Cheese making is a prolific industry inthePhilippines.For this industry toprosper, theproduction of quality cheese is vital. Rennet, anenzymeusedtocoagulatemilkinmakingcheese,comes in different forms. The commonly usedrennet is thenatural rennet thatcomesfromthefourthstomachof ruminantscalledabomasum.Inordertoobtainnaturalrennet,aruminantmustbeslaughteredtogetitsabomasum.
In line with this, the National Instituteof Molecular Biology and Biotechnology(BIOTECH-UPLB),inthepersonof Dr.SusanaMercado, developed the local microbial rennetas a substitute to the abomasum-based rennet.BIOTECH Rennet is an innovative technologythatcanhelpcottageindustries.
BIOTECHRennetproducesmorecheesewithbettertexture,sensoryqualities,longershelf life,andisvegetarian-friendly.Additionally,itcanbeusedforalltypesof cheeses.

Biotech Microbial Rennet
BIOTECH Rennet is produced fromRhizopus chinensis fermented in coconut paringmeal.Thechymosin-likemicrobialrennethaslowproteolytic activity whichmakes it an idealmilkcoagulant.Itintegratestheuseof Bio-Technologytechniquesandmethodsbyusingmicroorganismsinsteadof animalparts.
From the evaluations done by DairyTrainingandResearchInstitute(DTRI),Kapisananng mga Kooperatibang Manggagatas, Inc.(KKMI),andLandof MilkandHoneyMarketingresultsshowthatBIOTECHRennetcangivethefollowingadvantagestocheesemakers:
Increased in cheese yield. Withcorrectuseof BIOTECH Rennet, a liter of milk can producemorethanhalf akiloof whitecheesecomparedtotheusual1/4or1/3kg.
BIOTECH Rennet is currently availableat the sales office of BIOTECH-UPLB locatedat the University of the Philippines Los Baños,College,Laguna4031.
BIOTECH Rennet comes in liquid andgranulated forms. A liter of liquid rennet costP480withanapplicationrateof 10mLperliterof milk.Akilogramof granulatedrennetcostsP750with an application rate of 5 grams per liter of milk.
