Christmas has always been my favourite festival what with all the glitz and glamour in the elaborately decorated shopping malls, not to mention the scrumptious food and elegant wines specially on offer at our world-class restaurants.

It is also the time of the year when I tend to miss Australia where I had spent a significant par t of my life. Down under in the southern hemisphere, Australians can’t build snowmen in the front garden, or engage in a snowball ‘battle’ with the neighbor. Instead, they celebrate the festive season largely outdoors, with seaside picnics or poolside barbecues and street parties.

High on the festive calendar is the ever-popular Carols by Candlelight in Melbourne, and the Carols in the Domain in Sydney. Both concerts are held in the open and broadcast live on national television, with proceeds going to charity.

This brings me to the positive values associated with Christmas: love, care, compassion, selflessness and tolerance spread over the community. For the family, it’s a time for reunion, bonding and sharing.

The season has never failed to infuse me with warm, fuzzy and feel-good sentiments.

Festival Walk has collaborated with internationally acclaimed artist Johanna Basford — who specially designed two exclusive images, along with acclaimed

illustrations from Basford’s books — to showcase a magical “Christmas Secret Garden at Festival Walk” featuring the world’s first life-sized 3D Secret Garden based on her creations. This will be on display from today to January 2, 2017.

This festive season, LANDMARK will transform into an entertaining circus involving the huggable Santa Paws teddy bear and Santa Claus.

Santa Paws is the ringmaster of LANDMARK Circus, brought to life by French illustrator Eric Giriat. Breathing both humor and poetry into his drawings, Eric has a distinctive offbeat style that shines throughout all his work in fashion, design and scenography.

He has created nine delightful scenes depicting Santa Paws and his friends performing the most amazing circus acts, which have been turned into a grand installation at LANDMARK Atrium and across LANDMARK iconic buildings. Powered by animatronics and mechanical ingenuity, over 100 figurines burst into life every 30

minutes. There is seasonal music and dramatic lighting.“It’s a tradition at LANDMARK to conjure up wonderful Christmas

A white Christmas at The Polar ResortThe Arctic region is inhabited by distinct species

hometown of Santa Claus, Finland, to create the unprecedented designs of Santa Claus and Christmas decoration at Gateway Arcade and on Ground Floor of Ocean Terminal.

days around Christmas and New Year.Diners will be served eight dishes meticulously

prepared by the master chefs at the restaurant.Starting the full course meal off is the ‘Ocean

and Mountain Jewelry Box,' which has a natural theme that combines the best of the land and the sea. The dish consists of umeshu jelly, swallow’s nest, dried mandarin, lobster, salmon roe and scallop.

And then, the ‘Japanese Consomme Soup Cappuccino style’ offer patrons a light warm-up for dishes to come in a quaint little cup. The foam on top is supposed to represent snow. Kaiseki cuisine or traditional Japanese multi-course dinner has always been about connecting with the seasons.

UEDA serves freshest ingredients of the day. The ‘Three kinds of Today’s Sashimi’ and ‘Chef’s Omakae Sushi’ will contain pieces of the freshest catch from Japan.

Likewise, the ‘Hassun’ is a dish that gathers several seasonal ingredients and places them together to form a snack combination. Just like a Christmas present, the content on the plate is a surprise every time.

With the aim of presenting only the best, the ‘Seared A4 Wagyu Rib eye’ uses meat from

Kagoshima which is particularly known for producing fine beef. The red meat is slowly cooked on its edge to correctly balance the fat distribution of the ingredient. After preparation, the dish will produce an awe-inspiring aroma through the tantalizing meat and sauce on top.

The ‘King Crab Shinjo with Japanese Citrus Tempura’ is flavorful dish that is compact in size. The tempura pieces are made by mixing white fish and king crab together before deep frying and adding yuzu citrus.

At the end of the meal, guests will be able to satisfy their sweet tooth with a plate of Japanese sponge cake.

To top off your meal, UEDA also has a sake and wine pairing menu that features five Japanese sakes and wines selected by Sake Sommelier, Yoshi Takashima.

‘Hamayaki’ originally refers to a cooking style in which freshly caught fish and seafood are grilled on the spot at the beach. But now, the term is used by diners to refer to the art of grilling and eating fresh seafood on the table at an izakaya.

Akita Hamayaki is the newest Hamayaki restaurant to open in the city and just in time for the festive season.

Suitable for dinner dates, the restaurant’s two person seafood set is a full course meal loaded with delicious grilled items. The course starts off with a smoked chicken sashimi salad, spicy sausages and steamed clams as appetizers. These light dishes offer guests small bursts of savory zest that lead them to the main course.

For the main event, patrons have the option of grilling the food themselves, as per traditional Hamayaki. However, the talented chefs at the restaurant are more than willing to lend a hand if guests feel like they are not up to the challenge of bringing out the best of each ingredient.

The course offers a range of seafood

from the tank to the table. Connoisseurs will be able to dine on crab legs, scallop, abalone and oyster. Hamayaki allows excess water and oil to fall under the grilling grid and steam up. This causes flavors to become concentrated.

Besides seafood, patrons will also be served roasted mushrooms topped with black truffle puree. The two ingredients mix well, bringing out the earthy fragrance of each other.

Guests can dip their food in a range of sauces for added flavor.
