    1 Make cookie dough of your choice, cutting

    out the desiredshapes. Bake andleave tocool. I useda simple oval shape.

    2 Roll out some fondant to cover the cookie.The fondant shouldbe rolleda little thicker

     than 1mm, as it will go thinner when rollingover the embossingmould.

    3 Place the embossingmouldon the worksurface anddust with a light coveringof

     the top andwith one motion push therollingpin over to make an impression in the fondant. Usingpipinggel or sugar syrup,

    dampen the cookie andstick the embossedfondant on top.

    4

    –I have usedwhite andblue –andpop thedesign out of the mould.

    5 Place the mouldedfondant onto somepreviously cut white fondant, with somepipinggel to make i t stick. Stick this on the

    embossedsurface on the cookie with somemore pipinggel.

    76 Using brown modelling dough, roll out and

    sponge. Flatten a disc of mocha paste forthe buttercream andtwo discs of redpastefor the strawberry jam. Layer it up, glueing it

    together to make a sponge cake. Roll a longsausage of mocha paste andglue to the topof the cake for a whip of buttercream.

    77 Take a craft knife andslice off two pieces of

    78 The plates are made from white modellingdough rolledthinly andcut with a square

    andoval cutter.

    79 Cut another couple of square shapes outof white modelling dough andfoldover tomake little triangles for the napkins.

    F OR THE PICNIC BASK ET

    80 Moulda ball of mocha sugarpaste into a

    basket with a craft knife to create thewoven effect.

    81 Take a small ball of mocha paste andfeedthrough a piece of 24gauge wire into itscentre.Roll it out into a sausage until the

    paste almost covers the wire, then bendit into a semicircle andpush the exposedwire into the sides of the basket, then score

    the handle.

    82 Roll out another piece of mocha paste andcut out an oval shape, then cut it in half.

    83 Glue one half of the oval shape on one sideof the basket. Place andglue the other half 

    oval at an angle, propping it open until dry.

    F OR THE PIPED FLOWERS

    84 Mixup a little royal icing andadda littlefern coloureddust. Using a no.2piping

    nozzle anddisposable piping bag, pipe long

    andshort stems from the bottom of thecake upwards.

    85 For the grass, pipe small dots of royal icing,

    CARV ING THE CAK ES

    1 Make two paper templates for each hut –arectangle with a triangle on top, as you seefor each hut front.

    2  Level the cake to a height of 6cm (238in)andplace one of the templates on top,

    securing it in place with cocktail sticks(toothpicks). Take a carving knife andcutvertically aroundthe template.

    3  Attach the secondtemplate to the other

    side of the cake with cocktail sticks, ensuringthe templates are perfectly aligned, anduseit to adjust your carvedshape to ensurethat it is perfectly symmetrical. Repeat to

    create as many huts as you wish. You should

    be able to cut all three huts from the 15cm

    (6in)square cake.

    4  Attach each cake hut to a hardboardbaseusing buttercream.

    COV ERING THE HU T

    5  Kneadthe navy blue sugarpaste to warm,then roll out to a depth of 5mm (¼in)using spacers. Cut two straight edges at

    right angles to each other, then, using a setsquare anda craft knife , mark5mm (¼in)intervals. Take a straight edge –I use my1mm spacers –andindent vertical lines on

    the paste to create the vertical cladding.

    6  Carefully pickup the paste andplace it

    paste over so the underside is uppermost.

    7  Cover the backof the cake hut with athin layer of buttercream, then carefully

    place the buttercreamedsurface on top ofthe rolledout sugarpaste. Using a paletteknife, cut the navy blue sugarpaste to size,

    the cake to achieve a straight cut.

    8  Place the cake upright on its base and, ifnecessary, adjust the embossedvertical

    cladding using the set square. Next cover

    modelling paste – yellow, navy blue, mid-

    blue, green, orange, three shades of grey,

    buttercream or ganache

    sugar glue

    soft brown sugar

    SPECIAL EQ U IPMENT

    cake boards – 5x6cm (2x2 3 8in) hardboard

    rectangles, you may need to cut a larger

    cake board to size

    carving knife

    10 cm (4in) waxed p aper squares, one per

    beach hut

    9 Separately,roll outthe yellow and navy 

    sugarpaste between5mm(¼ in) spacers.U singthemulti ribboncutterset to a widthof 7mm(½ in),cut a seriesof strips from

    eachcolour.Onlycuthalfwaythrough thepaste with the cutter,otherwise the tool willmark the strips,and completethe cutwith

    a craft knifeorpalette knife.

    10Pick up strips ofeach colour and placethemadjacent to oneanotheron yourwork board,and continue adding alternate

    stripesuntilyouhave a width of7cm(2¾ in).Take the smoothers and gently push the strips together,so thattheystick

    together securely.

    11Carefullypick up thepaste and place it

    over so the underside is uppermost.Coverone sideofthe cake hut with a thinlayerof 

    buttercream,thenplacein positionon thestriped sugarpaste,so thatthe stripes runhorizontallyalong the side of the hut.Cut

    awaythe excess sugarpaste,ensuringthat

    of thecake andthecorners remain sharp.

    Repeatforthe remainingside.

    12Take a smoother and place itonone sideof the roof,press down gentlyto easethe sugarpaste walls inline with the roof.

    Repeatfor the second side.

    13Rollout one of thegreysugarpastesbetweenspacers and cuttwo rectanglesslightly largerthaneach side of the roof.Mine are 7.5x5cm(3x2in),butyours may 

    be slightlylargerorsmaller,so do check.Attach in placewith buttercream.

    14U singa smoother,rolla sausage of grey sugarpaste and attach itto the joinbetween

    the roof sections.Squeezeinto shape toforma ridge byusing two smoothers.Trim

    between 1mmspacers.Putthe huttemplate onthe paste and cut aroundthepitched roof.Place theset square over thelowest roofpoints and mark thepasteat

    16U singa straightedgeand a cutting wheel,

    cut the paste for thefront section of theroof into horizontal 5mm(¼ in) wide strips.Attach in placewith sugar glue.Separately 

    roll out the navy blueand yellowmodellingpaste and cut into 5mm(¼ in) widestripsusing a cutting wheel.Next,arrange these

    vertically on thefront of the hut,usingsugarglue to secure.Add a thinnervertical

    centralstrip to separate thedoors and ahorizontal‘drip board’above.

    17Rollout a small amountof black modellingpaste and cut 5mm(¼ in) hingesand boltsand attach inplace.

    18Rollout one of thegreymodellingpastesbetween the1mmspacers andcut out a

    rectangle the same widthasyourhut’s roof (about 7.5cm(3in))and the same length asthe distance over the roofand underthe

    eaves (about 12cm(4¾ in)).Carefully drapethe strip over the roof of the hut.Tuck the

    endsunder the eavesandtrimwith a craftknife if necessary.

    19Takea straightedgeand emboss a
