East India Grill has estab-lished a reputation as one of the best ethnic restau-rants in Federal Way and the region.

Owner and food guru Kabal Gill, with three-plus decades of restaurant expe-rience, has a genuine pas-sion for cooking. He is all about sharing the love. Din-ers at East India Grill can watch the kitchen action via TV monitor.

He enjoys showing people how to cook Indian food at home. Each week, Gill shares his mouth-watering

recipes in a cooking class where the seats fill up fast. At one class, he whipped up a batch of chicken tikka masala from scratch. This is one of the most popular dishes in Indian cuisine. As the number-one restaurant meal in the United King-dom, chicken tikka masala has even been called "a true British national dish."

Throughout this recent cooking class, attendees sniffed concoctions like curry mixed with cinna-mon, or a garlic-ginger mashup. His house-blended spices tickled noses and

cleared sinuses with their intoxicating aroma. Guests sampled Gill's custom-craft-ed chai tea while watching the action.

Less than an hour later, dishes of steaming chicken tikka masala were served alongside either rice or warm garlic naan, a type of soft bread cooked in a clay oven. The naan was perfect for sopping up the savory sauce. The tender chunks of chicken bursted with well-balanced flavors.

through october at the commons mall’s southwest corner parking lot, near south 324th street and pacific highway south (behind sears). more than 70 vendors set up shop at the market. vendors offer everything from fresh flowers and locally-grown produce to gardening information and snacks. the market is trying to expand its presence in the community, and hopes to do so with two separate Fun runs in Au-gust. organizers may bring back a mid-week evening farmers market this summer. the market’s signature event, a charity chili cook-off between Federal Way police and south king fire and rescue, is tentatively slated for sept. 29.

The Weyerhaeuser King County Aquatic Center is open to the public for open swim, pool exercise, family swim, lessons and lap swim. A mem-bership is not required. The 2,500-seat facility maintains one of the most active competition schedules in the country, hosting more than 50 events annually, which has been a big economic boon for Federal Way and the surrounding community.

Aquatic Center makes splash in Federal Way economyMirror staFF reports

When the Weyerhaeuser King County Aquatic Center was constructed for the 1990 Seattle Goodwill Games, everyone involved knew that Federal Way had something special.

“In a lot of ways, we’re better than when we opened up,” facility manager Mike Dunwiddie said.

The world-class facility will be on the national stage once again when the 2012 United States Olympic Diving Trials roll through Federal Way June 17-24. More than 100 of the nation’s best divers will vie for 16 spots on the 2012 U.S. Olympic Team in London. The Trials will include men’s and women’s individual events in 3- and 10-meter competitions, plus men’s and women’s synchronized events at both heights. The Aquatic Center also played host to the same event in 2000.

The 2012 trials are expected to bring $3.5 million to Federal Way, mostly through lodging rentals. They will get national television coverage on NBC,

which increases the nation’s awareness of Federal Way, Dunwiddie said.

But the Olympic trials are just then lat-est in a plethora of national and interna-tional competitions that have called the King County Aquatic Center home over the last 22 years.

Annually, the facility hosts three or four high-profile events and many smaller happenings. To illustrate the high-level competitions that call Federal Way home, all you have to do is look at the 2012 calendar. Aside from the diving trials, the King County Aquatic Center also hosted both the boys and girls state high school championships, the state Special Olympics Swimming Championships, the Pacific Coast Swimming Invitational, the Pacific Northwest Masters Swim Meet and the NCAA Division I Men’s Swimming and Div-ing Championships, just to name a few.

“The Aquatics Center is probably among the top four such venues in the country,” said Patrick Doherty, director of economic development.

The design keeps it competitive. The facil-ity accommodates swimming, synchronized swimming, diving and water polo.

The facility’s equipment also gives it a leg-up on the competition. The Weyer-haeuser King County Aquatic Center was the first in the country to feature horns under each starting block, Dunwiddie said. The equipment ensures all swim-mers hear the start signal at the same time during competition.

The water flow in the competition pool is also unique. It enters from the pool floor, causing less interference with swimmers’ speed. A massive state-of-the-art scoreboard, displaying competitors’ times while they’re racing, hangs promi-nently at the end of the pool. Recently, the overhead lighting system was modi-fied so it can be turned on and off quickly, allowing the use of specialized lighting, like spotlights. This type of attraction is old news for sports like basketball, but it’s up-and-coming to aquatic sports, Dunwid-die said.

