiation Details –Dress professionally with hair and makeup done for women, no sloppy or baggy attire, and conservative dress for females with no dangly jewelry. Obviously well groomed and bathed. ------------------------------------------------------------------------------------------------------------------- TEAM MEMBER AT TACO BELL - No Offer Interview Details –First they tell you to come early but make you wait a long time to get interview. They ask you if you want something to drink right when you get in. Then when they start to interview you they ask a couple of questions. General questions about your experience, availability, and your goals. They also want to know what you hope to gain from working there. There next step is to call you for a second interview which means you were hired. Interview Question –question: They ask you to come up with a creative way to tell the customers to have a nice day -------------------------------------------------------------------------------------------------------------------- TEAM MEMBER AT TACO BELL - No Offer Interview Details –Went for my first interview at 11 am and was 15 minutes early. The assistant manager who was interviewing me asked me if I wanted something to drink and I said no thank you. We sat at a table in the restaurant near the corner; we were the only ones in the place. She asked me a couple of really easy questions, what hours can you work? Your age? Where do you live? Things like that. Then she told me to come back for a second interview with her boss the manager the following Monday. Now I don't know when fast food places started to do second interviews but I went anyways. I went back on Monday and was 15 minutes early again. The manager had me wait for a half an hour. When we sat down I noticed at the table next to us was another women just watching us, she turned out to be there for her second interview to, how rude! But the manager started to ask me questions and I felt nervous but I answered the best I could. The whole time we were talking she was acting very rude. She was rolling her eyes and staring down at a paper. I thought it was very inappropriate. When we were done she said that they had a lot more candidates to interview and there were only two positions open so they had to choose who to hire. Then she told me that there would be a third interview with her boss and they would be calling the people that they thought would fit the position to interview with the manager’s boss. Now I knew by this that I did not get the job because the assistant manager that I interviewed with before said that they just opened two new taco bells in my area and the interviews were to fill the positions in those places. Now doesn't it take more than 2 people to run 2 fast food places? Also why would there be a third interview with the manager’s boss for a team member position? A fast food job and they are treating it like they are choosing the president. I don't get it though, I was early, dressed in nice business type clothes and was nice and respectful, but all I got from the manager was rudeness. If I don't get a call back then I am going to be really pissed for them wasting my time. Interview Questions

Then you call their Main HQ and confirm it all with those guys over the phone. If you already showed up with black shirt, cargo, non-slip shoes you might be in luck and start that day. They provide the first uniform shirt, hat, name tag free of charge. I got the application from the cashier at the front register and filled it out on site. I asked to speak to the manager in charge, and presented to her my application. Interview Question –What's one thing I should know about you? --------------------------------------------------------------------------------------------------------------- Crew Member at McDonald's - Accepted Offer –Jun 23, 2013 Interview Details –Well I applied online to Mcdoanld's like everyone else and I was contacted a few days later, I believe 3 days for an interview in person. I waited in the lobby where the other guests were and other applicants. We were interviewed one by one. After the interview I got a call back from the hiring manager around 2 days later. She called to tell me that they were offering me an opportunity to work there and that orientation would be from 6pm-8pm. The orientation didn't last that long, lasted around 1.5 ours. We were given forms to fill out, taxing, stuff like that, rules and regulations, and etc. Interview Question –None. When I walked in there were several other females around me, but I was the only one wearing business attire. After the people ahead of me went I was my turn for an interview. The interviewing lady was nice and most of the questions she asked was confirming the information on my application. She then asked "Why McDonald’s?" to which I answered that it would be a good first job to have and would give me experience. She then asked if I had any more questions and I asked what date training would begin if I got hired. She then said the date and had me fill out a background information sheet. She then told me she would see me at orientation which is basically the first day of work. First, I was told to sign a sign-in sheet and mark whether or not I had filled out an application on-line. Then she left me and discussed information with the General Manager and he came over and interviewed me and also asked behavioral questions. He advised me that the assistant manager would be calling me to set up time for me to come in for orientation. I strongly suggest going to the booth inside. it lets the people know that you are applying and it is faster. I applied at the booth and got a call about a week or two later. I came in and they gave me a free drink while I waited. the manager was interviewing someone while I waited. then they called me and I was interviewed in the actual dining room of McDonald with all the costumers. they asked me four questions. I had school and needed a part time job to pay for rent, and it was no issue rearranging my schedule as my classes changed over time. That being said, the number of hours you get versus what you request entirely depends on your job performance, though that goes without saying I suppose. TEAM MEMBER AT PANDA EXPRESS - Accepted Offer – Jun 7, 2013 Interview Details –This was my first interview ever, I was fresh out of high school (June 2010). My friend had told me that she works at Panda Express, and that I should apply. So I applied in person and talked to the assistant manager for a bit. Later on I got a call asking if I could come in the next day for an interview. Of course, I said yes. It wasn't a hard interview at all. She asked me typical questions like

