We will be attending the Baybears game this Friday night. The game starts at 7:05. If you requested tickets and plan to pick them up before the game, meet outside the gate around 6:45 for your tickets. If you have not requested any tickets and still would like to attend the game, please feel free to join us. I am fairly certain the Baybears ticket office can accommodate any additional ticket requests and place us in close proximity to one another.
Capital Campaign We are so very close to ending our capital campaign for repairs to our attic in the sanctuary building. We have some outstanding pledges that have not been received to date, but are anticipated to be received in the very near future. Our current expenditures on the project are $14,210 and we have collected $12,827.80. We only need $1072.20 to reach our goal of closing out the campaign! I believe, given our outstanding pledges, that we are closer to our goal than the remaining balance. Thank you to everyone for their diligence and commitment to Redeemer. Our Senior Warden, Richard Daughenbaugh, has expressed an interest in trying to finish by the end of June. Can you help us make it? If so, please consider giving .
The Grief & Loss Support Ministry will now be known as Life Changes Support Ministry. The new name is to better reflect the diversity of the issues which are being discussed. Anyone is welcome, you only need to choose the time which works best for you and your schedule. INQUIRER'S CLASS—Everyone is invited to join us for this time of learning and reaffirmation. I encourage anyone who would like to be officially received into the Episcopal Church during the Bishop's Visit this year (June 18) to commit some time to this important process.

The Food Pantry: We need cereal, grits, peanut butter, jelly, crackers, canned meats, (no more "helper meals" please- we often have no matches) soup, canned vegetables, canned fruits, canned stew, canned meals of any sort - Chef Boyardi etc., macaroni and cheese, dried beans and rice. Thank you! Community Café: As usual, servers are needed starting at 5PM, and a cleaning crew is especially welcome as the meal begins to wind down. I have had dessert commitments from a couple of people, but we could use more of those, too.

Ingredients
For the Sauce • 2 Tbsp olive oil • 3 spring onions, chopped • 3 cloves garlic, chopped • (14 oz.) can chopped tomatoes, mashed • 2½ cups vegan ground crumbles (Boca,
Morningstar) • 6 to 8 sundried tomato halves, chopped • ¼ red pepper chopped • 2 Tbsp tomato paste • ½ tsp smoked paprika • 1 Tbsp coconut oil • 1 tsp dried mint (or thyme) • 1 tsp cumin powder • ¼ cup water • salt to taste • a drizzle of olive oil
For the Cheese Sauce • 2 cups soy milk, or other non-sweetened
milk • 2 Tbsp all-purpose plain flour • 3 Tbsp nutritional yeast • 2 Tbsp olive oil • ½ tsp fine garlic granules • salt (don’t omit) • 1 Tbsp vegan butter or margarine • ¼ tsp turmeric powder • 1 tsp vegetable stock powder or granules • a little water if needed
For the Vegetable Layers • 1 large eggplant, cut lengthways, fried in a
griddle pan and set aside (or roasted or grilled)
• 2 medium zucchini, cut lengthways, fried in a griddle pan and set aside
Extras • olive oil for greasing • 2 cups vegan grated cheese of your choice • ground paprika (for dusting the top)
Preparation
For the Sauce 1. Heat up the oil in your frying pan, and fry
your spring onions until slightly golden. 2. Next, stir in your garlic, and mix until it is
slightly golden. 3. Then add your red pepper and tomatoes, and
mix for a couple of minutes. 4. Now add your vegan crumbles, and mix
again. Then add the remaining ingredients, and simmer gently for 20 minutes until the sauce thickens.
5. Taste for salt, and set aside For the Cheese Sauce
1. Place all the ingredients in a pan and whisk. 2. Heat the mixture up, mixing virtually non-
stop, until you have a thickish consistency. Lower the heat, and continue cooking for a further minute or so.
To Assemble 1. Pre-heat your oven to 375ºF 2. Grease a suitable Pyrex (or similar) oven
dish (ex. around 7” diameter, 3” deep) then place the eggplant slices across the base and sides of the dish, so that they overlap one another. Then add half your ‘meat sauce’ to the base, followed by the zucchini slices, and half of the cheese sauce (try to even the ingredients out with the back of a large spoon).
3. Next, add the rest of the meat sauce, then cover with a mixture of the remaining eggplant and zucchini slices – don’t worry, there won’t be enough to seal it, but that’s exactly what we want for the top – a random mix of things.
4. Then add the remaining cheese sauce, any grated or cut up vegan cheese, and finally sprinkle on some paprika with a drizzle of olive oil. Bake in the oven for 30 to 40

minutes, and remove when it’s really golden. Allow to cool down for 20 minutes before serving, as it will be piping hot. This can also be made a day ahead. Enjoy !
