2. I like enchiladas.And lasagna. So, Iput themtogether into alayered, cheesyand spicy lovechild that I like tocall EnchiladaLasagna.This gourmet food recipe is a great one that has lots of veggies,cheese and Mexican goodness all inside. Not completely healthy,but not awful like traditional lasagna or enchiladas. I used the last ofsome random ingredients in my fridgezucchini, green peppers,olives, green onions and spinach but you can adapt it so you use upwhat you have.Start by chopping some veggiesnot too hard, right? 3. Then get some olive oil in a panand heat it up over mediumheat. 4. Saute the zucchini, onions andgreen peppers until they startgetting soft, about 5 minutes. 5. While the veggies are doin their thing, gratesome cheese and cube up some rotisseriechicken. 6. Back to the fillingstir in some cumin,salt, pepper, spinach and olives. 7. Once the spinach wilts youcan pull the entire pan off theheat. 8. To this mixture, add in the chicken, black beans,salsa and cilantro. 9. I used this little baby can of salsa. Its tasty. 10. Stir your filling together andthats it! A big pan ofdeliciousness. You could eat thisas is, but I was wanting cheesylayers. 11. Before assembly, you need to do two morethings: take some corn tortillas and slice intopieces {so they will fit into my pan a littlenicer} 12. and crack open a can ofsome good green enchiladasauce. I really really love thisbrand. 13. Now we can assemble! Heres how we do it: spread alittle enchilada sauce in the bottom of a lightly greasedbaking dish, top with tortillas, then a little cheese andthen half the filling. 14. After that, top with more cheese, more tortillas and moreenchilada sauce. Top it off with cheese, the other half ofthe filling, even more cheese, tortilla strips, more enchiladasauce and yesmore cheese! 15. Cover this bad boy up and bake! 16. After 30 minutes or so its done! Serve it up withsour cream, avocados, tomatoes, cilantro, limewedges, etc.Add some salad and sweet mexican rice andvoila! A great weeknight meal! 17. Ingredients: 2 tablespoons olive oil 1 small zucchini, diced 4 green onions, sliced 1/2 cup diced green pepper 1/4 cup sliced green olives {mildones, such as lindsey olives} 2 cups baby spinach, chopped 1 teaspoon cumin salt & pepper, to taste 2 cups cooked, chopped rotisseriechicken 7.5 oz. black beans {1/2 can} 7 oz. salsa {1 small can} 1/2 bunch roughly chopped cilantro 1/2 lb. grated cheddar cheese 9 corn tortillas, sliced 2 cups mild green enchilada sauceDesired toppings: sour cream, tomatoes, avocado, lettuce, cilantro, lime juiceSource: http://www.laurenslatest.com/enchilada-lasagna/ 18.