• "Tell me about yourself" • "Why do you want to work here?"

And there wasn't much I could say about my experience because I didn't have any. At the end of the interview, she asked me what my availability was. I had full availability. She asked me when I could start, and I said "Does that mean I got the job?" And she said "Yup." I started training that weekend. It was a nice experience and a great place to work, especially as a starter job. Interview Question –None were difficult ---------------------------------------------------------------------- SERVICE AND KITCHEN TEAM AT PANDA EXPRESS - Interviewed Mar 29 Interview Details –I found their ad online that they were hiring for a Service and Kitchen Team. I thought it would be to serve food on the counter at first but it turned out to be something else. So after 4 days I got a called that they were interested in having an interview with me. I went the next day for the interview and got there 15 minutes earlier, I told the cashier I was there for an interview and she offered me a cup to get a drink. It seemed that the General Manager was training a new employee so it took a while for her to get to me. After 40 minutes she came and brought the copies of my resume, she asked me if I had another job and why I was interested for working at Panda Express. She told me about the position as well and specified to me what it was about, she told me said I will be working in the front and back of the house, cooking, cutting vegetables, dishwashing, with 25 hours weekly.

Then she asked if I was interested in the job and I agreed, she informed me that I had to bring black dressing pants, black socks, and black slip resistant shoes and a black belt. Overall the interview was great and I have to say this restaurant is a pretty busy environment, no matter what position you apply for, you will have to work quickly and hard. The lunch and dinner rushes are the busiest times but once you get practice, things will feel smoother. Interview Question –Honestly there wasn't any difficult of unexpected questions, I was asked popular questions that most hiring managers ask you. For example,

Everyone else was told: “Thank you very much…we will let you know…” Why was just one person hired when the group (collectively) had years of experience and expertise? Why the only person who was hired also the one with little or no experience? We thought through the process and it came down to one question. There was one question that determined if you got an immediate job offer or not. What we further discovered was that it was not only what you said but, in the way that you said it.

“WHY DO YOU WANT TO WORK FOR US HERE AT THE AIRPORT?”

The answer that our group had given was about their years of experience, they were looking for a career…etc…The person that they hired had never flown on an airplane and had never been inside an airport. To him this was an amazing experience and he was so excite about the whole airport (the people, the place and the sea of constant change). By the time he got to the interview and they asked him the question, he was still very animated and he went on to tell them that: “Why would I want to work at the airport? Because this is the most exciting place that I have ever seen!!!” He also talked about what a people watcher he was and how he really liked helping people. He finished with “I am almost willing to pay you to work here!” they hired him on the spot. Why did they pass on the more experienced, tested and seasoned cooks to hire a person with little or no experience? He was who they were looking for. With a lot of experience comes “BAD ATTITUDES,” opinions, a lack of listening and that is NOT what they were looking for. With little experience beyond the basics comes the urban myth amongst employers of an applicant who will have a desire to learn and that means listening also. They will spent a lot of time training new employees to their standards – so experience other than basic skills are not required for the entry level jobs (80% of all the jobs they offer are entry…Only a few high-end cooks and managers need extensive work history