Weyerhaeuser donated the land before the facility was constructed back in 1990 and the Seattle Goodwill Games Committee donated $5 million. And an $8.8 million King County bond helped make the facility a reality.

The Goodwill Games went well and the Aquatic Center hasn’t looked back since. Upwards of 200 world records have been broken in the facility’s competition pool.

But the competition to attract this type of event is getting tougher, Doherty said. For competitions like the 2012 NCAA Men’s Swimming and Div-ing Championships, local swim clubs and universities often compete to host. When the University of Washington and Seattle Sports Commission couldn’t cover this year’s cost to bring the cham-pionships to the Puget Sound region, Federal Way offered $10,000 to entice them into making the Aquatic Center the competition’s host.

“Big events like this, you essentially sort of bid for them,” Doherty said.

The money is being used to market the event and came from the city’s Lodging Tax fund, which is used to attract tourism, Doherty said.

The move paid off, and while it is uncertain exactly how many visitors are in town to watch the swimming and diving competition, generally at least three spectators come out to support each participant, Doherty said. Several of these people will stay through the night at a local hotel, he said. Even more have spent their money on food, gas and necessities while visiting Federal Way, Doherty said. The average visitor staying overnight in Federal Way will conservatively spend $75, Doherty said. Each person coming for a day trip will spend about $40, he said.

“They are here spending money and just being part of our economy,” Doherty said.

WeSt HyleboS wEtlands park: Federal Way’s hidden jewel

the 120-acre west hylebos wetlands park, locat-ed at 411 s. 348th st., is a protected wetlands area. the park is home to several species of plant and ani-mal wildlife. more than 100 bird species frequent the park. frogs, squirrels and other critters can also be found. twenty-seven species of moss, 37 species of lichen, 30 fungi and six liverwort species are located in the park.

the West Hylebos Wetlands park can best be seen by walking the park’s path system. the board-walk, placed by Friends of the Hylebos, was redone in 2008. Educational signs about the wildlife are scat-tered along the weaving wood path.

the park is open from dawn to dusk every day. parking and admission are free. the boardwalk is wheelchair accessible and a typical walk through the park takes approximately 90 minutes. pets are not allowed and guests are asked to stay on designated paths. tours of the park are self-guided.

the David t. Denny cabin is located at the West Hylebos Wetlands park on south 348th street, just west of pacific highway south. the cabin, measuring 21 square feet and two stories, was built in 1889 for seattle pioneer David Denny. He was one of the county’s earliest pioneers and a successful business-man who helped to bring growth and pros-perity to the region. the cabin was Denny’s real estate office and was located west of what is now the Seattle center. the two-story log cabin was moved from Seattle to federal way in 1966 as a promotional attraction. 22wIld wavEs:Largest theme park in the Pacific Northwest features Halloween and holiday attractions

The Wild Waves Theme Park features more than 60 attractions such as 20 waterslides — including the 50-foot Zooma Falls family raft ride, the Riptide, the Konga Lazy River and a 24,000-square-foot wave pool. Wild Waves is home to Washington’s biggest roller coaster, TimberHawk, and a steel roller coaster, The Wild Thing. Guests can catch live entertainment on Fridays and Saturdays, along with regular shows featuring rock music, summer beach music and doo-wop harmonies with comic flair.

The annual FrightFest — the amusement park’s Halloween extravaganza — runs Fridays through Sundays in Octo-ber. A 5,500-square-foot haunted house, a children’s trick-or-treat zone and a maze are on the park’s grounds.

The 70-acre park opens in December for Holiday with Lights 2012. Check out your favorite rides, explore the glow of daz-zling lights, visit Santa’s workshop, or enjoy the sounds of the season at one of the amazing entertainment shows.

Wild Waves Theme Park, 36201 Enchanted Parkway S., is located off Interstate 5 and can be accessed by the South 348th Street exit. The park will be open May 12 through Sept. 9. located at 31531 1st avenue south (between south 320th street and south 312th street), the 10-acre fenced-in park opened as an off-leash dog park in summer 2005. the prop-erty had been informally used as an off-leash dog park since the 1990s.

the non-profit volunteer group park pals recently installed a drinking foun-tain for humans and dogs at French lake park. Another upcoming project involves the renovation of a large pond

on the property. that project could in-clude a waterfall with a pump that cleans and recirculates the pond’s water.

backed by an eight-member board of directors, park pals has raised money for projects by selling bricks engraved with the names of pets and their owners. volunteers will lay the bricks near two benches at the park. to learn more, email [email protected] or visit www.parkpals.org.
