Eggplants and bacon rolls
Ingredients 3 eggplants bacon (pancetta) Cheese slices
Directions grill the slices of eggplants stuff them with the cheese slice wrap them with bacon or pancetta cut
in strips grill them again until the bacon is

CHICKEN WITH LEMON, OREGANO AND OLIVES
ingredients 1 tbs olive oil 4 (about 800g) chicken 2 Spanish onions, coarsely cut 1 garlic clove, thinly sliced 1 lemon, 5-6 olives ½ cup dry white wine 2 tbs fresh oregano leaves
directions preheat oven to 140°c. heat the oil in a pan over high heat. add the chicken and cook for 5
minutes, then remove add the onion and garlic to the pan
and cook for 2-3 minutes, then remove
add the lemon to the pan and cook for 1-2 minutes each side
return the chicken and onion to the pan with the olives, wine, chicken stock and oregano.
cover loosely and bake in preheated oven for 1 1/2 hours.
